0:00:02 > 0:00:03For the past five weeks,

0:00:03 > 0:00:06Britain's best young and hardworking talent

0:00:06 > 0:00:11have been fighting it out to prove they're the very best in their field.

0:00:11 > 0:00:13The competition's on. Game on.

0:00:14 > 0:00:17We've seen a whole new crop of trades -

0:00:17 > 0:00:20from tailors to farmers, carpenters to bakers.

0:00:20 > 0:00:23If you cut me through, it would say "bread" on the inside.

0:00:23 > 0:00:27Everyone who makes it this far has one thing in common -

0:00:27 > 0:00:31they think they have what it takes to be crowned the winner.

0:00:31 > 0:00:35I don't say I'm the best because I'm good. I say it because I AM the best.

0:00:36 > 0:00:37I think I should've won.

0:00:37 > 0:00:42I don't think I should have been in the final three. I should at least have been in the final two.

0:00:42 > 0:00:45I feel like I've let myself down, and I've let a lot of...

0:00:45 > 0:00:47people down, as well.

0:00:52 > 0:00:56But tonight we're taking a look back across the past three series...

0:00:56 > 0:01:01I've never felt so under pressure and stressed in my entire life.

0:01:01 > 0:01:05..meeting our winners on their own turf,

0:01:05 > 0:01:07seeing how life has changed.

0:01:07 > 0:01:12From there, it just kind of went... You know, shows, demos, photoshoots.

0:01:13 > 0:01:15I've gone on to do my own pop-up restaurant

0:01:15 > 0:01:18over in Sydney and Melbourne.

0:01:20 > 0:01:23Actually, they are very good. I'm not joking - they are!

0:01:25 > 0:01:29We'll also get to spend a bit more time with the lovely George Lamb,

0:01:29 > 0:01:31with some sneaky behind-the-scenes access...

0:01:32 > 0:01:35Right. Let's go to work, eh?

0:01:37 > 0:01:40..finding out what he gets up to when he thinks the cameras aren't rolling!

0:01:42 > 0:01:45Going to George in three, two, one.

0:01:52 > 0:01:57For the past three years, BBC Three has scoured every corner of the UK,

0:01:57 > 0:02:01unearthing the most talented unsung heroes of our nation.

0:02:01 > 0:02:03They are the dedicated young workforce,

0:02:03 > 0:02:07who learn hard and work hard, day after day.

0:02:12 > 0:02:16In 2010, our experts searched the four corners of the country,

0:02:16 > 0:02:21hunting out the nation's hottest 18-to-25-year-old hairdressers.

0:02:21 > 0:02:25Cut after cut saw thousands fail to make the grade -

0:02:25 > 0:02:29but four shone out as the cream of the crop

0:02:29 > 0:02:33and they were invited to studio for the final showdown.

0:02:38 > 0:02:43Judging their every move were two of the industry's biggest players...

0:02:46 > 0:02:50Rock 'n' roll hairdresser to the A list Adee Phelan...

0:02:52 > 0:02:58..and two-time British hairdresser of the year, and industry legend, Beverly C.

0:02:59 > 0:03:01We had some incredible entries,

0:03:01 > 0:03:07but I know that we made it quite difficult for them, because we gave them some real tough challenges.

0:03:13 > 0:03:17From the outset, there was a tense atmosphere in studio,

0:03:17 > 0:03:22only broken by the judges' first demands - for a '40s-inspired vintage style.

0:03:23 > 0:03:25I'm looking at the models and I thought,

0:03:25 > 0:03:28"They all look great," but there was one who had the longest,

0:03:28 > 0:03:30thickest hair you've ever seen.

0:03:30 > 0:03:33Of course, she walks over to me and she's my model,

0:03:33 > 0:03:36and I nearly passed out. I thought, "I literally cannot do this."

0:03:36 > 0:03:40- How are we doing, Becky? - Er, OK.- Er...OK?

0:03:43 > 0:03:47How we doing, Jake? Are you happy with the way it's looking?

0:03:47 > 0:03:50- Er...not right at this minute, to be honest.- OK.- Bricking it.

0:03:53 > 0:03:57Unlike Jake, the girls were playing it cool and storming ahead.

0:03:59 > 0:04:02He would've been better off, the last half hour, doing nothing.

0:04:05 > 0:04:10Round two gave Jake the chance to cut his losses and sock it to the girls.

0:04:10 > 0:04:16One of you will be going home after this round, so now is the time to give it your all.

0:04:16 > 0:04:21We basically said to them, to create an advertising campaign.

0:04:21 > 0:04:25But above all, this is about creating a look that sells the product.

0:04:25 > 0:04:27I was expecting some really amazing,

0:04:27 > 0:04:32beautiful hair that depicted what this product was.

0:04:32 > 0:04:34They all thought, "Oh, God, this is easy -

0:04:34 > 0:04:37"we'll just do a, sort of, undercut, a bit of a quiff, and we're away."

0:04:40 > 0:04:45- You don't seem very happy about this. - They look like a bunch of boy bands. It's bad, it's poor.

0:04:45 > 0:04:46It's disappointing.

0:04:47 > 0:04:50They all had the chance to raise their game

0:04:50 > 0:04:56and create a gravity-defying do that would sell a new hair product in the pages of upmarket glossies.

0:04:57 > 0:04:59Let's have a look at our image.

0:05:02 > 0:05:04If you put them all in one row,

0:05:04 > 0:05:07you'd think one of you did all four haircuts.

0:05:07 > 0:05:11It's an ad campaign - it's got to be new, innovative. Remember the brief.

0:05:11 > 0:05:13I was really disappointed with the second round.

0:05:13 > 0:05:16And actually, no-one scored points with me for that.

0:05:17 > 0:05:19The judges had seen enough.

0:05:19 > 0:05:21All four finalists had let them down.

0:05:21 > 0:05:25One simply had to face the chop.

0:05:27 > 0:05:29Jake.

0:05:30 > 0:05:32OK, good luck, guys.

0:05:32 > 0:05:36At this level, one mistake is bad - but two is unforgivable.

0:05:37 > 0:05:41With Jake gone, it was time to face the grilling -

0:05:41 > 0:05:43the interview from hell.

0:05:45 > 0:05:49- Which person created the Wedge haircut?- Trevor Sorbie.

0:05:49 > 0:05:51When bleaching hair from dark to blond,

0:05:51 > 0:05:55how many stages are there in the bleaching process?

0:05:55 > 0:05:57- Er.- Focus!

0:05:57 > 0:06:00- Three.- Are you serious?- Yes.

0:06:00 > 0:06:04And I thought, "Oh, no, this is as far as it goes for me."

0:06:04 > 0:06:07What is the most important part of the consultation?

0:06:07 > 0:06:10Er, getting to know what your client wants, what the... What...

0:06:10 > 0:06:12Just spit it out in a few words - what is it?

0:06:12 > 0:06:15Hair texture, lifestyle...

0:06:18 > 0:06:19Listen to your client.

0:06:21 > 0:06:26- How did that go?- Overall, I think it went OK.- It was, like, FBI-style.

0:06:29 > 0:06:33It was time for another finalist to find out they weren't good enough.

0:06:34 > 0:06:38The next hairdresser leaving the competition is...

0:06:40 > 0:06:42..Lisa.

0:06:45 > 0:06:47I think I should've won.

0:06:47 > 0:06:52I don't think I should've been in the final three. I should've at least been in the final two.

0:06:52 > 0:06:53But she wasn't...

0:06:54 > 0:06:58..meaning Serafina and Becky would face the final round,

0:06:58 > 0:07:02and were about to be forced way outside their comfort zones.

0:07:04 > 0:07:09- BEVERLY:- The final round was probably the most exciting, because we gave them creative control.

0:07:09 > 0:07:12And what I loved about it - we came up with the idea beforehand -

0:07:12 > 0:07:15was to separate them so they couldn't see each other's work.

0:07:15 > 0:07:17Your time starts now.

0:07:21 > 0:07:23With so much at stake,

0:07:23 > 0:07:28both hairdressers risked it all, attempting very ambitious styles.

0:07:28 > 0:07:31It wasn't until I had my scissors in my hand that I thought,

0:07:31 > 0:07:34you know, "This is not going to look good if I cock this up."

0:07:35 > 0:07:41Technically, it's very, very difficult making a hairpiece.

0:07:41 > 0:07:44It's meticulously difficult to do, but that's a risk.

0:07:44 > 0:07:46Two hours goes like that.

0:07:48 > 0:07:51- Do we like the look? - This is going to look great.

0:07:51 > 0:07:53I just hope that she hasn't been too calm.

0:07:53 > 0:07:57- Does it worry you that they are so calm?- I'd be freaked out now, personally.

0:07:57 > 0:08:00Serafina, Adee's worried about you, babe.

0:08:00 > 0:08:02I want you to really...

0:08:02 > 0:08:05- HE GRUNTS - ..get this baby done.- Push it on.

0:08:05 > 0:08:06NOW I feel pressure.

0:08:08 > 0:08:12Five minutes left, girls, and it is neck and neck.

0:08:15 > 0:08:19With minutes to go, the contest saw a sudden shift in power.

0:08:21 > 0:08:25This is amazing, cos, I mean, Serafina's hair has gone from here

0:08:25 > 0:08:27to there.

0:08:27 > 0:08:30Five minutes ago, I was like, "Becky." Now I'm like,

0:08:30 > 0:08:34"Serafina, Becky, Serafina, Becky." This is going to be...

0:08:34 > 0:08:38Whoever, at the last minute, puts that last little touch will nick this.

0:08:39 > 0:08:42Five, four,

0:08:42 > 0:08:45three, two, one.

0:08:47 > 0:08:49Tools down, please, ladies. That's it.

0:08:49 > 0:08:5390 minutes... two jaw-dropping styles...

0:08:56 > 0:08:58..but only one could win.

0:08:59 > 0:09:02Would it be Becky's structured avant-garde cool...

0:09:04 > 0:09:08..or Serafina's edgy rock-chick glamour?

0:09:08 > 0:09:13It's time to get the verdict, and only one of you can win the title.

0:09:13 > 0:09:17And the Young Hairdresser of the Year is...

0:09:17 > 0:09:19Becky.

0:09:19 > 0:09:21Thank you so much.

0:09:21 > 0:09:25- BEVERLY:- It was clear she was going to go through, because she was consistent.

0:09:25 > 0:09:28And she... She just outshone everybody.

0:09:28 > 0:09:32When he said my name, I pretty much nearly passed out. My legs went to jelly.

0:09:32 > 0:09:36I thought, "Oh, no!" Either that or I thought someone was going to jump out and be like,

0:09:36 > 0:09:40"Only joking! Not really! It's not you, it's the other one."

0:09:40 > 0:09:44It just feels like all of my hard work's paid off.

0:09:44 > 0:09:46You know, it was all worth it.

0:09:50 > 0:09:53Since winning Young Hairdresser of the Year, life's been crazy.

0:09:53 > 0:09:57It's been great. Everyone's been so supportive, so excited.

0:09:57 > 0:10:00Before the show, Becky's fan club

0:10:00 > 0:10:03was made up of friends and family only. 18 months on,

0:10:03 > 0:10:06and that membership has got much wider.

0:10:07 > 0:10:10It's nice seeing your picture in the local magazine.

0:10:10 > 0:10:13Your friends see it, and your clients and your colleagues, too.

0:10:13 > 0:10:18- This is the first article I did, this one.- Yeah, I remember that one.

0:10:18 > 0:10:23There's a couple that I got to do, where I've given... They call it "expert advice" - it's really cool.

0:10:23 > 0:10:25You feel quite special, that they value your opinion.

0:10:27 > 0:10:30Becoming an agony aunt for hair questions wasn't a natural job

0:10:30 > 0:10:35for someone who fared so dismally in the grilling challenge.

0:10:35 > 0:10:37- Er...- Focus!

0:10:37 > 0:10:39- Three.- Are you serious?

0:10:40 > 0:10:43But that's exactly what's happened.

0:10:43 > 0:10:46Hi, Becky. How are you?

0:10:46 > 0:10:49We had heard through the grapevine that a local hairdresser had won

0:10:49 > 0:10:52Young Hairdresser of the Year.

0:10:52 > 0:10:53And since then,

0:10:53 > 0:10:56she has been a regular contributor on the programme.

0:10:56 > 0:10:59Becky, I've got a quick-fire question for you now.

0:10:59 > 0:11:04True or false - if you pull out a grey hair, do seven grow back?

0:11:04 > 0:11:07- Hmm, that's a bit of an old wives' tale.- Is that true?

0:11:07 > 0:11:11No, all it is is, if you break the hair, it grows back thicker.

0:11:15 > 0:11:19Right, guys, so I'm going to be doing an avant-garde style today.

0:11:19 > 0:11:20With Kristen's hair...

0:11:20 > 0:11:23As creative stylist across two salons,

0:11:23 > 0:11:27Becky's now showing other aspiring hairdressers how it's done.

0:11:27 > 0:11:31What I've done is worked this hairpiece, just moulded to Kristen's head.

0:11:31 > 0:11:34And it's at the Knightsbridge studio

0:11:34 > 0:11:38that judge and guru Beverly C is paying her a visit.

0:11:39 > 0:11:42Once you've kind of nailed your foundation skills in hairdressing,

0:11:42 > 0:11:45you can start being a bit more adventurous.

0:11:45 > 0:11:48Playing with different...balances, really, within the hair.

0:11:49 > 0:11:51Cool, calm Becky!

0:11:54 > 0:11:56She's done so well this year.

0:11:56 > 0:11:59I can't wait to catch up with her and see what she's been up to.

0:12:08 > 0:12:11It has gone so fast, Beverly, honestly.

0:12:11 > 0:12:15I can't believe that it was this time last year we were doing the show.

0:12:15 > 0:12:19And from there, it just kind of went - you know, shows, demos, photoshoots.

0:12:19 > 0:12:21You know, lots of in-house seminars and things.

0:12:21 > 0:12:25Things I wouldn't have had the confidence before to get involved in.

0:12:25 > 0:12:29So the education side - you're teaching the young, up-and-coming people?

0:12:29 > 0:12:33Yeah, a lot. We get lots of students from overseas and around the UK.

0:12:33 > 0:12:35They come in just for inspiration.

0:12:35 > 0:12:39- Brilliant! That's really good.- Thank you. It's all cos of the show.

0:12:42 > 0:12:44It's an industry that employs 200,000 people,

0:12:44 > 0:12:48and they're not known for their shyness.

0:12:48 > 0:12:50Not content with winning one award,

0:12:50 > 0:12:53Becky wants to prove she's a cut above the rest AGAIN.

0:12:58 > 0:13:02Liljana's haircut is a really clean one-length bob,

0:13:02 > 0:13:05with a really nice red tone. To follow the Egyptian theme,

0:13:05 > 0:13:08I've used gold-leaf trim just to give it that couture edge.

0:13:10 > 0:13:13This time, she competed before thousands of the best

0:13:13 > 0:13:16at British hairdressing's biggest annual event.

0:13:17 > 0:13:20Becky gained a coveted place within the elite team

0:13:20 > 0:13:22of young hairdressing professionals.

0:13:23 > 0:13:27The FAME team have produced

0:13:27 > 0:13:31some of the top, top hairdressers in this country that are now global stars.

0:13:31 > 0:13:33I really wish you all the luck.

0:13:33 > 0:13:36- I'm watching you.- Thanks, Beverly.

0:13:36 > 0:13:38- No pressure?- No pressure!

0:13:45 > 0:13:49The Young Talent studio is well used to seeing the finest food being prepared.

0:13:50 > 0:13:53And back in series two,

0:13:53 > 0:13:56it was the turn of the young fishmongers to sharpen their knives.

0:13:58 > 0:14:03Our experts trawled the UK, netting four outstanding filleters.

0:14:07 > 0:14:12They would go to studio to face the toughest challenge of their lives.

0:14:13 > 0:14:17Putting them through their paces were two legends of the trade -

0:14:17 > 0:14:21fishmonger to the rich and famous Rex Goldsmith...

0:14:22 > 0:14:26..and the biggest online fish merchant in the country, Paul Trudgian.

0:14:28 > 0:14:31This competition is going to be brutal

0:14:31 > 0:14:34and more demanding than any day you've experienced at work.

0:14:40 > 0:14:43Round one was all about knife skills...

0:14:45 > 0:14:50..pitting the boys against five of the UK's finest, and most fearsome, fish.

0:14:51 > 0:14:54On a scale of one to ten, how nervous are you?

0:14:54 > 0:14:56- 12.5.- OK.

0:14:56 > 0:15:00- Who do you think the frontrunner is? - Er...I would say maybe Sam.

0:15:00 > 0:15:03He's done a few competitions before.

0:15:03 > 0:15:05I don't say I'm the best because I'm good.

0:15:05 > 0:15:07I say it because I AM the best.

0:15:10 > 0:15:13But the real threat lay in the form of Essex boy,

0:15:13 > 0:15:15Danny Blackshaw.

0:15:15 > 0:15:18So far, the only filleter worth his salt is Danny.

0:15:21 > 0:15:25At the opening stage, Danny, his filleting, his knife work, his block work was immaculate.

0:15:25 > 0:15:30He then set the standards for everyone else to follow.

0:15:32 > 0:15:35Step back from your displays now, chaps. Thank you.

0:15:38 > 0:15:41You've got one more chance to show the judges that you can do it.

0:15:41 > 0:15:44After this, one of you will be eliminated.

0:15:48 > 0:15:52Round 2 was to separate the men from the boys.

0:15:52 > 0:15:56They had to select and prepare... and then kill.

0:15:56 > 0:16:01The French call it fruits de mer. We call it a seafood platter.

0:16:01 > 0:16:03Timing is crucial in this round.

0:16:03 > 0:16:06But also, we're going to be tasting this,

0:16:06 > 0:16:09so they need to be thinking about flavours.

0:16:09 > 0:16:13From my point of view, Matt and Andy are looking the strongest,

0:16:13 > 0:16:15but there's a lot that could go wrong.

0:16:16 > 0:16:21- Where's the dressed crab? - In the bin. I wasn't confident it was cooked enough,

0:16:21 > 0:16:25and I ain't going to give you something that'll make you ill.

0:16:26 > 0:16:30Three, two and one, guys.

0:16:30 > 0:16:31Stop, please.

0:16:34 > 0:16:38As you know, boys, I'm afraid one of you has to go after this round.

0:16:40 > 0:16:46It seems like an absolute epic time to be waiting for one decision from two people,

0:16:46 > 0:16:49which could possibly go on to change my future in the trade,

0:16:49 > 0:16:53so it was anyone's game at that point.

0:16:53 > 0:16:56The first fishmonger leaving us...

0:16:56 > 0:16:58is...

0:16:58 > 0:17:00Matt.

0:17:00 > 0:17:02With filleting that failed to impress,

0:17:02 > 0:17:05and an error as basic as boiling crab,

0:17:05 > 0:17:07Matt's lost his chance,

0:17:07 > 0:17:11leaving three to face the fish grilling.

0:17:13 > 0:17:16Can you give me three species of cephalopod?

0:17:16 > 0:17:18That would be cuttlefish, squid and octopus.

0:17:20 > 0:17:24In centimetres, what's the minimum legal landing size requirement

0:17:24 > 0:17:26for sea bass in the UK?

0:17:27 > 0:17:30Size-wise, it's 300-400g,

0:17:30 > 0:17:36which, I suppose, is about 15cm, maybe.

0:17:36 > 0:17:38A fish like that would be illegal, Danny.

0:17:41 > 0:17:43What toxin is produced in an oily fish?

0:17:43 > 0:17:47God. I know what that is. I can't right pronounce it. Histamine...

0:17:52 > 0:17:55Danny, I mean, he crumbled. He went to pieces in there.

0:17:55 > 0:17:59- How did that go?- It went terrible.

0:18:00 > 0:18:03One of the trio just wasn't up to it.

0:18:06 > 0:18:08Danny.

0:18:16 > 0:18:21Andy and Sam remained to battle it out head to head.

0:18:21 > 0:18:25To be down to the top two in what you do in the country is a great achievement.

0:18:25 > 0:18:30But the competition is up there. You wanted to be first and it went from just being a competition

0:18:30 > 0:18:35to being happy being in the top four to you wanted to win. You had to be number one, then.

0:18:39 > 0:18:43To be the best, a fishmonger needs to have creativity,

0:18:43 > 0:18:45product knowledge and innovation.

0:18:45 > 0:18:50From the market stall to the high streets, survival depends on profit,

0:18:50 > 0:18:53and to be crowned the winner, this final challenge

0:18:53 > 0:18:56will test every aspect of your fishmonger skills.

0:18:56 > 0:19:01Remember, this one is for the title. Your time starts now.

0:19:09 > 0:19:12The boys needed to create the best shop display of their lives.

0:19:15 > 0:19:20With 90 minutes on the clock, Sam was gave nothing away.

0:19:20 > 0:19:24Sam seemed to have a clearer vision of his overall concept of what he was going to do

0:19:24 > 0:19:30right from the start. I think he may have just taken a little step back and thought about it all.

0:19:30 > 0:19:33But Andy slammed fish after fish on the counter,

0:19:33 > 0:19:38and as his display grew, so did his confidence.

0:19:38 > 0:19:39Confident about that halibut, Andy?

0:19:39 > 0:19:42Where once there was ONE cocky, assured finalist,

0:19:42 > 0:19:46now there were two.

0:19:46 > 0:19:48Don't watch me, boys.

0:19:49 > 0:19:54Gentlemen, you've got one hour to go. One hour left. You're halfway through.

0:19:57 > 0:20:01As Sam finally showed his hand, a masterful display took shape.

0:20:01 > 0:20:06Would his considered approach be a winning tactic?

0:20:06 > 0:20:09It's looking, to me, like Sam has a little more pizzazz.

0:20:09 > 0:20:11I think it's very close.

0:20:11 > 0:20:13I think they're very different characters.

0:20:18 > 0:20:22Five minutes left. A chance for the judges to visit the fridge,

0:20:22 > 0:20:25and a shock lay in store.

0:20:25 > 0:20:27What's still left in here, then?

0:20:27 > 0:20:29- Halibut.- Still valuable fish left in here.

0:20:29 > 0:20:3260-quid fish, 70-quid fish.

0:20:32 > 0:20:35Perhaps we'll do something with it when we go on the pricing.

0:20:37 > 0:20:40It ended in a furiously paced race to the finish.

0:20:47 > 0:20:49Time's up, gentlemen. Well done.

0:20:54 > 0:20:58Nicely displayed fish, here. You've thought about your colours very nicely.

0:20:58 > 0:21:03- Any examples where you can point to, in terms of adding value to your profit?- The fish pie pieces.

0:21:03 > 0:21:08That's something a lot of fishmongers throw away. It might only be a kilo or two at a time,

0:21:08 > 0:21:12- but it's profit you wouldn't have had.- You've done a wonderful design,

0:21:12 > 0:21:15with the conger taking up a lot of space, but that costs 50p a kilo.

0:21:15 > 0:21:18You've got £9-, £10-a-kilo fish out there, still.

0:21:18 > 0:21:20Yeah. No, I can fully appreciate that.

0:21:20 > 0:21:23That actual display I'm very happy with.

0:21:25 > 0:21:27It was decision time.

0:21:27 > 0:21:30Sam's modern visual flair

0:21:30 > 0:21:36versus Andy's more traditional profit-focused festival of fish.

0:21:36 > 0:21:41That was it. We've done what we could. We just had to leave it at the end to the judges.

0:21:41 > 0:21:44They had to decide what they thought was the best.

0:21:47 > 0:21:51And the Young Fishmonger of the Year...

0:21:51 > 0:21:52is...

0:21:56 > 0:21:58..Andy!

0:21:59 > 0:22:00- Well done.- Thank you.

0:22:02 > 0:22:06When they called my name, it was absolutely brilliant.

0:22:06 > 0:22:10I can't wait to tell my family, my uncle. I really look forward to telling my uncle.

0:22:10 > 0:22:13He's trained me up over the last 10, 12 years,

0:22:13 > 0:22:16shown me what I know, so it'll be really good for him

0:22:16 > 0:22:19to let him know that his little protege has pulled through.

0:22:24 > 0:22:30It's over a year since Andy returned victorious to his uncle's stall,

0:22:30 > 0:22:34where, as a fledgling fishmonger, he learned his trade.

0:22:34 > 0:22:37The following day, the market was absolutely astronomical.

0:22:37 > 0:22:41The whole market was cheering him. All the customers had seen it.

0:22:41 > 0:22:42It was brilliant.

0:22:42 > 0:22:45And the local news, the local papers, the magazines...

0:22:45 > 0:22:49We had several people coming down, asking for interviews

0:22:49 > 0:22:52and having photos taken.

0:22:52 > 0:22:57He seems to have attracted a good lot of young ladies since he's won.

0:22:57 > 0:22:58Really(?)

0:23:00 > 0:23:04But he's not JUST a Warrington poster boy.

0:23:04 > 0:23:08We had an immediate upturn in business. Because of the recession,

0:23:08 > 0:23:11we could have had a downturn, but we've had an upturn.

0:23:11 > 0:23:13Thank you very much.

0:23:13 > 0:23:1712 month on, as we are now, business must be up by a good 25-30!%

0:23:17 > 0:23:20Do you want three of that making up?

0:23:21 > 0:23:25With only 1,000 independent fishmongers left,

0:23:25 > 0:23:28his success seems to have bucked the trend.

0:23:33 > 0:23:37Coping with success brings its own challenges but, of course,

0:23:37 > 0:23:39when you're Young Fishmonger of the Year,

0:23:39 > 0:23:42you're well connected to get the best advice.

0:23:42 > 0:23:46Andy's in Chelsea, visiting the Codfather.

0:23:46 > 0:23:51- Hello.- Rex! Are you all right? - This is my little shop.- It's nice. - Different to yours, I know.

0:23:51 > 0:23:52A little bit different.

0:23:52 > 0:23:57- Let's have a proper chat. I'll take this off and we'll have a cup of tea. - Sounds good.- Fantastic.

0:24:04 > 0:24:08- Very importantly, how's business? - Trade's brilliant, yeah.

0:24:08 > 0:24:11Business has been up since, by a good percentage there,

0:24:11 > 0:24:16and it's still going. We were also approached by the Cheshire Show.

0:24:16 > 0:24:21Both me and my uncle were up there. We did a big demonstration there. It was just over an hour.

0:24:21 > 0:24:25In front of quite a lot of people, several hundred people.

0:24:25 > 0:24:28The Cheshire Show's a very big deal, so yeah.

0:24:28 > 0:24:33That, again, brought a few more faces in from round the Warrington area that still didn't come

0:24:33 > 0:24:37- or didn't realise that we were there.- Or that would've used a supermarket before.- That's it.

0:24:37 > 0:24:42People who chose convenience over quality. So, all in all, it's been very, very successful. Yeah.

0:24:42 > 0:24:44It's been a very big deal.

0:24:44 > 0:24:48Have you and your uncle thought about possibly expanding the business?

0:24:48 > 0:24:51- Another retail outlet somewhere? - Yeah, there's been thoughts of that.

0:24:51 > 0:24:56Where we are, we bring a good custom in from quite a vast area.

0:24:56 > 0:24:59They come and approach us at the moment,

0:24:59 > 0:25:02so we've got to look to a point... We don't want to open a shop

0:25:02 > 0:25:06- and just divide our custom.- No. - We want to look at a shop

0:25:06 > 0:25:09- in an area where we'd get a new customer completely.- Exactly.

0:25:09 > 0:25:14The shop has to be in the right location, with a good footfall of people and a good product

0:25:14 > 0:25:17and you can have the right shop, fantastic place,

0:25:17 > 0:25:20but if you're paying extortionate rent and rates,

0:25:20 > 0:25:24you'll find you can have a busy shop, taking thousands of pounds,

0:25:24 > 0:25:27but you're working for the landlord, just to pay the rent.

0:25:29 > 0:25:32Before, you were just sort of working on a stall.

0:25:32 > 0:25:36You didn't know whether you were going to go anywhere or do anything. When I won,

0:25:36 > 0:25:38it makes you look at what you do in a different light,

0:25:38 > 0:25:41and to stand there, knowing that you are the best in the UK,

0:25:41 > 0:25:44for your age, it does give you a real good boost,

0:25:44 > 0:25:47and your attitude towards your job changes,

0:25:47 > 0:25:50and you look at your future more in the job,

0:25:50 > 0:25:53and how it's going to be and what outcomes will come to me.

0:25:59 > 0:26:06Young talent HQ is the place where our exceptional competitors go to battle.

0:26:06 > 0:26:08Young Fireman of the Year this year I think could be me.

0:26:08 > 0:26:10Hopefully, the proof's in the pudding.

0:26:10 > 0:26:12I've got the talent and the skill.

0:26:12 > 0:26:16I know what I can do. I want to prove that I can do it.

0:26:16 > 0:26:19I'm ready for the challenge now. The best man will win.

0:26:19 > 0:26:22It was here, at RAF Bentwaters,

0:26:22 > 0:26:26that young men and women became heroes during World War II...

0:26:31 > 0:26:34..and it's here, in the Hush House hangar,

0:26:34 > 0:26:37amongst nuclear bunkers and weapons stores,

0:26:37 > 0:26:40that our new young heroes of their trade are crowned.

0:26:44 > 0:26:48So, we're in Suffolk, and it's pretty bonkers,

0:26:48 > 0:26:54because you feel like you're on some kind of weird film set, and this is where the magic happened, guys.

0:26:54 > 0:26:55This is where the magic happened.

0:26:58 > 0:27:03Here, 60 young grafters have shown what they're made of.

0:27:03 > 0:27:08- This is the studio. Yes! That's how we meet every day.- Every day.

0:27:12 > 0:27:14Curtis is one of our producers.

0:27:14 > 0:27:19He will walk around with a clipboard at any time, day or night.

0:27:19 > 0:27:23The real hard work starts when the cameras roll.

0:27:25 > 0:27:28Hello! I'm George Lamb, and welcome to the show.

0:27:28 > 0:27:31We start with the best bakers in Britain.

0:27:34 > 0:27:39Three out of four contestants walk away with nothing but their pride...

0:27:39 > 0:27:43The first baker to leave the competition is...

0:27:43 > 0:27:44Katy.

0:27:44 > 0:27:47You're trying to not pay attention

0:27:47 > 0:27:50but you can't help but notice things that are going on around you,

0:27:50 > 0:27:51and it's so hard.

0:27:51 > 0:27:53Aw. You did really well. Well done.

0:27:55 > 0:27:58I've met some fantastic people. It's been a fantastic experience.

0:27:58 > 0:28:01'It's been amazing.'

0:28:01 > 0:28:03You're a winner, man, you're a winner anyway.

0:28:03 > 0:28:04It's been a good experience.

0:28:04 > 0:28:08Coming back to reality is a bit of a...

0:28:14 > 0:28:19But for those exceptional few, the Young Talent trophy is waiting.

0:28:22 > 0:28:28The first ever Young Carpenter Of The Year is...

0:28:28 > 0:28:29Tibby.

0:28:31 > 0:28:34I don't know what to say, I'm gobsmacked. Wow.

0:28:34 > 0:28:38It's been worth it, this year, I'm so glad I've done this!

0:28:39 > 0:28:42Can we go for a cup of tea?

0:28:42 > 0:28:43Don't record that!

0:28:50 > 0:28:55Back in 2009, five rising superstar chefs focused on joining

0:28:55 > 0:28:58the ranks of young talent winners.

0:29:00 > 0:29:03Judging their every move were two gastronomic giants, Tom Aitkens,

0:29:03 > 0:29:08the youngest Brit ever to run a two-Michelin starred restaurant.

0:29:08 > 0:29:12And Silvena Rowe, Eastern European super chef and author.

0:29:17 > 0:29:21For our first challenge you are going to be going back to basics.

0:29:21 > 0:29:23Start breaking some eggs.

0:29:26 > 0:29:30The proof of the pudding for round one was in the timing.

0:29:30 > 0:29:32Four different egg dishes,

0:29:32 > 0:29:35perfectly cooked to be served at the same time.

0:29:35 > 0:29:37Do you think it's tough, Larry?

0:29:37 > 0:29:39No, it's not tough, it's simple.

0:29:42 > 0:29:45Larry's confidence was not felt by

0:29:45 > 0:29:48fellow Michelin restaurant trained Argentinian, Alejandro Cansino.

0:29:50 > 0:29:53The cracks soon started to show.

0:29:53 > 0:29:55How are you feeling?

0:29:55 > 0:30:00- Not very confident to be honest. - Really?- Let's see what happens.- OK.

0:30:07 > 0:30:09Time up.

0:30:12 > 0:30:17But would Alejandro's up front honesty count for him, or against,

0:30:17 > 0:30:19when it came to serving up.

0:30:19 > 0:30:22- Talk me through what went wrong, mate.- Everything.

0:30:22 > 0:30:24Everything went wrong.

0:30:24 > 0:30:27Souffle is just like baby food.

0:30:27 > 0:30:29This egg is...

0:30:29 > 0:30:31Totally underdone.

0:30:32 > 0:30:35Had anyone managed to impress the judges?

0:30:35 > 0:30:37Pressure's on.

0:30:37 > 0:30:39- Oh, it look good.- Perfect.

0:30:39 > 0:30:42Very good, well done.

0:30:42 > 0:30:44Looks good, Dougie.

0:30:44 > 0:30:47- I'm digging in.- Let's have a quick look at the souffle.

0:30:50 > 0:30:54Three of the chefs had good reason to feel worried

0:30:54 > 0:30:55heading into round two.

0:30:55 > 0:31:01After this second challenge, two of our chefs will be eliminated.

0:31:01 > 0:31:03It's time to test their tasting talents.

0:31:05 > 0:31:07And they had to do it blindfolded.

0:31:10 > 0:31:14From Tom's signature red mullet dish they had to pinpoint fennel,

0:31:14 > 0:31:15basil and lemongrass.

0:31:18 > 0:31:22Then from taste and memory alone they would cook it themselves.

0:31:29 > 0:31:32This time no one chef stood out.

0:31:32 > 0:31:36- It's just so delicious.- Very nice.

0:31:36 > 0:31:40Which left the judges divided on who they wanted to eliminate and

0:31:40 > 0:31:44the scarily ambitious young chefs showing a surprisingly united front.

0:31:46 > 0:31:49The flavours, I think, were all evenly matched.

0:31:49 > 0:31:53I wouldn't say I was better because to be honest I missed two flavours.

0:31:53 > 0:31:59I didn't get the basil but I got the oil. I thought it was in the puree.

0:31:59 > 0:32:00I didn't get either.

0:32:03 > 0:32:07Right, guys, we don't want to do this,

0:32:07 > 0:32:09but there can only be one winner.

0:32:09 > 0:32:12Two of you are about to be going home.

0:32:12 > 0:32:15Larry...

0:32:15 > 0:32:17I'm afraid you're going to be leaving us.

0:32:18 > 0:32:23The next person that's going to be leaving is Alejandro.

0:32:23 > 0:32:26Still with egg on their face from the first round,

0:32:26 > 0:32:27their fates were sealed.

0:32:34 > 0:32:38Three now faced the quick-fire grilling round.

0:32:39 > 0:32:42The grilling round was very difficult.

0:32:42 > 0:32:46You have two people that are at you in your ears, asking you questions.

0:32:46 > 0:32:49There are two blues foods known to use, what are they?

0:32:49 > 0:32:52I would have to say maybe one is a type of flour,

0:32:52 > 0:32:55but I couldn't really name you one.

0:32:58 > 0:32:59Name me six varieties of potato.

0:32:59 > 0:33:02Being asked to name six kinds of potato

0:33:02 > 0:33:04was definitely the lowest point for me.

0:33:04 > 0:33:05Baking potato, er...

0:33:05 > 0:33:08I'm not going to accept baking potato.

0:33:08 > 0:33:12- Oh, er, new potato. - No, not going to accept that.

0:33:12 > 0:33:15When you've got Tom Aitkens scowling at you,

0:33:15 > 0:33:18you get one thing wrong and your brain just stops working.

0:33:18 > 0:33:20My mind's gone so blank.

0:33:20 > 0:33:22When does the grouse season begin?

0:33:22 > 0:33:25- The glorious 12th, 12th August. - Thank you.

0:33:33 > 0:33:38Salim had got tantalisingly close to the all-decisive final round.

0:33:38 > 0:33:41An impressive display, but it wasn't good enough.

0:33:43 > 0:33:46And left a bitter taste.

0:33:46 > 0:33:50I'm just gutted. Just...

0:33:54 > 0:33:57I just really wanted to cook my menu, that's all.

0:33:57 > 0:33:58It's OK.

0:34:09 > 0:34:11The final showdown -

0:34:11 > 0:34:16Matt versus Dougie in a one-on-one, five-course culinary confrontation.

0:34:16 > 0:34:19This is your last chance to impress our judges.

0:34:19 > 0:34:21Your time starts now.

0:34:25 > 0:34:29The chefs pulled out their big-gun signature dishes.

0:34:29 > 0:34:31I'm making a lemon sorbet,

0:34:31 > 0:34:33which will be the best lemon sorbet you'll ever eat.

0:34:33 > 0:34:35You can quote me on that.

0:34:35 > 0:34:37I'm doing a dessert. I'm using liquid nitrogen,

0:34:37 > 0:34:41and you'll have the smoothest sorbet you'll ever have.

0:34:41 > 0:34:47Both assaulted the judges' senses with dish after dish of perfection.

0:34:50 > 0:34:53- How's it tasting?- Mm.

0:34:53 > 0:34:54- Is it good?- Mm-mm.

0:34:54 > 0:34:57- Yeah?- Exceptional.

0:34:57 > 0:34:59The desserts are a hit, chaps.

0:35:00 > 0:35:05But as the smoke settled on this gastronomic battlefield...

0:35:09 > 0:35:11..there could only be one winner.

0:35:13 > 0:35:16The Young Chef Of The Year...

0:35:18 > 0:35:20..is...

0:35:25 > 0:35:27Dougie!

0:35:27 > 0:35:29Well done, congratulations.

0:35:29 > 0:35:32Just a fantastic, amazing, amazing feeling right now.

0:35:32 > 0:35:36It's like...the greatest buzz in the world, it's fantastic.

0:35:44 > 0:35:49Two years on from wining his crown and Dougie is in Lincolnshire,

0:35:49 > 0:35:54meeting up with his own food hero, award-winning chef Colin McGurran.

0:35:54 > 0:35:56- How's things?- Good.

0:35:59 > 0:36:01It was here five years ago

0:36:01 > 0:36:06where Dougie discovered his passion for cooking and organic produce.

0:36:06 > 0:36:10I first met Dougie when he came to see me when he was 19

0:36:10 > 0:36:12and he wanted to work with us.

0:36:12 > 0:36:13I knew from very early

0:36:13 > 0:36:16he would be somebody who would do very well in the industry.

0:36:16 > 0:36:19He would be the first one in the kitchen, the last one to leave.

0:36:19 > 0:36:22He would work for free if we could let him.

0:36:22 > 0:36:24He was desperate to get into the kitchen.

0:36:24 > 0:36:28For you, I look at the leek, you look at the roots. Typical.

0:36:28 > 0:36:29Think outside the box.

0:36:29 > 0:36:32'When I was watching Dougie on the competition I was nervous for him'

0:36:32 > 0:36:36because I was thinking somebody who's very ambitious

0:36:36 > 0:36:39and very futuristic in his cooking being asked to do

0:36:39 > 0:36:42very classical things like souffles and things like that,

0:36:42 > 0:36:46and I was thinking, "My God - has he ever done a souffle before?"

0:36:46 > 0:36:47But of course he has.

0:36:52 > 0:36:57- You do have some bavette which we've braised.- Yes.

0:36:57 > 0:36:59And we're going to do it with onions.

0:36:59 > 0:37:03The whole onion, including the tops, the roots, everything.

0:37:03 > 0:37:06I've never eaten an onion top before.

0:37:06 > 0:37:09Onion top? Hmm. Rather you than me.

0:37:11 > 0:37:14Actually, they are very good.

0:37:14 > 0:37:18I had the feeling he would do very well and to see it actually happen!

0:37:18 > 0:37:23And you wonder if someone who's 19 or 20, after two years they might

0:37:23 > 0:37:26burn out and decide that they've not seen their friends in a while

0:37:26 > 0:37:28and slow their career down.

0:37:28 > 0:37:30But I think now he's accelerating in pace

0:37:30 > 0:37:33and becoming more determined about what he wants to do.

0:37:33 > 0:37:36I feel definitely a sense of pride seeing him doing well.

0:37:36 > 0:37:39- Cheers, boss.- Excellent, well done.

0:37:39 > 0:37:43With restaurants using every possible method of marketing

0:37:43 > 0:37:48to customers, and 43,000 young chefs vying for recognition,

0:37:48 > 0:37:52a new way of getting noticed has burst on to the scene.

0:37:52 > 0:37:56Welcome to the House Next Door. I hope you enjoy tonight. Cheers.

0:37:56 > 0:38:00APPLAUSE

0:38:00 > 0:38:05Pop ups like Dougie's are a flash mob style of dining experience.

0:38:05 > 0:38:09They can appear anywhere and are only found by those in the know.

0:38:10 > 0:38:12Like Young Talent judge

0:38:12 > 0:38:16and Michelin-starred master chef, Tom Aitkens.

0:38:16 > 0:38:20So tell me what you've been up to. It's been a couple of years.

0:38:20 > 0:38:23Yes. I decided to go travelling. I worked in Copenhagen

0:38:23 > 0:38:26and spent some time in the restaurants over there.

0:38:26 > 0:38:28Then I decided to go to Australia.

0:38:28 > 0:38:34I've gone on to do my own pop-up restaurant in Sydney and Melbourne.

0:38:34 > 0:38:38- Oh wow.- Yeah.- Tell me about that. - Well, it was called Wasted.

0:38:38 > 0:38:42It originally started out as a little dinner party.

0:38:42 > 0:38:46But then so many people were into the idea

0:38:46 > 0:38:53that it turned into a three-night stint in the centre of Sydney.

0:38:53 > 0:38:56It really took off, loads of people really interested in the concept.

0:38:56 > 0:39:00Next thing I know it had quite a big following.

0:39:00 > 0:39:05The menu is largely driven by sustainability.

0:39:05 > 0:39:11With the anchovy spines, I'm using the Pope's eye, I'm using nettles,

0:39:11 > 0:39:12loads of foraging.

0:39:12 > 0:39:15It's a philosophy that is well known to Tom,

0:39:15 > 0:39:18who has a surprising admission to make

0:39:18 > 0:39:21about his own rise to culinary superstardom.

0:39:21 > 0:39:24Do you have a five-year plan of what you want to do?

0:39:24 > 0:39:28Yes, in five years I would like to see myself in your shoes,

0:39:28 > 0:39:30in my own restaurant in London.

0:39:30 > 0:39:36My only advice on that is to wait until you're at least 30.

0:39:36 > 0:39:39If I had that opportunity again,

0:39:39 > 0:39:42I think I would definitely just carry on working

0:39:42 > 0:39:46and going into different places, environments, working conditions,

0:39:46 > 0:39:50and get as much experience and knowledge as you can.

0:39:55 > 0:39:58So it's back to work for the young rising star.

0:39:58 > 0:40:00It's been really enjoyable so far.

0:40:00 > 0:40:03I'm ready for the Pope's eye.

0:40:04 > 0:40:07With Tom's words of wisdom ringing in his ears...

0:40:07 > 0:40:09I'm off to Russia tomorrow morning,

0:40:09 > 0:40:12working in Moscow in a restaurant over there.

0:40:12 > 0:40:16For a bit of experience, as you do!

0:40:16 > 0:40:19And then, yes, continue working around the world.

0:40:19 > 0:40:21ALL: To Dougie!

0:40:32 > 0:40:36The search for Britain's best has come to an end for its third series.

0:40:36 > 0:40:39Trades that rarely see the spotlight

0:40:39 > 0:40:41have been given a chance to compete and shine.

0:40:45 > 0:40:49And as we head back into studio it's the young farmers' turn.

0:40:49 > 0:40:52Some terrible joke about luscious looking lambs.

0:40:52 > 0:40:54That's enough about me though!

0:40:54 > 0:40:58Our challenge team are frantically preparing to hit them

0:40:58 > 0:41:02with the contest's biggest ever trials.

0:41:02 > 0:41:05- This is Ellie, how are you? - I'm good, thank you.

0:41:05 > 0:41:08- How are your little piggies today? - They are good. They look great

0:41:08 > 0:41:11if not a bit smelly. They're a bit nervous.

0:41:11 > 0:41:15- How do you know when a pig's nervous? - Well, you can see it.- Really?

0:41:15 > 0:41:18Yes, on their behind.

0:41:18 > 0:41:20PIG SQUEALS That's a bit lively.

0:41:27 > 0:41:29Today we're anxious because one of our farmers

0:41:29 > 0:41:33is petrified of pigs. It could go one of two ways - tears or...

0:41:33 > 0:41:37Do you think we could have a walk out? Imagine if we had a walk out on Young Farmer Of The Year,

0:41:37 > 0:41:40- our first ever walker in three years, guys.- It could happen.

0:41:40 > 0:41:43She's our feisty farmer so she needs to...

0:41:43 > 0:41:45Needs to live up to that moniker.

0:41:45 > 0:41:49I've seen it done millions of times before but I just can't do it.

0:41:49 > 0:41:51Not as easy as it looks.

0:41:51 > 0:41:56And when the heat gets too much for Robin, it's time to head outside.

0:41:56 > 0:42:00Put it this way, you're still Female Young Farmer Of The Year!

0:42:00 > 0:42:03To be fair, that's more of an accolade!

0:42:09 > 0:42:11The challenge team are left to clear up.

0:42:13 > 0:42:16TV's really glamorous.

0:42:16 > 0:42:18But it never stops.

0:42:21 > 0:42:23Down on the farm.

0:42:26 > 0:42:28In the first ever off-site final,

0:42:28 > 0:42:32the outside broadcast team are just starting work.

0:42:32 > 0:42:36It's no mean feat working on this beefed-up scale.

0:42:36 > 0:42:39I've been a farmer all my life and, er,

0:42:39 > 0:42:42I wouldn't want to do what they're trying to do today at all.

0:42:44 > 0:42:47The two most gifted young farmers need a final

0:42:47 > 0:42:50befitting their talent, so everyone's mucking in.

0:42:51 > 0:42:53Apart from maybe one.

0:42:53 > 0:42:55This is Fudge.

0:42:55 > 0:42:58I mean, I don't think I've ever seen such a sweet puppy.

0:43:00 > 0:43:02I'm in love with Fudge, I think.

0:43:02 > 0:43:05If he'd have spoke to me like that on my farm,

0:43:05 > 0:43:07I'd have sent him straight out that gate.

0:43:07 > 0:43:10I like to rock the Hunters, you know what I'm saying?

0:43:13 > 0:43:18Final challenge, and we're all ready and pumped on the farm.

0:43:18 > 0:43:21This'll sort the men from the boys.

0:43:24 > 0:43:28You've come this far. Don't worry about it, mate.

0:43:28 > 0:43:31Both of you should be proud of yourselves. Go there and enjoy it.

0:43:33 > 0:43:35All right, guys, you've got two hours

0:43:35 > 0:43:38to turn this field into a functioning farm.

0:43:38 > 0:43:41This one is for the title. Good luck, your time starts now.

0:43:50 > 0:43:53Farming made its debut this year,

0:43:53 > 0:43:56but for plumbers, theirs was back in 2010,

0:43:56 > 0:44:00when more young professionals took the plunge and applied

0:44:00 > 0:44:02than we'd ever seen.

0:44:03 > 0:44:07Four talented pipe workers beat off the opposition

0:44:07 > 0:44:09to take their spot in the final.

0:44:13 > 0:44:17But if they thought they were in for an easy ride, they were wrong.

0:44:17 > 0:44:21These two dons of the trade were both their judge and jury.

0:44:21 > 0:44:26£50 million plumbing impresario Charlie Mullins...

0:44:28 > 0:44:32..and all round hands-on industry ace Chris Young.

0:44:41 > 0:44:47Round one meant firing up the blow torches in pursuit of plumbing perfection.

0:44:47 > 0:44:52It was about precision cutting, bending and soldering.

0:44:52 > 0:44:56Any slips would mean scorching errors and grumpy judges.

0:44:56 > 0:45:01Boys outnumber the girls by nearly 200 to one in this industry,

0:45:01 > 0:45:03which meant that it was inevitable

0:45:03 > 0:45:06that Aimee would get some unwanted attention.

0:45:07 > 0:45:10Aimee's very confident with her work. I think she's got the knowledge,

0:45:10 > 0:45:12but I don't think she's got the skill.

0:45:15 > 0:45:18Simon thinks you've got the knowledge but not the skills, Aimee.

0:45:18 > 0:45:22- Is that what he said?- Yeah. Fighting talk, really, isn't it? - It is a bit, isn't it?

0:45:25 > 0:45:29There's already a bitter rivalry between Simon and Aimee.

0:45:29 > 0:45:31I think we've got a competition on our hands.

0:45:33 > 0:45:36Simon - soldering just terrible.

0:45:36 > 0:45:40Aimee - there was a few scorch marks on her board.

0:45:41 > 0:45:45Two minutes left, guys, you've got two minutes to go.

0:45:45 > 0:45:47I can see two people not finishing.

0:45:54 > 0:45:56Tools down please, plumbers, tools down.

0:45:56 > 0:46:00Charlie, Aimee, put your tools down, please.

0:46:07 > 0:46:10If you had to send one of them home now, who would it be?

0:46:10 > 0:46:12It would be Aimee.

0:46:12 > 0:46:14Simon.

0:46:14 > 0:46:18Simon and Aimee had spent too much time bantering

0:46:18 > 0:46:21and not enough time soldering.

0:46:21 > 0:46:23Dean and Charlie were looking like clear favourites

0:46:23 > 0:46:25heading into round two.

0:46:26 > 0:46:28I am a better plumber than Aimee.

0:46:28 > 0:46:32I would really like to beat Simon, just to prove him wrong,

0:46:32 > 0:46:34because I don't like people putting me down.

0:46:37 > 0:46:39Plumbers, behind those doors...

0:46:42 > 0:46:46..you've each got an identical bathroom

0:46:46 > 0:46:49with an identical set of nightmare faults.

0:46:49 > 0:46:54This could get messy. You've got 60 minutes, starting now.

0:46:58 > 0:47:03Faulty taps, blocked toilets and dodgy shower fittings

0:47:03 > 0:47:05were set to stump the finalists.

0:47:05 > 0:47:07Oh, my God!

0:47:08 > 0:47:12This one here, Chris, is really like a needle in a haystack, isn't it?

0:47:12 > 0:47:17because they're all hidden problems and it's a nightmare for any plumber.

0:47:19 > 0:47:24But at least one finalist didn't share the judges' concerns.

0:47:24 > 0:47:27These are very simple installation faults.

0:47:30 > 0:47:35Half way through, and nothing separated the young, elite plumbers.

0:47:35 > 0:47:38It looked like they would be eliminated

0:47:38 > 0:47:41on their round one performance - bad news for Aimee and Simon.

0:47:41 > 0:47:46But the mischievous judges had planted an extra little surprise.

0:47:47 > 0:47:50I just found a ring!

0:47:50 > 0:47:52'There was the ring in the trap,'

0:47:52 > 0:47:55which I found, which I don't think

0:47:55 > 0:47:56any of the others found.

0:47:56 > 0:48:01- Did you check the pipe out? - Yeah, I've taken all the trap out, run it, nothing else in there.

0:48:05 > 0:48:09All of the plumbers went on to find and fix the other three faults.

0:48:11 > 0:48:13That's all except one.

0:48:13 > 0:48:18The shower isn't working correctly, there's still a fault in the hot.

0:48:18 > 0:48:22I didn't have enough time to get it stripped down to find out what was wrong.

0:48:22 > 0:48:26It left no doubt in the minds of the judges.

0:48:26 > 0:48:29The first plumber to leave the competition...

0:48:29 > 0:48:31is Simon.

0:48:40 > 0:48:42With four down to three,

0:48:42 > 0:48:45the survivors now faced the grilling -

0:48:45 > 0:48:49the worst exam they could ever face - and no-one likes exams.

0:48:51 > 0:48:53I watched Dean go in...

0:48:53 > 0:48:57- What's the minimum recommended seal size for a bath trap?- 75 mil?

0:48:59 > 0:49:02- ..then Charlie go in... - What is the purpose of a vent pipe?

0:49:02 > 0:49:04'..I'm getting more and more wound up'

0:49:04 > 0:49:06stood there watching them.

0:49:06 > 0:49:08Come on, this should be straightforward.

0:49:08 > 0:49:11To allow for expansion and open to the atmosphere.

0:49:11 > 0:49:13And they both came out all flustered and nervous,

0:49:13 > 0:49:16so obviously I was very nervous going into it,

0:49:16 > 0:49:18and I think the first question I stumbled on.

0:49:18 > 0:49:23Which type of valve should you install above a main internal stop valve?

0:49:23 > 0:49:25'And even if you're sat there thinking'

0:49:25 > 0:49:27about something for, like, ten seconds,

0:49:27 > 0:49:29'they're in your ear all the time.'

0:49:29 > 0:49:31Picture those installation guidelines...

0:49:31 > 0:49:35I know, I'm just trying to think of it, I can't...

0:49:35 > 0:49:37A non-return valve.

0:49:37 > 0:49:43Pay attention. Elementary level one plumbing, OK?

0:49:46 > 0:49:48It was neck and neck,

0:49:48 > 0:49:51but one of these exceptional plumbers had to go.

0:49:53 > 0:49:57The next plumber going home is...

0:50:00 > 0:50:02..Dean.

0:50:10 > 0:50:14Good work, guys, you are the best two young plumbers in the country.

0:50:14 > 0:50:18So, for this final deciding challenge, we're taking you

0:50:18 > 0:50:22out of your comfort zones and we're going to be getting very creative.

0:50:22 > 0:50:24Open the doors, please.

0:50:25 > 0:50:29We want you to create a magnificent visual spectacle - a fountain.

0:50:33 > 0:50:37They were given a pump, a pool, a whole load of pipes

0:50:37 > 0:50:40and 90 minutes to create something special.

0:50:40 > 0:50:45Oh, and some rather fetching waterproof trousers - nice.

0:50:50 > 0:50:52Is that all the power you've got, Charlie?

0:50:52 > 0:50:55Yeah, not a great deal, is it?

0:50:57 > 0:51:02Piling on pressure was forcing mistakes from both finalists.

0:51:02 > 0:51:04Would either complete the challenge?

0:51:04 > 0:51:07How far behind Charlie do you think you are, Aimee?

0:51:07 > 0:51:09Just dropping everything in the water now...

0:51:09 > 0:51:13I'll be happy when I've got it done, to be honest.

0:51:13 > 0:51:16When I first switched it on I hadn't finished soldering

0:51:16 > 0:51:18all the open ends into it,

0:51:18 > 0:51:20so everyone thought I had absolutely ruined it.

0:51:20 > 0:51:23- Are you happy with the outcome? - Not with the top ones...

0:51:23 > 0:51:26- I didn't see any water come out... - No, the pump's not great.

0:51:26 > 0:51:30- Bearing in mind the pump's the same as Charlie's...- I know, but...

0:51:30 > 0:51:35- You've tried to put too much up top, haven't you?- We're going to sort that out in a minute, hang fire.

0:51:37 > 0:51:39'I've never felt'

0:51:39 > 0:51:42so under pressure and stressed in my entire life.

0:51:42 > 0:51:43It was a horrible feeling.

0:51:48 > 0:51:52If there's no water coming out, then Charlie's got it hands down, really.

0:51:56 > 0:51:59That's time, guys, well done.

0:52:01 > 0:52:04Aimee and Charlie, it's now the moment of truth.

0:52:04 > 0:52:07Let's see if you delivered on the brief.

0:52:07 > 0:52:09Fire up those fountains.

0:52:12 > 0:52:16It had gone down to the wire, but they'd done it -

0:52:16 > 0:52:19two spectacular displays.

0:52:23 > 0:52:26But boys will be boys, and Charlie's need

0:52:26 > 0:52:30to make his fountain bigger than Aimee's had backfired -

0:52:30 > 0:52:33his pipes were spraying all over the place

0:52:33 > 0:52:36and his pool was slowly emptying.

0:52:38 > 0:52:40This is it.

0:52:40 > 0:52:45One of you is about to be crowned the young plumber of the year 2010.

0:52:47 > 0:52:50The young plumber of the year is...

0:52:54 > 0:52:56..Aimee.

0:52:57 > 0:53:01- Well done, darling.- Well done, thank you. Well done, Charlie.

0:53:01 > 0:53:03Thank you. Lovely to meet you, thank you.

0:53:03 > 0:53:06'I was just overwhelmed to hear'

0:53:06 > 0:53:08my name read out, I was so proud.

0:53:08 > 0:53:11I knew my family would be very proud as well.

0:53:13 > 0:53:17Now 12 months on, our champion plumber is coming back to the place

0:53:17 > 0:53:19where it all began to fill me in on what life is like

0:53:19 > 0:53:24when you've been crowned the best young talent in your industry.

0:53:24 > 0:53:28- So, how you doing, Aimee? Nice to see you.- Not bad, I'm all right, thank you.

0:53:28 > 0:53:32I believe life's been pretty hectic since you were last in this studio.

0:53:32 > 0:53:36Yeah, I got a new job. I know work for a massive company all over Europe,
