0:30:27 > 0:30:31I'll show you how. We put our hand on top of the pastry

0:30:31 > 0:30:35and we cut a line down the side like this.

0:30:35 > 0:30:38And then you can turn it around very carefully

0:30:38 > 0:30:42and cut down like that, in a straight line.

0:30:42 > 0:30:44We have some finishing touches.

0:30:44 > 0:30:48We need to make a slit in the top with our knife. Like this.

0:30:48 > 0:30:50When that haddock puff cooks in the oven,

0:30:50 > 0:30:53it's going to get very hot inside.

0:30:53 > 0:30:58The slit let's all be steam come out. A bit like a train.

0:30:58 > 0:31:04ALL: Choo-choo. Chugga-chugga, chugga-chugga, choo-choo.

0:31:04 > 0:31:08And the next thing we need to do is a little bit of brushing again.

0:31:08 > 0:31:11It's going to make it really lovely and shiny.

0:31:11 > 0:31:16The last thing we need to do is pick it up very carefully

0:31:16 > 0:31:20and put it onto your tray.
