0:19:35 > 0:19:41- ..and allowed to warm - and infuse in the water.

0:19:41 > 0:19:45- I'm going to add the cranberries - to that mixture.

0:19:45 > 0:19:50- You can either buy them fresh - or frozen but you need about 300g.

0:19:51 > 0:19:54- Of the entire Christmas dinner...

0:19:54 > 0:19:58- ..I think that this - is the easiest part to make.

0:19:58 > 0:20:01- You can make it beforehand.

0:20:01 > 0:20:03- Many people buy it - but it's easy to make.

0:20:04 > 0:20:08- Yes, and it has a much better - flavour when you make it yourself.

0:20:08 > 0:20:11- Bring this to the boil.

0:20:11 > 0:20:15- They can be quite sour - so you'll need to add some sugar.

0:20:15 > 0:20:21- I'm using about 150g - of Demerara sugar.

0:20:21 > 0:20:25- Add the sugar and stir it - until the sugar has dissolved.

0:20:25 > 0:20:27- If you make it beforehand...

0:20:28 > 0:20:31- ..does it need to be kept - in a sealed jar in the fridge?

0:20:32 > 0:20:35- Yes, I'd store it - in a sealed jam jar.

0:20:35 > 0:20:40- It's unlike jam because it - doesn't have a high sugar content...

0:20:40 > 0:20:43- ..so it doesn't keep as well as jam.

0:20:44 > 0:20:48- But I only finished last year's - cranberry sauce in November...

0:20:49 > 0:20:51- ..so just in time for this year!

0:20:51 > 0:20:56- I simply kept it in the fridge - so it should be fine to do that.

0:20:56 > 0:21:00- You could add - a cooking apple to this...

0:21:01 > 0:21:02- ..so it forms a relish.

0:21:02 > 0:21:06- You could also - add onions or shallots.

0:21:07 > 0:21:09- There's so many things you can add.

0:21:09 > 0:21:12- I like an orange flavour...

0:21:12 > 0:21:16- ..so will be adding the zest - of two satsumas.

0:21:16 > 0:21:18- They are the same as clementines.

0:21:18 > 0:21:21- These remind you of Christmas.

0:21:21 > 0:21:26- They are at their best at this - time of year and full of juice.

0:21:26 > 0:21:31- I've squeezed the juice out of two - satsumas and there's a lot of juice.

0:21:32 > 0:21:33- It's like a whole orange.

0:21:34 > 0:21:35- Yes, exactly.

0:21:35 > 0:21:40- Add the juice as it gives a great - flavour and bring it to the boil.

0:21:40 > 0:21:42- Here's one I made earlier.

0:21:43 > 0:21:46- You could serve it just as it is...

0:21:46 > 0:21:50- ..or you could add some alcohol.

0:21:50 > 0:21:54- There's an orange theme - so add an orange liqueur.

0:21:54 > 0:21:58- You could use Cointreau, - Grand Marnier or Da Mhile liqueur...

0:21:58 > 0:22:02- ..that's made in Llandysul - at Caws Teifi Cheese.

0:22:02 > 0:22:05- It's great to support local produce.

0:22:05 > 0:22:07- You've used plenty of it.

0:22:07 > 0:22:10- That's more than I was expecting.

0:22:11 > 0:22:14- Stir it together - but I add it at the end...

0:22:15 > 0:22:18- ..so you don't burn off the alcohol - and it has a kick!

0:22:19 > 0:22:22- Do you add that - before it goes into the jam jar?

0:22:22 > 0:22:25- Yes, but only if you want alcohol.

0:22:25 > 0:22:30- It's probably best to avoid it - if you have children!

0:22:30 > 0:22:34- We're not suggesting - that you give your children alcohol.

0:22:35 > 0:22:39- Could you mash it up so that there - aren't any lumps for children?

0:22:40 > 0:22:44- Put it in a food processor or - liquidizer for a smooth consistency.

0:22:45 > 0:22:47- Children don't like lumpy food.

0:22:47 > 0:22:49- I was like that - which is why I asked!

0:22:50 > 0:22:52- There's something popping here.

0:22:52 > 0:22:55- Yes, the fruit will start to pop...

0:22:55 > 0:22:58- ..and release - the juices and flavour.

0:22:58 > 0:23:00- Once they start to pop...

0:23:00 > 0:23:05- ..remove it from the hob or turn - down the heat and allow it to rest.

0:23:05 > 0:23:11- Next, I'll prepare the sausages - or the pigs in blankets.

0:23:11 > 0:23:15- I prefer to use - good quality sausages for this...

0:23:15 > 0:23:19- ..so I'm using - a normal chipolata sausage.

0:23:20 > 0:23:22- You can make them smaller...

0:23:23 > 0:23:27- ..by simply pinching the middle - and twisting it.

0:23:27 > 0:23:29- It gives you two pieces.

0:23:29 > 0:23:33- I'd happily eat a whole one!

0:23:33 > 0:23:38- It's easy to do - and these sausages are 90% meat.

0:23:38 > 0:23:40- Oh, these are starting to jump out.

0:23:40 > 0:23:42- Mind your trousers!

0:23:44 > 0:23:48- Next, we have some streaky bacon - or some pancetta.

0:23:49 > 0:23:53- Wrap half a slice - around each sausage.

0:23:53 > 0:23:56- I like to put - two of these together...

0:23:57 > 0:24:00- ..on a cocktail stick.

0:24:00 > 0:24:04- You can place a bay leaf - between each of the sausages.

0:24:05 > 0:24:07- It adds another flavour to the mix.

0:24:07 > 0:24:11- Yes, and they resemble small kebabs.

0:24:12 > 0:24:14- What do you do to those sausages?

0:24:14 > 0:24:18- I've got a sage leaf with a - whole sausage on a cocktail stick...

0:24:19 > 0:24:21- ..that's wrapped in bacon.

0:24:21 > 0:24:25- I was going to show you how to carve - the turkey but I'm out of time.

0:24:26 > 0:24:29- With gusto!

0:27:56 > 0:28:00- There's some great ideas - so we'll start in the corner.

0:28:00 > 0:28:04- It's a cake stand - with baubles in the middle...

0:28:05 > 0:28:08- ..holly from the garden - and branches from the tree.

0:28:08 > 0:28:14- My Christmas tree is against a wall - or window and one side is hidden...

0:28:15 > 0:28:19- ..so I take cuttings from the back - and put them to good use.

0:29:01 > 0:29:02- They grew over summer...

0:39:59 > 0:40:02- Patricia is just like - a film star anyway.

0:40:02 > 0:40:07- The hat and the cape - make for a very creative look.

0:40:07 > 0:40:10- It borders on being a designer look.

0:40:10 > 0:40:14- It isn't overpowering - as there's only a line of sequins.

0:40:15 > 0:40:19- We can change this - as there's many wears to wear this.

0:40:19 > 0:40:22- Patricia can remove the cape.

0:40:22 > 0:40:24- I'll take the bag off you.

0:42:35 > 0:42:39- Sequined items will reflect - the colour that you're wearing.

0:42:39 > 0:42:45- If you have a blue top, - it will be reflected in the sequins.
