0:18:13 > 0:18:17- It's much easier than peeling it - as it releases the clove.

0:19:16 > 0:19:21- Yes, these aren't very hot chillies - so don't worry about the seeds.

0:19:42 > 0:19:48- Next, we add some tinned tomatoes - to create the sauce.

0:19:58 > 0:20:02- I've got a cinnamon stick - and that can go in the pan.

0:20:02 > 0:20:08- There's also some dried cumin - and dried coriander.

0:20:08 > 0:20:11- I'm also adding a touch of paprika.

0:20:14 > 0:20:18- I used a smoked paprika - as opposed to a spicy paprika...

0:20:18 > 0:20:20- ..which is another flavour.

0:20:20 > 0:20:26- It's very similar to spaghetti - bolognaise but this is spicy.

0:20:28 > 0:20:30- Next, we add some red wine.

0:20:30 > 0:20:33- This is brought to the boil - for ten minutes...

0:20:33 > 0:20:38- ..before turning down the heat and - being left to simmer for 40 minutes.

0:20:38 > 0:20:43- You get a better flavour if it's - cooked for longer so don't rush it.

0:20:43 > 0:20:45- The meat tenderizes.

0:20:45 > 0:20:49- The chilli in this other pan - has been cooking for about an hour.

0:20:50 > 0:20:54- That one's hotter as I can see the - Scotch bonnets in it!

0:20:56 > 0:21:01- Those are Piquante peppers that are - very sweet but they look similar.

0:21:03 > 0:21:07- We'll finish the chilli - with some fresh coriander.

0:21:15 > 0:21:20- Are those small peppers the ones - that are often stuffed with cheese?

0:21:22 > 0:21:25- Oh, the ones stuffed - with a cream cheese.

0:21:25 > 0:21:29- I'm going to serve this chilli - with a few tortillas.

0:21:29 > 0:21:34- Make them into pockets by - folding them in half and half again.

0:21:35 > 0:21:37- This creates a little pocket.

0:21:37 > 0:21:41- We're going to fill - some of the pocket with rice.

0:21:43 > 0:21:47- This is quite a simple dish.

0:21:47 > 0:21:50- It's very easy to prepare - and cheap to make too.
