:15:49. > :15:53.keep pedalling, I just kept going. We always knew you would make it,

:15:58. > :16:02.I can complete this challenge.". was on the first day. I was hit by
:16:02. > :16:06.the wind and I was hit by incredible landscape, long hills

:16:12. > :16:18.going to get off my bike and push it." That was the point where I got
:16:18. > :16:23.emotional and the cars were coming alongside and shouting, "Come on,
:16:24. > :16:28.you can do it." From then on, I didn't actually doubt that I would
:16:28. > :16:32.never get here. I never doubted it for a second.
:16:32. > :16:37.Some days you would leave in darkness like when you left York
:16:37. > :16:44.and 78 miles you got to Lincoln and it was dark again.
:16:44. > :16:48.A strange existence. It was just that that motion of doing that, 16-
:16:48. > :16:51.and-a-half hours of cycling. You picked up some great
:16:51. > :16:58.passengers? That was just great, the company you have. It was good

:20:53. > :20:58.I've come all the way to Edinburgh to make this lovely stuff,
:20:58. > :21:02.delicious, fruity jam. But being Children in Need, there is a twist.
:21:02. > :21:08.I'm going to go head-to-head with a rather formidable and extremely
:21:08. > :21:13.remarkable opponent. Fraser Doherty is a man who has
:21:13. > :21:18.built a business empire based on jam. At the age of 22, he is one of
:21:18. > :21:23.Britain's most successful young entrepreneurs and he runs a jam
:21:23. > :21:28.making company worth over �2 million. Frazer, why jam? Well,
:21:28. > :21:33.I've always loved jam, but when I was 14, I spent the afternoon
:21:33. > :21:39.making jam with my grandmother and she shared her recipes and I
:21:39. > :21:44.started making jam. I started by knocking on doors and selling my
:21:44. > :21:47.home-made jam door to door and I got a stall at the farmers market
:21:47. > :21:52.and then eventually to the supermarkets.
:21:52. > :21:56.At this local cookery school, we're going to make a jam with the winner
:21:56. > :22:00.decided by a public taste test and we want you to make the winning jam
:22:00. > :22:07.and sell it on to raise money for this year's Children in Need.
:22:07. > :22:11.I'm using a recipe inspired by my nanna, a classic plum jam. But
:22:11. > :22:14.Frazer is going for something more out of the ordinary.
:22:14. > :22:17.I wanted to try and make a pear jam which isn't a normal kind of jam to
:22:17. > :22:24.make. How long will that last? Will that
:22:24. > :22:30.last years? Yeah. Yeah. Although it will probably get eaten quickly
:22:30. > :22:34.because it is delicious. The Ingredients and chopped in the
:22:34. > :22:42.pan, it is time for the boil. Jam is fruit mixed with sugar, the
:22:42. > :22:47.fruit releases a substance called peptin.
:22:47. > :22:52.The temperature is crucial, it happens to be around 105 degrees
:22:52. > :22:58.centigrade. Too hot or too cold, you won't have jam. Just a syrupy
:22:58. > :23:02.mess and there is a test to check. If we've cooked our jams correctly,
:23:02. > :23:06.they should start to set when dribbled on to a cold plate.
:23:06. > :23:10.Look at that. I can actually make patterns with it already. All that
:23:10. > :23:18.remains is for the jam to be poured into sterilised jars and left to
:23:18. > :23:23.set for a couple of hours, ready for the public.
:23:23. > :23:29.So this is it, we are at Edinburgh castle and we are about to find out
:23:29. > :23:35.who is the man with the jam for Children in Need 2011.

:23:40. > :23:47.I like the both of them. Both jams seem to be popular, but I
