0:04:13 > 0:04:17This is one of the most extraordinary habitats
0:04:17 > 0:04:19and it translates to "rich coast".
0:04:19 > 0:04:23As the name suggests, these waters are teeming with fish.
0:04:23 > 0:04:26For the first part of your Costa Rican expedition,
0:04:26 > 0:04:30you're going to be going after the world-famous roosterfish.
0:04:31 > 0:04:33It's an inshore species.
0:04:33 > 0:04:36It's only found in the eastern tropical Pacific.
0:04:36 > 0:04:40They grow up to over 100 pounds. They are a very powerful fish.
0:04:40 > 0:04:44Sometimes they will take to the air when you hook them. Sometimes they will run.
0:04:44 > 0:04:48You are going to have a choice between trolling with dead baits
0:04:48 > 0:04:50and using spinning equipment.
0:04:50 > 0:04:53How you actually deploy that equipment is going to be up to you.
0:04:53 > 0:04:58We are looking for the angler who catches the greatest combined length of roosterfish.
0:04:58 > 0:05:00So the more you catch and the bigger fish,
0:05:00 > 0:05:03the more likely you are to win this challenge.

0:06:05 > 0:06:09including the rock star of the ocean, the rooster fish.
0:06:10 > 0:06:13Rooster fish have a striking appearance,
0:06:13 > 0:06:17with stripes along their body and a massive collapsible dorsal fin.
0:06:17 > 0:06:19They hunt in packs,
0:06:19 > 0:06:22looking for schools of bait fish not far off the beach.
0:06:22 > 0:06:24The rooster fish is one of the fishes that has been
0:06:24 > 0:06:28top of my bucket list for a long, long time, so I'm pretty excited.
0:06:28 > 0:06:31I'm going to be like a kid in a sweet shop all day today.

0:06:38 > 0:06:40IMPERSONATES A ROOSTER
0:06:42 > 0:06:44As the anglers start fishing,
0:06:44 > 0:06:47they have a choice of two techniques - popping and trolling.
0:06:47 > 0:06:49This spot looks pretty good.
0:06:49 > 0:06:53We've got the rainforest dropping right down onto the beach.
0:06:53 > 0:06:58There is a reef here. We're going to be trolling along the edge of the reef so perfect rooster territory.
0:06:58 > 0:07:01Trolling is a technique which uses lures or baits.
0:07:02 > 0:07:07These are dragged at a constant speed behind a boat either at or
0:07:07 > 0:07:10just beneath the surface, provoking attacks from predatory fish.
0:07:12 > 0:07:14When a fish takes the bait,
0:07:14 > 0:07:17it's up to the angler to set the hook at exactly the right time.
0:07:19 > 0:07:21We are going to bounce dead sardines on the surface
0:07:21 > 0:07:25but because it's moving, you have to give it time to eat.
0:07:25 > 0:07:27So if you are too quick you are going to lose it.
0:07:27 > 0:07:30It's all about quick reaction and timing.
0:07:30 > 0:07:33When you get a take, the line will take off and let the fish run.
0:07:33 > 0:07:37You have to wait five to six seconds and then switch it on,
0:07:37 > 0:07:39tension and set into it.
0:07:39 > 0:07:41Because it gives the fish time to get the bait in its mouth.
0:07:41 > 0:07:44If you set too soon it might just have the tail end,
0:07:44 > 0:07:46whereas you give it time to get hold of the whole fish.
0:07:47 > 0:07:49There we go. He hit it.
0:07:49 > 0:07:51Something just touched the bait.
0:07:54 > 0:07:56Something keeps hitting the bait,
0:07:56 > 0:07:59but it's not actually taking them down properly.
0:07:59 > 0:08:03Another drop take. We're just going to bring this in and check the bait.
0:08:03 > 0:08:05The fish are grabbing them and then letting go.
0:08:05 > 0:08:09They're not swimming away with them, which is what we need them to do.

0:08:11 > 0:08:12We're going to do a bit of lure fishing.
0:08:12 > 0:08:15With a lure you get better action and it looks more alive.
0:08:15 > 0:08:18It's got a bib on the front so it will do that behind the boat.
0:08:18 > 0:08:22That won't get damaged. It's just a different technique to what we are using there.
0:08:22 > 0:08:25Trolling with dead bait or lures
0:08:25 > 0:08:27is attracting some interest from the fish.
0:08:27 > 0:08:30But it isn't the anglers' only option.
0:08:30 > 0:08:32So we've got two rods at the back, trolling.
0:08:32 > 0:08:34One with a deep diving lure
0:08:34 > 0:08:37and one with a dead bait on which is trolling along the top
0:08:37 > 0:08:40and then we'll do some popping off the front here.
0:08:40 > 0:08:42So we're covering all bases, really.
0:08:42 > 0:08:46My goodness, I feel like a drunk person, stumbling around everywhere.
0:08:46 > 0:08:48Jo looks like she's popping off the front of the boat.
0:08:48 > 0:08:51Popping uses a lure with a concave face
0:08:51 > 0:08:54to create the maximum commotion on the surface.
0:08:54 > 0:08:57But instead of being dragged behind the boat,
0:08:57 > 0:08:59it's cast with a lighter spinning rod
0:08:59 > 0:09:04and retrieved quickly in a jerky motion to imitate a small fish.
0:09:04 > 0:09:06So the popper makes lots of commotion,
0:09:06 > 0:09:09the fish comes up, grabs it and I catch my rooster.
0:09:09 > 0:09:11- Exactly.- Simple. - Rooster fish like it fast.
0:09:11 > 0:09:16They are smart and if it's moving too slow they will figure out it's not real and they won't eat it.
0:09:16 > 0:09:19It's more exciting, popping. It's active.
0:09:19 > 0:09:23I don't know what to do, whether to give it a bit of time and then once you've caught a fish, try popping.
0:09:23 > 0:09:25There's a lot to keep an eye on.
0:09:25 > 0:09:29Are our anglers more likely to catch something on the popper or the dead sardines?
0:09:29 > 0:09:33- Nothing is written in stone in fishing.- Which is why you double up.
0:09:33 > 0:09:36- I might give it a go with the popping.- Be careful, James.

0:39:41 > 0:39:44Sailfish are the fastest fish on the planet, capable of reaching
0:39:44 > 0:39:47speeds of up to 68mph.
0:39:49 > 0:39:51Their dorsal fin stretches the length of their body,
0:39:51 > 0:39:54stabilising them during acrobatic moves.
0:39:55 > 0:39:58They can hunt in groups, often shepherding prey
0:39:58 > 0:40:02with their sails into bait balls before swimming
0:40:02 > 0:40:04through the middle and stunning them with their bills.
0:40:04 > 0:40:07Sailfish is a member of the billfish family, it has that big long
0:40:07 > 0:40:11spike on the end of its nose along with swordfish and marlin.
0:40:11 > 0:40:14Marlin and swordfish are extremely strong.
0:40:14 > 0:40:17They are like bulls in terms of their aggression and power.
0:40:17 > 0:40:21The sailfish is more of a ballerina. It loves to dance.
0:40:21 > 0:40:26Sometimes it will make flat greyhounding-type jumps, other times
0:40:26 > 0:40:30it will just go up on its tail and perform beautiful pirouettes.
0:40:30 > 0:40:32So, from the angler's point of view, you have to react to the
0:40:32 > 0:40:34movement she makes.
0:40:34 > 0:40:37This is unlike anything I've ever done.

0:40:54 > 0:40:58They have no hooks so if a sailfish shows interest,
0:40:58 > 0:41:03the teaser is quickly reeled in and a fly cast out to try and hook the fish.
0:41:04 > 0:41:07It is like something out of a horror movie, isn't it?
0:41:07 > 0:41:11These are used to tease the sailfish in so there are no hooks.
0:41:11 > 0:41:13If the fish goes for it, it will aggravate it,
0:41:13 > 0:41:17it can't get hold of it, and then I cast and start popping
0:41:17 > 0:41:21and popping and the fish will turn, ignore those and take the fly.
