0:02:46 > 0:02:49We need to put that to the side, and we're going to use our dredger,

0:02:49 > 0:02:54which has got some flour in it, to sprinkle it all over our mats.

0:02:54 > 0:02:58- After three! - EVERYONE: One, two, three!

0:02:58 > 0:03:02- Woo-hoo!- Woo-hoo! Snow!

0:03:02 > 0:03:04And stop, everybody!

0:03:04 > 0:03:06Make sure that you don't use all the flour,

0:03:06 > 0:03:08because we might need it later on.

0:03:08 > 0:03:11So, next we're going to do some rolling,

0:03:11 > 0:03:13but before we do rolling with the rolling pin,

0:03:13 > 0:03:15we're going to do a little rolling warm-up.

0:03:15 > 0:03:18So, everybody, roll up...

0:03:19 > 0:03:22and roll it all around. Woo!

0:03:52 > 0:03:55That's it! And then we're going to take our hands,

0:03:56 > 0:04:01and stretch our fingers as wide as you possibly can.

0:04:04 > 0:04:07And we're going to put these on our rolling pin,

0:04:07 > 0:04:11on top of our shortcrust pastry, and we're going to roll it out.

0:04:14 > 0:04:17Oh, look, it's sticking!

0:04:17 > 0:04:20That means I need to put a little bit more flour on.

0:04:21 > 0:04:24And keep rolling until you've got a long strip.

0:04:24 > 0:04:27And then we're going to turn it round the other way.

0:04:27 > 0:04:29And roll again.

0:04:30 > 0:04:34And now that we've got our shortcrust pastry all rolled out,

0:04:34 > 0:04:40we need to make four wiggly circles using our pastry cutter.

0:04:40 > 0:04:43Hey, look, if you put it like that, it's like a bracelet!

0:04:43 > 0:04:47So, we put it on the pastry, push it down, and...

0:04:47 > 0:04:50wiggle it all around.

0:04:50 > 0:04:51Wiggle, wiggle, wiggle!

0:04:51 > 0:04:54- Wiggle, wiggle, wiggle!- Mine's done!

0:04:54 > 0:04:57And then take it off, and we do another one next to it.

0:04:57 > 0:05:00So, put it on the pastry, push it down, and wiggle it all around!

0:05:00 > 0:05:04And then one underneath, and another one. So we've got four.

0:05:04 > 0:05:08And then I want you to take the rest of this pastry away.

0:05:08 > 0:05:13And then, we're going to take our little wiggly pastry circles,

0:05:13 > 0:05:16we're going to put them into our muffin cases like this.

0:05:16 > 0:05:19We lie it on top, and then we use our fingers to tuck it in,

0:05:19 > 0:05:22- like it's going to bed!- Good night!

0:05:22 > 0:05:25I like all these different-coloured muffin cases, don't you?

0:05:25 > 0:05:27- Yeah, they're really pretty. - What ingredient

0:05:27 > 0:05:30are we going to need next for our Crumble Top Tarts?

0:05:30 > 0:05:36What is next? Well, let us see if you can guess what it could be.

0:05:41 > 0:05:48So, we've got lemon curd, some peas, and...orange juice.

0:05:48 > 0:05:51Hmm. What would you choose for our Crumble Top Tarts?

0:05:51 > 0:05:53OK, I'll give you some clues,

0:05:53 > 0:05:56and then you can try and guess what it might be.

0:05:56 > 0:06:00The special ingredient is made from fruit.

0:06:00 > 0:06:01Peas?

0:06:01 > 0:06:04Peas are a vegetable! They're definitely not made from fruit!

0:06:04 > 0:06:06So we can take that one away.

0:06:08 > 0:06:10OK, here's another clue.

0:06:10 > 0:06:13So, the special ingredient is made from fruit,

0:06:13 > 0:06:15and it's also a fruit that is yellow.

0:06:15 > 0:06:20Well, orange juice comes from oranges, and oranges are orange.

0:06:20 > 0:06:23So we can definitely take that one away, too, can't we?

0:06:23 > 0:06:25There we go.

0:06:25 > 0:06:28Which leaves us with lemon curd!

0:06:28 > 0:06:31We're going to need some lemon curd in our Crumble Top tarts,

0:06:31 > 0:06:33and I went to find some.

0:06:40 > 0:06:44I've come to a factory in Tiptree in Essex,

0:06:44 > 0:06:47to find out how lemon curd is made, so let's go and have a look.

0:06:49 > 0:06:53The first thing you have to do is scrape the skin off the lemon,

0:06:53 > 0:06:55like this.

0:06:55 > 0:06:57And it's called zesting.

0:06:57 > 0:07:02And this zest is going to add lots of flavour to the lemon curd.

0:07:02 > 0:07:08The next step is juicing, on this colourful little juicing machine.

0:07:09 > 0:07:12Wow! Look at this giant block of butter!

0:07:12 > 0:07:17This is the next ingredient and we need to slice it up.

0:07:20 > 0:07:23The butter, the lemon juice and the lemon zest

0:07:23 > 0:07:28all get added into this big machine, which is like a giant kettle.

0:07:28 > 0:07:31Not forgetting the egg, of course.

0:07:31 > 0:07:34And then everything gets heated up and cooked.

0:07:35 > 0:07:40And now's here the fun part. We're going to fill up

0:07:40 > 0:07:43all of these jars with the lemon curd.

0:07:43 > 0:07:46Carefully does it...

0:07:46 > 0:07:50The jars then get put onto this big machine

0:07:50 > 0:07:53where they get their lids put on.

0:07:53 > 0:07:56And here's the lemon curd all ready to use.

0:07:56 > 0:08:02It's going to taste so good in our Crumble Top Tarts.

0:08:02 > 0:08:07Making lemon curd is so much fun. I really enjoyed doing it.

0:08:07 > 0:08:11And look, I've got the lemon curd here to use in our recipe.

0:08:11 > 0:08:15- We're going to play the Two Spoon Game.- Oh!

0:08:15 > 0:08:20- So we need two little spoons. Hello, spoons.- Hello!- Hello!

0:08:20 > 0:08:25And we're going to use one of them to scoop up the lemon curd

0:08:25 > 0:08:30and then we're going to use the other one to slide it off.

0:08:30 > 0:08:34Slide... Oh, look at that!

0:08:34 > 0:08:40- Ew, it's all sticky. - Mine is so sticky.

0:08:40 > 0:08:42- Are we ready for the next bit? - Yes!

0:08:42 > 0:08:47Over here, we've got a bowl of butter, which I've melted for you.

0:08:47 > 0:08:52It's just the right temperature for our recipe. Into this bowl

0:08:52 > 0:08:57we're going to put some lovely oats. I want you to measure out

0:08:57 > 0:09:03a big oats mountain. Oh, that's a good one, Lily-May.

0:09:03 > 0:09:08And then we give a really gentle little tap to make it flat.

0:09:08 > 0:09:10Really gently...

0:09:10 > 0:09:11That's it.

0:09:11 > 0:09:16Very carefully, bring it over to your bowl of melted butter

0:09:16 > 0:09:21and whoosh it in and then take another spoonful and do the same.

0:09:21 > 0:09:26- Then give the oats and melted butter a good mix.- Let's get mixing!

0:09:26 > 0:09:28Hurrah!

0:09:29 > 0:09:33Stop mixing...and take out your spoons.

0:09:33 > 0:09:36So next, we need to measure out two tablespoonfuls

0:09:36 > 0:09:39of self-raising flour.

0:09:39 > 0:09:44So we take a big mountainful of self-raising flour

0:09:44 > 0:09:47and pat until it's flat.

0:09:47 > 0:09:50- We're going to put that in with our oats.- Whoosh!

0:09:50 > 0:09:53- Have we all done the flour?- Yes.

0:09:53 > 0:09:59OK. Next, we need to add two dessert spoonfuls of caster sugar.

0:09:59 > 0:10:02- What's it going to do to our recipe? - It makes it all sparkly.

0:10:02 > 0:10:05I hope so. One...

0:10:05 > 0:10:08Two... It's like a sugar mountain.

0:10:08 > 0:10:12- Yes.- Jasper, what's next?

0:10:14 > 0:10:19Mixing! That's it. We're going to mix everything together in the bowl.

0:10:21 > 0:10:25Ooh, mine's turning into a crumbly mixture.

0:10:25 > 0:10:26So has mine!

0:10:26 > 0:10:32- OK, who's mixed all their crumbly mixture?- Me!

0:10:32 > 0:10:36Next, we're going to get our fingers a little bit messy

0:10:36 > 0:10:40because we're going to pick up the crumbly mixture

0:10:40 > 0:10:42and sprinkle it into our muffin cases.

0:10:42 > 0:10:45Imagine a whole mountain made out of crumble.

0:10:45 > 0:10:47Ooh, yum!
