Hello, I'm Sally Taylor. Welcome to South Today. In tonight's programme:

:00:00.:00:11.

tributes to Nelson Mandela and personal memories from his friend

:00:12.:00:12.

and bodyguard. Many times he said to people that he

:00:13.:00:17.

is not a saint, not a prophet, just an ordinary man who followed his

:00:18.:00:18.

conscience. Praise from the Prince for the

:00:19.:00:32.

Aldershot soldiers safely back from Afghanistan.

:00:33.:00:34.

A lesson in language ` a pioneering scheme where children learn from

:00:35.:00:36.

each other. And a taste of Yassa ` the Gambian

:00:37.:00:48.

dish that this woman is hoping will hit supermarket shelves.

:00:49.:01:00.

He was a colossus on the world stage but it was his ability to connect

:01:01.:01:06.

with, and better the lives of ordinary people that made him

:01:07.:01:09.

special. That's why people who never knew Nelson Mandela have gathered

:01:10.:01:12.

now for a vigil in Southampton ` one of the many tributes from people

:01:13.:01:16.

here in the South who feel touched by his death. A light for a man who

:01:17.:01:31.

banished the darkness of apartheid. Tonight, Nelson Mandela was honoured

:01:32.:01:36.

at a candlelit vigil in Southampton. I wanted to pay my respects because

:01:37.:01:40.

he is an icon in the world. He is a great inspiration. We are

:01:41.:01:47.

celebrating and are happy to be part of a society that experienced this

:01:48.:01:55.

man. His strength and dignity during a

:01:56.:01:58.

struggle for freedom have touched millions around the world, not least

:01:59.:02:04.

here in the South. This South African man teaches at Bournemouth

:02:05.:02:09.

University. He was at the 1995 Rugby World Cup for the poignant moment

:02:10.:02:14.

when Mandela for a Springbok jersey. This was previously a symbol of

:02:15.:02:20.

apartheid. You really solve the two races

:02:21.:02:26.

accepting each other, but the most significant part was when he left

:02:27.:02:32.

the stadium. It took us ten hours to get home and the distance was

:02:33.:02:39.

probably only for five miles. This woman runs a South African

:02:40.:02:44.

shop. She remembers being a little girl when the free elections took

:02:45.:02:50.

place. There were some in the people voting, they were queueing all the

:02:51.:02:52.

way down the road past my house. It was a hot day. It was great

:02:53.:02:56.

because I could give them water and keep them going. I feel extremely

:02:57.:03:03.

lucky to have been in the country when changes like that where needed

:03:04.:03:11.

and happened. This film tells the true story of a

:03:12.:03:15.

South African woman who forgave the man who ordered the shooting of her

:03:16.:03:20.

daughter. The Berkshire film`maker attributes are ability to forgive to

:03:21.:03:32.

Nelson Mandela's ability and legacy. He had a forgiving spirit in him and

:03:33.:03:36.

it made its mark on South Africa. Of his death has caused much sadness,

:03:37.:03:43.

many of what Nelson Mandela stood for will live on in future

:03:44.:03:48.

generations. People may not necessarily know the

:03:49.:03:51.

historical and Portugal significance of Mandela but they know that this

:03:52.:04:02.

man is very important. Tonight, along with the morning been

:04:03.:04:07.

a celebration of a man who is unlikely to be forgotten.

:04:08.:04:13.

I'm joined now by Chris Lubbey, who was born in South Africa but now

:04:14.:04:19.

lives in Fareham. He was an ANC activist who became Nelson Mandela's

:04:20.:04:21.

personal bodyguard. Thank you for coming in. So many tributes and

:04:22.:04:28.

wonderful words. You had a very intimate relationship with him. He

:04:29.:04:36.

impressed me. He was a man who was a true leader.

:04:37.:04:45.

He believed that South Africa should be free. He was a man who loved the

:04:46.:04:52.

fact that people should live together and bond. He was of course

:04:53.:05:02.

a very charismatic leader. After being imprisoned for 27 years, to

:05:03.:05:09.

say I forgive you was amazing. He was a very humble man, wasn't he?

:05:10.:05:18.

He wrote a letter to your parents. Absolutely.

:05:19.:05:25.

This letter, he said to me one day. He knew that my mother was ill. He

:05:26.:05:38.

took out this letter and said that he had typed it himself. He said

:05:39.:05:45.

that in prison we did not have computers and I had a long time to

:05:46.:05:58.

do it! I was very moved. He was intent on doing this act himself.

:05:59.:06:04.

You worked for him. Did you like him as a person?

:06:05.:06:12.

I loved him as a person, but he was a very disciplined man and laughed

:06:13.:06:18.

discipline and I think that came about after having been through such

:06:19.:06:33.

a struggle. He believed that we, as comrades, should be disciplined. He

:06:34.:06:40.

would ask me: Why are your shoes not polished? How would you sum up your

:06:41.:06:54.

feelings today? I am sad but yet privileged that for the first time

:06:55.:07:03.

in my life I became a human being and I were that to Nelson Mandela.

:07:04.:07:17.

A Government watchdog ` the National Audit Office ` has questioned the

:07:18.:07:21.

potential of enterprise zones to create jobs. The zones are designed

:07:22.:07:25.

to attract companies to areas being redeveloped. When unveiled in 2011,

:07:26.:07:27.

the Government estimated they'd bring 54,000 new jobs nationally.

:07:28.:07:30.

Earlier this year, that was cut by two thirds with an estimated 18,000

:07:31.:07:34.

new jobs at best. Land on the disused Daedalus airfield at

:07:35.:07:36.

Lee`on`the`Solent in Hampshire was made an enterprise zone. That aims

:07:37.:07:39.

to create 650 jobs in the same period, rising eventually to 3,700.

:07:40.:07:43.

But will those jobs ` even more in demand with the loss of shipbuilding

:07:44.:07:46.

in Portsmouth ` actually materialise?

:07:47.:07:51.

There are big expectations for this 82 hectare site. As one of the

:07:52.:07:54.

Government's enterprise zones, it is expected to create hundreds of

:07:55.:07:57.

much`needed jobs. This company has been here for years, long before

:07:58.:08:00.

Daedalus was given its special status.

:08:01.:08:06.

To date it has been slow. I think that next year we will see a

:08:07.:08:09.

definite change. So, some positivity but you're not

:08:10.:08:12.

seeing new companies moving on`site yet?

:08:13.:08:14.

As yet, we're not, but I feel that next year will see a definite

:08:15.:08:19.

change. Enterprise zone status brings lower

:08:20.:08:22.

taxes and grants for businesses to invest and expand. David Cameron has

:08:23.:08:25.

called them trailblazers for growth, jobs and prosperity. But a report

:08:26.:08:30.

out today says that sites like this one have a way to go to achieve that

:08:31.:08:39.

ambition. As well as enterprise zones, local enterprise partnerships

:08:40.:08:41.

and initiatives, like city deals, are all under scrutiny.

:08:42.:08:46.

We've said in a report that the Government needs to plan better how

:08:47.:08:49.

it's going to measure outcomes and evaluate performance. The current

:08:50.:08:52.

structures are not yet able to demonstrate that they are capable of

:08:53.:08:54.

delivering value for money. Enterprise zones were hugely

:08:55.:09:02.

successful under the last Conservative Government. They

:09:03.:09:04.

generated jobs and brought businesses in. But we're right at

:09:05.:09:08.

the early stage at the moment and there's a lot of work to be done to

:09:09.:09:12.

make sure that structures like roadworks and broadband are in

:09:13.:09:13.

place. Few new businesses have moved onto

:09:14.:09:22.

the site of this former naval base but eight firms are currently in

:09:23.:09:25.

negotiations and it is hoped that more will follow.

:09:26.:09:28.

650 jobs will be here on site by 2015. The companies that we are

:09:29.:09:33.

already speaking to will deliver 400 of those jobs. The innovation centre

:09:34.:09:37.

that will start here in partnership with Fareham Borough Council has the

:09:38.:09:41.

potential to deliver further 150, so we're very much on track.

:09:42.:09:47.

Marine Concepts has grown from a workforce of 12 to 55 since the

:09:48.:09:55.

recession. It is a small success story that will need to be repeated

:09:56.:09:59.

several times over if this site is to stand up to Government

:10:00.:10:02.

expectations and make up for the hundreds of jobs lost at

:10:03.:10:14.

Portsmouth's dockyard. "You did your job magnificently".

:10:15.:10:17.

The words of Prince William, who was in Hampshire today to present medals

:10:18.:10:20.

to soldiers who've served in Afghanistan. The Duke of Cambridge

:10:21.:10:24.

is the Colonel of The Irish Gurads, who are based at Mons Barracks in

:10:25.:10:27.

Aldershot. Friends and family of number two

:10:28.:10:30.

company, first Battalion of The Irish Gurads gathered here to watch

:10:31.:10:32.

loved ones receive operational service medals from the Duke of

:10:33.:10:36.

Cambridge, as his standard flew at half`mast in tribute to Nelson

:10:37.:10:38.

Mandela. Hundred and 20 soldiers returned from a six`month tour of

:10:39.:10:42.

duty in Helmand province in October. No one was killed in their unit but

:10:43.:10:45.

they did suffer some casualties. Many guardsmen were involved in

:10:46.:10:48.

training the new Afghan security forces.

:10:49.:10:50.

Most of the guys were very subtly steering the Afghan security forces

:10:51.:10:53.

through their first fighting season in Helmand and the Afghans did a

:10:54.:10:56.

terrific job. Yes, they took casualties, but it is their country

:10:57.:10:59.

and it's quite right that they should be fighting.

:11:00.:11:09.

Operation Herrick also involved disrupting insurgents and the

:11:10.:11:12.

guardsmen carried out operations defined weapons and bomb` making

:11:13.:11:15.

equipment. But they were glad to be home.

:11:16.:11:20.

It's really good to be back with my family and my girlfriend.

:11:21.:11:24.

A little trip to Paris as a 'welcome back'. It's very nice to have him

:11:25.:11:26.

home. We'll try to keep them here as long

:11:27.:11:33.

as we can. I got to meet my family after the

:11:34.:11:37.

parade, which I am really made up with.

:11:38.:11:43.

The Duke left a lasting impression. Many of the guards here are now

:11:44.:11:59.

looking forward to Christmas leave. A woman had to be rescued from her

:12:00.:12:03.

overturned car after she appeared to attempt to drive across Poole's

:12:04.:12:06.

Twins Sails bridge while it was lifting. Firefighters removed her

:12:07.:12:08.

from her Renault Clio which overturned on the bridge. It's

:12:09.:12:11.

believed operators stopped the lifting process after she drove

:12:12.:12:14.

through a barrier. She's not thought to be seriously hurt.

:12:15.:12:17.

Still to come on South Today: a taste of Yassa, the Gambian dish

:12:18.:12:20.

that this woman is hoping will hit supermarket shelves.

:12:21.:12:26.

An oil company has made an application to put an exploratory

:12:27.:12:30.

well in the South Downs National Park. Celtique Energie say it

:12:31.:12:33.

doesn't want to use the controversial fracking technique at

:12:34.:12:36.

this stage but it won't rule it out as a future possibility. Residents

:12:37.:12:39.

in Fernhurst near Haslemere were already aware of the proposal and

:12:40.:12:42.

say they'll now step up their opposition.

:12:43.:12:44.

Martin Knight's home in Fernhurst looks out over the proposed test

:12:45.:12:48.

drill site. The campaign to try and stop it happening today was being

:12:49.:12:51.

planned by him and his neighbours. Boosted by an earlier visit from

:12:52.:12:54.

their local MP, a one`time supporter of fracking who now says it should

:12:55.:12:58.

not happen here. He was too busy to explain his change of heart, but

:12:59.:13:01.

campaigners say this site is different.

:13:02.:13:05.

If this site is successful then there would then need to be further

:13:06.:13:08.

sites across Sussex to make it commercially viable, so that's the

:13:09.:13:10.

end of the Sussex Weald. Martin Knight's home in Fernhurst

:13:11.:13:20.

looks out over the proposed test drill site. Fernhurst will be the

:13:21.:13:40.

only one of the company's sites within the National Park. It is

:13:41.:13:43.

already a planning application lodged with West Sussex County

:13:44.:13:46.

Council for an exploratory well at Wisborough Green. Next year, killing

:13:47.:13:49.

will begin at Broadford Bridge, the only site where the company has

:13:50.:13:52.

pledged not to use fracking. Celtique Energie, the firm behind

:13:53.:13:55.

the plans say they recognise the importance of the National Park. It

:13:56.:14:01.

is what might follow that worries the people in Fernhurst. The gas is

:14:02.:14:09.

in the deep shale. The only way to get at it is through fracking. This

:14:10.:14:17.

is a way of getting their foot in the door.

:14:18.:14:38.

Basingstoke School has come up with a pioneering way to help pupils who

:14:39.:14:43.

do not have English as their first language.

:14:44.:15:00.

Having a mother tongue that's not English need not be a barrier to

:15:01.:15:06.

learning. Fairfields Primary School has developed an interpreter buddy

:15:07.:15:09.

scheme so children can get on better in the classroom and the playground.

:15:10.:15:18.

The translator and their buddy don't necessarily speak the same language,

:15:19.:15:21.

but it's all about using communication skills and personal

:15:22.:15:22.

experience to help the each other. They're not all bilingual, it's

:15:23.:15:32.

about communication skills, the kids are empathetic, patient. Some of

:15:33.:15:49.

them are also bilingual. In this school alone, 27 languages

:15:50.:15:54.

are spoken. The scheme's been so successful it's being rolled out

:15:55.:15:57.

across Hampshire and now 200 pupils are involved, in 30 different

:15:58.:16:03.

schools in the county. Fairfields has seen more and more pupils

:16:04.:16:05.

volunteering to become young interpreters.

:16:06.:16:09.

I read to them or they read to me and I help them with spellings.

:16:10.:16:18.

I thought it would be nice to help them.

:16:19.:16:26.

The idea has now taken off in other parts of the country too, and

:16:27.:16:27.

abroad. Former Crawley Town manager Richie

:16:28.:17:03.

Barker has emerged as the leading contender to be named as

:17:04.:17:08.

Portsmouth's manager. Barker, seen here in the centre alongside Steve

:17:09.:17:11.

Coppell, was among a group of candidates interviewed this week.

:17:12.:17:14.

Others included Oxford boss Chris Wilder, Exeter's Paul Tisdale and

:17:15.:17:16.

former Pompey manager Steve Claridge. Barker left Crawley last

:17:17.:17:20.

week. An official announcement is expected on Monday.

:17:21.:17:37.

It's FA Cup second round weekend and Oxford stayed alive in the

:17:38.:17:40.

competition with a late extra time winner in their delayed replay at

:17:41.:17:43.

Gateshead last night There were just four minutes remaining at the

:17:44.:17:45.

International stadium when Oxford won a penalty.

:17:46.:17:55.

They are going to be strong. I have no doubts about that. They have come

:17:56.:18:03.

down from the Premier League with a good squad. We expect another tough

:18:04.:18:17.

game. We have not been outplayed. We have lost three games this season

:18:18.:18:23.

so far away from home. I want us to play exciting football. It is a

:18:24.:18:37.

balance that you have to get right. It's FA Cup second round weekend and

:18:38.:18:40.

Oxford stayed alive in the competition with a late extra time

:18:41.:18:44.

winner in their delayed replay at Gateshead last night There were just

:18:45.:18:47.

four minutes remaining at the International stadium when Oxford

:18:48.:18:49.

won a penalty. Deane Smalley scored from the spot, to prevent the

:18:50.:18:53.

dreaded shoot out and put Oxford into a second round tie on Monday at

:18:54.:18:55.

Wrexham. Meanwhile Non`league Salisbury City

:18:56.:18:58.

travel to Port Vale tonight hoping to cause an upset against the league

:18:59.:19:00.

one club. And among other ties, Brackley Town

:19:01.:19:04.

hope to keep their FA Cup journey alive on the road at Macclesfield.

:19:05.:19:10.

Southampton will hope to avoid a fourth consecutive defeat in the

:19:11.:19:13.

Premier League tomorrow they host Manchester City at St Mary's.

:19:14.:19:15.

Wednesday's defeat moved Saints down to eighth in the table, courtesy of

:19:16.:19:19.

their excellent autumn run. But injuries are continuing to bite.

:19:20.:19:21.

Victor Wanyama and Nathanial Clyne join Artur Boruc on the treatment

:19:22.:19:24.

table. Mauricio Pochettino has urged his players to keep believing in

:19:25.:19:29.

themselves. Reading's Alex Danson won her 200th

:19:30.:19:33.

cap as England's women beat China in the quarter finals of the World

:19:34.:19:36.

League Hockey finals. A Georgie Twigg penalty gave England a 1`0 win

:19:37.:19:39.

to set up a semifinal against Australia tomorrow evening. Despite

:19:40.:19:42.

the narrow score line, England, who are captained by Reading's Kate

:19:43.:19:44.

Richardson`Walsh dominated play and missed several chances. Hosts

:19:45.:19:47.

Argentina will play Netherlands in Saturday's other semifinal.

:19:48.:19:53.

Fareham athlete Andy Vernon is targeting a medal for Great Britain,

:19:54.:19:56.

at this weekend's European Cross Country Championships in Serbia. The

:19:57.:19:59.

27`year`old was a convincing winner of the British trial race, and will

:20:00.:20:03.

be looking to at least improve on his 13th place finish at last year's

:20:04.:20:06.

European event. The Isle of Wight's Jess Andrews and Aldershot's Emilia

:20:07.:20:10.

Gorecka in the junior class are also competing this weekend in the

:20:11.:20:11.

women's events. Sitting down to supper, the world is

:20:12.:20:28.

at your table. Italian, Spanish tapas, Indian curry... Friday is

:20:29.:20:49.

pizza night in our house. What about Gambian? The most common dish is

:20:50.:20:59.

Yassa. You may not know it now, but I've been to meet a Gambian woman

:21:00.:21:03.

who lives in Southampton who believes that could be about to

:21:04.:21:07.

change. It makes me feel really amazing

:21:08.:21:11.

because it has been a really long journey. A friend asked me for a

:21:12.:21:26.

recipe and I thought maybe there is a gap in the market. From biochemist

:21:27.:21:35.

to food producer, this woman has made her way through the challenges

:21:36.:21:38.

of the food industry to make her way onto the shelves of this farm shop.

:21:39.:21:45.

She showed me the secrets of making the Gambian dish, Yassa will stop. I

:21:46.:21:54.

have some scotch bonnet chilies here. You only need very little.

:21:55.:22:08.

Growing up, we used to marinate fish and we were really lucky because my

:22:09.:22:12.

grandma had a big yard and fruit trees will stop.

:22:13.:22:24.

Yassa be an everyday meal? It is like lasagne or holidays in

:22:25.:22:36.

Italy. `` Balinese in Italy. The Yassa is barbecued meat or fish.

:22:37.:22:44.

We need to marinate onions. It is a national dish. We eat Yassa to

:22:45.:23:00.

celebrate any event. Usually when I cook I just throw everything in, so

:23:01.:23:09.

coming up with a marinade means trying to experiment and get all the

:23:10.:23:12.

measurements right. My poor husband had to eat Yassa all year.

:23:13.:23:20.

I had to be to four about my weight, as you can imagine I ate a lot of

:23:21.:23:32.

this stuff! What she has done to develop this project and product is

:23:33.:23:48.

amazing. The lady is the boss! It is a family affair at today's

:23:49.:23:53.

tasting, as she reaches out to more people to expand her business. But

:23:54.:24:04.

then something unexpected happened. I am from Waitrose. Very nice to see

:24:05.:24:11.

you. Would you like an appointment with us? I would love it! We thought

:24:12.:24:22.

this Yassa was fantastic. I had a taste. I will make sure that we get

:24:23.:24:31.

you an appointment. That would be fabulous. Thank you very much.

:24:32.:24:52.

That is amazing. She has now heard from the Waitrose buyers and has a

:24:53.:25:05.

meeting. Good luck to her. Andrew Sykes took this photo of the

:25:06.:25:18.

sunrise at Gillotts School in Henley on Thames.

:25:19.:25:20.

Beatrix Warner captured five well`behaved dogs in the Army

:25:21.:25:22.

Training Area around Aldershot. And a heron eyeing up the fish at

:25:23.:25:26.

Bird World in Farnham, photo by Doreen Sheridan. Finally, some

:25:27.:25:31.

sunshine today and tonight we had some increasing cloud. Temperatures

:25:32.:25:42.

tonight will not be as chilly as last night. Down to three Celsius in

:25:43.:25:49.

the countryside. There is still a flood warning in force for

:25:50.:25:58.

Shoreham. Tomorrow morning one or two showers are possible. A slightly

:25:59.:26:04.

drier day. A few showers drifting into the West. Temperatures up to 10
