and celebrate Welsh culture.

A little bit of history. I guess it all started in a Welsh farmhouse,

and roasted on an open fire, pre-cooker days.

They didn't have cookers back in the day.

And then it would just be melted. So it's "caws pobi", roasted cheese.

Back in the day, in battle days, apparently it all came about

Let's start. Welsh rarebit, we've got grated cheese, grated leeks,

OK, so we've heated the milk, and then we put in some mustard.

Which really raises the flavour.

And then Matthew grated up some lovely leeks,

and we're just going to heat those gently until they go soft.

OK, so that's the first step. We've got the cheese, the mustard,

So we melt this down. We don't want to boil the cheese at this stage,

otherwise it separates and looks a bit yucky.

But it can be saved by a little flour.

So in a minute we're going to add the flour.

Thickens it and holds the whole thing together.

It is really just a sort of posh version of cheese on toast,

The whole idea is you can make a lot of it,
