0:10:21 > 0:10:25I mean, how difficult are those collars to do, Mary?
0:10:25 > 0:10:30It's very difficult to do a collar, and you put it on acetate and
0:10:30 > 0:10:31you spread it.
0:10:31 > 0:10:35The worst and most difficult is to use white chocolate and it
0:10:35 > 0:10:40was warm, it never set, and then when it did set, it cracked.
0:10:40 > 0:10:41It was very difficult.
0:10:41 > 0:10:47But she grasped the nettle and put a lovely chocolate ganache all
0:10:47 > 0:10:50over, which wasn't quite what she aimed at, but she did it properly.
0:10:50 > 0:10:53- Better than nothing. - It's better than nothing.
0:10:53 > 0:10:55Is there such a thing as a cake collar?
0:10:55 > 0:10:59That you could put around you? Like, we could all just go...

0:14:55 > 0:14:58What was going through your mind when your collar didn't stick?
0:14:58 > 0:15:01- Did you think, "Oh, my God?" - It was - oh, my goodness! What am are going to do?
0:15:01 > 0:15:04I've failed with my chocolate collar a second time!
0:15:04 > 0:15:07And I'd got a bit of ganache left over,
0:15:07 > 0:15:09so I thought, "I'll slap that on the side," and I'm
0:15:09 > 0:15:13a great believer that there's nothing you can't improve with a bit
0:15:13 > 0:15:17of glitter, so I just whacked some on the side and hoped for the best.
0:15:17 > 0:15:20Now, Andrew, your chocolate cake also went down brilliantly
0:15:20 > 0:15:24with the judges, with Mary describing it as out of this world.
0:15:24 > 0:15:27You'd used your gran's recipe for the cake.

0:15:28 > 0:15:32it's not the first time you've raided your relatives' recipe books.

0:16:06 > 0:16:09but that's where I got my love of baking from.
0:16:09 > 0:16:10We all enjoy our food at home,
0:16:10 > 0:16:13so I don't remember mentioning it quite so much at the time.

0:16:15 > 0:16:18Now, back to the final, and in the Signature, Jane,
0:16:18 > 0:16:21you received a Hollywood handshake after stunning Paul and Mary
0:16:21 > 0:16:23with your red, white and blue meringue crown.
0:16:23 > 0:16:27But it wasn't any old Hollywood handshake, was it?
0:16:27 > 0:16:31No. It was a two-hander. A Roman clasp.
0:16:31 > 0:16:32How did that feel?
0:16:32 > 0:16:36There was no way I expected a double handshake,
0:16:36 > 0:16:38a handshake of any description from Paul,
0:16:38 > 0:16:41so it just completely knocked me off my feet.
0:16:41 > 0:16:43I was just thrilled to bits.
0:16:43 > 0:16:46I thought, "Yes! The game's still on!"

0:16:57 > 0:17:00- Favourite bake of mine? - Yeah, not anyone else's, Jane!
0:17:01 > 0:17:04I think it was my mousse cakes.
0:17:04 > 0:17:06I set myself a huge challenge and I lost
0:17:06 > 0:17:10a lot of sleep over the little fleur de lis wrap on my chocolate
0:17:10 > 0:17:13and coffee ones and my blackcurrant didn't quite set.
0:17:13 > 0:17:17I think I got good mousses and I was hugely relieved about that
0:17:17 > 0:17:19and honestly, the mess, they didn't show the mess,
0:17:19 > 0:17:22but it wasn't just a chocolate abattoir, there was blackcurrant...
0:17:22 > 0:17:23There was like...
0:17:23 > 0:17:26So I think Mousse Week, I thoroughly enjoyed.
0:17:26 > 0:17:28I was really pleased to turn out what I did in the end.
0:17:28 > 0:17:32Which of your bakes of the ten weeks were you most proud of?
0:17:32 > 0:17:37The one I'm most proud of, probably my geared pies because I think that was something
0:17:37 > 0:17:39totally new that I brought into the tent and it was
0:17:39 > 0:17:42a bit risky cos they'd fallen off a couple of times when I was
0:17:42 > 0:17:45practising at home, but that really, I think,
0:17:45 > 0:17:47summarised what my approach to baking is.
0:17:47 > 0:17:50You know, mixing engineering with baking. It's kind of my two loves coming together.
0:17:50 > 0:17:51So that was my proudest one.
0:17:51 > 0:17:53That was actually my favourite week,
0:17:53 > 0:17:55when the tent went all Tudor, because both
0:17:55 > 0:18:00of your March Pain centrepieces were memorable, but for different reasons.
0:18:00 > 0:18:03The judges loved your swan design, Jane,
0:18:03 > 0:18:07and were really impressed by the skills and perfectly baked sponge,
0:18:07 > 0:18:10and of course, Andrew, your jousting knight was the talk of the tent.
0:18:10 > 0:18:13- Yes. - LAUGHTER
0:18:16 > 0:18:20- Don't laugh at him! - It's character building!
0:18:20 > 0:18:22They were going to have two lovely shards and one of the shards
0:18:22 > 0:18:27was going to go in at arm level, exactly at arm level, but just in that rush at the end,
0:18:27 > 0:18:31the nuts had to go on and they just ended up where they ended up.
0:18:31 > 0:18:34I had to get them on there and it's very unfortunate,
0:18:34 > 0:18:36but it gave everyone a good giggle at home.

0:23:45 > 0:23:49Del Boy, saying, "A bit of manchego, some olives..."
