0:12:00 > 0:12:02and lay some nice exotic fruits on top.

0:16:07 > 0:16:11I noticed when you were putting the mixture into the cases,

0:16:11 > 0:16:13you had a very professional hand.

0:16:13 > 0:16:16You've got them all fairly even.

0:16:16 > 0:16:20You certainly got a better bake on this than you did with the tarts!

0:16:20 > 0:16:22I can see in the middle, here,

0:16:22 > 0:16:25that you've got that butter icing coming down,

0:16:25 > 0:16:28which is going to make them, I hope, very moist.

0:16:29 > 0:16:34You've got a lovely light sponge, which is baked well, however,

0:16:34 > 0:16:37there is no flavour of passion fruit at all.

0:16:43 > 0:16:45with goat's cheese, mozzarella and parmesan

0:16:47 > 0:16:50but will this novel recipe win over the judges?

0:16:50 > 0:16:53The idea of using a focaccia base

0:16:53 > 0:16:57and building something on top of it is, for me, unique.

0:17:59 > 0:18:02You're pastry, we noticed earlier on that it was quite thick

0:18:02 > 0:18:07and it had ballooned up a bit. Slightly soggy underneath.

0:18:11 > 0:18:15- Erm, you can see the, sort of, raw dough.- I like the Thai flavours.

0:18:15 > 0:18:18- I think you're flavour of your filling is delicious.- Mmm.

0:18:20 > 0:18:23and that's down to the fact that it's too thick.

0:18:23 > 0:18:26Saffron's sweet bakes are mini gateaux,

0:23:31 > 0:23:34The shortbread biscuits were the highlight, they were perfect!

0:23:39 > 0:23:42he didn't notice that there was no salt whatsoever in that.

0:24:10 > 0:24:13The Earl Grey didn't come through as strong as I expected it to.

0:24:22 > 0:24:26I've done all I can and I've tried me hardest, so that's the best,

0:24:26 > 0:24:30sort of thing, that I can do and I'm hoping that the judges pick me.
