0:01:46 > 0:01:48technically difficult recipes for pitta bread.

0:01:50 > 0:01:54their pastry skills will face the ultimate test as they make

0:01:54 > 0:01:58unique and incredible savoury tarts inspired by today's theme - sport.

0:02:14 > 0:02:17I think the semi-final is going to be quite a tough challenge,

0:02:23 > 0:02:26He wowed the judges in his heat with his coffee cake

0:02:26 > 0:02:28shaped like a civet.

0:02:28 > 0:02:31He used civet coffee beans to achieve an amazing flavour

0:02:31 > 0:02:35and decorated it with coffee beans and coffee icing.

0:02:35 > 0:02:37I want to get into the final.

0:02:37 > 0:02:39I like to get everything perfect

0:02:39 > 0:02:41and when it's not, I get really stressed.

0:02:44 > 0:02:48He blew the judges away with his chocolate cake with green marbling

0:02:48 > 0:02:50shaped into a lovely pumpkin

0:02:50 > 0:02:53and topped with Italian meringue frosting.

0:02:56 > 0:02:59keep my standards high and keep baking well to get

0:02:59 > 0:03:01through to the next round which would be good.

0:03:03 > 0:03:07He got through to today's semi with a space themed

0:03:07 > 0:03:10chocolate orange and vanilla marble cake shaped like Saturn

0:03:10 > 0:03:14and decorated with aliens made from fondant icing.

0:03:14 > 0:03:17It would mean the whole world to get through to the final

0:03:17 > 0:03:20and especially to win the whole of Junior Bake Off.

0:03:20 > 0:03:23That would be everything, the whole galaxy for me.

0:03:26 > 0:03:29So far the judges have been impressed with the bakers'

0:03:29 > 0:03:30cake-making skills,

0:03:30 > 0:03:35but now the semi-finalists are being set their most difficult challenge.

0:03:35 > 0:03:37They'll be tested on their ability to make bread...

0:03:37 > 0:03:40but not just any bread.

0:03:40 > 0:03:43Pitta bread was chosen because it's tricky.

0:03:43 > 0:03:46I will no longer be judging them as young bakers,

0:03:46 > 0:03:49I will be judging them as adults. That's the criteria.

0:03:49 > 0:03:52This is the most tricky thing they've made.

0:03:52 > 0:03:53It's a very difficult challenge.

0:03:55 > 0:03:59They all have the same recipe, ingredients and time

0:03:59 > 0:04:02but if they fail to get the kneading technique bang on,

0:04:02 > 0:04:06the results will be very different. Guys, have you washed your hands?

0:04:07 > 0:04:09Your pitta breads are going to be judged

0:04:20 > 0:04:23These guys know their way round the kitchen,

0:04:23 > 0:04:27so if you fancy baking, make sure you ask an adult.

0:04:28 > 0:04:31Pitta bread is made by bringing together flour,

0:04:31 > 0:04:35a pinch of salt, some dried yeast and lukewarm water,

0:04:35 > 0:04:40but it's that all important kneading the judges will be looking for.

0:04:40 > 0:04:43Kieran got through to today's semi-final

0:04:43 > 0:04:47combining creative cake decorating with surprising flavours,

0:04:47 > 0:04:50but today he's out of his comfort zone.

0:04:50 > 0:04:51Do you feel any more pressure

0:04:51 > 0:04:55- now this is the semi-finals? - Yes, I feel more pressure

0:04:55 > 0:04:59than the first round because it's not my main area of baking.

0:04:59 > 0:05:03I'm better at sweet stuff because I don't do savoury stuff as much.

0:05:03 > 0:05:04Have you got a game plan?

0:05:04 > 0:05:09I'm just going to work my hardest and give it all I've got, really.

0:05:09 > 0:05:12But for Joe, whose hobby is baking bread,

0:05:12 > 0:05:15this should be a walk in the park.

0:05:15 > 0:05:18I'm feeling confident that I can do this

0:05:18 > 0:05:21because I'm really, really, really good at making bread.

0:05:21 > 0:05:23I've done it before.

0:05:23 > 0:05:27Joe's very confident, the problem is his kneading is very weak,

0:05:27 > 0:05:31you've go to fold it to start building the gluten up,

0:05:31 > 0:05:33to get power into the dough.

0:05:33 > 0:05:35Cameron won his place by impressing the judges

0:05:35 > 0:05:38with his melt in the mouth flavours...

0:05:38 > 0:05:39he is one serious baker.

0:05:41 > 0:05:44- Have you ever made bread before? - I've made white loaves and stuff,

0:05:44 > 0:05:47- but I've never made pitta bread.- OK.

0:05:47 > 0:05:50What would it mean to go through to the final?

0:05:50 > 0:05:52It would mean everything to me.

0:05:52 > 0:05:57For the past two months, this has been my life, practising my recipes.

0:05:57 > 0:06:01And make sure everything's right.

0:06:03 > 0:06:06Saffron earned her place with professional looking cakes

0:06:06 > 0:06:09and she's a real whizz in the kitchen.

0:06:10 > 0:06:14- Have you done bread before?- Yep. - Nice one.

0:06:15 > 0:06:20- Yep.- So how you feeling about the semi-finals? Are you confident?

0:06:20 > 0:06:24- I'm very confident.- Yeah. Are we going to see you in the finals?

0:06:24 > 0:06:27- Yeah, I'm sure of it. - Nice. That's what I like to see,

0:06:27 > 0:06:29confidence oozes out of Saffron.

0:06:29 > 0:06:32Saffron may be confident about getting through to the final

0:06:32 > 0:06:35but are the judges convinced she's kneaded her dough enough?

0:06:37 > 0:06:38The problem I have with Saffron,

0:06:38 > 0:06:40is she just pushed it together.

0:06:40 > 0:06:43There was no kneading at all.

0:06:43 > 0:06:46It took her five minutes from start to finish.

0:06:46 > 0:06:49This is typically Saffron. If you remember the heat,

0:06:49 > 0:06:52she was racing through. It was just too quick.

0:06:52 > 0:06:55There's times when speed is good,

0:06:55 > 0:06:57but speed can cause problems.

0:06:57 > 0:07:01Before the dough can be shaped into pitta bread,

0:07:01 > 0:07:04the bakers must leave it to prove and Saffron is first.

0:07:04 > 0:07:07But will her rushing have an effect on her results?

0:07:07 > 0:07:12The others finally catch up and while their dough proves,

0:07:12 > 0:07:14all they can do is wait.

0:07:14 > 0:07:18With time ticking away the bakers just have to hope

0:07:18 > 0:07:21they've let their dough prove for long enough.

0:07:23 > 0:07:27OK, rise and shine, bakers, 15 minutes to go.

0:07:27 > 0:07:31It's looking really good and it's feeling nice as well.

0:07:31 > 0:07:35It's rised and the yeast has started to activate.

0:07:35 > 0:07:39I'm just sort of concentrating a bit more because

0:07:39 > 0:07:43we have only got 15 minutes left, and they take ten minutes to cook.

0:07:43 > 0:07:47To get the best results, the bakers need to follow the judges' recipe

0:07:47 > 0:07:51but Joe is doing it his own way.

0:07:51 > 0:07:55He rolled them out not thin enough and he's put all four on one tray,

0:07:55 > 0:07:59so he's going to end up with four pitta breads that are rather thick.

0:07:59 > 0:08:03- They're probably going to end up like floury baps.- Yes.

0:08:04 > 0:08:07The breads are doing OK, they've only been a couple of minutes.

0:08:07 > 0:08:12They're getting some air bubbles round the side.

0:08:12 > 0:08:14I think they're pretty good. They're making me hungry.

0:08:14 > 0:08:17I hope theirs don't rise and mine do rise.

0:09:04 > 0:09:06I think you've all done exceptionally well.

0:09:06 > 0:09:11We chose pitta bread because it's a semi-final

0:09:11 > 0:09:14and it's quite tricky to do. The dough has to be kneaded properly,

0:09:14 > 0:09:18to create a good finished product. We'll start here with Joe.

0:09:19 > 0:09:22Joe was super confident with his bread making skills

0:09:22 > 0:09:26but will the judges be impressed with his results?

0:09:28 > 0:09:31You put them all on one tray.

0:09:31 > 0:09:35In your recipe it clearly says, put it on two trays.

0:09:35 > 0:09:38The reason we put them on two trays is because they have to be bigger.

0:09:38 > 0:09:43Let's have a quick look. It looks more like a floury roll

0:09:43 > 0:09:44than a pitta bread.

0:09:44 > 0:09:48You see inside it's more bread-like than it is pitta-like.

0:09:48 > 0:09:50Now it smells good.

0:09:51 > 0:09:54- To me it's more like a crisp bap. - Yes.

0:09:54 > 0:09:55Tastes delicious though, lovely.

0:10:23 > 0:10:25It'll pass as a pitta bread. It's pretty good.

0:10:26 > 0:10:30Kieran was out of his comfort zone on this challenge

0:10:35 > 0:10:38Yes, you've got a bit of a rise from them as well.

0:10:39 > 0:10:43- There she is.- It's all in the taste.

0:10:43 > 0:10:46You've got a lovely flavour, a lovely look,

0:10:46 > 0:10:48and you've got a great bake.

0:10:48 > 0:10:50Saffron raced ahead of everyone else

0:10:50 > 0:10:54but will the judges rate her bread any higher?

0:10:54 > 0:10:58You managed to mix it and knead it in five minutes. I couldn't do that!

0:11:02 > 0:11:05You get little bits of pockets, then it's quite tight.

0:11:05 > 0:11:08It's not even enough because the kneading wasn't done properly.

0:15:17 > 0:15:21so she needs to pull out all the stops to impress them

0:15:25 > 0:15:27- Smoked haddock and roast quail's egg.- Nice.

0:15:27 > 0:15:30How is this relating to sport?

0:15:30 > 0:15:34Because haddock gives you protein, and so does the eggs,

0:15:34 > 0:15:39and the pastry gives you carbohydrates, or energy.

0:15:39 > 0:15:44- Yes.- Eggs and smoked haddock go really well together.

0:21:28 > 0:21:31Oatmeal I can just get in the pastry,

0:21:31 > 0:21:33it's giving it a little bit of crunch.

0:21:33 > 0:21:35A nicely flavoured filling.

0:21:35 > 0:21:39Next is Kieran, who took a huge risk and didn't blind bake

0:21:40 > 0:21:44He filled the tarts with chicken, bacon, tomato and cheese,

0:21:44 > 0:21:46and flavoured them with spicy cayenne pepper.

0:21:46 > 0:21:50When you look at them, I immediately want to taste them.

0:21:50 > 0:21:53They look this gorgeous golden brown colour.

0:21:53 > 0:21:55They look so tempting, I can't keep my hands off!

0:21:55 > 0:22:00Visually, the pastry looks fantastic. The shape is bang-on.

0:22:02 > 0:22:05and the bake you've got on the pastry, is very good as well.

0:22:49 > 0:22:52but it's very good pastry - it's the evenness of it.

0:23:42 > 0:23:45because he felt like it, and they didn't set.

0:23:45 > 0:23:48The pastry was just a little thick,

0:23:48 > 0:23:51and the onion wasn't quite done.

0:23:51 > 0:23:54And his pittas this morning were, unfortunately, not very good.

0:23:54 > 0:23:58He turned them into baps and rolls rather than pitta bread,

0:23:58 > 0:24:03as he never rolled it thin enough. Unfortunately, they were too fat.

0:24:04 > 0:24:09the judges said they were a bit raw and they were a bit uncooked,

0:24:09 > 0:24:13so I'm still happy, but I think I'll take that in

0:24:21 > 0:24:25Sadly, the pastry was rather undercooked.

0:24:39 > 0:24:42But I think I've still got a 50/50 chance of getting into the final.

0:25:01 > 0:25:04which always gives it a lovely colour.

0:25:04 > 0:25:07His pittas were very good. He came out with a great product.

0:25:07 > 0:25:11There was a bit too much of a kick in my tarts.

0:25:13 > 0:25:16but Paul said there was a bit too much of a kick.

0:25:24 > 0:25:28Haddock and egg goes very well. She had dill in her pastry.

0:25:33 > 0:25:36The idea was good. She's lined them to the top, excellent filling.

0:25:39 > 0:25:45However, her ingenuity, her skill and her flair are good.
