0:01:36 > 0:01:39What is it in food that we are told is unhealthy?

0:01:39 > 0:01:41- What do we eat too much of?- Fat.

0:01:41 > 0:01:43- Fat. Anything else?- Sugar.

0:01:43 > 0:01:46Sugar. You've got to watch out for how much sugar you eat.

0:01:46 > 0:01:49So, which of the foods we enjoy have too much sugar and fat in them?

0:01:49 > 0:01:51- Chocolate.- Yeah, chips.

0:01:51 > 0:01:53Burgers. Yeah.

0:01:53 > 0:01:55Are these the foods that we really love?

0:01:55 > 0:01:58- Yeah.- Yeah, they're good stuff.

0:01:58 > 0:02:01I want to try and work out why we love those foods so much. OK?

0:02:01 > 0:02:05I want to see also if we can tell how much fat and sugar is in them.

0:02:05 > 0:02:08- OK. Are you up for this?- Yeah.

0:02:08 > 0:02:10Having a proper breakfast is important. Many people think

0:02:10 > 0:02:14of cereal as being a healthy choice, but some cereals contain surprising

0:02:14 > 0:02:18amounts of sugar, which makes them less healthy than you first think.

0:02:18 > 0:02:22Here we are in the magical world of cereal.

0:02:22 > 0:02:23How much in this country

0:02:23 > 0:02:26do you reckon we spend on cereal every year?

0:02:26 > 0:02:28£2 million?

0:02:28 > 0:02:30£3 million?

0:02:38 > 0:02:42Shall I tell you how much? We spend £1 billion on cereal every year.

0:02:42 > 0:02:46It's almost £1.5 billion.

0:02:46 > 0:02:50That's enough cereal to fill up Buckingham Palace twice over.

0:02:50 > 0:02:55Some people think that cereals have too much sugar inside of them.

0:02:55 > 0:02:57What we're going to do is try to work it out.

0:02:57 > 0:03:00See if there are some surprises lurking in these boxes.

0:03:00 > 0:03:02We're going to sort the cereals into three types -

0:03:02 > 0:03:05Low sugar, less than five grams per 100 grams.

0:03:05 > 0:03:10Medium sugar, between 5 and 15 grams per 100 grams

0:03:10 > 0:03:13and high sugar, which is over 15 grams of sugar

0:03:13 > 0:03:14in every 100 grams of cereal.

0:03:14 > 0:03:17So, we have everything laid out here. What is the

0:03:17 > 0:03:21first thing you notice about the three different groups you have got?

0:03:21 > 0:03:25The high sugars are aimed at kids, because they have lots of cartoons

0:03:25 > 0:03:27or they might sell toys?

0:03:27 > 0:03:30They're eye-catching.

0:03:30 > 0:03:33There's less on the low sugar ones and not that much on medium,

0:03:33 > 0:03:36- but a lot of high ones.- Exactly.

0:03:36 > 0:03:39There are masses of high sugar cereals and only how many low sugar?

0:03:39 > 0:03:44- Three.- Three! I would have thought it would have been more split.

0:03:44 > 0:03:47Let's have a look at thee at the low sugar ones first of all.

0:03:47 > 0:03:49Do you eat these kind of things?

0:03:49 > 0:03:52- Some of you?- Sometimes. - You're not very keen.

0:03:52 > 0:03:55What would you do once you put them in the bowl, you add some milk,

0:03:55 > 0:03:58- would you add anything else to it? - Sugar.- Sugar.- Fruit.

0:03:58 > 0:04:01The thing about adding all those sugars to a cereal,

0:04:01 > 0:04:03you know what you are adding.

0:04:03 > 0:04:06Some of these other ones seem to have it hidden away.

0:04:06 > 0:04:09Let's take a look at the medium sugar ones.

0:04:09 > 0:04:12When we look at these on the table,

0:04:12 > 0:04:14do you think that is a sugary snack?

0:04:14 > 0:04:15Or do you think it's healthy?

0:04:15 > 0:04:18I'm looking at Corn Flakes, what do you reckon,

0:04:18 > 0:04:19- is that a healthy breakfast? - Healthy.

0:04:19 > 0:04:21It is pretty healthy, isn't it?

0:04:21 > 0:04:25- Did you think there was added sugar in Corn Flakes?- No.- It is weird.

0:04:25 > 0:04:27Where have they put the sugar in there?

0:04:27 > 0:04:29They are flakes of corn, aren't they?

0:04:29 > 0:04:31The amount of sugar in some of the cereals here

0:04:31 > 0:04:34is equivalent to the amount of sugar

0:04:34 > 0:04:38- in these...- Wow!

0:04:38 > 0:04:40Iced buns! Who likes an iced bun?

0:04:40 > 0:04:43- Me!- Does that surprise you?

0:04:43 > 0:04:48Yeah. When you think of an iced bun, you think lots of sugar.

0:04:48 > 0:04:50It's a naughty trick. That's something that you have

0:04:50 > 0:04:53at the end of the day if you've been really good , it's a treat.

0:04:53 > 0:04:56I think we ought to have a treat. You've been good.

0:04:56 > 0:04:59- I shouldn't be having these. - They feel quite naughty, don't they?

0:05:10 > 0:05:13- Children.- They are aimed at cool kids, aren't they?

0:05:13 > 0:05:17- Tell me about the packaging and what you can see here.- The cartoons.

0:05:17 > 0:05:21- Big, bold writing.- They're quite attractive things, aren't they?

0:05:21 > 0:05:28Do you think it's a bit naughty using those cartoons, free offers

0:05:28 > 0:05:31and toys? Why is it naughty, do you think?

0:05:31 > 0:05:35Because they want you to buy their things.

0:05:35 > 0:05:37They want you to spend your money on their product.

0:05:37 > 0:05:40Let's have a look at another food

0:05:40 > 0:05:43that is as sugary as these ones here, these three cereals.

0:05:43 > 0:05:47Amazingly, these are as sugary as...

0:05:47 > 0:05:49- Wow!- What is that?

0:05:49 > 0:05:53- Shortbread biscuits.- Shortbread biscuits, covered with sugar!

0:05:53 > 0:05:55But is that the sort of thing you would normally have

0:05:55 > 0:05:57- for breakfast on its own?- No.

0:05:57 > 0:05:58It's surprising, isn't it?

0:05:58 > 0:06:03Incredibly, some cereals are even more sugary than shortbread.

0:06:03 > 0:06:05Let's have a look at the big guys.

0:06:05 > 0:06:10These are the highest sugar cereals in our bunch.

0:06:10 > 0:06:16Some of these have as much sugar in as these...

0:06:23 > 0:06:25What would you think if you had a breakfast of these?

0:06:25 > 0:06:27They wouldn't allow me to have that.

0:06:27 > 0:06:29- Why not?- Because they're too sugary.

0:06:29 > 0:06:33So, what we need is a visual way of showing how much sugar is in

0:06:33 > 0:06:36all of these different cereals. We've got the low sugar cereal.

0:06:36 > 0:06:40The medium sugar cereal and the high sugar cereal.

0:06:40 > 0:06:43Luckily, we have a scientist. Our chemist, Rosie.

0:06:43 > 0:06:48She's got a brilliant way of showing in a very short amount of time,

0:06:48 > 0:06:52how much energy is packed by these different cereals,

0:06:52 > 0:06:54but we will need some of these.

0:06:54 > 0:06:56OK.

0:06:56 > 0:06:58Pop those on.

0:06:58 > 0:07:00Rosie is going to burn our cereals

0:07:00 > 0:07:05by adding a chemical to each of them, followed by a splash of milk.

0:07:05 > 0:07:08Sugar contains a lot of energy which burns quickly.

0:07:08 > 0:07:12So the more sugar in the cereal, the greater the flame given off.

0:07:12 > 0:07:15The low sugar cereal will release its energy more slowly

0:07:15 > 0:07:20and won't burn as intensely, that's the one we are starting with.

0:07:26 > 0:07:29I think that would show there is not very much energy.

0:08:25 > 0:08:28So, we're going to play a little game, to see if we can work out

0:08:43 > 0:08:47Here, we have two very fine meals.

0:08:49 > 0:08:52Over here, we have chicken and rocket sandwich.

0:08:52 > 0:08:56So that is chicken in the middle there, a bit of mayonnaise,

0:08:56 > 0:08:58you need to choose the less fatty of the meals.

0:08:58 > 0:09:02Which one will Natasha choose? Can she spot the lowest-fat meal

0:14:55 > 0:14:59So, so, 24% of people in the UK are obese.

0:15:09 > 0:15:14which is two-and-a-half teaspoons of mayonnaise every day,

0:15:14 > 0:15:17over a week, you would put on a quarter of a kilo.

0:15:17 > 0:15:20If you kept eating at that rate, by my age,

0:15:20 > 0:15:24you would all end up weighing 349 kilos!

0:15:24 > 0:15:28Yeah. That's big, isn't it? It's also very inconvenient.

0:16:22 > 0:16:26to mayonnaise, which won't transform us into tubbies.

0:16:29 > 0:16:32- Hello, Benny.- Hello.- Now, all of the great-tasting lunches

0:16:32 > 0:16:35we tried had loads of mayonnaise in. Can you make something

0:16:35 > 0:16:38that tastes great, but doesn't have anyway mayonnaise in?

0:16:38 > 0:16:40I think we can. We do a chicken wrap.

0:16:40 > 0:16:43Instead of using mayonnaise we use yoghurt instead.

0:16:43 > 0:16:44So, we've got flat bread.

0:16:44 > 0:16:48The first thing we do is take the aioli, which is mayonnaise without

0:16:48 > 0:16:54the oil, which is made from yoghurt, garlic, there's some egg in there.

0:16:54 > 0:16:56Each gastronut gets their own piece of flat bread

0:16:56 > 0:16:59and some of Benny's mayo substitute.

0:16:59 > 0:17:03Next, they tear up fresh lettuce and add lemon juice.

0:17:32 > 0:17:35That's what I thought when I was first thinking about

0:17:37 > 0:17:39But when you taste it, it gives it a fresh explosion.

0:17:39 > 0:17:42After the mint they add chopped tomatoes,

0:17:42 > 0:17:44and then it's time to get wrapping.

0:17:44 > 0:17:47- How do they look? - Very nice.- Very tasty.

0:17:47 > 0:17:49Well, the proof is in the pudding.

0:18:48 > 0:18:54We're going to take a little bit of cereal and put it into our milk.

0:18:54 > 0:18:56Something we do every morning at breakfast.

0:19:06 > 0:19:08Well, no, actually.

0:19:11 > 0:19:14All it is is magnetism.

0:19:14 > 0:19:18What we have here is a good example of magnetic food.

0:19:18 > 0:19:19There is a little bit of iron that's

0:19:19 > 0:19:23added to our cereal to make it a little more nutritious.

0:19:23 > 0:19:28As a result, the cereals actually attract,

0:19:28 > 0:19:30but we can also repel food with a magnet.

0:20:29 > 0:20:32This goes back to the days when our ancestors were living in caves,

0:20:32 > 0:20:34many, many thousands of years ago,

0:20:34 > 0:20:38they were naturally programmed to go out and find sweet foods

0:20:38 > 0:20:42and fatty foods as they needed them to be able to have the energy to hunt

0:20:42 > 0:20:45their food, stay warm in the winter and to be healthy.

0:20:45 > 0:20:47What did our ancestors eat?

0:20:47 > 0:20:50Two kinds of things.

0:20:50 > 0:20:53Firstly the meat that they would hunt and kill.

0:20:53 > 0:20:56They would eat all of the meat and all the fat.

0:20:56 > 0:21:00To supplement the diet they would find things like this plate here.

0:21:00 > 0:21:03We can see natural fruits.

0:21:03 > 0:21:06Wild fruits and berries.

0:21:06 > 0:21:09Nuts and seeds growing wild in the undergrowth.

0:21:09 > 0:21:13They would have been fishing if they lived near to the sea

0:21:13 > 0:21:15and digging in the ground, looking for roots

0:21:15 > 0:21:18and tubors which were sweet vegetables,

0:21:18 > 0:21:21giving them the energy that they needed to hunt every day.

0:21:21 > 0:21:23Combined that was a healthy diet.

0:21:23 > 0:21:25So, our ancestors did lots of hunting.

0:21:25 > 0:21:27What did they catch, what was the food they were after?

0:21:27 > 0:21:30Probably any wild animal.

0:21:30 > 0:21:34The animals that the cavemen were eating had actually a low fat content

0:21:34 > 0:21:37compared to the meat we see in our supermarkets today.

0:21:37 > 0:21:40Domesticated animals farmed today don't get to run around in the wild

0:21:40 > 0:21:45like those animals did, they are fed much more concentrated foods,

0:21:45 > 0:21:49so they build up body fats more than the wild animals would have.

0:21:49 > 0:21:51So, what is the big difference between the two pieces of meat?

0:21:51 > 0:21:55- You can see the fat more. - You can see the fat there.

0:21:55 > 0:21:57This is venison, a wild meat.

0:21:57 > 0:22:00It's not kept in a small space.

0:22:00 > 0:22:03This is from pork, a much less active animal.

0:22:03 > 0:22:05It grows a big,

0:22:05 > 0:22:10big layer of fat on the side of it, but that is almost pure meat.

0:22:10 > 0:22:11Have a feel of that.

0:22:11 > 0:22:15The reason it's so much darker is the muscle is denser.

0:22:15 > 0:22:17It has to use the muscles much more.

0:22:17 > 0:22:19So, if we're eating much more fat like this now,

0:22:19 > 0:22:22does that mean that our bodies are different

0:22:22 > 0:22:24from that of our old ancestors?

0:22:24 > 0:22:26We're carrying more body fat as a human race now.

0:22:26 > 0:22:30Our ancestors were very, very active. They were burning off the fat

0:22:30 > 0:22:33that they were eating. Whereas today we are not going out hunting,

0:22:33 > 0:22:37are we, we are just popping down to the supermarket, so we don't need to

0:22:37 > 0:22:40use up as much energy as they did.

0:22:45 > 0:22:51That's about how much extra fat is on a human male these days compared to

0:23:24 > 0:23:27Nowadays we can get hold of a pizza or bar of chocolate whenever we want.

0:23:27 > 0:23:31So we don't have to store all that energy in case the food runs out.

0:23:31 > 0:23:34Our bodies don't realise that, though. So our bodies are still

0:23:34 > 0:23:38storing fat whenever it can in case our food runs out.

0:23:38 > 0:23:41As long as you are active and burning up the food you are eating,

0:23:41 > 0:23:43you can eat fat no problem at all.

0:23:43 > 0:23:47Your body needs it to be healthy, but it's about getting the balance right.
