0:05:45 > 0:05:50- In the gardening world, various - sources give different advice...

0:06:25 > 0:06:30- A hard frost will make it even more - difficult to pick the carrots.

0:06:30 > 0:06:34- Alternating dry and wet days, - can cause the flesh to crack...

0:06:34 > 0:06:39- ..making it more susceptible - to disease and causes it to rot.

0:06:40 > 0:06:45- Even without these elements, - the plant continues to grow...

0:06:46 > 0:06:51- ..over-ripens, gets old, - loses its flavour...

0:06:51 > 0:06:56- ..and develops hard centres - making them difficult to eat.

0:06:57 > 0:07:02- Therefore, it's best to pick them - all at the start of November.

0:07:02 > 0:07:08- Loosen the soil around the plants - with a spade or fork.

0:07:09 > 0:07:13- Push the fork down in a straight - line and not at an angle...

0:07:16 > 0:07:24- Many people tell you not to wash the - carrots but to dust off excess soil.

0:07:24 > 0:07:28- I wash mine and there's nothing - wrong with that...

0:07:28 > 0:07:32- ..as long as you allow them - to dry properly before storing.

0:07:32 > 0:07:38- Washing them makes it easier - to spot any problems on the surface.

0:07:39 > 0:07:48- Inspect each carrot to check for any - damage such as holes, cracks or rot.

0:07:49 > 0:07:55- Use these immediately - because they won't store very well.

0:07:55 > 0:08:01- Next, remove the leaves - as they act as a wick...

0:08:01 > 0:08:06- ..and drain water from the root - causing them to wither.

0:08:08 > 0:08:15- Some say to remove the leaves - but keep half an inch...

0:08:15 > 0:08:19- ..to avoid damaging the bud - at the top of the carrot.

0:08:20 > 0:08:24- It helps to keep the carrot healthy - during storage.

0:08:27 > 0:08:32- If you cannot keep the carrots - at a low enough temperature...

0:08:32 > 0:08:36- ..the bud will start to shoot - and form new leaves...

0:08:37 > 0:08:41- ..resulting in the carrot - losing water and spoiling.

0:08:43 > 0:08:50- I prefer to remove all the leaves - and the bud too.

0:08:50 > 0:08:54- I find that the carrot - stores well for months.

0:08:54 > 0:08:58- Don't cut it too low - and into the flesh itself.

0:08:59 > 0:09:03- Store them in a bowl in dry soil - as opposed to damp soil.

0:09:10 > 0:09:18- ..will encourage any surface fungus - to sprout and cause them to rot.

0:09:18 > 0:09:26- They won't lose moisture in the - dry soil as there isn't any air.

0:09:31 > 0:09:36- ..ideally that's about - 1 to 4 degrees centigrade.

0:11:07 > 0:11:11- I had a phone call from the nurse...

0:11:11 > 0:11:15- ..to say that my sugar levels - were very high...

0:11:16 > 0:11:20- ..so I had another test.

0:11:20 > 0:11:30- I was diagnosed - with type 2 diabetes.

0:11:30 > 0:11:35- It was a shock for you.

0:11:35 > 0:11:39- My father had type 2 diabetes.

0:11:40 > 0:11:44- I didn't expect to get it - when I was 41 years old.

0:11:44 > 0:11:54- My BMI is 30.

0:11:54 > 0:11:58- This means that - I'm in the risk category.

0:11:59 > 0:12:07- I think my way of life...

0:12:07 > 0:12:13- ..could have led to my diagnosis.

0:12:13 > 0:12:18- How has it changed your life?

0:12:18 > 0:12:25- It changed my life a lot.

0:12:26 > 0:12:31- I had to look back at the way - that my father lived his life.
