0:00:29 > 0:00:33Hello, my name's Sienna. Welcome to my house. Come in.

0:00:33 > 0:00:35Hello, Sienna!

0:00:35 > 0:00:38This is my dad, and this is my sister.

0:00:38 > 0:00:39- Hello.- Hi. - Hi, guys.

0:00:39 > 0:00:41And this is my kitchen.

0:00:41 > 0:00:46Today, I'm going to be making jollof rice, cos I love to eat it.

0:00:46 > 0:00:50Sienna's dad has taught her a special way of making jollof rice

0:00:50 > 0:00:52that she can do all on her own.

0:00:52 > 0:00:55Sienna's dad is originally from Nigeria.

0:00:55 > 0:00:58Nigeria is a country in Africa.

0:00:58 > 0:01:00There are more people living in Nigeria

0:01:00 > 0:01:03than in any other African country.

0:01:03 > 0:01:08In some Nigerian families, children learn to cook from a very young age

0:01:08 > 0:01:12and help to cook and serve the food to their families.

0:01:12 > 0:01:15Rice is a very important ingredient in Nigerian cooking

0:01:15 > 0:01:18and many families eat it at least once a day.

0:01:19 > 0:01:23Jollof rice is a very popular recipe in Nigeria,

0:01:23 > 0:01:26and each family has their own special way of making it,

0:01:26 > 0:01:30adding in different vegetables and meats that they like.

0:01:30 > 0:01:35Sienna has washed her hands, put on her apron, and she's ready to cook.

0:01:35 > 0:01:38I'm making jollof rice for my friends.

0:01:38 > 0:01:43She's invited Max, Eva and Sophia to taste one of the ingredients

0:01:43 > 0:01:48before they come round for a very special meal later.

0:01:48 > 0:01:51- What's that?!- It's a herb.

0:01:53 > 0:01:55I think it's a type of herb.

0:01:55 > 0:01:58You're right, it's a herb - fresh thyme.

0:01:58 > 0:02:00That's disgusting!

0:02:00 > 0:02:03Oh, dear!

0:02:03 > 0:02:04It tastes minty.

0:02:04 > 0:02:07No-one's sure about the taste of fresh thyme.

0:02:07 > 0:02:09I don't really like it.

0:02:10 > 0:02:13Let's find out if Sienna can change their minds,

0:02:13 > 0:02:17because thyme is a very special ingredient in her jollof rice.

0:02:17 > 0:02:23As well as fresh thyme, you'll need salt, olive oil, basmati rice,

0:02:23 > 0:02:27tinned plum tomatoes, frozen peas,

0:02:27 > 0:02:32bay leaves, a sweet red pointed pepper,

0:02:32 > 0:02:36spring onions, medium curry powder, ground nutmeg,

0:02:36 > 0:02:41smoked paprika, black pepper,

0:02:41 > 0:02:47garlic cloves, stock powder, tomato puree and water.

0:02:49 > 0:02:52First of all, I'm going to put the rice into the water

0:02:52 > 0:02:55so it's easier to cook.

0:02:55 > 0:02:57That's right, leave it to soak.

0:02:57 > 0:03:01Next, I'm going to drain out the tomatoes.

0:03:01 > 0:03:03They look very squishy.

0:03:05 > 0:03:09You'll need to save that juice for later.

0:03:09 > 0:03:12We put the tomatoes into the bowl.

0:03:14 > 0:03:20And then chop them up into really small, small pieces.

0:03:20 > 0:03:23Yeah! Be careful with those scissors.

0:03:23 > 0:03:28I add the frozen peas into the pot.

0:03:28 > 0:03:32And now for the sweet pointed pepper.

0:03:32 > 0:03:33So, you twist it.

0:03:33 > 0:03:37It's got a nice popping sound when you twist it.

0:03:37 > 0:03:41And then take all the seeds out.

0:03:41 > 0:03:42Then carefully cut it up.

0:03:47 > 0:03:51I hope my friends are going to like this jollof rice.

0:03:51 > 0:03:55Now we've cut all the peppers, we'll put them inside the pot.

0:03:55 > 0:03:58And top and tail the spring onions.

0:03:58 > 0:04:00Oh, where did that one go?!

0:04:00 > 0:04:02Chop them into small pieces.

0:04:02 > 0:04:06I'm just going to put the springy onions into the pot.

0:04:08 > 0:04:10Drain the soaked rice.

0:04:10 > 0:04:14Now I'm going to add my rice into my pot.

0:04:14 > 0:04:17Then peel the skin off the garlic clove.

0:04:17 > 0:04:21If you find this tricky, you can always ask a grown-up to help.

0:04:21 > 0:04:23And now you just put it in your bag,

0:04:23 > 0:04:26and...and just bash it.

0:04:28 > 0:04:31That's ever so noisy, but very clever!

0:04:33 > 0:04:37Next, we're going to add this garlic to the tomato juice.

0:04:41 > 0:04:44So now it's time for my very special ingredient.

0:04:44 > 0:04:47- You know what that is!- Thyme. - That's right.

0:04:49 > 0:04:51Thyme's a plant with small green leaves.

0:04:51 > 0:04:56It has a strong taste and smell and is used as a herb to add delicious

0:04:56 > 0:04:59flavour to lots of different types of cooking.

0:04:59 > 0:05:02Thyme smells so nice that it has been used

0:05:02 > 0:05:04as an ingredient in perfume.

0:05:05 > 0:05:07And in ancient times,

0:05:07 > 0:05:10it was even used in people's baths to help them smell nice.

0:05:10 > 0:05:12Quack!

0:05:14 > 0:05:20We're going to take some thyme and pull all the leaves off

0:05:20 > 0:05:24into the tomato juice.

0:05:24 > 0:05:28It's really easy to pull off the leaves of the thyme.

0:05:28 > 0:05:30Now we can add some smoked paprika,

0:05:30 > 0:05:34medium curry powder, stock powder,

0:05:34 > 0:05:37bay leaves, nutmeg,

0:05:37 > 0:05:40and a good twist of black pepper.

0:05:40 > 0:05:41Well done, Sienna.

0:05:41 > 0:05:44Now I'm going to add the tomato puree.

0:05:45 > 0:05:50Great! Then after that, we're going to give it a really good stir.

0:05:50 > 0:05:53Yeah, mix it, mix it, mix it!

0:05:53 > 0:05:58Now I'm going to pour the water into the tomato and spices.

0:06:02 > 0:06:08I'm going to get my chopped tomatoes and add it into the bowl.

0:06:08 > 0:06:12And also my sauce and spices.

0:06:14 > 0:06:15And stir.

0:06:17 > 0:06:19Wonderful colours!

0:06:19 > 0:06:21All the ingredients are in the pot.

0:06:21 > 0:06:24It's time for my dad to put it in the oven.

0:06:24 > 0:06:26Dad!

0:06:26 > 0:06:28Oh, wow, Sienna, that looks amazing!

0:06:28 > 0:06:31Ask a grown-up to put it in the oven for you.

0:06:33 > 0:06:36And Dad's made a Nigerian salad to go with it.

0:06:36 > 0:06:38It looks very colourful.

0:06:38 > 0:06:42Sienna's helping to finish it off with sliced hard-boiled eggs.

0:06:46 > 0:06:50So, if you want to make Sienna's jollof rice...

0:06:50 > 0:06:52..add Basmati rice to water...

0:06:53 > 0:06:54..and leave it to soak.

0:06:56 > 0:07:00Drain the tomatoes through a sieve and save the juice for later.

0:07:01 > 0:07:04Tip them into a bowl

0:07:04 > 0:07:07and carefully chop them up.

0:07:07 > 0:07:10Now, add frozen peas to an ovenproof dish.

0:07:11 > 0:07:14Twist a sweet red pointed pepper, like this.

0:07:16 > 0:07:18And pull out the seeds.

0:07:18 > 0:07:20Carefully cut it into pieces,

0:07:20 > 0:07:22then add it to the pot.

0:07:23 > 0:07:27Top and tail spring onions and cut them into small pieces.

0:07:28 > 0:07:30Then add these to the pot, too.

0:07:32 > 0:07:35Drain the soaked rice with a sieve...

0:07:36 > 0:07:37..and add that to the pot.

0:07:40 > 0:07:43Peel the skin off a garlic clove...

0:07:43 > 0:07:46..put it in a plastic food bag and bash it!

0:07:48 > 0:07:52Add the crushed garlic to the saved tomato juice.

0:07:53 > 0:07:56Pick and add fresh thyme leaves.

0:07:57 > 0:07:59Add smoked paprika...
