0:01:57 > 0:02:00So far, I've taken to the rugby pitch in front of a crowd

0:02:06 > 0:02:10and taken to the skies with the Red Arrows for my Magnificent 7.

0:02:11 > 0:02:14Now I'm in Belfast for my next challenge,

0:02:14 > 0:02:16which is all about getting creative and raising awareness

0:02:16 > 0:02:19for Red Nose Day. And what better way to get noticed

0:02:19 > 0:02:22than in one of these? Kev and Jamie are going to help me out.

0:07:29 > 0:07:32is Hairspray! It's been wowing audiences for ten years.

0:07:33 > 0:07:36One of them stars America's answer to Barney Howard -

0:08:08 > 0:08:11it actually does involve some hair. In the form of wigs.

0:08:11 > 0:08:14Take a look at these - they're amazing things, aren't they?

0:08:16 > 0:08:18- You are the head of wigs.- I am, yes.

0:08:18 > 0:08:20That's a great title, and it means you're in charge of these

0:08:20 > 0:08:23individual designs and wigs that the cast wear as part of the show.

0:08:23 > 0:08:26- That's right.- I think these are less wigs and more works of art.

0:08:26 > 0:08:30You've created some fantastic things in recent years, haven't you?

0:08:30 > 0:08:32We can have a look at some of the wigs that you have made

0:08:32 > 0:08:35- in the past.- Yeah. Things like, that's for one of the Musketeers,

0:08:35 > 0:08:37from Singing In The Rain.

0:08:37 > 0:08:40It's not hair on head, but also hair on lips and chins.

0:08:40 > 0:08:41That's right, facial hair.

0:08:41 > 0:08:45That's for a pantomime dame, for I think it was Robinson Crusoe.

0:08:45 > 0:08:48- Very glamorous that, isn't it? - Great colour.

0:08:48 > 0:08:51That's a pompadour from Singing In The Rain, the film section.

0:08:51 > 0:08:53- It's like a meringue!- Oh, wow.

0:08:53 > 0:08:57And you've got some of the wigs here from Hairspray!

0:08:57 > 0:08:58I want to talk about this one on the end,

0:08:58 > 0:09:01because this is Tracy's wig, isn't it, the lead character.

0:09:01 > 0:09:03I think I could go for that.

0:09:03 > 0:09:06That's actually a lookalike, so when Tracy becomes famous,

0:09:06 > 0:09:07everybody wants to look like her.

0:09:07 > 0:09:10So one of the characters actually recreates that and she goes out

0:09:10 > 0:09:13and she gets a do exactly like Tracy's. So that's hers.

0:09:13 > 0:09:15- So I could get a wig just to look like Barney!- You could!

0:09:15 > 0:09:17- Is that real? - That's a real one, yeah.

0:09:17 > 0:09:18I've been growing it for weeks.

0:09:18 > 0:09:20We've got a male wig here, tell us about this one.

0:09:20 > 0:09:23That's for Pinky Boy, he appears in the Hefty Hideaway

0:09:23 > 0:09:25and helps Edna and Tracy transform.

0:09:25 > 0:09:29Yeah, that's just to show you that guys can wear wigs too.

0:09:29 > 0:09:31Well, you can see by the facial expression,

0:09:31 > 0:09:33I'm loving wearing a wig. It's a great shot. Thank you.

0:09:38 > 0:09:42We can actually see you at work, beavering away on one of these wigs.

0:09:42 > 0:09:45Now, how many hours do you spend creating these masterpieces?

0:09:45 > 0:09:49Er, they can take a couple of hours to do.

0:09:49 > 0:09:52A lot of it is backcomb, and a lot of hairspray.

0:09:52 > 0:09:55- Hence the name Hairspray! - It makes sense!

0:09:55 > 0:09:59But yeah, especially that one there, that's, again, all backcomb.

0:09:59 > 0:10:02Some have got cages in to keep them upright so that the dancers...

0:10:02 > 0:10:05Like this one here, it's like a sculpture, isn't it?

0:10:05 > 0:10:08- Incredible piece of artwork. - It's very light as well.

0:10:08 > 0:10:10If it was all hair, it would be quite heavy.

0:10:10 > 0:10:13- So that's just hair wrapped around a cage.- Yeah.

0:10:13 > 0:10:15What an amazing job you've got. Thank you for showing us.

0:10:26 > 0:10:29it's when people in Wales celebrate the patron saint of Wales

0:10:29 > 0:10:31and do all things Welsh.

0:10:33 > 0:10:36St David's Day marks the death of the patron saint of Wales

0:10:36 > 0:10:38over 1,500 years ago.

0:10:38 > 0:10:41We don't know a lot about him, but we do know he was a monk.

0:10:41 > 0:10:44He even founded a monastery in around 550 AD,

0:10:44 > 0:10:48in the UK's smallest city, St David's in Pembrokeshire.

0:10:48 > 0:10:51People across the globe celebrate his life on 1 March

0:10:51 > 0:10:53and celebrate Welsh culture.

0:10:53 > 0:10:56Many wear national symbols like daffodils and leeks,

0:10:56 > 0:10:59and the Welsh red dragon flag is flown everywhere.

0:10:59 > 0:11:01Celebrations include parties and parades,

0:11:01 > 0:11:06wearing national dress and playing music in Eisteddfod concerts.

0:11:06 > 0:11:07Another great thing about St David's Day

0:11:07 > 0:11:11is that it's a brilliant excuse to cook and eat tasty Welsh dishes.

0:11:31 > 0:11:34and I came back to Wales to settle and opened a cookery school.

0:11:34 > 0:11:38Very nice. You're here today to talk to us are about a traditional dish

0:11:38 > 0:11:40- called Welsh rarebit.- I am indeed.

0:11:40 > 0:11:42- Do you know what it is and where it comes from?- I do.

0:11:42 > 0:11:45A little bit of history. I guess it all started in a Welsh farmhouse,

0:11:45 > 0:11:48where cheese was been made on the premises,

0:11:48 > 0:11:50and a slab of cheese would be taken for supper

0:11:50 > 0:11:53and roasted on an open fire, pre-cooker days.

0:11:53 > 0:11:55They didn't have cookers back in the day.

0:11:55 > 0:11:58And then it would just be melted. So it's "caws pobi", roasted cheese.

0:11:58 > 0:12:01- Caws pobi, that sounds bendigedig. - It is bendigedig, well done!

0:12:01 > 0:12:04Which is Welsh for fantastic. What is Welsh for hello?

0:12:04 > 0:12:06Well, it's the afternoon now, so it's "prynhawn da".

0:12:08 > 0:12:10Hi, welcome to the show, our foodies.

0:12:10 > 0:12:13- And also our kitchen helpers. - They are.

0:12:13 > 0:12:16They'll be busy grating cheese, some lovely Welsh cheese,

0:12:16 > 0:12:18- and also some lovely leeks. - It's not the first time.

0:12:18 > 0:12:21They are proper foodies, chefs themselves.

0:12:21 > 0:12:23We've got photos of them at home actually making stuff.

0:12:23 > 0:12:25There's Nicholas making some spuds.

0:12:25 > 0:12:27Wearing a fantastic jumper.

0:12:29 > 0:12:31He didn't really make them, he's just sort of stirring them.

0:12:47 > 0:12:50- Things that I never thought I'd say on telly.- That's fantastic.

0:12:50 > 0:12:53- Now, the leek of course is a Welsh symbol, isn't it?- It is.

0:12:53 > 0:12:56We're greedy in Wales. We've got the daffodil,

0:12:56 > 0:12:59the ladies wear the daffodil, and the gents wear a little leek.

0:12:59 > 0:13:03Back in the day, in battle days, apparently it all came about

0:13:03 > 0:13:07because they needed to spot the Welsh from the opposition.

0:13:07 > 0:13:10- So the Welsh guys wore a leek in their hat.- That's brilliant.

0:13:10 > 0:13:12I thought they fought with leeks -

0:13:12 > 0:13:14that would have been funny, wouldn't it?

0:13:14 > 0:13:17Let's start. Welsh rarebit, we've got grated cheese, grated leeks,

0:13:17 > 0:13:20other bits we'll get to in a minute. What have you started?

0:13:20 > 0:13:23OK, so we've heated the milk, and then we put in some mustard.

0:13:23 > 0:13:25Which really raises the flavour.

0:13:25 > 0:13:27And then Matthew grated up some lovely leeks,

0:13:27 > 0:13:29he's just popped those in there,

0:13:29 > 0:13:32and we're just going to heat those gently until they go soft.

0:13:32 > 0:13:35- OK.- And then, we need a ton of cheese.- A ton of cheese!

0:13:35 > 0:13:37- That's a lot of cheese.- Ready, guys?

0:13:37 > 0:13:40- James, how are you getting on with the grating?- Good.- Yeah?

0:13:40 > 0:13:42Can we use any of that?

0:13:42 > 0:13:45We've got about half an hour before the show closes.

0:13:45 > 0:13:47- Shall we use that big bowl over there?- I think so.

0:13:47 > 0:13:51- Do you want to bring that over? - Thanks very much. Shall tip in?

0:13:51 > 0:13:54- I'll tip, you stir, Matthew. Is that a deal?- You be chief stirrer.

0:13:54 > 0:13:56- Does it all go in here? - Yeah, all of it.

0:13:56 > 0:13:59Now, obviously, Welsh rarebit is the title of this dish.

0:13:59 > 0:14:02Does that mean that everything that's going in is actually Welsh?

0:14:02 > 0:14:03We like to think so, yeah.

0:14:03 > 0:14:05I mean, cheese is the main thing, obviously.

0:14:05 > 0:14:07I'm just going to melt this down now.

0:14:07 > 0:14:10And, you know, very, very proud to say that Welsh cheese is the best.

0:14:10 > 0:14:13Absolutely! We like to make statements like that.

0:14:13 > 0:14:15OK, so that's the first step. We've got the cheese, the mustard,

0:14:15 > 0:14:17the milk, all stirring, and the leeks.

0:14:17 > 0:14:20So we melt this down. We don't want to boil the cheese at this stage,

0:14:20 > 0:14:22otherwise it separates and looks a bit yucky.

0:14:22 > 0:14:25But it can be saved by a little flour.

0:14:25 > 0:14:27So in a minute we're going to add the flour.

0:14:27 > 0:14:29I'm going to ask my lovely helper here.

0:14:29 > 0:14:32- There you go, Charlotte, that's your job.- Charlotte, you can do this.

0:14:32 > 0:14:35- How much do you put in?- Two spoons we just put two spoons in there.

0:14:35 > 0:14:37And this is to thicken it up, is it?

0:14:37 > 0:14:39Thickens it and holds the whole thing together.

0:14:39 > 0:14:41That's exactly what we want to do.

0:14:41 > 0:14:44- How do you say "holds together" in Welsh?- Oh, gosh, I have no idea.

0:14:44 > 0:14:46- Holdy-togethero.- Stickio.- Stickio.

0:14:47 > 0:14:50It is really just a sort of posh version of cheese on toast,

0:14:50 > 0:14:52isn't it? But we're giving this a bit of a twist.

0:14:52 > 0:14:54Not just using the standard ingredients,

0:14:54 > 0:14:55all sorts of other things

0:14:55 > 0:14:57- like chutneys and tomatoes and mushrooms.- Yeah.

0:14:57 > 0:15:00The whole idea is you can make a lot of it,

0:15:00 > 0:15:02you can keep it in the fridge for about three days,

0:15:02 > 0:15:05but you can take it out and spread it thickly on toast,

0:15:05 > 0:15:06and then you can have fun topping it

0:15:06 > 0:15:08with your favourite things, basically.

0:15:08 > 0:15:12You've done this before, Charlotte, that is an amazing stirring action.

0:15:12 > 0:15:14OK, do you want to come and add some egg?

0:15:14 > 0:15:17James? I thought that was orange juice before.

0:15:17 > 0:15:20- You nearly drank it!- I know. Can you imagine?- All of it?

0:15:20 > 0:15:23- All of it, James. Fantastic.- That's the great thing about cooking,

0:15:23 > 0:15:26it's just chucking things into a pan and it's like a magic trick.
