0:04:57 > 0:05:00This is a special type of cheese called mozzarella.

0:05:00 > 0:05:03We're going to need some in our lasagne.

0:05:13 > 0:05:18Mozzarella comes from milk made by an animal called a buffalo

0:05:18 > 0:05:21that looks a lot like a cow.

0:05:21 > 0:05:24First, the buffaloes are milked.

0:05:27 > 0:05:30The milk is then put in a big machine

0:05:30 > 0:05:34where it's heated up until the hard bits, called curds,

0:05:34 > 0:05:37separate from the watery bit, called whey.

0:05:37 > 0:05:42The curds and whey are then emptied out.

0:05:47 > 0:05:52The curds are kneaded and stretched in a large machine

0:05:52 > 0:05:55until they become a big, stringy cheese.

0:05:55 > 0:06:00The stringy cheese is stretched into a long strand of cheese,

0:06:00 > 0:06:04which is cut into balls by another machine.

0:06:04 > 0:06:08These balls are then put into packs with water

0:06:08 > 0:06:10to keep them fresh for us to eat.

0:06:15 > 0:06:18We've got some lovely mozzarella right here.

0:06:18 > 0:06:22We're going to squash it into little pieces with our forks.

0:07:34 > 0:07:35it's a nice soft cheese.

0:07:35 > 0:07:40What's the difference between the ricotta and the mozzarella?

0:08:01 > 0:08:06This is going to add lots of scrummy flavour to our lasagne.
