0:06:57 > 0:07:01and it's where our finalists must take their baking to another level.

0:07:02 > 0:07:05And guiding them through it all

0:07:05 > 0:07:09will be one of the best pastry chefs in the country, Cherish Finden.

0:07:09 > 0:07:12To begin, Cherish is going give the finalists a masterclass

0:07:12 > 0:07:16in how to make award-winning cupcakes and shortbreads

0:07:16 > 0:07:18before they attempt it themselves.

0:07:18 > 0:07:21I have very high expectations from the children.

0:07:21 > 0:07:24It's not just making a cupcake - making the best cupcake,

0:09:04 > 0:09:08Keep a light touch so that the icing sits nicely on the paste.

0:09:13 > 0:09:17And you can see the flowers are very delicate, so I'm doing them slowly.

0:09:17 > 0:09:21And just give it a swirl.

0:09:21 > 0:09:24Not too thick, as you don't want too much sugar.

0:09:24 > 0:09:25Not forgetting the cherry...

0:09:25 > 0:09:28You need to tuck it in,

0:09:28 > 0:09:32or else the icing will not stick to the cherry.

0:09:55 > 0:09:59but all you can do is try your best, so it doesn't matter.

0:10:14 > 0:10:20before presenting it to Paul, Mary and their special guest.

0:15:25 > 0:15:29So I'll be looking for individuality and flair on the decoration

0:15:29 > 0:15:33but it'll have to be the most light and airy cupcake

0:15:33 > 0:15:37and the shortest of shortbread biscuits ever!
