0:00:25 > 0:00:28Oh, my biscuits broke.

0:00:28 > 0:00:30..in a Technical that requires a gentle touch.

0:00:30 > 0:00:32It's very tense.

0:00:32 > 0:00:34'And its celebration time...'

0:00:34 > 0:00:36- Yes.- Yeah, come on.

0:00:36 > 0:00:39'..with the ultimate birthday cake Showstopper.'

0:00:39 > 0:00:40Party on.

0:00:40 > 0:00:42That's what we say to that.

0:01:06 > 0:01:09These four baking boffins will face two challenges,

0:01:09 > 0:01:11after which one of them will go forward

0:01:11 > 0:01:13into next week's quarterfinals.

0:01:15 > 0:01:18Corey, from the Forth Valley in Scotland, is 11 years old,

0:01:18 > 0:01:20and has baking in his blood.

0:01:20 > 0:01:22My uncle co-owned a baker's shop,

0:01:22 > 0:01:26and my great-grandmother baked all the time, and she taught me.

0:01:26 > 0:01:30At her home in Dorset, 11-year-old Alice is head baker.

0:01:30 > 0:01:31'I'm the youngest, so...'

0:01:31 > 0:01:36it's good to be better at something then my brother and mum.

0:01:36 > 0:01:40I'm feeling quite nervous but I'm quite excited as well.

0:01:40 > 0:01:42For ten-year-old Sufia from West Yorkshire,

0:01:42 > 0:01:45baking has been part of her recovery.

0:01:45 > 0:01:47Ever since I had my accident to my eye,

0:01:47 > 0:01:50I wasn't able to do much, but then my mum, she said,

0:01:50 > 0:01:53"Try and bake on your own," so I made my first cake.

0:01:53 > 0:01:54I found it really fun, so...

0:01:54 > 0:01:57I just started baking as my new hobby.

0:01:57 > 0:02:00Ten-year-old Finlay from Northumberland

0:02:00 > 0:02:02is no stranger to having his bakes judged.

0:02:02 > 0:02:05I'm really used to competitions, because I enter

0:02:05 > 0:02:09lots of village shows and win, like, prize money and rosettes.

0:02:15 > 0:02:17The first of today's challenges is the Technical,

0:02:17 > 0:02:20which tests baking knowledge and ability to follow a recipe -

0:02:20 > 0:02:23a recipe none of the bakers have seen before.

0:02:24 > 0:02:27Well, hello, bakers. Are you doing good?

0:02:27 > 0:02:29- Yeah.- Yay.- Fantastic.

0:02:29 > 0:02:33Now, the Technical today is stained-glass window biscuits.

0:02:33 > 0:02:36Now, obviously, you're not good to be using real glass,

0:02:36 > 0:02:37because, let's be honest,

0:02:37 > 0:02:40- it'll taste disgusting and it's highly dangerous.- Exactly.

0:02:40 > 0:02:42Now, these need to be cinnamon biscuits.

0:02:42 > 0:02:45The stained glass bit is going to be made from boiled sweets,

0:02:45 > 0:02:46and you need to make six.

0:02:46 > 0:02:48Judges, what are we looking for?

0:02:48 > 0:02:51- Six biscuits...- Ha-ha-ha-ha!

0:02:51 > 0:02:53..with a good snap, uniform shape and colour.

0:02:53 > 0:02:55We'll also be looking for neat piping,

0:02:55 > 0:02:58- and transparent sugar windows. - Excellent stuff.

0:02:58 > 0:03:01Now, guys, before we go any further, have you all washed your hands?

0:03:01 > 0:03:04- Yeah.- OK, now, you've got one hour and ten minutes

0:03:04 > 0:03:06to knock up your stained-glass window biscuits.

0:03:06 > 0:03:09- Are you ready?- Yeah.- Fantastic. On your marks.- Get set.

0:03:09 > 0:03:10BOTH: Bake.

0:03:14 > 0:03:16Very good. I'm finally here,

0:03:16 > 0:03:19getting to show off my skills and have fun.

0:03:19 > 0:03:21It's quite cool cos you've got loads of cool equipment.

0:03:21 > 0:03:22Left...

0:03:24 > 0:03:29I'd never really heard of a stained-glass window biscuit before.

0:03:29 > 0:03:31I made them for my Christmas fair,

0:03:31 > 0:03:33but my mum did the stained glass part.

0:03:33 > 0:03:35Graham, there's no doubt that these are

0:03:35 > 0:03:37the perfect stained-glass window biscuits.

0:03:37 > 0:03:41I mean, look at that baby - absolutely gorgeous.

0:03:41 > 0:03:44All the same size, all the same colour.

0:03:44 > 0:03:47What we're looking for is that they've got this beautiful piping.

0:03:47 > 0:03:48Considered piping, nice action.

0:03:48 > 0:03:50We need to hear a snap at this point.

0:03:50 > 0:03:53- BISCUIT SNAPS - Lovely.

0:03:53 > 0:03:56Good crunch. Just the right amount of cinnamon, as well.

0:03:56 > 0:03:58If you read the recipe, you shouldn't have a problem.

0:03:58 > 0:04:01HE WHISPERS TO HIMSELF

0:04:01 > 0:04:05You have to sift all the dry ingredients and then blend them.

0:04:05 > 0:04:08The flour, sugar and bicarbonate of soda

0:04:08 > 0:04:10is spiced up with a dash of cinnamon.

0:04:10 > 0:04:12The next bit of the recipe tells me to add the butter

0:04:12 > 0:04:15and blend it till the mixture looks like breadcrumbs.

0:04:17 > 0:04:19LIQUIDIZER RUMBLES

0:04:19 > 0:04:23Next, I'm going to put the syrup and the egg into a bowl.

0:04:25 > 0:04:28My mum always does this when she beats, but...

0:04:28 > 0:04:31and it just means to, like, combine it all together.

0:04:31 > 0:04:34LIQUIDIZER RUMBLES

0:04:36 > 0:04:38Getting the right dough consistency

0:04:38 > 0:04:41is crucial to getting the biscuit to snap.

0:04:41 > 0:04:45It's quite crumbly, and then it's also got the wet stickiness to it.

0:04:45 > 0:04:47Too wet, the biscuit will bend.

0:04:47 > 0:04:51Hopefully it is the right texture,

0:04:51 > 0:04:52but I'm not sure.

0:04:52 > 0:04:56Head girl Sufia raises money for her school by baking.

0:04:56 > 0:04:59I do make a biscuit, time to time -

0:04:59 > 0:05:02for, like, fairs and parties -

0:05:02 > 0:05:03but mostly it's cakes.

0:05:05 > 0:05:08- Morning, Finlay.- Morning. - How does the dough feel for you?

0:05:08 > 0:05:12It feels a little bit sticky and, like, crumbly.

0:05:12 > 0:05:13You're on home turf here,

0:05:13 > 0:05:16- cos I've heard you've made award-winning biscuits.- Yeah.- Ooh.

0:05:16 > 0:05:18- What award?- Erm...

0:05:18 > 0:05:20- The Finlay Great Biscuit Award. - Ha-ha-ha!

0:05:20 > 0:05:22No, it was in my local show. I decorated biscuits.

0:05:22 > 0:05:26- Nice.- So you were listening to what we said earlier about decoration?

0:05:26 > 0:05:28Yeah, I think I'll be quite good at piping the shapes.

0:05:28 > 0:05:30I like the confidence, Finlay. I like the confidence.

0:05:36 > 0:05:39I'm going to wrap it up in clingfilm, so, erm,

0:05:39 > 0:05:41to put it in the fridge for 15 minutes.

0:05:43 > 0:05:46Getting the dough to fridge temperature firms the butter,

0:05:46 > 0:05:48making it easier to roll out.

0:05:48 > 0:05:51I tried to roll it out but I did not remember to put it in the fridge,

0:05:51 > 0:05:52so no wonder it doesn't work.

0:06:03 > 0:06:05Oh, nice and cold.

0:06:05 > 0:06:07You need to make sure that you get an equal thickness

0:06:07 > 0:06:09all the way through.

0:06:09 > 0:06:13The same thickness ensures an even bake between the biscuits.

0:06:13 > 0:06:14I'm hoping to get it about

0:06:14 > 0:06:16the thickness of a £1 coin.

0:06:16 > 0:06:18Oh, no, it's cracking.

0:06:18 > 0:06:20The dough should be firm enough to keep its round shape

0:06:20 > 0:06:23once the middle is removed.

0:06:23 > 0:06:25- Morning, Sufia.- Morning.

0:06:25 > 0:06:27Now, how are you going to get that out?

0:06:27 > 0:06:29- She's got it. Nailed.- Ah.

0:06:29 > 0:06:31And you did that with the judges watching you.

0:06:31 > 0:06:34- Got to make you feel pretty confident?- Yeah.- Yeah.

0:06:34 > 0:06:36- Later.- Best of luck. We'll see you in a bit.- Yup.

0:06:40 > 0:06:43I'm just patting these down to try and seal the cracks.

0:06:43 > 0:06:45I need to cut up my last biscuit and then put them

0:06:45 > 0:06:47in the oven for five minutes.

0:06:49 > 0:06:51If you're going to try your hand at baking,

0:06:51 > 0:06:54make sure a grown-up's around knowing what you're doing.

0:06:54 > 0:07:00And then it's another three minutes, I think, with the boiled sweets in.

0:07:00 > 0:07:01Oh!

0:07:07 > 0:07:08I'm not happy.

0:07:08 > 0:07:11- Are you all right, Sufia? - Are we all right, Sufia?

0:07:11 > 0:07:13No. When I was about to put them in, they just fell.

0:07:13 > 0:07:15OK, all right, so we can help with that. We can help.

0:07:15 > 0:07:18- We can help here, right.- All right. Are you going to do them again?

0:07:18 > 0:07:20Have you got time, do you think?

0:07:20 > 0:07:22We'll pick them up, you crack on.

0:07:22 > 0:07:24You'll be all right. You'll be all right.

0:07:24 > 0:07:27- That's all right. Got it, yeah.- That's all right.

0:07:27 > 0:07:29- It's all right.- We can do this. We can do this.

0:07:29 > 0:07:30Optimistic.

0:07:30 > 0:07:34OK, bakers, you've got half an hour left.

0:07:34 > 0:07:36- That's plenty of time. Keep smiling. - Ha!

0:07:36 > 0:07:38It helps, it shows in your baking. Trust me.

0:07:43 > 0:07:46It's very tense, the atmosphere. It's very tense.

0:07:46 > 0:07:49Yeah, I'm OK, but I was just a bit shaken.

0:07:49 > 0:07:52I'm hoping it doesn't slip this time.

0:07:56 > 0:08:00Well, I'm no connoisseur, but I know that that looks beautiful.

0:08:00 > 0:08:01- Yeah, nice.- It smells good.

0:08:01 > 0:08:03- Oh, that's cinnamon-tastic, mate. - Ah...

0:08:06 > 0:08:11- I think these are looking fine. - Yeah, they're in the oven.

0:08:11 > 0:08:13I'm currently putting the boiled sweet in,

0:08:13 > 0:08:15to give the stained-glass effect.

0:08:16 > 0:08:18A bit just fell off them.

0:08:18 > 0:08:21I'm going to try and fix it.

0:08:21 > 0:08:23Here. There you go, that's fine now.

0:08:24 > 0:08:28I'm just going to put them back in for another three minutes.

0:08:38 > 0:08:40Oh, they look perfect.

0:08:42 > 0:08:45- All right, mate?- Nice work, Finlay. - Oh...- They look good.

0:08:45 > 0:08:48- Yeah, they're coming out. - Are you happy with that?

0:08:48 > 0:08:51- Yeah, pretty happy.- You should be. - Do you think they're done?

0:08:51 > 0:08:53You're the biscuit award winner.

0:08:55 > 0:08:57Bakers, you've got 15 minutes left.

0:08:57 > 0:09:0015 minutes.

0:09:00 > 0:09:02Oh, my biscuits broke.

0:09:02 > 0:09:04I'll just try to patch it up with some icing.

0:09:04 > 0:09:06Yeah, no-one will notice.

0:09:08 > 0:09:11There we go. I think that they're looking quite ready,

0:09:11 > 0:09:13so I don't think they'll need any longer.

0:09:15 > 0:09:17I can't believe it.

0:09:17 > 0:09:20Come on, get cracking, get cracking, come on.

0:09:20 > 0:09:22The final stage for the bakers is to pipe the biscuits

0:09:22 > 0:09:24with a design of their choice.

0:09:24 > 0:09:27I'm getting the icing in the bag, so as soon as they're cooled,

0:09:27 > 0:09:29I can pipe them.

0:09:29 > 0:09:31My biscuits haven't come out yet,

0:09:31 > 0:09:34and they haven't fully spread.

0:09:37 > 0:09:39I'm OK.

0:09:39 > 0:09:41SHE SIGHS

0:09:41 > 0:09:44Bakers, you've got five minutes left.

0:09:44 > 0:09:47Enough time for the finishing touches.

0:09:47 > 0:09:50Decorating is one of the best parts of making these.

0:09:51 > 0:09:53The smaller the hole in the piping bag,

0:09:53 > 0:09:55the more delicate the decoration.

0:09:58 > 0:10:01I think the icing might take away a couple of points.

0:10:01 > 0:10:03One minute!

0:10:03 > 0:10:04No...

0:10:08 > 0:10:10Go...

0:10:10 > 0:10:12Bakers, time is up.

0:10:12 > 0:10:16- That's it.- Step away from the vehicle.- The biscuits.

0:10:16 > 0:10:18The biscuits, step away from them.

0:10:18 > 0:10:20SHE SIGHS

0:10:20 > 0:10:23HE SIGHS

0:10:27 > 0:10:29Well done, bakers.

0:10:29 > 0:10:32If you would all like to bring your biscuits up to the altar, please.

0:10:32 > 0:10:34Put them behind your picture.

0:10:34 > 0:10:36I am really happy they were finished on time.

0:10:36 > 0:10:39The icing on top of the biscuits definitely went wrong.

0:10:39 > 0:10:42I stuck on a little bit of extra biscuit,

0:10:42 > 0:10:44cos part of it fell off on one of them,

0:10:44 > 0:10:46and I covered it up with a little bit of icing,

0:10:46 > 0:10:48so I hope they don't notice that.

0:10:48 > 0:10:51Allegra and Graham are looking for six uniform biscuits with

0:10:51 > 0:10:54transparent sugar windows, and neat piping,

0:10:54 > 0:10:57that when broken open, give a good snap.

0:10:57 > 0:10:59Sufia...

0:10:59 > 0:11:03These look nice. I'm liking the designs. They're all different.

0:11:03 > 0:11:06I like that. He likes everything to be exactly the same.

0:11:06 > 0:11:07I like things to be all a bit different.

0:11:07 > 0:11:09I'm just going to go for the snap.

0:11:09 > 0:11:12- BISCUIT SNAPS - It snapped.- Mm-hmm.

0:11:12 > 0:11:14Nice level of cinnamon in here.

0:11:14 > 0:11:16- That's a well-made biscuit. - Yeah, well done.

0:11:16 > 0:11:18- Corey.- The piping...

0:11:18 > 0:11:21Did you have trouble with your bag, did you, yeah?

0:11:21 > 0:11:23- Over-fill it?- I think so.

0:11:23 > 0:11:27We haven't got total translucency on these biscuits, have we?

0:11:27 > 0:11:29On the windows. Let's see what it's like, shall we?

0:11:29 > 0:11:32- BISCUIT SNAPS Oh, I heard that.- Ah-hah.

0:11:32 > 0:11:34Yeah, you can taste the cinnamon again.

0:11:34 > 0:11:38One thing I am seeing, you've got different depths of the biscuits,

0:11:38 > 0:11:41so this one will be finished first, this one will take a bit longer.

0:11:41 > 0:11:43Yeah, basically, your front-right is good,

0:11:43 > 0:11:47your back-left needed a bit of work, but decent bake.

0:11:47 > 0:11:49Alice, nice baking.

0:11:49 > 0:11:51I like your piping as well.

0:11:51 > 0:11:55And that is a clear, clear view through the biscuit.

0:11:55 > 0:11:56All quiet for the snap, please.

0:11:56 > 0:11:59- BISCUIT SNAPS Ah!- Ha-ha.

0:11:59 > 0:12:01THEY MUNCH

0:12:01 > 0:12:02Good layer of the cinnamon for me.

0:12:02 > 0:12:05They are a little overbaked, and that's because of the thinness.

0:12:05 > 0:12:07- Yeah.- It's a very small point.

0:12:07 > 0:12:10- Beautifully presented biscuits, Alice.- Thank you.

0:12:10 > 0:12:12And now for something completely different, here's Finlay's.

0:12:12 > 0:12:16- Wow, so you've got your cracking here on the top...- Yeah.

0:12:16 > 0:12:19- ..and heavy as your icing hand is, we can still see that.- Yes.

0:12:19 > 0:12:22We can see through it. Isn't that pretty?

0:12:22 > 0:12:24- Yeah, it's lovely.- Lovely, very nice.

0:12:24 > 0:12:26- BISCUIT CRACKS - I heard something.

0:12:26 > 0:12:28Look, it wasn't the definitive snap.

0:12:28 > 0:12:31I think that's just down to the thickness of the rolling, there.

0:12:31 > 0:12:32For me, it's just a little under.

0:12:32 > 0:12:35Yeah.

0:12:35 > 0:12:37Graham and Allegra will now decide

0:12:37 > 0:12:40which two stained-glass window biscuits have come out on top.

0:12:42 > 0:12:46The first bake in our top two is this one,

0:12:46 > 0:12:48- so well done, Alice.- Thank you.

0:12:48 > 0:12:51Nice even sizes, beautiful piping, and a clear window.

0:12:51 > 0:12:54And the second bake in our top two...

0:12:54 > 0:12:55is Sufia.

0:12:55 > 0:12:57You have a nice even roll,

0:12:57 > 0:13:00nice piping, and transparent windows.

0:13:00 > 0:13:02Fantastic. Well done, guys, well done.

0:13:02 > 0:13:05Well done to all the bakers, especially to Alice and Sufia.

0:13:05 > 0:13:09Don't worry, Finlay and Corey, you've still got the Showstopper

0:13:09 > 0:13:11- to do, and it could all change. - It could, indeed.- Yeah.

0:13:11 > 0:13:14Guys, before that, though, come up and taste your bake.

0:13:14 > 0:13:16- Yeah, come on.- Taste them, will you?

0:13:16 > 0:13:18- Very good biscuits, guys. - Lovely.- Yeah.

0:13:18 > 0:13:19'I was really happy with my bake'

0:13:19 > 0:13:22and I never made them before so it's very good.

0:13:22 > 0:13:24- Can I try yours, Alice?- Yeah, sure.

0:13:24 > 0:13:26They are snappy, aren't they?

0:13:26 > 0:13:28'Alice is my biggest competitor'

0:13:28 > 0:13:31because she's got really good taste, she's got really good even bakes,

0:13:31 > 0:13:34and then, also, her decorating is really pretty.

0:13:34 > 0:13:36You're liking that, aren't you, Finlay?

0:13:36 > 0:13:38'I think the reason why the girls came in the top two is

0:13:38 > 0:13:40'because they decorated theirs prettily,'

0:13:40 > 0:13:43and not the heavy-handed approach done by the boys.

0:13:44 > 0:13:46'Yeah, I think I'll do a lot better'

0:13:46 > 0:13:49in this challenge, mainly because I know what I'm doing on this one.

0:13:49 > 0:13:51'I have practised, practised, practised.'

0:13:54 > 0:13:56- Hey, Sam, Sam. I've got a joke for you.- Oh, yeah, go on.

0:15:10 > 0:15:12I am a perfectionist.

0:15:12 > 0:15:15I'd like to see technical ability shown in these cakes,

0:15:15 > 0:15:16and ideally, they'd measure

0:15:16 > 0:15:19not only the depth of the sponges they're basing into the cake,

0:15:19 > 0:15:22but also how much buttercream or whichever they're layering it with.

0:15:26 > 0:15:27Just added my eggs in.

0:15:27 > 0:15:32Next, I have to combine the milk, the juice and the vanilla extract.

0:15:32 > 0:15:35All the bakers are flavouring their sponges.

0:15:35 > 0:15:38I'm about to add the orange zest.

0:16:23 > 0:16:27but the chocolate's going to come in just a little later.

0:16:27 > 0:16:30Finlay will be adding chocolate chips to his orange sponge,

0:16:40 > 0:16:43- Please tell me it's here. - Yeah, it is.- Yes!- Where is it?

0:16:43 > 0:16:45- Below there.- What? - Can you get that out?

0:16:45 > 0:16:47I'll do that. I'll sieve that.

0:16:47 > 0:16:50- You play the accordion. - It's pretty heavy.- I know, it is.

0:16:50 > 0:16:52- I have to carry that to school. - Do you?- Yeah.

0:16:52 > 0:16:54# I am sieving icing sugar

0:16:54 > 0:16:56# I am sieving icing sugar... #

0:17:14 > 0:17:16Today, I am making my dream birthday cake, which is

0:17:16 > 0:17:20a mobile phone cake, because I love technology.

0:17:20 > 0:17:24This is a traditional Victoria sponge with my twist.

0:17:24 > 0:17:28Corey's mobile phone cake sponge will be sandwiched together with

0:17:28 > 0:17:29cream and raspberry jam,

0:17:29 > 0:17:31smothered in chocolate-chip buttercream

0:17:37 > 0:17:40- the biggest mobile phone in the world.- Probably.- Yeah?

0:17:40 > 0:17:42Are you going to show us any difference in the way you

0:17:42 > 0:17:45- decorate this afternoon?- Yeah, it won't be quite as messy icing.

0:17:45 > 0:17:47- Right. - I'm going to do black fondant,

0:17:47 > 0:17:49then a white fondant screen, with fondant apps.

0:17:49 > 0:17:51- Fondant apps?- Fondant apps?- Yeah.

0:17:51 > 0:17:53- That's brilliant.- Very cool.

0:17:53 > 0:17:56- Are we going to be able to download those apps?- Maybe.

0:17:56 > 0:17:59- Download them into my mouth. - Yes, that's what we want.

0:17:59 > 0:18:00That's what we want.

0:18:02 > 0:18:05I've made the big cake batter

0:18:05 > 0:18:07and now I'm just going to divide it,

0:18:07 > 0:18:10so that I can put different colours into them.

0:18:10 > 0:18:14Sufia is the only baker adding her favourite colours to her sponge.

0:18:14 > 0:18:17I really like painting and I'm quite artistic,

0:18:17 > 0:18:20so I thought a paint palette would be really good,

0:18:20 > 0:18:23but then, inside, there's a surprise.

0:18:23 > 0:18:25Inside, Sufia's cake will be multicoloured

0:18:25 > 0:18:27lemon-and-vanilla flavoured sponges,

0:18:27 > 0:18:29which will be covered in chocolate buttercream

0:18:29 > 0:18:32and decorated with fondant icing paintbrushes.

0:18:32 > 0:18:34Wowzer, Sufia, what a colour.

0:18:34 > 0:18:37- Lovely colour. - Yeah, that is exceptional.

0:18:37 > 0:18:39- How many cakes are you making? - Just two.

0:18:39 > 0:18:41It'll be sandwiched by buttercream.

0:18:41 > 0:18:44- And is there a flavour on the buttercream?- Yeah, chocolate.

0:18:44 > 0:18:45Of course. Cocoa and chocolate.

0:18:45 > 0:18:47No, the chocolate buttons are for...

0:18:47 > 0:18:49- Ha-ha! - The chocolate buttons are for Sam,

0:18:49 > 0:18:51- by the looks of things.- Ha-ha-ha.

0:18:54 > 0:18:57Bakers, you have had half an hour.

0:19:00 > 0:19:03Last one and then into the oven.

0:19:06 > 0:19:08Check them at 15 minutes,

0:19:08 > 0:19:10and then they come out at 20.

0:19:16 > 0:19:20The birthday cake was first popularised 700 years ago,

0:19:20 > 0:19:22thanks to canny bakers in Germany.

0:19:22 > 0:19:23300 years after that,

0:19:23 > 0:19:28it was the Germans again who began the tradition of adding candles.

0:19:28 > 0:19:30I'm watching out for, like, once it's brown on the top,

0:19:30 > 0:19:32you know that it's ready.

0:19:32 > 0:19:33They feel all right.

0:19:33 > 0:19:35That's what they should look like

0:19:35 > 0:19:39and it's good to see that the chocolate chips are at the top.

0:19:39 > 0:19:41Corey, you've got to be pleased with that.

0:19:41 > 0:19:44- Yeah, it's turned out better. - Yeah, they look good.- Yeah.

0:19:45 > 0:19:47They're just quite soft.

0:19:50 > 0:19:52- TIMER BEEPS - One of my cakes has cracked,

0:19:52 > 0:19:54so I'll just patch it up with some buttercream.

0:19:54 > 0:19:56Oh...

0:19:56 > 0:19:57While the cakes are cooling,

0:19:57 > 0:19:59there's time to prepare the fillings.

0:19:59 > 0:20:05Chocolate ganache should be shiny and smooth,

0:20:05 > 0:20:07so no lumps of chocolate in it,

0:20:07 > 0:20:09and that's why you have to stir it so much,

0:20:09 > 0:20:11and you can't use a wooden spoon,

0:20:11 > 0:20:13cos that absorbs the moisture.

0:20:13 > 0:20:15Alice, how's it going?

0:20:15 > 0:20:17Good, I think.

0:20:17 > 0:20:20I feel as though, Alice, that you need an extra pair of hands,

0:20:20 > 0:20:22- because you've got five cakes to sort out.- Yeah.- Are you OK?

0:20:22 > 0:20:24- But they're quite small cakes. - Right, OK.

0:20:24 > 0:20:26- Yes.- You seem pretty calm.

0:20:26 > 0:20:28- All right.- How are you feeling?

0:20:28 > 0:20:31- Yeah?- Yes.- Calm on the surface, but underneath it's like, "Ah!"

0:20:31 > 0:20:33- Like the duck, yes.- Got you. - Yeah, like the duck.

0:20:33 > 0:20:37This big bowl of buttercream is going to go on the top,

0:20:37 > 0:20:40and in the middle, for sandwiching the layers.

0:20:41 > 0:20:44Bakers, you have 15 minutes.

0:20:44 > 0:20:46Once the birthday cakes are assembled,

0:20:46 > 0:20:50the bakers can decorate them to express their personality.

0:20:50 > 0:20:52Perfect.

0:20:52 > 0:20:55The decoration on my cake's really important.

0:20:55 > 0:20:56This is the piano bit.

0:20:58 > 0:21:01I'm going to have to half that.

0:21:01 > 0:21:02Corey, how's it going, mate?

0:21:02 > 0:21:05- Not very good.- Not very good? - This looks like tough work.

0:21:05 > 0:21:08Right, the best thing to do

0:21:08 > 0:21:12- is to get it into the rough shape that you want it, yeah?- Right.

0:21:12 > 0:21:14I'll show you a little trick.

0:21:14 > 0:21:18When you dust, instead of sprinkling it on like this, just...

0:21:18 > 0:21:20- Yeah, there we go.- Ha-ha-ha!- Yeah?

0:21:20 > 0:21:22And you get a nice little fine dusting.

0:21:22 > 0:21:26Start from the centre, roll out.

0:21:26 > 0:21:28Start from the centre,

0:21:28 > 0:21:30- roll out.- Nice!

0:21:32 > 0:21:34- That's it.- That helped?

0:21:34 > 0:21:36- Yeah.- Nice work.

0:21:36 > 0:21:39Bakers, five minutes left!

0:21:39 > 0:21:40Come on, get a move on.

0:21:40 > 0:21:42I can do this.

0:21:43 > 0:21:45HE SIGHS

0:21:49 > 0:21:52I really am running out of time.

0:21:52 > 0:21:54I need to get more colours on.

0:21:54 > 0:21:57I need to get my fruit. Everything.

0:21:57 > 0:21:59The icing, it's going really badly.

0:21:59 > 0:22:01It's picking up crumbs.

0:22:01 > 0:22:03I'm just piping a little bit more icing on.

0:22:03 > 0:22:06I'm going to try and fill that void full of icing.

0:22:06 > 0:22:07Tilt it like that.

0:22:07 > 0:22:09OK, you push. Well done, lovely.

0:22:09 > 0:22:12SHE EXHALES

0:22:12 > 0:22:15I'm trying to get this really nice and smooth.

0:22:15 > 0:22:16Ooh!

0:22:17 > 0:22:19- Yeah, yeah, yeah, yeah. - Well done, mate.

0:22:19 > 0:22:21- Yes.- Come on!

0:22:25 > 0:22:27One minute, bakers, one minute.

0:22:27 > 0:22:30Finishing touches - anything like that.

0:22:30 > 0:22:31Make it pretty.

0:22:50 > 0:22:51I'm going to do it.

0:22:53 > 0:22:54Bakers, time is up.

0:22:54 > 0:22:57Step away from your birthday cakes.

0:22:57 > 0:22:59That's it. SHE MOUTHS

0:22:59 > 0:23:02- Happy birthday, mate. - It's not my birthday.

0:23:06 > 0:23:08Graham and Allegra have asked the bakers to create

0:23:08 > 0:23:10a dream birthday cake that's full of flavour,

0:23:10 > 0:23:12has well-constructed layers,

0:23:12 > 0:23:14and demonstrates their personality.

0:23:18 > 0:23:22Well, Sufia, this is a realisation of your dream.

0:23:22 > 0:23:25It has got fun and party, and birthday,

0:23:25 > 0:23:26written all over it for me.

0:23:26 > 0:23:28It really is an imaginative cake.

0:23:28 > 0:23:30Now, let's see that sponge.

0:23:30 > 0:23:31Oh, yeah, bright colours.

0:23:31 > 0:23:33Party on, Sufia.

0:23:33 > 0:23:37- Is that exactly how you wanted it to come out?- Yes.

0:23:37 > 0:23:39- Could have done with a little bit more lemon.- Yeah.

0:23:39 > 0:23:40So it gives it that nice acidity

0:23:40 > 0:23:42- running all the way through the middle.- Yeah.

0:23:42 > 0:23:45- I think it's slightly raw in the middle, a little bit.- Yes.

0:23:45 > 0:23:48- I really... I'm nuts for it. I really enjoy it.- Thank you.

0:23:48 > 0:23:51It's made me smile ever since I saw it. Very happy with that.

0:23:51 > 0:23:52Well done, Sufia.

0:23:57 > 0:23:59Let's see how technological your bake is.

0:23:59 > 0:24:01That remind me of a proper party cake, that.

0:24:01 > 0:24:04Wrap it in a napkin, throw it in a party bag. Yes, please.

0:24:04 > 0:24:07- It does look really nice. - It's a bit under in the middle -

0:24:07 > 0:24:09just a little bit, by the jam.

0:24:09 > 0:24:11It's got all those classic Victoria sponge flavours to it.

0:24:11 > 0:24:14It's nice and firm. You can cut straight through it.

0:24:14 > 0:24:15Moist enough so you don't need a drink.

0:24:15 > 0:24:17I think it's a really nice cake.

0:24:22 > 0:24:23I love this.

0:24:23 > 0:24:25This is great, because of the look -

0:24:25 > 0:24:27the bonkers-ness of the design.

0:24:27 > 0:24:30You had a dream and you've put it down on a cake board,

0:24:30 > 0:24:32and for that, you get points.

0:24:32 > 0:24:36I'm looking for even layers, and a nice, moist cake.

0:24:36 > 0:24:37I'm really liking the freshness

0:24:37 > 0:24:40that the orange zest that went through the sponge brought.

0:24:40 > 0:24:42It's a really nice, moist cake. Good bake.

0:24:49 > 0:24:52Alice, there is no doubt, that is a thing of art and beauty.

0:24:52 > 0:24:56And when I cut into this, am I going to find nice, even, moist layers?

0:24:56 > 0:24:57Hopefully.

0:24:57 > 0:25:00And that's exactly what I see. Really nice inside here.

0:25:00 > 0:25:03- Precision baking. - You love that, don't you?- Ha-ha-ha!

0:25:05 > 0:25:06Nice dark chocolate.

0:25:06 > 0:25:09You can see exactly where it's come from in your imagination.

0:25:09 > 0:25:12I know what your garden looks like. Good effort. Thank you, Alice.

0:25:12 > 0:25:16Our lovely judges have now got to deliberate on who

0:25:16 > 0:25:19they think should go through to our quarterfinals.

0:25:20 > 0:25:23- Really good icing.- Yours was, like, a proper birthday cake.

0:25:23 > 0:25:25Yours was massive. Mine was tiny.

0:25:25 > 0:25:27Yeah, yours was pretty big.

0:25:27 > 0:25:29Judges, massive day today. Big day.

0:25:29 > 0:25:32So, this morning, in the Technical Challenge, Alice and Sufia,

0:25:32 > 0:25:34they were your top two.

0:25:34 > 0:25:37What we see about Alice is that she is all about precision, isn't she?

0:25:37 > 0:25:41So we had six identical perfect stained-glass window biscuits.

0:25:41 > 0:25:44- That's Alice all over. - You've got to give credit to Sufia.

0:25:44 > 0:25:46When she was placing her biscuits in the oven to bake,

0:25:46 > 0:25:47they fell onto the oven door,

0:25:47 > 0:25:51so she had to remould them, totally unflustered. Good to see.

0:25:51 > 0:25:52This afternoon, how has it gone?

0:25:52 > 0:25:56Both Finlay and Corey both did great sponges.

0:25:56 > 0:26:00Just, not executed the finish, and the finish is what you need.

0:26:00 > 0:26:02Let's talk Alice's cake, then, cos that is...

0:26:02 > 0:26:06Well, to me, to the untrained eye, that is a thing of beauty.

0:26:06 > 0:26:09Well, I was looking for precision baking,

0:26:09 > 0:26:12in terms of making sure that the layers were nice and even.

0:26:12 > 0:26:14There was a good distribution of the buttercream,

0:26:17 > 0:26:19I'm going to put in a word for Sufia,

0:26:19 > 0:26:22because I was looking for something very imaginative,

0:26:22 > 0:26:24very different, a little bit out there.

0:26:24 > 0:26:26There's just something about that that just appeals to me.

0:27:26 > 0:27:30Alice is amazing. She just has her vision and she just delivers it,

0:27:30 > 0:27:32and for that, she deserves to win.

0:27:34 > 0:27:36she had decent layering,

0:27:36 > 0:27:40she had good understanding of the techniques, and she delivered.
