0:06:24 > 0:06:28- Let's start by cooking the fish - that's going into the fish pie.

0:06:28 > 0:06:33- I'm using 700g of fish.

0:06:34 > 0:06:39- You will need a mixture - of cod, haddock and coley.

0:06:39 > 0:06:45- It's also nice to add smoked fish - like smoked haddock.

0:06:45 > 0:06:48- It gives the sauce more flavour.

0:06:49 > 0:06:54- In this saucepan, there's - 450ml of milk and 300ml of cream.

0:06:54 > 0:06:58- This will create - a smooth and rich sauce.

0:06:58 > 0:07:00- This has been simmering for a while.

0:07:01 > 0:07:05- I've been cooking the fish - in the sauce...

0:07:05 > 0:07:07- ..for five or six minutes.

0:07:07 > 0:07:12- You'll know when the fish is ready - as it will be tender.

0:07:13 > 0:07:16- Make sure you remove any skin - that's still on the fish.

0:07:16 > 0:07:21- You should also remove the bones - that may still be in the fish.

0:07:21 > 0:07:24- I'll turn down the heat - on the sauce.

0:07:24 > 0:07:28- Next, I'm going to sprinkle this - on the bottom of the dish.

0:07:28 > 0:07:32- We're making a small pie but - the recipe will serve six people.

0:07:32 > 0:07:38- If you're serving children, perhaps - they won't want to eat the prawns.

0:07:39 > 0:07:41- However, I'm using 175g of prawns.

0:07:45 > 0:07:48- Salmon also tastes great.

0:07:49 > 0:07:52- I would prefer those ingredients - to salmon.

0:07:52 > 0:07:58- You can buy bags of fish - that have been prepared in advance.

0:08:15 > 0:08:19- You don't have to - but it tastes great with the fish.

0:08:37 > 0:08:41- Add 45g of plain flour to the mix.

0:08:42 > 0:08:46- Making the sauce - is what usually scares people.

0:08:47 > 0:08:51- However, you don't need to worry - if you're using a whisk like this.

0:08:51 > 0:08:55- You won't have any lumps - if you whisk it correctly.

0:08:55 > 0:08:58- I always make my own sauce.

0:09:01 > 0:09:04- You'll be able to follow this recipe - over the weekend.

0:10:50 > 0:10:55- Make sure you taste everything - to ensure it's been well seasoned.

0:11:07 > 0:11:12- We can indulge in hot cross buns, - fish pies and lots of puddings.
