0:11:07 > 0:11:12- Ginger and cloves - remind me of Christmas.

0:11:12 > 0:11:25- These are the spices that remind me - of Christmas.

0:11:25 > 0:11:34- Next, we add 225g of plain flour.

0:11:34 > 0:11:39- There's also some ginger, - cinnamon and mixed spice.

0:11:39 > 0:11:45- Don't add self-raising flour.

0:11:46 > 0:11:53- It won't rise because - this is a heavy cake.

0:11:53 > 0:12:01- There are many ingredients.

0:12:01 > 0:12:07- You can view our recipes online - at www.prynhawnda.tv

0:12:08 > 0:12:13- I've added the zest of one lemon - and one orange.

0:12:13 > 0:12:17- Next, we add the fruit.

0:12:17 > 0:12:24- There's a whole lot of dried fruit.

0:13:04 > 0:13:10- The cake needs to be moist.

0:13:10 > 0:13:21- There's 300g of the large raisins.

0:13:21 > 0:13:27- They might be less after Owain's - been nibbling!

0:13:28 > 0:13:34- Currants are small and quite dry...

0:13:47 > 0:13:58- The fruit is left to sit - in a spiced rum.

0:13:58 > 0:14:13- You can use rum, whiskey or sherry - instead of rum.

0:14:13 > 0:14:23- These are left to sit in the alcohol - for as long as possible.

0:14:23 > 0:14:36- This takes a lot of elbow grease.

0:14:36 > 0:14:43- Yes, and you can do this - in a food mixer.

0:14:43 > 0:14:48- However, it's quite a loose mixture.

0:14:52 > 0:15:01- ..and you make the wish.

0:15:01 > 0:15:09- I think you should make the pudding - at the start of the month...

0:15:09 > 0:15:14- ..instead of at the end of the - month.

0:15:14 > 0:15:22- The pudding takes longer to mature.

0:15:23 > 0:15:34- I've also got some nuts and some - cherries.

0:15:34 > 0:15:39- There's also some glace lemon peel.

0:15:39 > 0:15:54- There's a lot less sugar.

0:15:57 > 0:16:04- It has 75g less sugar - thanks to all the fruit.

0:16:04 > 0:16:09- I've greased and lined the tin with - greaseproof paper.

0:16:10 > 0:16:16- It needs a long time in the oven...

0:16:16 > 0:16:21- ..so you need a few layers - of greaseproof paper.

0:16:21 > 0:16:30- It bakes for about three hours...

0:16:30 > 0:16:36- ..at a low heat of about gas mark 3 - or 150 degrees Celsius.

0:16:36 > 0:16:44- This cake isn't going to rise a lot.

0:16:44 > 0:16:49- Make a hole in the middle.

0:16:49 > 0:16:54- This stops it rising too much.
