0:03:11 > 0:03:15For the first challenge, the bakers must each make a Victoria sandwich,

0:03:16 > 0:03:19a technique that is all about the mixing.
0:03:19 > 0:03:22The perfect Victoria sandwich is lovely and moist
0:03:22 > 0:03:24and light inside, beautiful golden colour,
0:03:24 > 0:03:29with a lovely bit of sugar on the top and filled well with jam.
0:03:29 > 0:03:32They have the same amount of ingredients and time to bake,
0:03:32 > 0:03:36but the results could be completely different.
0:03:36 > 0:03:40- OK, junior bakers, has everybody washed their hands?- Yes!
0:03:40 > 0:03:44Right, bakers, your Victoria sponges are going to be judged
0:03:44 > 0:03:49on technique, taste and texture, and you've only got one hour.
0:03:49 > 0:03:53This is your chance to really impress the judges. So good luck.

0:04:02 > 0:04:05so if you fancy baking, make sure you ask an adult.

0:04:09 > 0:04:11Sounds simple, but if they don't do it properly,
0:04:11 > 0:04:14then their cakes will be tricky to turn out later.
0:04:14 > 0:04:18For the creaming method, the ingredients go in one at a time.
0:04:18 > 0:04:23First, they beat together the butter and sugar,
0:04:23 > 0:04:26then in goes the eggs, and, finally, they sieve the flour.
0:04:26 > 0:04:29This challenge is a real test of our bakers' skills.
0:04:30 > 0:04:34And for 12-year-old Joy, who wants to own her own bakery one day,
0:04:34 > 0:04:37their skills become second nature.

0:05:16 > 0:05:20Unlike nine-year-old Joe, who's more at home baking bread.

0:05:26 > 0:05:29This is so you can get all the air in,
0:05:29 > 0:05:33because you don't want it a horrible, heavy, puddingy type of cake.
0:05:33 > 0:05:38You want a nice, fluffy, light kind of texture inside.
0:05:39 > 0:05:42While the others are still mixing, 11-year-old Amari,
0:05:42 > 0:05:45who thinks his baking is better than his mum's,
0:05:45 > 0:05:49is whizzing through the recipe, in a bid to make a good first impression.
0:05:49 > 0:05:53I seem ahead, but I'm not sure if that's good or bad.
0:05:53 > 0:05:57Amari, well under control.
0:05:57 > 0:06:01In fact, his has actually gone into the oven already.
0:06:01 > 0:06:04OK, bakers, there's 30 minutes to go. Three zero.
0:06:04 > 0:06:07Halfway through the challenge, and if they haven't already,

0:06:15 > 0:06:19But Joe's attention to detail means he's falling behind.

0:06:26 > 0:06:29cos it should even out when it's in the oven.

0:10:30 > 0:10:32but had major problems with his timing.

0:10:40 > 0:10:45And this one, out of the four, actually, melts quicker,

0:25:40 > 0:25:44The only unfortunate thing was a bit broke off when he was transferring it on.
