0:04:11 > 0:04:14- ..and this generation - has baked for over 50 years.

0:04:15 > 0:04:17- We make old-fashioned bread.

0:04:18 > 0:04:23- It isn't made in an hour - but takes us three hours!

0:04:23 > 0:04:30- Most of the bread in the large shops - have a lot of additives.

0:04:31 > 0:04:37- We only add yeast, salt and water - to our flour.

0:04:37 > 0:04:40- That's how it was in the old days.

0:04:40 > 0:04:45- Bread has changed because - people use breadmakers now...

0:04:45 > 0:04:50- ..but that isn't proper bread.

0:04:50 > 0:04:55- We make old-fashioned bread - and that will never change.

0:04:55 > 0:05:02- The bread that we bake has - more flavour and people enjoy it.

0:05:02 > 0:05:07- I'll always have homemade bread - and nothing beats it!

0:05:10 > 0:05:15- Very few people make homemade bread - but it's quite simple, Osian.

0:05:15 > 0:05:21- Yes, and I've got a mixture - of flour, yeast, salt and water.

0:05:21 > 0:05:27- It's taken about two minutes - to create this dough...

0:05:27 > 0:05:32- ..and it's ready for kneading - using the slap and fold technique.

0:05:32 > 0:05:35- That helps you build your muscles!

0:05:36 > 0:05:41- It's kneaded for ten minutes...

0:05:41 > 0:05:45- ..and left to prove - until it doubles in size.

0:05:45 > 0:05:50- I've got one that has doubled - in size after about an hour.

0:05:50 > 0:05:54- Remove it from the bowl...

0:05:54 > 0:05:58- ..and it's ready to be shaped - for the loaf tin.

0:05:58 > 0:06:00- How do you shape it?

0:06:01 > 0:06:07- Bring in all the edges, - turn it around and do the same.

0:06:07 > 0:06:15- Tuck it all in and that's - the shape you need for the tin.

0:06:16 > 0:06:22- Let it prove for another hour - to double in size again.

0:06:22 > 0:06:26- This is what you get - after two hours.

0:06:26 > 0:06:29- What do you do with that?

0:06:29 > 0:06:35- Bake it at 200 degrees for - 30 minutes to get the perfect loaf.

0:06:35 > 0:06:37- It's as easy as that.

0:14:42 > 0:14:48- I was second which was enough to win - the Runbritain Series for 2015...
