0:01:35 > 0:01:40- I'm making a kofta - with some homemade bread.

0:01:40 > 0:01:45- I've got a lot of work - so I'll get cracking!

0:01:46 > 0:01:51- Start by putting a griddle - on the heat with a splash of oil.

0:01:52 > 0:01:57- Let's start on the lamb koftas.

0:01:57 > 0:02:02- What is a kofta?

0:02:02 > 0:02:05- A lamb kofta is meat dish - served on a wooden skewer.

0:02:06 > 0:02:09- It's similar to a burger - but is served on a skewer.

0:02:09 > 0:02:15- I've got 800g of lamb mince - that only contains 20% of fat.

0:02:15 > 0:02:21- Add some finely chopped onions.

0:02:21 > 0:02:27- All the ingredients - need to be finely chopped.

0:02:27 > 0:02:33- I think we'll add - some dried apricots.

0:02:33 > 0:02:38- People serve apples with pork - and cranberries with turkey.

0:02:38 > 0:02:43- The apricots add flavour - and interest to the lamb.

0:02:44 > 0:02:47- I've also got some pine nuts - to give it some texture.

0:02:48 > 0:02:53- Those are all the dry ingredients...

0:02:53 > 0:02:57- ..and the flavouring is prepared - in a small food processor.

0:03:02 > 0:03:07- Most have big food processors - in the cupboard and never use them.

0:03:07 > 0:03:10- You don't need a large mixer - to prepare those ingredients.

0:03:10 > 0:03:14- No, so this smaller one - could sit next to the toaster.

0:03:15 > 0:03:23- Let's add two cloves of garlic - and some fresh coriander leaves.

0:03:24 > 0:03:28- Give it a blitz - to prepare the paste.

0:03:28 > 0:03:32- One of the leaves is stuck - in the lid.

0:03:35 > 0:03:37- It's going into that bowl.

0:03:38 > 0:03:41- This adds a lot of flavour - but we need more...

0:03:41 > 0:03:49- ..so I'm using a spice from Morocco - called Ras el hanout.

0:03:49 > 0:03:57- Is a kofta from Morocco? - Yes, that's right.

0:03:57 > 0:04:00- This is flavoured - with curry, coriander, cumin...

0:04:00 > 0:04:04- ..and crushed rose petals.

0:04:04 > 0:04:08- That's a good ingredient - as it's full of flavour.

0:04:08 > 0:04:13- You need an egg to bind - all the ingredients.

0:04:13 > 0:04:16- Crack it into a separate bowl.

0:04:16 > 0:04:19- Why are you beating it first?

0:04:19 > 0:04:23- Beating it first makes it easier - to add to the mixture.

0:04:24 > 0:04:28- Bring it all together with a spoon.

0:04:28 > 0:04:31- It's quite easy - and all goes into one bowl.

0:04:31 > 0:04:33- And it's very colourful.

0:04:33 > 0:04:37- Yes, thanks to the fruit, - nuts and meat.

0:04:37 > 0:04:44- It should be left to rest - before going on the skewers.

0:04:45 > 0:04:48- We can skip that stage - as time is against us...

0:04:49 > 0:04:54- ..so this goes around the wooden - skewers that are soaked in water...

0:04:55 > 0:05:00- ..as it stops the wooden skewers - from burning on the griddle.

0:05:03 > 0:05:11- You should do the same if this - is for a barbecue or a frying pan.

0:05:15 > 0:05:23- Yes, and press on the meat firmly - to get rid of any air pockets.

0:05:24 > 0:05:31- You can prepare more and you should - get six koftas from this recipe.
