:03:14. > :03:20.I have to say it is surprisingly small, isn't it? I took a few

:03:21. > :03:24.photographs of it and every morning it looked a bit more like Mount

:03:25. > :03:29.Rushmore. Is the rock difficult to sculpt? It isn't easy, to be honest.

:03:30. > :03:34.It is Slate, which has its challenges. The sculpture will be

:03:35. > :03:41.here because it's quite discreet and also because it is one of the few

:03:42. > :03:45.solid pieces of stone in the area. So it probably won't last forever

:03:46. > :03:54.here? I would hope for ten years, maybe longer. The incoming tide has

:03:55. > :04:04.forced me off the beat so it's time to go up to meet one of the locals

:04:24. > :04:29.vandalism. It is hardly a 30 foot statue of Mickey Mouse, is it? Is it

:04:30. > :04:34.isn't far off. You are trying to get people to come and enjoy the castle,

:04:35. > :04:37.and this is part of it. That's right, it is part of a larger scheme

:04:38. > :04:43.at Tintagel over the next few months. It explores the archaeology

:04:44. > :04:47.of the site because the legend and history are part of the site, it is

:04:48. > :04:52.to bring to life the history of why this beach was really important to

:04:53. > :04:57.the legend. You are worried this will open up the floodgates, so to

:04:58. > :05:00.speak? What worries me is that although the legendary heritage is

:05:01. > :05:08.very important, it isn't as important as the actual factual

:05:09. > :05:13.history of the place. The legend is swamping the history. There is

:05:14. > :05:20.hardly any mention of the 300 years of Cornish royalty that lived there.

:05:21. > :05:25.Where are the details of those? Obviously people are fascinated by

:05:26. > :05:29.Arthur and Merlin, but don't you have a responsibility to address

:05:30. > :05:34.this Cornish history? Exactly, it's really important. We are trying to

:05:35. > :05:37.balance them. What has been here at Tintagel for a while, people think

:05:38. > :05:42.it is King Arthur's Castle and there is no history of what it is, so we

:05:43. > :05:46.are telling the whole story and this carving is one aspect of the scheme.

:05:47. > :05:51.I think people will be for it and against it but hopefully they will

:05:52. > :06:02.come down and enjoy it. Absolutely, I have no doubt they will. Thank

:07:47. > :07:50.Britain. It is called Plates, Mates and Automobiles. We know that you

:07:56. > :08:00.weeks ago, I couldn't do this certain thing, I can't tell you what

:08:01. > :08:07.it is. Four hours on Christmas Day, I have been rehearsing the final

:08:08. > :08:13.four minutes. The finale? Some of my mates are taking part in it. They

:08:14. > :08:18.have been teasing it, they won't tell us what it is, but it sounds

:08:19. > :08:24.like a huge spectacle. If it doesn't work on Monday we won't do it again!

:08:25. > :08:29.It kind of worked OK but we'll see. I wanted to do something that was

:08:30. > :08:37.different, I did not want to say here is a score and so on. It has to

:08:38. > :08:41.be fun and interactive -- scone. There are videos we will show for

:08:42. > :08:47.it. We have a very famous comedian doing the voice. Can we reveal who

:10:06. > :10:10.bit? Is it like, it could go wrong? A while ago I couldn't do it at all

:10:11. > :10:14.in my life. When I told the tour organisers I suggested it and they

:10:15. > :10:19.said, really, if you can pull it off it will be all right. Is it a big

:10:20. > :10:28.tank, with snakes? There are petrol tanks. Ooh. Say no more. A couple of

:10:29. > :10:31.places have sold out, including my hometown, we are all over

:10:32. > :10:37.Manchester, Blackpool, all over the place. Check it out. Because it is

:10:38. > :10:39.called Plates, Mates and Automobiles, I have thought about

:10:40. > :10:45.this little competition that we might do, OK? Pretty out there. By

:10:46. > :10:49.going to try and see who has the most famous friends in their phone.

:11:38. > :11:43.soda cheesecake made possible thanks to the underrated vanilla pod. It is

:11:44. > :11:48.really everything. As Nadiya has found out, her favourite ingredient

:11:49. > :11:52.is anything but boring. When it comes to baking there is one

:11:53. > :11:57.ingredient I never run out of, vanilla. It is the flavourful cream

:11:58. > :12:01.soda, sponge cakes and ice cream. These funny looking things are one

:12:02. > :12:05.of the most complex and versatile flavours on the planet, so I can't

:12:06. > :12:13.understand why anybody would call them plain. These beans, or pods,

:12:14. > :12:16.are refined into vanilla extract here, and this is the senior flavour

:12:17. > :12:24.wrist. Rennella is anything but plain. They start as an orchid. --

:12:25. > :12:28.Rennella. It is a long green bean and it goes through a process of

:12:29. > :12:34.curing and drying and it takes about six months. All of that effort makes

:12:35. > :12:39.vanilla the second most expensive spice in the world behind saffron.

:12:40. > :12:44.They also valuable that there is even a black market for these

:12:45. > :12:49.vanilla pods. Traders go to great lengths to protect their crops from

:12:50. > :12:53.thieves. Tatooine, branding, is something that the farmers who grow

:12:54. > :13:01.the vanilla pods will do while they are growing, to identify them as

:13:02. > :13:04.their own. Why would you turn them into an extract? If you're putting

:13:05. > :13:11.this in a custard, entirely use the entire bean -- preferably use. We

:13:12. > :13:16.would extract the flavour from the bean, and you can use the extract as

:13:17. > :13:22.a liquid into your cake. And this is the vanilla extract. How do we go

:13:23. > :13:26.from this, to this? Similar to how you make a cup of cough it you take

:13:27. > :13:37.the beans, chop them into smaller pieces -- pick-up of coffee. We

:13:38. > :13:46.would hate them up to various temperatures -- a cup of coffee.

:13:47. > :13:49.Then we find out how we separate the flavour compounds from the extract.

:13:50. > :13:55.You will find over 300 different flavour compounds. 300, that's

:13:56. > :14:00.amazing. We can separate the extract into different flavour blocks. You

:14:01. > :14:07.have wooden, smoky and creamy and it's only when they come together

:14:08. > :14:15.that you get the overall impression. When separated, the flavours come as

:14:16. > :14:20.a big surprise. There is a weird wheat. There is a creaminess, I can

:14:21. > :14:27.smell or the boil. My goodness, that's cheese! -- smell the oil.

:14:28. > :14:33.When you put them together, that's vanilla. That gives me an idea to

:14:34. > :14:38.perfect a flavour of my own. I love cream soda flavour and I have had a

:14:39. > :14:44.few attempts at making a syrup by boiling down two litres of cream

:14:45. > :14:49.soda and I have had a lot of burnt pans. Can we reach rate the flavour

:14:50. > :14:54.using the extract? Yes, you look around for the flavour compounds you

:14:55. > :14:59.need to create the lemonade and ice cream profile. Let's have a go.

:15:00. > :15:02.First we blamed together the fruity elements of the cream soda by adding

:15:03. > :15:13.lemon to the mix. Finally we blend in the Manila and

:15:14. > :15:18.the supposedly plain flavour is the one that makes all the difference --

:15:19. > :15:22.vanilla. That is the cream soda I know and love. It smells good in a

:15:23. > :15:27.lab, but does it taste good? Staff from the kitchen have made some

:15:28. > :15:31.doughnuts and cheesecake, using my essence of cream soda. This one

:15:32. > :15:39.coats your mouth, it's all there. It's lovely. It's so good. That

:15:40. > :15:44.smoking is, from the vanilla, and that flavour lasts so much longer in

:15:45. > :15:50.your mouth. You can make the flavour more complex or more creamy. It

:15:51. > :15:55.works well in a desert, especially Yun Wei cake dairy -based desert.

:15:56. > :16:00.It's safe to say that vanilla isn't playing, vanilla is complex and

:16:01. > :16:05.versatile. When I pick up of it bottle of vanilla extract it will

:16:06. > :16:09.look very different to me now. We know you love vanilla and cream

:16:10. > :16:14.soda and tonight you are going to make a recipe that dates back to

:16:15. > :16:19.1852. Why was cream soda invented the first place? This recipe was

:16:20. > :16:23.invented because they banned, in 1852 in America, they banned alcohol

:16:24. > :16:26.consumption because there was too much boozing going on during the

:16:27. > :16:34.day, so they created this recipe using sugar, the basic ingredients,

:16:35. > :16:40.sugar... A little bit of sugar. A tiny bit! If you are on a diet, this

:16:41. > :16:45.is perfect for you! You need to stay hydrated, so lots of water. Lots of

:16:46. > :16:50.water. Do you kind of boil this down? You do, you boil the whole

:16:51. > :16:55.thing down and you use citric acid and cream of tartar, this is not my

:16:56. > :17:02.recipe by the way, and rock salt, and boil the whole thing down, then

:17:03. > :17:07.you add and whisk egg and milk, I know, James is looking at me and

:17:08. > :17:13.thinking, what? ! It doesn't sound appetising at all, does it? It

:17:14. > :17:19.purifies it. You have added a few extra bits to make it palatable.

:17:20. > :17:23.It's not the flavour we are used to, but in 1865 they patented it and

:17:24. > :17:27.used things like vanilla and lemon and pineapple. I've gone a little

:17:28. > :17:32.bit extra to make it more palatable, more like the cream soda we are used

:17:33. > :17:36.to, and added some of the vanilla and lemon. It's always been an

:17:37. > :17:40.evolving thing, it started then and now we are in 2016 and we have ice

:17:41. > :17:47.cream soda, which I will demonstrate now. Newtown chefs, try to follow

:17:48. > :17:52.me, all right? Right? -- you two chefs. You put lemonade in a glass.

:17:53. > :18:02.I will do mind while you do yours. Get some ice cream... Is it just
