0:02:05 > 0:02:08This is Ford Farm and I'm here because we need to find out

0:02:10 > 0:02:13Oh, my goodness. Is that milk?
0:02:13 > 0:02:17We fill the tanks with milk, this is now curds and whey.
0:02:17 > 0:02:19When a special ingredient is added to milk
0:02:19 > 0:02:22it splits into curds and whey.
0:02:22 > 0:02:25Curds are the solid bits and whey is the liquid.
0:02:27 > 0:02:29Once most of the whey has been drained
0:02:29 > 0:02:31it's time to cheddar the curds.
0:02:31 > 0:02:36We cut it with a knife and then we roll the loaf over.
0:02:36 > 0:02:39- Oh, right. And that's cheddaring. - And that's cheddaring.
0:02:39 > 0:02:41- And that is why it's called cheddar cheese.- Absolutely.
0:02:41 > 0:02:45After cutting and turning the curds into blocks, all our hard
0:02:45 > 0:02:49work is undone by this machine which breaks it up again into small
0:02:49 > 0:02:53pieces to make sure the cheese gets an even scattering of salt.
0:02:53 > 0:02:57The curds are then put into moulds to be pressed into shape.
0:02:57 > 0:03:00After four hours of being pressed, our cheese is carefully...
0:03:02 > 0:03:04..very carefully... Come on, cheese!
0:03:04 > 0:03:07..taken out and covered with a layer of lard
0:03:07 > 0:03:09to protect it from drying out.
0:03:09 > 0:03:12It is then wrapped and left to mature for 12 months.

0:03:15 > 0:03:18I've just got one more thing on my to-do list.
0:03:19 > 0:03:23Because this cheese doesn't just sit on the farm for 12 months.
0:03:23 > 0:03:28To give it a unique earthy flavour, it's kept 16 metres underground at

0:22:29 > 0:22:32Let's get going on the petals. Now, to make these beautiful apples,
0:22:32 > 0:22:35they're very sweet and delicious, what we've done is just cover them
0:22:35 > 0:22:38in a little bit of water, a little bit of cranberry sauce,
0:22:38 > 0:22:41plonk them into the microwave for about two to three minutes
0:22:41 > 0:22:43and that will soften them and make them look really beautiful.
0:22:43 > 0:22:46If you don't have a microwave, you can simmer these in the pan
0:22:46 > 0:22:48and it'll still work and make your kitchen smell great.
0:22:48 > 0:22:49Beautiful.
0:22:49 > 0:22:51So let's get going on the petals.
0:22:51 > 0:22:54- I've brushed some egg on here to make it nice and sticky.- Nice.
0:22:54 > 0:22:56And then you grab your little bits of apple.

0:23:01 > 0:23:04A top tip is just to get the curved edge of the apple going over
0:23:04 > 0:23:06the edge of the pastry there.
0:23:06 > 0:23:10That'll give a really good petal effect.

0:23:15 > 0:23:18So I'm making a very easy version of a dish called Welsh rarebit.

0:23:24 > 0:23:27All you need to do is add a beaten egg into the mixture.

0:24:13 > 0:24:16plonk it along this top layer here, like so.

0:24:27 > 0:24:30with cheese, and this is just going to make it nice and sweet.
0:24:30 > 0:24:32So just plonk it along the top. You don't need too much.
0:24:32 > 0:24:35There we go. We've got a bit of cranberry sauce along there.
