0:06:39 > 0:06:42This is a special substance called a polymer.

0:06:44 > 0:06:48A polymer, Bud. There are lots of different polymers.

0:06:48 > 0:06:51But, when we add water to this polymer...

0:06:55 > 0:06:58..it makes the water go all rubbery.

0:06:58 > 0:07:02And jelly starts off as water too.

0:07:02 > 0:07:06Then you add a special food polymer and that makes it go all wobbly.

0:07:47 > 0:07:50First, you need to collect lots of beads.

0:08:04 > 0:08:09OK, let's imagine that these beads are a bit like water.

0:08:09 > 0:08:13Water is made of lots of tiny things called molecules,

0:08:13 > 0:08:17a bit like beads. And because water molecules are not joined together,

0:08:17 > 0:08:21they can move about freely and pour like this.

0:08:22 > 0:08:26Oh, what a brilliant noise the beads make!

0:08:26 > 0:08:29Now, let's see what happens if we tip the tray.

0:08:32 > 0:08:36They're rolling and flowing about, a bit like water.

0:08:36 > 0:08:39This string is a bit like a polymer.

0:08:39 > 0:08:43We're going to use it to show us how the jelly polymer works.

0:09:28 > 0:09:33The molecules are the same, they're just joined together.

0:09:39 > 0:09:42We're going to make our very own jellies.

0:09:42 > 0:09:47This powder is a special polymer that's used to make jelly.

0:09:47 > 0:09:49This powder is safe to eat,

0:09:49 > 0:09:52but there are lots that can make you ill,

0:09:52 > 0:09:56so never eat things unless you know what they are and that they're safe.

0:09:56 > 0:10:02I have given each of us different amounts of the jelly polymer.

0:10:02 > 0:10:06We're going to mix it with exactly the same amount of water.

0:10:06 > 0:10:12The water's hot, so we're all wearing our protective gloves!

0:12:10 > 0:12:15We found out jelly wobbles because of something called a polymer.

0:12:15 > 0:12:19This polymer can make water change from runny to solid

0:12:19 > 0:12:23by joining all the water molecules together like a string of beads.

0:12:23 > 0:12:25But a jelly will only wobble

0:12:25 > 0:12:29if it has the right mixture of water and polymer.

0:12:29 > 0:12:33If it's too solid, it won't wobble, and it's too runny,
