0:00:43 > 0:00:46because the main ingredient is potatoes,

0:00:46 > 0:00:48and I love potatoes.

0:00:48 > 0:00:52Charlotte has learned how to make boxty from her family.

0:00:52 > 0:00:54Her family are from Ireland,

0:00:54 > 0:00:58and boxty is a traditional Irish potato dish.

0:00:58 > 0:01:01Ireland is a country in Europe.

0:01:01 > 0:01:06It's named the Emerald Isle because it has so much green countryside.

0:01:06 > 0:01:11It has beautiful green hills, trees, grass and meadows,

0:01:11 > 0:01:14and is good for farming crops and animals.

0:01:14 > 0:01:17One of Ireland's most important crops are potatoes,

0:01:17 > 0:01:20where they've been grown for hundreds of years.

0:01:20 > 0:01:24Potatoes are one of the main ingredients in many Irish recipes,

0:01:24 > 0:01:29such as Irish stew, shepherd's pie and a potato pancake called boxty.

0:01:32 > 0:01:35Charlotte has washed her hands, put on her apron,

0:01:35 > 0:01:37and she's ready to cook.

0:01:37 > 0:01:40I'm going to make a boxty for my friends.

0:01:40 > 0:01:44And she's invited Jasmine, Caleb and Alexis

0:01:44 > 0:01:47to taste a special ingredient in her Irish boxty

0:01:47 > 0:01:51before they come round for an Irish meal later.

0:02:01 > 0:02:02It's rosemary.

0:02:08 > 0:02:13Oh, no. They don't seem all that keen on the taste of fresh rosemary.

0:02:22 > 0:02:26..because rosemary is an important ingredient in her recipe.

0:03:03 > 0:03:06Now, ask a grown-up to cook them for you.

0:03:06 > 0:03:10While they're cooking, take some peeled uncooked potato pieces

0:03:16 > 0:03:20My nan from Ireland taught me to make boxty.

0:03:20 > 0:03:25I've got lots of family who live in Ireland.

0:03:25 > 0:03:29When the potatoes from earlier have baked in the oven,

0:03:31 > 0:03:34- I'll just leave the potatoes here to cool down.- OK.

0:03:42 > 0:03:46When the oven-baked potatoes have cooled,

0:03:46 > 0:03:47twist them...

0:03:48 > 0:03:51..and scoop out the insides with a spoon.

0:03:56 > 0:03:58Pop them into a plastic food bag...

0:04:29 > 0:04:32Rosemary is a plant with lots of small green leaves

0:04:32 > 0:04:36that look like little needles.

0:04:36 > 0:04:39Rosemary is mostly used as a herb, which can add flavour

0:04:39 > 0:04:44to both sweet and savoury recipes.

0:04:44 > 0:04:47Rosemary has a very pleasant smell and is often used

0:04:47 > 0:04:51in the making of perfumes and cosmetics.

0:04:51 > 0:04:53Rosemary attracts bees,

0:04:53 > 0:04:58and gardeners plant it to encourage them into their gardens.

0:04:58 > 0:05:01Now I'm going to put the rosemary

0:05:01 > 0:05:06into the mashed potato and the grated potato.

0:05:06 > 0:05:08Mm, it smells like fresh air.

0:05:10 > 0:05:13Give it another mix...

0:05:13 > 0:05:15..then crack an egg...

0:05:15 > 0:05:19..check there's no shell in it, wipe your hands...

0:05:19 > 0:05:22..and beat it with a fork.

0:05:22 > 0:05:26Add it to the bowl and give it another mix.

0:05:26 > 0:05:31Then oil two Yorkshire pudding trays.

0:05:31 > 0:05:36Fill one with the potato mixture, just like this.

0:05:36 > 0:05:40Then carefully crack four eggs to fill the cups in the other tray.

0:05:40 > 0:05:44I've got a special Shamrock surprise for my friends.

0:05:44 > 0:05:49A shamrock is a kind of leaf

0:05:49 > 0:05:52that represents Ireland.

0:05:52 > 0:05:55Remember to wipe your hands.

0:05:55 > 0:06:00Dad, can you put the eggs and the boxty in the oven, please?

0:06:00 > 0:06:01Sure, Charlotte.

0:06:01 > 0:06:06Yes, and ask a grown-up to pop everything in the oven for you.

0:06:10 > 0:06:14Now I'm going to mash the corned beef.

0:06:18 > 0:06:24That's brilliant. And carefully chop up the parsley.

0:06:24 > 0:06:29Dad, can you take the egg and the boxty out the oven, please?

0:06:30 > 0:06:31When everything's cooked,

0:06:31 > 0:06:35ask a grown-up to take it all out of the oven for you

0:07:01 > 0:07:04If you want to make Charlotte's Irish boxty,

0:07:04 > 0:07:07first wash and dry potatoes,

0:07:07 > 0:07:11prick them with a fork and place them on a baking tray,

0:07:11 > 0:07:15asking a grown-up to put them in the oven for you.

0:07:15 > 0:07:19Grate peeled, uncooked potato pieces like this.

0:07:22 > 0:07:24And tip them into a bowl.

0:07:24 > 0:07:28When your potatoes are baked and cooled,

0:07:28 > 0:07:34twist them and scoop the insides out with a spoon.

0:07:34 > 0:07:37Pop them into a plastic bag.

0:07:37 > 0:07:40Mash the potatoes with your hands,

0:07:40 > 0:07:42and tip this into the bowl.

0:07:47 > 0:07:48Add salt and pepper.

0:07:51 > 0:07:55And then pull the leaves from fresh rosemary

0:07:55 > 0:07:57and add them to the bowl.

0:08:08 > 0:08:14..and tip it into the bowl, mixing again.

0:08:49 > 0:08:51When the potatoes and eggs are cooked,

0:08:51 > 0:08:55ask a grown-up to take your trays out of the oven.

0:08:55 > 0:08:58Now build the boxty by putting corned beef on top

0:08:58 > 0:09:00of the potato base,

0:09:00 > 0:09:04adding an egg on top, chopped parsley

0:09:04 > 0:09:06and, yes, some sliced tomato.

0:09:09 > 0:09:12Now there's just enough time for Charlotte to get the table ready
