0:01:21 > 0:01:27eat many healthy foods such as olives, lamb, fish, squid,

0:01:27 > 0:01:31chickpeas and lots of vegetables.

0:01:32 > 0:01:35Valentina has washed her hands, put on her apron

0:01:35 > 0:01:37and she's ready to cook.

0:01:37 > 0:01:40I'll be making a vegetarian moussaka for my friends.

0:01:40 > 0:01:42It's a traditional Greek dish.

0:01:42 > 0:01:47She's invited Thomas, Angela and Tiyam to taste

0:01:47 > 0:01:49one of the ingredients before they come round

0:01:49 > 0:01:50for a special Greek meal later.

0:01:58 > 0:02:00It's cooked aubergine.

0:02:03 > 0:02:06Ahhh, I don't like it. And it's spicy.

0:02:36 > 0:02:39fresh garlic, fresh parsley,

0:02:39 > 0:02:42tinned tomatoes, ground cumin,

0:02:42 > 0:02:46potatoes, cooked green lentils,

0:02:46 > 0:02:49spring onions and courgettes.

0:02:50 > 0:02:53There. So what we'll do is chop up the courgettes.

0:02:53 > 0:02:56You've got to chop off the bottom and top first.

0:02:58 > 0:03:00And carefully cut the rest into slices.

0:03:02 > 0:03:04Now put them on baking paper with a little olive oil,

0:03:07 > 0:03:11Ask a grown-up to peel and boil potatoes for you

0:05:03 > 0:05:05They don't need peeling, just slice off the ends

0:05:05 > 0:05:08and they are ready to be cooked.

0:05:10 > 0:05:13Aubergines originally come from ancient China.

0:05:13 > 0:05:17In olden times, some Chinese women used dye taken from aubergine skins

0:05:17 > 0:05:22to stain their teeth black because it was fashionable.

0:05:23 > 0:05:27Get your aubergines and put them on your tray.

0:05:27 > 0:05:30Put sliced aubergine on oiled baking paper.

0:05:31 > 0:05:35Brush with more oil and add black pepper.

0:05:35 > 0:05:39- Then ask a grown-up to cook both trays in the oven for you.- Mum!

0:07:02 > 0:07:06To make Valentina's Greek moussaka at home,

0:07:06 > 0:07:11carefully slice off the ends of your courgettes and cut them into slices.

0:07:14 > 0:07:18Now cut up some cooked and peeled potatoes.

0:07:18 > 0:07:22Put both the courgette and potato slices onto oiled baking paper

0:07:22 > 0:07:26on a baking tray and brush with oil.

0:07:26 > 0:07:30Add black pepper and put them to one side.

0:07:30 > 0:07:34Drained tinned chopped tomatoes using a sieve.

0:07:35 > 0:07:37Peel the garlic,

0:07:37 > 0:07:40put it into a plastic food bag

0:07:40 > 0:07:42and crush it with a rolling pin.

0:07:44 > 0:07:48Add the crushed garlic to the tomato mixture.

0:07:48 > 0:07:50Add some tomato puree.

0:07:57 > 0:08:02Then add the ground cinnamon, ground cumin and dried oregano.

0:08:21 > 0:08:25Now put slices of aubergine on baking paper on a baking tray

0:08:29 > 0:08:33Now ask a grown-up to cook it for you with the potatoes

0:08:35 > 0:08:41Then crack an egg and whisk after checking for shell.

0:08:41 > 0:08:43Then add it to the Greek yoghurt.

0:08:43 > 0:08:46Do the same with another egg,

0:08:46 > 0:08:49add ground nutmeg and give it a mix.

0:08:49 > 0:08:52When the vegetables have cooked and cooled,

0:08:52 > 0:08:55lay the potato slices in an oven proof dish.

0:08:55 > 0:09:01Cover the potatoes with the layer of tomato mixture then aubergines.

0:09:01 > 0:09:05Put the rest of the tomato mixture on top,

0:09:05 > 0:09:07add a layer of courgette,

0:09:07 > 0:09:10then cover everything with cooked green lentils.

0:09:10 > 0:09:13Pour the yoghurt mixture on top.

0:09:13 > 0:09:16Sprinkle on grated cheddar cheese,

0:09:16 > 0:09:20then ask a grown-up to put it in the oven for you.
