:09:15. > :09:18.these. Peas! The UK loves peas. With farms growing more than 2 billion

:09:19. > :09:22.portions per year. Which is incredible. But what's even more

:09:23. > :09:28.incredible is the race against time it takes to harvest them. A race

:09:29. > :09:32.that starts very early in the morning. I'm here in Lincolnshire in

:09:33. > :09:38.one of the biggest pea harvesting farms in the UK to help explain to

:09:39. > :09:45.you how peas go from here to your dinner plate. To help do that is pea

:09:46. > :09:49.grower, farmer and pea Guru Stephen Francis. Most of the 9000 peas that

:09:50. > :09:54.the average person eats in Britain are frozen. To get them in the

:09:55. > :09:59.freezer tasting as good as possible, Stephen's farm don't mess around. We

:10:00. > :10:04.are here to harvest these peas. As soon as they start rolling and the

:10:05. > :10:10.pot brakes, those particular peas Busby frozen in 150 minutes to

:10:11. > :10:15.retain the flavour. How do they do that? I'm going to follow the pea

:10:16. > :10:24.every step of the way. Time starts now. First up, picking. The guys

:10:25. > :10:32.here could pick their 5000 acres by hand, or... They could use some

:10:33. > :10:40.serious technology. This harvester can pick more than 300 peas every

:10:41. > :10:44.single second! I'm getting a peas of the action! We are against the clock

:10:45. > :10:48.to get them to the factory in time. We've got to be as efficient as we

:10:49. > :10:52.possibly can. You're almost trying to make sure you're using the full

:10:53. > :10:57.width of the harvester every single time you go up and every single time

:10:58. > :11:04.you go down. This bad boy doesn't just pick the peas, it sucks them

:11:05. > :11:08.out of their pods giving us the little green balls we all know and

:11:09. > :11:12.love. I've genuinely enjoyed watching you drive this thing. Would

:11:13. > :11:22.be possible for me to sit in the driver 's seat? Not a problem. Your

:11:23. > :11:26.harvesting peas! Keep it straight. The reason I can't talk if this is

:11:27. > :11:32.like when you first learn to ride a bike. It takes all of your

:11:33. > :11:39.concentration. Here's what you've been harvesting! That is interactive

:11:40. > :11:45.harvesting! I've literally just harvested that and you're now seeing

:11:46. > :11:48.it on Blue Peter! Mum, I just harvested some peas. Now we are

:11:49. > :12:00.going to take this lot over to the factory. One hour gone and the peas'

:12:01. > :12:05.journey has only just begun. They have to be prepared in the biggest

:12:06. > :12:09.factory I've ever seen. Stewart can show me what happens here, after he

:12:10. > :12:14.ticks me in a wicked hairnet! This is where we try and get rid of any

:12:15. > :12:18.of the material that's come off the field and cleaned up before it goes

:12:19. > :12:24.into the branching and freezing operations. I take it that's inside?

:12:25. > :12:31.Can we go there now? You certainly can. Once cleaned the peas boiled so

:12:32. > :12:35.they are fresh for freezing. This happens as quickly as possible in a

:12:36. > :12:42.noisy part of the factory. What is going on here? The peas are being

:12:43. > :12:52.cleaned, blanched which seals in the vitamins and flavours. To freeze

:12:53. > :13:00.this many peas you need a serious freezer. I genuinely feel like I'm

:13:01. > :13:06.in the North Pole! This machine gives them the sort of treatment

:13:07. > :13:29.they would be proud of in the film Frozen!

:13:30. > :13:48.The work at this farm is really un-pea-lievable. This is a world

:13:49. > :13:53.record show, so I am not finished there. There is a pea world record

:13:54. > :14:00.set with the number of peas eating with chopsticks in one hour. That

:14:01. > :14:05.number is 7000. Off we go. I have had no practice for this,

:14:06. > :14:12.whatsoever. Although, that has never stopped me before. But it soon

:14:13. > :14:17.becomes clear, I am well off the record pace. So I am not a record

:14:18. > :14:30.holder, but I am not bothered, I have had such a good day. From the

:14:31. > :14:33.farm, to your plate at home, peasey. That wasn't an official world

:14:34. > :14:41.record, but there will be another one in the studio in precisely seven
