0:02:01 > 0:02:05I enjoy baking because I like experimenting with food.

0:02:05 > 0:02:11When I'm older, I'd like to be a chef and own some restaurants.

0:02:15 > 0:02:19I like baking because it's fun and it tastes nice.

0:02:59 > 0:03:03It's time to stop the talking and let the Bake Off begin.

0:03:03 > 0:03:06For the first challenge, the bakers must make

0:03:06 > 0:03:08twelve carrot and walnut muffins

0:03:08 > 0:03:11topped with buttercream icing and orange zest.

0:03:11 > 0:03:15We want a well-filled cupcake that's been well mixed together.

0:03:15 > 0:03:16A good bake.

0:03:16 > 0:03:20Nice frosting on the top with a little bit of finesse.

0:03:20 > 0:03:22And most important - the taste.

0:03:22 > 0:03:25They have the same ingredients and time to bake,

0:03:25 > 0:03:28but their muffins could end up different.

0:03:28 > 0:03:29Now, junior bakers,

0:03:29 > 0:03:32your carrot cake muffins will be judged

0:03:32 > 0:03:34on texture, technique

0:03:34 > 0:03:36and most of all, taste.

0:03:36 > 0:03:40You've got one hour to impress our judges, OK?

0:03:40 > 0:03:43On your marks, get set, bake.

0:03:43 > 0:03:47These guys know their way around the kitchen,

0:03:47 > 0:03:50so if you fancy baking, make sure you ask an adult.

0:03:50 > 0:03:54Our bakers kick off by combining flour, baking powder

0:03:54 > 0:03:56and spices into the bowl.

0:03:58 > 0:04:01They then add butter, oil and a beaten egg.

0:04:01 > 0:04:04Finally, add the all-important ingredients -

0:04:04 > 0:04:06carrots and walnuts.

0:04:06 > 0:04:09For 9-year-old Hari, who wants to bake for the Queen,

0:04:09 > 0:04:12this is taking him out of his comfort zone.

0:04:12 > 0:04:14If I made something, I'd make cupcakes.

0:04:14 > 0:04:16I haven't made muffins before.

0:04:16 > 0:04:19But for Sylvia, who loves to sing and dance,

0:04:19 > 0:04:23it seems this challenge is playing to her strengths.

0:04:23 > 0:04:26I've made loads of muffins before, so, I'm confident.

0:04:26 > 0:04:32I first made muffins with my grandma when I was about five.

0:04:32 > 0:04:34I had lots of fun making a mess.

0:04:34 > 0:04:37Kieran wants to become a superstar chef,

0:04:37 > 0:04:40so he's checking out the competition.

0:04:40 > 0:04:42I'm seeing what the others are doing.

0:04:42 > 0:04:45I'd be worried if it all goes wrong

0:04:45 > 0:04:49and yeah, I'm just hoping that it goes right, really.

0:04:49 > 0:04:54The baking cases should be filled evenly and not to the brim.

0:04:56 > 0:05:01As it cooks, the mixture will grow to become big, fluffy muffins.

0:05:01 > 0:05:04I'm feeling really excited and a bit nervous

0:05:09 > 0:05:13Once the muffins are in the oven, they must get on with their icing.

0:05:24 > 0:05:28and then, I couldn't see anything. There was this white cloud.

0:05:28 > 0:05:32I turned the mixer on too hard and the icing sugar went in my face.

0:05:37 > 0:05:41When this is done, I'll have to zest the orange

0:05:41 > 0:05:44and then, I'll have it ready for when I get my cakes out

0:05:44 > 0:05:46and they're cooled, to add on top.

0:09:56 > 0:09:59with a moist blend of carrot and walnut,

0:09:59 > 0:10:02finished with icing and strings of orange zest.

0:10:02 > 0:10:05We have an interesting array of muffins.

0:10:05 > 0:10:08But we'll start at the end with Hari.

0:10:08 > 0:10:12Hari forgot to add the vital ingredient of walnuts to his muffins

0:10:12 > 0:10:16but will the quality of the bake be enough to impress the judges?

0:10:20 > 0:10:22Hari, it tastes good.

0:10:22 > 0:10:27It does need the walnuts in there, but the frosting on top is good.

0:12:15 > 0:12:17but the next round, I know what I'm doing

0:16:12 > 0:16:14We have to start making them in August

0:16:14 > 0:16:17because we have over 30,000 cakes to make before December,

0:16:17 > 0:16:19and we're only a small bakery.

0:16:19 > 0:16:23'This might be a small bakery, but they've got some big baking toys.

0:16:23 > 0:16:27'I'm going to use them to help me mix 140 kilos of ingredients -

0:16:27 > 0:16:30'that's twice my body weight in fruit cake.'

0:17:55 > 0:17:59In the last round, Hari forgot to add walnuts to his muffin mix.

0:17:59 > 0:18:02Now a crucial ingredient has been left on the side.

0:18:02 > 0:18:05You seem to have a lot of self-raising flour left,

0:18:05 > 0:18:07but you've got no icing sugar.

0:18:08 > 0:18:12Have you put icing sugar in instead of self raising flour?

0:18:15 > 0:18:18- Yeah, I got them mixed up. - I think you've got them mixed up.

0:18:18 > 0:18:19Without flour, Hari's cake

0:18:19 > 0:18:22is just a plate of colourful, bubbling sugar.

0:18:22 > 0:18:26I think you should start again quickly. OK?
