0:00:07 > 0:00:09My dad's a chef.

0:00:10 > 0:00:14But I think I'm already better than him.

0:00:14 > 0:00:16My name's Matilda Ramsay,

0:00:16 > 0:00:17but people usually call me Tilly.

0:00:17 > 0:00:20Meet my embarassing family.

0:00:23 > 0:00:25Mum - she wears the trousers

0:00:25 > 0:00:27and is the only one Dad's afraid of.

0:00:27 > 0:00:29I'm loving the hair.

0:00:29 > 0:00:30Big sister Megan.

0:00:30 > 0:00:32She's all grown-up now

0:00:32 > 0:00:35and crazy to get on with life.

0:00:35 > 0:00:38Jack - he's so good at sport,

0:00:38 > 0:00:41he's going to be playing for Britain soon.

0:00:41 > 0:00:43This is Holly,

0:00:43 > 0:00:45she is determined to be the greatest

0:00:45 > 0:00:47fashion designer of her generation.

0:00:47 > 0:00:51Dad - even though he's hard on the outside

0:00:51 > 0:00:53he's soft and mushy on the inside.

0:00:53 > 0:00:56and he's quite a good cook, too.

0:00:56 > 0:00:59Eh, excuse me. How about very?

0:00:59 > 0:01:00Matilda.

0:01:00 > 0:01:02Matilda!

0:01:02 > 0:01:05When you're the youngest you have to fight to get noticed,

0:01:05 > 0:01:08so that's why I love to cook up a storm.

0:01:08 > 0:01:10This is my world.

0:01:10 > 0:01:12MUM: You're having a laugh!

0:01:12 > 0:01:14OK, Ramsays, let's go.

0:01:20 > 0:01:23This summer we've come to Los Angeles and I'm doing a food blog

0:01:23 > 0:01:28about some of my cooking and what me and my crazy family get up to.

0:01:28 > 0:01:32When you travel around Los Angeles you see pools everywhere,

0:01:32 > 0:01:37and, because it's so sunny and hot here, you always want to dive in.

0:01:37 > 0:01:40Two of my favourite things in the world are swimming

0:01:40 > 0:01:43and throwing parties for my friends.

0:01:43 > 0:01:44And for my pool party today

0:01:44 > 0:01:46I'm serving up sea lollies,

0:01:46 > 0:01:48rock pool salad

0:01:48 > 0:01:51and my best ever fish finger sandwiches.

0:01:51 > 0:01:52So my big question is...

0:01:59 > 0:02:03My big sister Megan and my brother Jack are both brilliant swimmers

0:02:03 > 0:02:08and today they're going to do some serious training, LA style.

0:02:08 > 0:02:11But not everyone in our family is into water.

0:02:11 > 0:02:13Holly and mum don't really like swimming

0:02:13 > 0:02:17because they get their hair dirty after they wash it.

0:02:17 > 0:02:20- Hi, Mum.- But I am very good at it.

0:02:20 > 0:02:23Yeah. Mum is so good at swimming.

0:02:25 > 0:02:27Whoops!

0:02:29 > 0:02:32What will keep you cool without getting your hair wet

0:02:32 > 0:02:34are my black and red sea lollies.

0:02:38 > 0:02:40My sea lollies are brilliant.

0:02:40 > 0:02:44They're even better than the real sea, plus they're a bit tastier.

0:02:45 > 0:02:49First, I'm going to start by cutting up the strawberries.

0:02:49 > 0:02:52If, like me, you're going to take over the kitchen, don't forget is

0:02:52 > 0:02:55that your grown-ups like you to ask them first.

0:02:55 > 0:02:57I really like strawberries.

0:02:57 > 0:03:00You want to cut them in half and then half again

0:03:00 > 0:03:01so they're quite small.

0:03:01 > 0:03:03Here I've got two juices.

0:03:03 > 0:03:06This is strawberry and this is blackcurrant.

0:03:06 > 0:03:09To make them colourful I'm pouring in blackcurrant juice

0:03:09 > 0:03:13in the bottom half and dropping in slices of strawberry.

0:03:13 > 0:03:15Now you're going to leave them in the freezer to set

0:03:15 > 0:03:16until they're hard.

0:03:16 > 0:03:19By freezing the blackcurrant juice first,

0:03:19 > 0:03:21you can create cool two-tone lollies.

0:03:25 > 0:03:27Jack and Megan are in swimming teams back home

0:03:27 > 0:03:30and both are really competitive, so they're always

0:03:30 > 0:03:31train, train, training.

0:03:31 > 0:03:33I can't wait.

0:03:33 > 0:03:36They love it in LA because they take swimming really seriously

0:03:36 > 0:03:40over here and there are 43,000 outdoor pools.

0:03:40 > 0:03:43You know, this coach used to be an Olympic swimmer.

0:03:45 > 0:03:48- I'm Matt.- I'm Jack. - Nice to meet you.- I'm Megan.

0:03:48 > 0:03:49Megan, nice to meet you guys.

0:03:51 > 0:03:55Their coach today is US Masters champion Matt Harrigan.

0:03:55 > 0:03:57How often are you going to practise?

0:03:57 > 0:04:00I do swim training two or three times a week.

0:04:00 > 0:04:02Really get some power in that first stroke.

0:04:02 > 0:04:04Come up and then start going.

0:04:06 > 0:04:08They're pretty good swimmers,

0:04:08 > 0:04:12they've worked at it enough to become somewhat competitive.

0:04:12 > 0:04:15But there's one big difference between us Brits

0:04:15 > 0:04:17and the Americans in the pool.

0:04:17 > 0:04:20They're swimming on the same side of the lane as they

0:04:20 > 0:04:21would drive on in the UK.

0:04:31 > 0:04:34Back to my black and red sea lollies.

0:04:34 > 0:04:36The blackcurrant juice is frozen, so pop in lolly sticks

0:04:36 > 0:04:40and pour in the strawberry juice to make the Red Sea.

0:04:40 > 0:04:43There are two very distinctive colours resembling the ocean.

0:04:43 > 0:04:46I don't do it just to make them look fancy, they're just

0:04:46 > 0:04:48more enjoyable when you have something that looks

0:04:48 > 0:04:50colourful and bright.

0:04:50 > 0:04:53I'm cutting mint to look like seaweed.

0:04:53 > 0:04:57Strawberry and mint go very well together.

0:04:57 > 0:05:00These are so much fun for my pool party.

0:05:00 > 0:05:02I can't wait for everyone to dig in.

0:05:06 > 0:05:08Over at the pool, Jack and Megan's

0:05:08 > 0:05:12swim training is getting competitive.

0:05:12 > 0:05:13Take your mark...

0:05:13 > 0:05:14Hup!

0:05:19 > 0:05:21- Megan, she did that very well. - Did you hear that, Jack?

0:05:22 > 0:05:25Everyone in my family loves to win,

0:05:25 > 0:05:28so Jack and Megan are always racing each other.

0:05:28 > 0:05:29There's nothing wrong with

0:05:29 > 0:05:31a little sibling rivalry.

0:05:32 > 0:05:33Hup!

0:05:43 > 0:05:48The world record for 50m freestyle is 20.5 seconds.

0:05:48 > 0:05:50I wonder if they'll get anywhere close.

0:05:50 > 0:05:52Great, 26.

0:05:56 > 0:05:59Dad's really into his fitness too.

0:05:59 > 0:06:01He turns everything into a competition

0:06:01 > 0:06:04and I love taking him on in the kitchen.

0:06:04 > 0:06:06Right, what are you doing next?

0:06:06 > 0:06:08Erm, my rock pool salad.

0:06:08 > 0:06:09Rock pool salad.

0:06:09 > 0:06:11So, carrots - you're all healthy.

0:06:11 > 0:06:13You've gone a little bit LA.

0:06:13 > 0:06:15- What's the dressing? - You'll have to wait and see.

0:06:15 > 0:06:18- Oh, come on. Give me a little bit more than that.- Nope.

0:06:18 > 0:06:20Please leave my kitchen now.

0:06:20 > 0:06:21HE LAUGHS

0:06:21 > 0:06:23- Do you need me at all?- Nope.

0:06:23 > 0:06:24- Advice?- Nope.- Support?- Nope.

0:06:24 > 0:06:27- Hugs?- Yeah.

0:06:27 > 0:06:29You can have that, I suppose.

0:06:30 > 0:06:33One, two, three, boom!

0:06:33 > 0:06:35Don't burn anything, please.

0:06:35 > 0:06:38He can be annoying, but I'm sure he'll love

0:06:38 > 0:06:40my brilliant rock pool salad.

0:06:40 > 0:06:43This rock pool salad is going to be brilliant

0:06:43 > 0:06:45for my pool party.

0:06:45 > 0:06:50I'm using salads that look like seaweed to make my edible rock pool.

0:06:50 > 0:06:53Start by making the carrots into ribbon shapes.

0:06:53 > 0:06:55You want them to be about this thick.

0:06:55 > 0:06:57Salads are very good for pool parties

0:06:57 > 0:07:01because they are very light and very delicious as well.

0:07:02 > 0:07:05This is how I'm making the carrot fish.

0:07:05 > 0:07:08As you can see, it's not a perfect fish

0:07:08 > 0:07:11but it still looks good enough to go on a rock pool.

0:07:11 > 0:07:14And you can eat the leftover bits as you go.

0:07:14 > 0:07:17They can be pointy or curvy.

0:07:17 > 0:07:19I wonder if there's a fish

0:07:19 > 0:07:21called carrot fish.

0:07:24 > 0:07:27Roughly tear up these lettuce leaves

0:07:27 > 0:07:29to make it look more like seaweed.

0:07:29 > 0:07:33To make it really tasty I'm dressing my salad with a pinch of salt,

0:07:33 > 0:07:36pepper, olive oil and lemon juice.

0:07:36 > 0:07:39I really like lemony dressings, especially when it's summer

0:07:39 > 0:07:42because it's more summery and zingy.

0:07:47 > 0:07:49I do get everything everywhere.

0:07:49 > 0:07:54Just get your hands under and toss it over so it's nice and coated.

0:07:54 > 0:07:57Adults really like it when we eat salad because they say it's

0:07:57 > 0:08:00very good for you and you've got to have loads of greens.

0:08:00 > 0:08:03But forget them, this salad really rocks.

0:08:03 > 0:08:05I'm now just going to add in some tomatoes,

0:08:05 > 0:08:07all different colours.

0:08:07 > 0:08:10This looks more like the rocks in the ocean.

0:08:10 > 0:08:12Now I have the rocks in, it's time to add some fish.

0:08:16 > 0:08:18Tilly!

0:08:18 > 0:08:21- Hello, how was your lesson? - It was really fun.- It was awesome.

0:08:21 > 0:08:23- What are you making for us? - Rock pool salad.

0:08:23 > 0:08:24It's a carrot fish.

0:08:27 > 0:08:29We're about to go home.

0:08:29 > 0:08:33Can you get me loads of inflatables for the pool party, please?

0:08:33 > 0:08:37- OK, awesome, we'll do that for you. - See you guys later.- Bye.

0:08:37 > 0:08:38It's good to get them working.

0:08:51 > 0:08:55I love making sure my pool parties so with a real splash,

0:08:55 > 0:08:59so Jack and Megan are helping out, picking up some cool inflatables.

0:08:59 > 0:09:02- This is massive.- I can't wait.

0:09:03 > 0:09:05- A parrot.- Yes.- An octopus?

0:09:06 > 0:09:11Shotgun, you and I should have those.

0:09:11 > 0:09:13Water guns.

0:09:13 > 0:09:15Those two are off their trolleys.

0:09:15 > 0:09:18- That was definitely a good shop. - Definitely a good shop.

0:09:18 > 0:09:20I think Jack and Megan will be pretty happy

0:09:20 > 0:09:22when they see the next dish too.

0:09:27 > 0:09:30Fish finger sandwiches were one of Dad's favourite things to eat

0:09:30 > 0:09:32when he was growing up.

0:09:32 > 0:09:34He can't have changed much because they still are now.

0:09:34 > 0:09:37But I think the ones I make rule.

0:09:37 > 0:09:40These are my best ever fish finger sandwiches.

0:09:43 > 0:09:46This is a brilliant way to make proper fish fingers.

0:09:46 > 0:09:48For the coating you'll need flour,

0:09:48 > 0:09:49breadcrumbs,

0:09:49 > 0:09:51beaten eggs

0:09:51 > 0:09:54and my secret ingredient - cornflakes.

0:09:54 > 0:09:58This is what gives them a special taste because it's more crunchy.

0:09:58 > 0:10:01Dad never uses cornflakes on his fish.

0:10:01 > 0:10:03This is tastier than Dad's.

0:10:03 > 0:10:07It's messy but really easy to make my fish fingers.

0:10:07 > 0:10:11First, you need to dip it in your plain flour and then into your egg.

0:10:11 > 0:10:14Then you just dip it in your cornflakes

0:10:14 > 0:10:16and then into your breadcrumbs.

0:10:16 > 0:10:20Messy is really fun, it's more enjoyable to cook.

0:10:20 > 0:10:24It's kind of going everywhere. See? It's all messy.

0:10:24 > 0:10:26Remember, when you handle raw fish

0:10:26 > 0:10:29it's important to keep washing your hands so they're very clean.

0:10:29 > 0:10:32They're going to go into the oven for...

0:10:32 > 0:10:34It depends on the thickness of your fish.

0:10:36 > 0:10:39When you're having a pool party youwant your decorations

0:10:39 > 0:10:42to be just as good as your food.

0:10:42 > 0:10:46The theme is the ocean so there's a palm tree, some jellyfish,

0:10:46 > 0:10:47an octopus...

0:10:47 > 0:10:50These are really nice, the decorations are really good.

0:10:50 > 0:10:53On decoration duty today is my middle sister, Holly,

0:10:53 > 0:10:56and here best friend from home, Elspeth.

0:10:56 > 0:10:59- Elspeth, are you excited to be in LA?- Very excited.

0:10:59 > 0:11:00Never been, so it's exciting.

0:11:02 > 0:11:04I'll see you guys later.

0:11:06 > 0:11:08It's time to get the fish fingers out.

0:11:08 > 0:11:10They look so good.

0:11:11 > 0:11:14To make the perfect fish finger sandwich

0:11:14 > 0:11:16you definitely need the right bread.

0:11:16 > 0:11:19I'm using white, but go with what you like best.

0:11:19 > 0:11:24Here we've got the sea foam sauce and the shark bite sauce.

0:11:24 > 0:11:27This is really tartare sauce with a bit of dill in it.

0:11:27 > 0:11:28Thisis the shark bite sauce.

0:11:28 > 0:11:31It's just ketchup with a bit of chilli sauce in it.

0:11:31 > 0:11:33That gives it that bite.

0:11:33 > 0:11:35I always get hungry after swimming

0:11:35 > 0:11:38so I'm pretty sure Jack is going to want this sandwich.

0:11:41 > 0:11:45It tastes so nice with all this cornflake mix on it.

0:11:45 > 0:11:46It's so delicious.

0:11:46 > 0:11:49I'm sure everyone's going to love them.

0:11:49 > 0:11:51They do look really amazing.

0:12:00 > 0:12:02Come on, everyone, let's go sit down.

0:12:02 > 0:12:04My food's ready and all the gang are here.

0:12:04 > 0:12:07Time to get this pool party started.

0:12:07 > 0:12:11Who do you guys think is the best swimmer sitting at the table?

0:12:11 > 0:12:13- HE WHISPERS:- It's me. It's me!

0:12:13 > 0:12:18This is fish finger sandwiches with shark bite sauce...

0:12:18 > 0:12:22- Shark bite sauce? - ..and sea foam sauce.

0:12:22 > 0:12:26So have you guys ever had fish finger sandwiches before?

0:12:26 > 0:12:29I've never really tasted fish like that, but it tastes really good.

0:12:29 > 0:12:31Here's your rock pool salad.

0:12:35 > 0:12:37- I'm loving the carrot fish. - It's really awesome.

0:12:37 > 0:12:40I would probably give Tilly ten out of ten.

0:12:40 > 0:12:42Who's ready for some dessert?

0:12:42 > 0:12:43I am!

0:12:46 > 0:12:49My ice lollies are ready now.

0:12:49 > 0:12:52This bowl makes them look like fish in a fish tank.

0:12:53 > 0:12:55I'm very happy with these ice lollies,

0:12:55 > 0:12:57I'm sure everyone is going to love them.
