Lewis's Israeli Chocolate Challah Bread

0:00:45 > 0:00:49because it's really yummy and it's really easy to make.

0:00:49 > 0:00:53Lewis' mum, Jane, has shown him the family's very special

0:00:53 > 0:00:57way of making chocolate challah bread which is really tasty.

0:00:57 > 0:01:02Lewis' mum and grandparents originally come from Israel.

0:01:02 > 0:01:07Israel is a small country in a part of the world called the Middle East.

0:01:07 > 0:01:12Israel is mostly hot and dry in the summer but cold in the winter.

0:01:12 > 0:01:17People in Israel eat a lot of fruit and vegetables in their food.

0:01:17 > 0:01:20Many Israeli people love cooking at home and eating

0:01:20 > 0:01:25dinner in a family circle with lots of different types of food.

0:01:25 > 0:01:29Some people in Israel make a bread called challah bread

0:01:29 > 0:01:30to eat on special days.

0:01:30 > 0:01:35It's a sweet fluffy bread made in the shape of a plait.

0:01:38 > 0:01:42Lewis has washed his hands, put on his apron and is ready to cook.

0:01:42 > 0:01:46I'm going to be making my very own special chocolate challah

0:01:46 > 0:01:48bread for my friends.

0:01:48 > 0:01:53And he's invited George, Samuel, Amelia and Charlie to taste a

0:01:53 > 0:01:57special ingredients before they come round for an Israeli dessert later.

0:01:59 > 0:02:00It's chocolate.

0:02:00 > 0:02:03It doesn't taste like normal chocolate.

0:02:03 > 0:02:05It tastes like... Erm...

0:02:07 > 0:02:10..really strong... Urgh!

0:02:13 > 0:02:16You're right. It is dark chocolate.

0:02:16 > 0:02:20I do like light chocolate better but this is really nice.

0:02:34 > 0:02:38because dark chocolate makes his challah bread very tasty.

0:02:38 > 0:02:43As well as dark chocolate, you'll need salt, water,

0:02:43 > 0:02:46dried active yeast, honey,

0:02:46 > 0:02:51vegetable oil, eggs, plain flour and clementines.

0:02:52 > 0:02:58First I need to put the yeast into this jug.

0:02:58 > 0:03:02Make sure the water is warm and add some yummy, runny honey.

0:03:02 > 0:03:06Cover it with a clean tea towel and leave it for a while.

0:03:07 > 0:03:09Now crack those eggs.

0:03:15 > 0:03:20Give them a mix. Wipe your hands.

0:03:20 > 0:03:24Then I have to put some more honey into the jug.

0:03:24 > 0:03:26Oh, more runny honey!

0:03:29 > 0:03:32Add a pinch of salt and when the yeast is all bubbly,

0:03:32 > 0:03:34pour it into the flour.

0:03:34 > 0:03:37It looks like a hot chocolate.

0:03:38 > 0:03:42Now I'm going to add the egg as well.

0:03:42 > 0:03:47I'm going to mix all this together until it turns into dough.

0:03:52 > 0:03:56Now, sprinkle the worktop with flour to stop the dough sticking.

0:03:56 > 0:03:58I'm going to pour this onto the surface.

0:04:01 > 0:04:05Push and pull it just like this. That's called kneading.

0:04:08 > 0:04:09Oil your bowl...

0:04:14 > 0:04:16..pop the dough inside.

0:04:16 > 0:04:21Cover it with a clean tea towel and leave it to rise.

0:04:21 > 0:04:22What now, Lewis?

0:04:22 > 0:04:26I am going to peel some clementines.

0:04:26 > 0:04:30They go really nice with the challah bread.

0:04:30 > 0:04:33And after you've left the dough to rise...

0:04:33 > 0:04:34It's definitely done.

0:04:34 > 0:04:37..tip it onto a floured worktop.

0:04:37 > 0:04:42Squash the air out of it then roll it into a big sausage.

0:04:42 > 0:04:44What's next, Lewis?

0:04:44 > 0:04:46You're cutting it into three pieces.

0:04:46 > 0:04:50I'm going to make these three pieces into sausages.

0:04:57 > 0:05:01- Now it's time for my most important ingredient.- What's that?

0:05:01 > 0:05:02The chocolate.

0:05:02 > 0:05:07Dark chocolate is made from cocoa pods that grow on the cacao tree.

0:05:09 > 0:05:13The pods are ready to pick when they're a brown colour.

0:05:14 > 0:05:18Some cocoa pods can grow as big as a rugby ball.

0:05:19 > 0:05:22Inside each cocoa pod are the cocoa seeds.

0:05:24 > 0:05:26They tastes sour when first picked

0:05:26 > 0:05:29and nothing like the chocolate we're used to.

0:05:29 > 0:05:32Dried cocoa seeds are sent to factories where

0:05:32 > 0:05:36they're turned into lots of different types of chocolate.

0:05:36 > 0:05:38What do we do next, Lewis?

0:05:38 > 0:05:41I have to open this bag...

0:05:42 > 0:05:46..and put all of the chocolate inside the bag.

0:05:47 > 0:05:49Smash all of the chocolate together.

0:05:51 > 0:05:52LOUD BANGING

0:05:55 > 0:05:56That is so loud.

0:05:57 > 0:06:01Now I am going to put the chocolate into the dough.

0:06:03 > 0:06:05I'm going to hide all of the chocolate.

0:06:09 > 0:06:13And now I'm going to connect all of these tops together

0:06:13 > 0:06:16and then I'm going to start plaiting them.

0:06:23 > 0:06:28I'm really pleased with this challah bread.

0:06:28 > 0:06:31Mmm, yummy. Then brush the dough with beaten egg.

0:06:31 > 0:06:36It makes it go more shiny and it makes it look better.

0:06:36 > 0:06:41Now ask a grown-up to pop it in the oven for you. Mum?

0:06:41 > 0:06:45Now, if you want to make Lewis' chocolate challah bread,

0:06:45 > 0:06:48first add the dry active yeast to warm water.

0:06:48 > 0:06:54Add some runny honey then cover it with a clean tea towel

0:06:54 > 0:06:56and leave it in a warm place.

0:06:56 > 0:06:59Now crack your eggs into a jug...

0:07:01 > 0:07:04..add more runny, yummy honey,

0:07:04 > 0:07:08a pinch of salt and give it a good mix.

0:07:10 > 0:07:13Uncover the yeast mixture when it's gone bubbly

0:07:13 > 0:07:17and pour it into a bowl of flour.

0:07:18 > 0:07:23At the eggy mixture and mix it all together

0:07:23 > 0:07:25until it turns into a dough.

0:07:25 > 0:07:30Tip the dough onto a floured worktop then start to push

0:07:30 > 0:07:35and pull the dough until it's smooth, just like this.

0:07:37 > 0:07:41Next, brush a bowl with oil and pop the dough into it.

0:07:41 > 0:07:47Cover it with a clean tea towel and leave it to rise in a warm place.

0:07:48 > 0:07:51Put the dark chocolate into a food bag

0:07:51 > 0:07:55and bash it with a rolling pin till it goes into small pieces.

0:07:57 > 0:08:03When the dough has risen, tip it onto a floured worktop then

0:08:03 > 0:08:06push and pull it again to get all the air out.

0:08:06 > 0:08:08This might take a few minutes.

0:08:08 > 0:08:14Then roll it into a big sausage shape and cut it into three pieces.

0:08:15 > 0:08:18Roll each piece into smaller sausages

0:08:18 > 0:08:23and push your chocolate into each sausage, hiding it in the dough.

0:08:25 > 0:08:29Then squeeze the three sausages together at one end

0:08:29 > 0:08:33and cross each sausage until you get to the end.

0:08:38 > 0:08:40This little trick is called plaiting.

0:08:40 > 0:08:44Then squeeze the ends together just like this.

0:08:46 > 0:08:50Now brush more beaten egg on top of the loaf

0:08:50 > 0:08:54and lift it onto greaseproof paper on a baking tray.

0:08:54 > 0:08:57Then ask a grown-up to put it into the oven for you.

0:08:57 > 0:09:02Don't forget to peel and divide clementines into segments.

0:09:02 > 0:09:06They go very well with the cooked chocolate challah bread.

0:09:06 > 0:09:10Now there's just enough time for Lewis to get the table ready.
