0:06:50 > 0:06:53The rest that comes out is called the dummy.

0:06:53 > 0:06:58The dummy and the peel are mixed together and put into a big pot.

0:06:58 > 0:07:03Water is added and then the mixture is heated up by steam.

0:07:03 > 0:07:07When it is hot enough, brown sugar is added, and it boils and bubbles

0:07:07 > 0:07:11until it thickens to become marmalade.

0:07:14 > 0:07:20and while it is still hot, it is poured into jars.

0:07:20 > 0:07:26The lids go on and it is left to cool.
