0:00:29 > 0:00:33supplementing the island's staple of farming and fishing.

0:00:34 > 0:00:38The most northerly island is Unst, where locals mix tradition

0:00:38 > 0:00:42with innovation to survive in a fast-changing world.

0:00:44 > 0:00:49In the days to come, the 140-year-old agricultural show

0:00:49 > 0:00:51gets the competitive juices going.

0:02:00 > 0:02:02Minister David Cooper has bought an old farmhouse

0:02:02 > 0:02:07on the south tip of Unst at Uyeasound for his retirement.

0:02:09 > 0:02:13But before he moves in, he wants to carry out some refurbishments.

0:02:14 > 0:02:20So this is an old house, which in the 1980s was hugely renovated.

0:02:20 > 0:02:26What they couldn't do then was make the small windows of the house

0:02:26 > 0:02:29any larger and when you're in the house,

0:02:29 > 0:02:34you have to stand in the windows to enjoy this fabulous view.

0:02:34 > 0:02:40So we're having this extension room built on the ground

0:02:40 > 0:02:47where I've killed off the grass and it will have huge windows

0:02:47 > 0:02:52and we'll be able to sit behind them and look out and enjoy the view.

0:02:54 > 0:02:58Having moved from parish to parish throughout his career,

0:02:58 > 0:03:01Minister David is looking forward to settling

0:03:01 > 0:03:04in one place for the first time in his life.

0:03:43 > 0:03:46at the local distillery to flavour the gin.

0:03:46 > 0:03:51Now, he's producing a new product with a more exotic ingredient

0:03:51 > 0:03:54and he's asked Sarah to supply it for him.

0:03:54 > 0:03:55It's a new one to me.

0:03:55 > 0:03:57He's asked for seaweed!

0:04:02 > 0:04:06Luckily, there's an abundant supply at her local beach.

0:04:06 > 0:04:10But to make sure she harvests only the edible ones, she's asked

0:04:10 > 0:04:15her friend and local seaweed aficionado Chris Dumont for help.

0:04:29 > 0:04:34Make a Korean style seaweed soup with sesame oil, ginger,

0:04:34 > 0:04:37chilli, garlic and seaweed.

0:04:37 > 0:04:41Boil it... No, simmer it for about 20 minutes and it's lovely.

0:04:44 > 0:04:46It's easy enough to dry as well to keep.

0:04:46 > 0:04:49You can dry it on your washing line.

0:04:49 > 0:04:51I don't think my other half would really appreciate it

0:04:58 > 0:05:01it's time to dry the seaweed out back home.

0:05:03 > 0:05:06that Mark at the distillery has requested.

0:05:06 > 0:05:08This is the fresh bladderwrack and

0:05:08 > 0:05:10I've washed it.

0:05:10 > 0:05:13If you don't wash it and it's still got seawater on it,

0:05:13 > 0:05:15then it won't dry out.

0:05:15 > 0:05:18So I've rinsed it, dried it off and now I'm going to put

0:05:18 > 0:05:21it in the oven on the lowest heat possible to dry it out very gently.

0:05:21 > 0:05:25We don't want to cook it, we just want to dry it out.

0:05:27 > 0:05:30Seaweed gin, I know, who'd have thought of it?!

0:05:34 > 0:05:38Over at his manse on the neighbouring island of Yell,

0:06:16 > 0:06:19we've bought for our retirement in Unst,

0:06:35 > 0:06:37to crack on with the new extension.

0:08:24 > 0:08:26They thoroughly enjoy among themselves

0:08:26 > 0:08:29a game of Scrabble, still.

0:08:29 > 0:08:32And you can have four 90-year-olds sitting around having

0:08:32 > 0:08:34a game of Scrabble.

0:08:34 > 0:08:37But equally, in the community they're glad

0:08:37 > 0:08:42to put something on display from their club.

0:08:42 > 0:08:45This year, they'll be entering a Shetland croft house.

0:08:45 > 0:08:49I was wondering, is this exhibit going to be a prize-winner

0:08:56 > 0:09:00Their latest contribution to the show is the croft house,

0:09:00 > 0:09:02with its stone and straw and everything else.

0:09:16 > 0:09:20Another islander with a rosette in his sights is Richard Spence,

0:09:20 > 0:09:23who knows a thing or two about traditional crofts.

0:09:30 > 0:09:33Richard is a keen breeder of Shetland sheep.

0:09:37 > 0:09:39A category that will be fiercely contested.

0:10:09 > 0:10:12and the agricultural show is no exception.

0:10:50 > 0:10:53But showing the island's iconic mascot, the Shetland pony,

0:11:19 > 0:11:23such as Frank Roberts, the island's horse whisperer.

0:11:23 > 0:11:25At his pony stud farm in Clibberswick,

0:11:25 > 0:11:28along with his wife Jem and their friend Pat,

0:11:28 > 0:11:32he's getting eight-year-old stallion Flashback ready for the show.

0:11:34 > 0:11:37This is the bit they don't like, getting the cold water on them.

0:12:42 > 0:12:46She moved here a few months ago from the neighbouring island of Fetlar

0:12:51 > 0:12:53particularly because of its position.

0:12:53 > 0:12:57It's on the edge of the community, so it's very quiet and peaceful.

0:12:59 > 0:13:04It was a very simple croft house with a kitchen extension

0:13:04 > 0:13:07and they built the existing roof over the old roof,

0:13:07 > 0:13:10so it's actually got a double roof

0:13:10 > 0:13:14which makes it really warm and cosy in the winter.

0:13:14 > 0:13:15With the help of Andrew,

0:13:15 > 0:13:19Mother Mary is also adapting the old animal barn.

0:13:19 > 0:13:24This end of the barn attaches onto the old croft house.

0:13:24 > 0:13:26So this is the old croft house wall

0:13:26 > 0:13:30and I was very worried about all this staining here.

0:13:30 > 0:13:34I thought maybe it was damp, but Andrew, the builder, says

0:13:34 > 0:13:39that's a result from years and years and years of burning peat

0:13:39 > 0:13:41and not to worry about it at all.

0:13:41 > 0:13:44It's a nice bit of history, really,

0:13:44 > 0:13:47of the peat fire that was burnt the other side.

0:13:49 > 0:13:52Andrew, the builder, and I have discovered

0:13:52 > 0:13:56we've got a stone fireplace - quite a big one.

0:17:10 > 0:17:16My knitting is very amateurish compared to the tradition on Unst

0:17:16 > 0:17:19because the tradition on Unst is to make what's called lace knitting -

0:17:19 > 0:17:23which is in very, very fine wool,

0:17:23 > 0:17:28one-ply wool, and they make shawls for weddings,

0:17:28 > 0:17:31most of which they usually say will go through the wedding ring.

0:17:31 > 0:17:33I can't compete. My knitting can't compete with that,

0:17:33 > 0:17:37so I have to do quirky things like this!

0:17:37 > 0:17:40And, of course, a knitted finger puppet raiding party

0:17:40 > 0:17:42will need a longboat.

0:17:42 > 0:17:45This is to have plants in it.

0:17:45 > 0:17:49It was our windowsill but then, you see, it blew off in the wind.

0:17:49 > 0:17:51So I thought, "Well, this is a boat, sort of."

0:17:51 > 0:17:54So I'm going to convert it so it looks like the galleys.

0:19:24 > 0:19:29The ingredients are added to a still, left to soak for 24 hours,

0:19:29 > 0:19:32then heated to create the gin essence -

0:19:32 > 0:19:37juniper berries, botanicals and the all-important new flavour.

0:19:37 > 0:19:38I've got all the seaweed.

0:19:38 > 0:19:42The essence will be mixed again with water and pure alcohol

0:19:42 > 0:19:44and then bottled.

0:19:44 > 0:19:48Only then will Stuart and Mark know if their seaweed gin is a success.

0:19:53 > 0:19:59It's the morning of the 123rd Unst Agricultural Show

0:19:59 > 0:20:01and Sarah is preparing to enter the best

0:20:01 > 0:20:04that her polytunnel can produce.

0:20:05 > 0:20:09This year, she's putting forward a rather unusual specimen.
