0:00:21 > 0:00:26I feel I can give it a really good shot, make it to the end and win.

0:00:27 > 0:00:33I'm good at cooking basic food. This is not basic food. This is MasterChef.

0:00:33 > 0:00:37Cooking doesn't get tougher than this.

0:00:47 > 0:00:53These four celebrities are taking on the challenge

0:00:53 > 0:00:56to become the next MasterChef champion.

0:00:56 > 0:01:02But at the end of this week, only the best cooks will go through to the semi-finals.

0:01:03 > 0:01:07I'm feeling a bit like a rabbit caught in the headlights!

0:01:07 > 0:01:12I don't feel very confident, but I want to enjoy the experience.

0:01:13 > 0:01:16It's a whole new ballgame for me.

0:01:16 > 0:01:20I've really just done music, so it's a new chapter in my life.

0:01:20 > 0:01:26How am I feeling about my future in MasterChef?! I'll take each day as it comes.

0:01:26 > 0:01:30I'll try to give it my best shot. That's all I can do.

0:01:30 > 0:01:35I'm loving the experience. I feel really passionate about food.

0:01:35 > 0:01:37I want the romance to build.

0:01:40 > 0:01:45Each day they've been set challenges to determine their expertise.

0:01:45 > 0:01:49Today they'll be tested for their ability to work as a team.

0:01:49 > 0:01:55Are they going to be at loggerheads? Are they going to gel? Who will be the leader?

0:02:07 > 0:02:13Welcome back. The person standing next to you is your new team-mate.

0:02:13 > 0:02:17You are going to have to work well together.

0:02:19 > 0:02:25In front of you are a lovely set of ingredients. We're asking you to cook us a pasta dish.

0:02:25 > 0:02:29Ten individual portions of exactly the same dish,

0:02:30 > 0:02:35but those ten plates of food must be ready in one hour.

0:02:39 > 0:02:41Let's cook.

0:02:43 > 0:02:45I'm glad I got you, Colin.

0:02:45 > 0:02:48What do you think?

0:02:48 > 0:02:52Each team has to invent a pasta dish from ingredients that include

0:02:52 > 0:02:56a range of pasta, mussels,

0:02:56 > 0:02:59tomatoes, pancetta,

0:02:59 > 0:03:01mushrooms,

0:03:01 > 0:03:04pine nuts, ricotta,

0:03:04 > 0:03:07beef mince, chillies,

0:03:07 > 0:03:09rocket,

0:03:09 > 0:03:12capers, bacon,

0:03:12 > 0:03:16anchovies, aubergines

0:03:16 > 0:03:18and a selection of cheeses.

0:03:18 > 0:03:21Today we want the extraordinary.

0:03:21 > 0:03:26Beautiful pasta cooked really well, a sauce that is opulent and beautiful.

0:03:26 > 0:03:31Why don't we lose the things that are totally alien to us? Like these.

0:03:31 > 0:03:37- Mussels could be really good. - Really? As what? - I'm not quite sure.

0:03:38 > 0:03:40Let's just have a think here. Think.

0:03:42 > 0:03:48Yesterday, actress Sharon Maughan showed promise demonstrating a knowledge of the basics.

0:03:48 > 0:03:54There's nothing wrong that a deep breath and a count to ten wouldn't cure.

0:03:54 > 0:03:58But she failed to complete two tests due to illness.

0:03:58 > 0:04:02Is it going to be a disadvantage that she didn't do the two tests?

0:04:02 > 0:04:06If she can step up to the mark, we've got a food hero on our hands.

0:04:06 > 0:04:10- These capers taste really nice. - They're lovely.

0:04:10 > 0:04:16I don't know if mixing mushrooms with mussels is a good idea, but we're not using that much.

0:04:16 > 0:04:20- I don't think that's a problem. - I'm allergic to shellfish.

0:04:20 > 0:04:26- If you're allergic, is it right to cook it? If you can't taste it, you can't have an opinion.- OK.

0:04:26 > 0:04:30- Sorry. - We can do something else, then.

0:04:32 > 0:04:34'I feel a bit better now,'

0:04:34 > 0:04:40so I'm going to do my best. I don't feel very confident, but I'm going to do my best!

0:04:40 > 0:04:43Seven minutes gone.

0:04:44 > 0:04:48Sharon's team-mate is former Supergrass drummer Danny Goffey

0:04:48 > 0:04:52who has already shown flair in the kitchen.

0:04:52 > 0:04:59You've demonstrated a lot of skill. Lovely mix of ingredients. The whole thing is done very well.

0:04:59 > 0:05:03But some unusual combinations haven't always hit the mark.

0:05:03 > 0:05:08I've got an issue with blue cheese on a breakfast. That is strong.

0:05:08 > 0:05:13There's very few things it could match. Nothing on this plate.

0:05:13 > 0:05:16- Are you doing the tomato sauce? - I'm starting it.

0:05:16 > 0:05:21I'm just putting a little bit of chillies into this mix.

0:05:21 > 0:05:26I don't think I'm a particularly bossy person. I think I'm quite laidback.

0:05:26 > 0:05:31'I'd probably try to help people rather than hinder them.'

0:05:31 > 0:05:35Some people get very competitive, but I don't think that's helpful.

0:05:42 > 0:05:48You two spent quite a bit of time working out what to cook for us. What is the dish, Danny?

0:05:48 > 0:05:53- We've got Sharon's meatballs! - We're doing a pasta

0:05:53 > 0:05:58with lamb and beef meatballs in a tomato sauce.

0:05:58 > 0:06:01What will make this dish special?

0:06:01 > 0:06:03Em...I don't...

0:06:04 > 0:06:09- Believe in yourselves, guys.- Yeah. - Who's team leader here, Sharon?

0:06:09 > 0:06:12It's equally delegated.

0:06:12 > 0:06:17- I'm doing the balls. - I'm doing the base of the sauce. - Which is working.

0:06:17 > 0:06:22- If it goes wrong, who carries the can?- That'll be a joint...

0:06:22 > 0:06:24Ever get rid of two people at once?

0:06:24 > 0:06:29Danny, as a band member you've been used to being in a team.

0:06:29 > 0:06:33- Right.- Does that cause friction because of creativity?

0:06:33 > 0:06:39It can do, yeah, definitely. We were quite a democratic band. We wrote everything together.

0:06:39 > 0:06:45Sometimes too democratic. It takes too long. You need quick decisions.

0:06:45 > 0:06:49- So we might see a leader in you yet? - You could well do.

0:06:51 > 0:06:57They got off to a very slow start, but I do love their meatballs.

0:06:57 > 0:07:03They must get that pasta sauce to taste delicious and the pasta to absorb that beautiful sauce.

0:07:04 > 0:07:07You've had 15 minutes. 45 minutes left.

0:07:08 > 0:07:14On the second team is TV presenter Justin Ryan, who made a bad first impression.

0:07:14 > 0:07:20I don't know where to start. I've watched in amazement as you made bowls of gruel

0:07:20 > 0:07:23and bowls of porridge.

0:07:23 > 0:07:27But he managed to turn things around with his final dish.

0:07:27 > 0:07:32It's a good-looking, modern plate of food and that sauce

0:07:32 > 0:07:34is really, really tasty.

0:07:35 > 0:07:41This is a really weird one for me and Colin. We've never been in competition before

0:07:41 > 0:07:47and now we're fighting to find out which of us is the better cook. That breeds a little bit of tension.

0:07:47 > 0:07:52Get a big pan on, please, Colin. We'll get some pasta softened down.

0:07:53 > 0:07:58I've got a frying pan ready as well with some hot oil.

0:07:58 > 0:08:03Working with Justin is presenting partner Colin McAllister,

0:08:03 > 0:08:08who has shown some early signs of promise.

0:08:08 > 0:08:12Considering your lack of experience, maybe you have a natural touch.

0:08:12 > 0:08:18- However, his palate has been called into question.- The sauce is sweet,

0:08:18 > 0:08:22but it needs something sharp to take it from good to great.

0:08:22 > 0:08:27Justin and I are a good team. We do work well together.

0:08:27 > 0:08:32You have to know what you're good at and what the other person's good at.

0:08:32 > 0:08:34That's a good partnership.

0:08:34 > 0:08:37Halfway. Half an hour left.

0:08:44 > 0:08:48- Colin and Justin, you guys are assembling.- We are assembling.

0:08:51 > 0:08:56- What are you cooking for us?- A cross between moussaka and lasagne.

0:08:56 > 0:09:02We've got some sausage in there, mushrooms, loads of pasta, aubergines and then the final dose of cream

0:09:02 > 0:09:05and lots of cheese. And breadcrumbs.

0:09:05 > 0:09:12- Colin, what strengths does Justin bring to the party? - He's very good at making it happen.

0:09:12 > 0:09:16Being practical and saying, "That's how we can achieve that."

0:09:16 > 0:09:18I'm very like an ideas person.

0:09:18 > 0:09:22I'll say, "Try a bit of this. What about that?"

0:09:22 > 0:09:29So teamwork you seem very happy with. This layered lasagne with sausage, beef, tomatoes,

0:09:29 > 0:09:34mushrooms, aubergines, cheese... you seem happy with.

0:09:34 > 0:09:39- It's a hearty tray. There's a lot. - Can you grate this?

0:09:39 > 0:09:45- Are you doing this with other people in mind or just for you? - We've tried for...

0:09:45 > 0:09:51- You asked him to grate some cheese, then took it off him!- You grate it. - It's not practical.- It's the time.

0:09:51 > 0:09:56We've 60 minutes and this concoction hasn't made it to the oven. Alarming!

0:09:56 > 0:10:01- Colin, are you used to being bossed around by Justin?- He wasn't bossing.

0:10:01 > 0:10:07- I don't think so! - Maybe other couples boss each other around. We don't.

0:10:09 > 0:10:15Justin and Colin, I thought they were team players and worked together. All I can see

0:10:15 > 0:10:19is Justin running around like mad and Colin cleaning up.

0:10:19 > 0:10:24I don't know what it'll taste like. I've never seen anything like it.

0:10:25 > 0:10:30Can I just say you've only got 15 minutes left? 15 minutes.

0:10:34 > 0:10:38- I think it's... - Shall we do Lady and The Tramp?

0:10:47 > 0:10:51You've got 10 minutes left and that means plated as well.

0:10:59 > 0:11:03Last two minutes! You're going to have to shift!

0:11:03 > 0:11:05Are we cooked? Oh, God...

0:11:17 > 0:11:21- How many fingers and thumbs have you got?- How many's here?- Count them.

0:11:21 > 0:11:27- Where's the other plate? - There. Look. 10 seconds left.

0:11:29 > 0:11:35- That's it. Step away from your bench. Your time's up.- That was good. That was really stressful.

0:11:35 > 0:11:38It was so stressful!

0:11:49 > 0:11:56Danny and Sharon have made ten plates of spaghetti, topped with lamb and beef meatballs

0:11:56 > 0:11:59in a cherry tomato and basil sauce.

0:12:00 > 0:12:05I think you work very well together. I do. And your idea was sound.

0:12:05 > 0:12:10I do have one issue - there isn't enough sauce.

0:12:10 > 0:12:15And pasta sauce does not sit on top of pasta, it gets mixed together.

0:12:22 > 0:12:27Your pasta still has a little bit of firmness. I like that. Good.

0:12:27 > 0:12:33It's cooked well. Everything is cooked well. And your tomato sauce is sweet and nice.

0:12:33 > 0:12:38It needs more flavour. There's a little hint of spice, but it needs more.

0:12:46 > 0:12:50- Oh, dear... - I know. It's scary.

0:12:51 > 0:12:58You both obviously have a really good palate. That sauce is really tasty. The concept is good

0:12:58 > 0:13:04because there is the variation. They're going a little bit dry, but, on the whole, not a bad job.

0:13:04 > 0:13:08'- I felt we were a good team. - We were.'

0:13:08 > 0:13:11- It's hard at first because... - We were so polite.

0:13:11 > 0:13:16- But I think maybe it worked. - I'm so happy.

0:13:16 > 0:13:20So happy to have worked with Danny. I'm getting a bit theatrical!

0:13:20 > 0:13:25Colin and Justin's dish is a Mediterranean pasta bake

0:13:25 > 0:13:28topped with pine nuts, parmesan and capers,

0:13:28 > 0:13:33accompanied by a rocket and tomato salad.

0:13:33 > 0:13:37Inside we have lamb sausage, beef, mushrooms, aubergines,

0:13:37 > 0:13:42- cheese, pasta, salt, pepper, milk. - And bacon lardons.

0:13:42 > 0:13:48Bacon lardons! Brilliant. Then we've got scattered pine nuts and capers

0:13:48 > 0:13:53and tomatoes and olives. We're up to 15 ingredients in one bowl.

0:14:01 > 0:14:08The acidity from the parmesan cheese and the tomato coming together with the spiciness of the lamb sausage

0:14:08 > 0:14:14is a little bit overpowering. Your aubergines aren't cooked enough. They need to be cooked first

0:14:14 > 0:14:19or they just go hard. That's probably why it's salty,

0:14:19 > 0:14:22the saltiness coming from those aubergines.

0:14:22 > 0:14:25I'm slightly frightened by it.

0:14:25 > 0:14:30I think you two work well together, but not efficiently together.

0:14:30 > 0:14:37You took charge, Justin, which is great, but then you've got to give him some work to do.

0:14:46 > 0:14:49There's a lot of cheese flavour in with tomato.

0:14:49 > 0:14:54You can get the hint of some meat, but I can't tell which.

0:14:54 > 0:14:59It's perfectly edible, but because there's so much going on,

0:14:59 > 0:15:02it's just a little bit muddy.

0:15:04 > 0:15:06'I'm a bit disappointed.'

0:15:06 > 0:15:09Maybe we bit off more than we could chew.

0:15:09 > 0:15:14As he read through the ingredients, it sounded like the whole menu!

0:15:14 > 0:15:19JUSTIN: I had a little taste afterwards and I thought it tasted OK.

0:15:19 > 0:15:24Cooking for 10 people in an hour is actually really daunting.

0:15:27 > 0:15:32No doubt about it, this has been a really tough task.

0:15:32 > 0:15:36But what comes next... it's a lot tougher.

0:15:37 > 0:15:40Thank you.

0:15:46 > 0:15:49I don't care what they say!

0:15:49 > 0:15:51That was hard work.

0:15:52 > 0:15:58Justin and Colin need to have a complete 180-degree U-turn.

0:15:58 > 0:16:01Their ideas about food are crazy, John.

0:16:01 > 0:16:05Throwing all those ingredients under sheets of pasta is silly.

0:16:05 > 0:16:08I couldn't help but chuckle.

0:16:08 > 0:16:14- I think the division of labour is wrong.- Justin takes charge, but doesn't give Colin any work!

0:16:14 > 0:16:17I think Colin's got good ideas.

0:16:17 > 0:16:23On the other side, the teamwork of Danny and Sharon, it started off that little bit too slow.

0:16:23 > 0:16:30Then they ran out of time. It's a shame. The essence of the dish is good. It just needed more finesse.

0:16:30 > 0:16:35It's amazing how they started to click. They worked brilliantly well.

0:16:35 > 0:16:41But the pressure is going to mount and I wonder if they've got the energy to really push forward

0:16:41 > 0:16:47and do what is necessary. Tomorrow we are taking them out to the general public.

0:16:47 > 0:16:52- They have to feed real people, not just you and I.- Mate, take cover!

0:16:52 > 0:16:55Take cover.

0:16:55 > 0:16:59JUSTIN: I expect the next part is going to leave me absolutely frazzled.

0:16:59 > 0:17:02I'm excited, but in equal parts terrified.

0:17:02 > 0:17:08DANNY: It's getting better and better. I've conquered my nerves slightly.

0:17:08 > 0:17:13I can let the cooking do the talking. If food could talk.

0:17:13 > 0:17:18SHARON: I feel scared still, but I'm looking forward to it.

0:17:18 > 0:17:21Looking forward to what's to come. A bit.

0:17:26 > 0:17:30It's the morning of Day Two.

0:17:30 > 0:17:37Now Justin, Sharon, Colin and Danny face their first outside catering challenge.

0:17:58 > 0:18:03Welcome to the Royal Free Hospital, one of the busiest in London.

0:18:03 > 0:18:09Over 700,000 patients a year, 900 beds,

0:18:09 > 0:18:13over 4,500 dedicated staff.

0:18:13 > 0:18:18It's those staff that you are making lunch for today.

0:18:18 > 0:18:21This is all about mass catering.

0:18:21 > 0:18:26Each team today is going to be tasked with cooking 40 meat dishes,

0:18:26 > 0:18:3240 vegetarian dishes and 30 hot desserts. That's a huge amount of food.

0:18:32 > 0:18:36Lunch is at 12.30. Good luck. Off you go.

0:18:36 > 0:18:43I can't think of a more important group of people to feed than those that run a hospital.

0:18:43 > 0:18:47These people are on tight schedules. They need their lunch.

0:18:47 > 0:18:54The Royal Free Hospital in London's Hampstead is internationally renowned for pioneering research

0:18:54 > 0:18:57and world-class treatment.

0:18:58 > 0:19:03The staff canteen provides the fuel which powers its huge workforce.

0:19:06 > 0:19:11Overseeing service today will be Head Chef Graham Haden.

0:19:12 > 0:19:16We've got a lot of work to do, a short space of time.

0:19:16 > 0:19:20In front of you are the ingredients that you'll be cooking with today.

0:19:20 > 0:19:23You know what you've got to do.

0:19:24 > 0:19:29The two teams have to invent two mains and a pudding from ingredients including

0:19:29 > 0:19:33lamb mince, salmon and pork,

0:19:33 > 0:19:38together with a selection of vegetables and fruits.

0:19:39 > 0:19:42Lamb mince would make a fantastic shepherd's pie.

0:19:42 > 0:19:47The courgettes, you sharpen them like a pencil...

0:19:47 > 0:19:51- They will also have the run of the larder.- There's bread here.

0:19:51 > 0:19:57This could be the perfect solution! Here's some I prepared earlier.

0:19:57 > 0:19:59Try not to get too complicated.

0:20:00 > 0:20:06- Right, are you ready? Menus? - We're going to do salmon with rice and courgettes.- OK.

0:20:06 > 0:20:09- Then we'll do a vegetable bake.- Yes.

0:20:09 > 0:20:11And...apple crumble.

0:20:11 > 0:20:14- Gentlemen? - We want to do a shepherd's pie.

0:20:14 > 0:20:18We thought for the vegetarian option doing a stuffed pepper.

0:20:18 > 0:20:21- And your dessert?- Apple strudel.

0:20:21 > 0:20:27- We've got to crack on. Time is very short. All right? Thank you very much.- Thank you.

0:20:27 > 0:20:29Let's get all this out of the way.

0:20:33 > 0:20:35We need this.

0:20:35 > 0:20:37I want courgettes.

0:20:39 > 0:20:44The teams now have 2.5 hours before service.

0:20:44 > 0:20:47'Sharon and I work well together.'

0:20:47 > 0:20:50We're very democratic and politely English to each other.

0:20:50 > 0:20:55'We're going to have to operate a bit quicker this time.'

0:20:55 > 0:20:59Confident? It's not a word that even comes into the equation.

0:20:59 > 0:21:05I have absolutely no confidence, but I have loads of hope and some determination.

0:21:05 > 0:21:10We can't let the stress get to us. We have to prepare interesting food for an awful lot of people.

0:21:10 > 0:21:14'These guys go out of their way to save everybody's lives.'

0:21:14 > 0:21:18I want to make sure that today we give a little bit back.

0:21:18 > 0:21:24- What takes the longest? - Cook the potatoes, the rice and the apples.

0:21:24 > 0:21:30- Anything that's hard. - You get on with that and I'll make the shepherd's pie.

0:21:30 > 0:21:33Why don't one of us do potatoes...?

0:21:33 > 0:21:37- Well, can I do the onions? - Do they have a machine?

0:21:37 > 0:21:42- Do they have to peel potatoes manually?- Yes.- Do they?- Yes.

0:21:42 > 0:21:44OK.

0:21:44 > 0:21:48I'm not going to be put off by volume here. This is a chance

0:21:48 > 0:21:55to, you know, rather than gung-ho, straight in, let's really plan this out.

0:21:55 > 0:21:58I'm looking for military precision. That's the key.

0:21:58 > 0:22:04- You're doing the vegetable bake, you're doing salmon.- Yes. - Who'll do the dessert?

0:22:04 > 0:22:06Me. By then we'll both be doing it.

0:22:10 > 0:22:14I'm just trying to cut 40 pieces of salmon.

0:22:14 > 0:22:20I'm starting to freak out. I didn't know what 40 pieces looked like. It's a lot.

0:22:20 > 0:22:26I can cut these and put them aside and they don't need long to cook. Then I can join Sharon and help.

0:22:28 > 0:22:35While Danny portions the salmon, Sharon preps the veg for the vegetarian bake.

0:22:35 > 0:22:38- You need to chop quicker. - I know, but I can't.

0:22:38 > 0:22:42I feel really bad that Sharon's doing all the chopping!

0:22:42 > 0:22:46Carry on. Don't feel guilty. I'll scream, "Daniel!"

0:22:46 > 0:22:49I've just got a few more to do.

0:22:49 > 0:22:51There you go.

0:22:51 > 0:22:54As Danny puts the salmon in the fridge to cook later,

0:22:54 > 0:22:58the other team is working on the shepherd's pie.

0:22:58 > 0:23:03You've got to peel 50 potatoes. We need one, then an extra ten.

0:23:03 > 0:23:09Thank you(!) This will take forever, but it's got to be done.

0:23:09 > 0:23:14Mind over matter. There's nothing worse than a plate full of someone's misery, is there?

0:23:14 > 0:23:17Feel the love in every spud.

0:23:17 > 0:23:23It's the whole quantity thing. The most we have dinner for is perhaps 15 people.

0:23:25 > 0:23:30Does it matter that after four potatoes I'm starting to feel bitter?

0:23:30 > 0:23:34Does that matter? "Oh, no! Peel them off!"

0:23:34 > 0:23:3930 minutes in and Danny gets started on the dressing for his salmon,

0:23:39 > 0:23:42while Sharon is still chopping veg.

0:23:42 > 0:23:46- Do you love to chop? - I love to chop! I'm a-choppin'!

0:23:46 > 0:23:49"I love to chop!"

0:23:49 > 0:23:53- Is that enough vegetables?- Yes. - Anything else?- No, that's fine.

0:23:55 > 0:24:00- Sharon, are you more comfortable on your own?- I love Danny!

0:24:00 > 0:24:03It's an umbilical cord we're tied by.

0:24:03 > 0:24:08- And what are you doing? - A vegetable bake for vegetarians.

0:24:08 > 0:24:11It's hard. I'm a complete carnivore.

0:24:11 > 0:24:15What is the secret of this, feeding 200 people?

0:24:15 > 0:24:20Basically, it's just more of what you'd do. It's just having great, big dishes.

0:24:20 > 0:24:24- I agree with you. Just do what you normally do, but bigger.- I think so.

0:24:24 > 0:24:27- Like that.- Yes.- Thank you.

0:24:27 > 0:24:29With her veg in the oven,

0:24:29 > 0:24:33Sharon moves on to preparing her tomato sauce.

0:24:33 > 0:24:35Right, sweat that off now.

0:24:37 > 0:24:43It's not like my one at home for a fiver. Wow! Where is it? What a monster!

0:24:49 > 0:24:54- Right, that's your base. That's your tomato sauce. - How satisfying is that?

0:24:56 > 0:25:02Meanwhile, Colin and Justin are both still working on their shepherd's pie.

0:25:02 > 0:25:06It's a physical workout, cooking this amount of lamb!

0:25:07 > 0:25:10Man alive! This is hard going.

0:25:10 > 0:25:16- You're still doing them potatoes? - Is there a quicker way? - Yeah - move your hand!

0:25:20 > 0:25:25Justin has finally transferred his mince into the industrial pan.

0:25:27 > 0:25:31What about this for a spatula? That's what it is.

0:25:31 > 0:25:35- Justin, where's the vegetarian course?- We're about to do that.

0:25:35 > 0:25:41- We've got the meat underway... - Where's the pudding? - It'll have to come last.

0:25:41 > 0:25:46- We're not going to let it stress us. The apples are here, ready to go. - Oooh.

0:25:48 > 0:25:55Half the cooking time has passed and throughout the hospital staff near the end of a busy morning shift.

0:25:58 > 0:26:01Danny and Sharon have moved on to their pudding,

0:26:01 > 0:26:06but their salmon will need to be cooked just before service.

0:26:06 > 0:26:12- You know my concern with yours? The fish being overcooked. - That was always my concern, too.

0:26:12 > 0:26:16I'm just going to bake it, then onto the grill to crisp it up.

0:26:16 > 0:26:21- You'll cook half and half? - No, it's in three.- Three lots?

0:26:21 > 0:26:25- Danny, you are the champion of the world.- I know.- Who's the boss?

0:26:25 > 0:26:30- We are both the boss. We're equal. - I'm getting more sort of, er...

0:26:30 > 0:26:35- Assertive?- Yeah.- More assertive? - I couldn't even think of the word!

0:26:36 > 0:26:41- Fantastic. Good luck. - They need more than luck, John!

0:26:41 > 0:26:46- Thanks very much, Graham(!) - I thought he was on our side.

0:26:52 > 0:26:56- That one can go there. - I think it goes on the top.

0:26:56 > 0:26:58OK, thank you.

0:26:58 > 0:27:04Across the kitchen, Justin and Colin finally decide to split the workload.

0:27:04 > 0:27:11Colin takes on the stuffed peppers, while Justin chops the apples for the strudel.

0:27:11 > 0:27:18I've got something like 35 apples to chop. These have to be softened down in a pan,

0:27:18 > 0:27:20then get them cooked in my pastry.

0:27:20 > 0:27:24We've got an awful lot to do and time is running out.

0:27:25 > 0:27:28- Have you got the mixture for those? - Not yet.

0:27:28 > 0:27:33- Pudding - where's that?- The apples are just about to be cooked.

0:27:33 > 0:27:35Oh, my word.

0:27:39 > 0:27:44They've made a list and think that means it'll be done!

0:27:44 > 0:27:46Work through it!

0:27:46 > 0:27:50Colin, be mindful that we have to get these peppers baked in time.

0:27:50 > 0:27:54- What's in this pepper mix? - How many are we doing? 30?

0:27:54 > 0:27:58- We need enough rice... - Is it 40?

0:27:58 > 0:28:01- 40. - Oh, my God! I've only done 30!

0:28:01 > 0:28:06- 40 vegetarian, 40 meat? - Oh, no! I'm supposed to do 40.

0:28:06 > 0:28:08One, two, three...

0:28:10 > 0:28:14I've only got 31. I need another nine peppers.

0:28:14 > 0:28:17Oh... I need another nine peppers.

0:28:20 > 0:28:25And then the right foot. Squeeze. It's going much easier.

0:28:25 > 0:28:27Slow down just a tiny bit more.

0:28:29 > 0:28:32You've got one hour before service!

0:28:32 > 0:28:35Time is busting us apart here.

0:28:37 > 0:28:41Sharon's vegetable bake is ready for assembly.

0:28:48 > 0:28:51- Taste enough salt? Yes? - Just. Subtle.

0:28:57 > 0:29:02As Sharon's vegetable bake goes in the oven,

0:29:02 > 0:29:06Danny pan fries the courgettes for his salmon dish.

0:29:06 > 0:29:12These are very bland. I've got to think what to put in. I might put coriander in.

0:29:12 > 0:29:15Or maybe a bit of dried chilli.

0:29:20 > 0:29:26Meanwhile, Colin and Justin are behind making the stuffing for their peppers.

0:29:27 > 0:29:33There's so many things to do at the same time. In your own kitchen, you just take your time,

0:29:33 > 0:29:40but because there's a real time constraint here, we're really, really up against it.

0:29:41 > 0:29:45While the boys race to stuff their peppers,

0:29:45 > 0:29:51- Sharon is already taking her pudding to the pass. - Put it on the hot plate.- I will.

0:29:54 > 0:29:58I have apple crumble for 30 people sitting out there ready to be served.

0:29:58 > 0:30:01It's the most terrifying thing!

0:30:03 > 0:30:08With 20 minutes to go, Justin starts putting together the apple strudel.

0:30:08 > 0:30:13I've never made strudel before, so I'm running at a brick wall.

0:30:18 > 0:30:22Justin? Your strudel is stuck to the bench.

0:30:24 > 0:30:28You're not going to butter the tray or anything?

0:30:53 > 0:30:55Oh, my God...

0:30:55 > 0:30:58I'll have to abandon that one.

0:30:59 > 0:31:02This one is going to come in two.

0:31:03 > 0:31:07It's safe to say it's not looking quite as it should have done.

0:31:07 > 0:31:13- I need to get something in the oven. - Cook it now. If it's not right, it doesn't get used. OK?

0:31:13 > 0:31:15Where do I find icing sugar?

0:31:17 > 0:31:19Icing sugar, guys?

0:31:19 > 0:31:21Just give me a clue!

0:31:21 > 0:31:24Icing sugar. Fantastic, thank you.

0:31:24 > 0:31:29Colin! Can you open an oven so I can come through with these, please?

0:31:35 > 0:31:37Sorry, Sharon.

0:31:38 > 0:31:43The peppers have only just gone in the oven. We've got 10 minutes.

0:31:43 > 0:31:50They are so out of their depth, but to carry on saying it's fine, that is meltdown.

0:31:57 > 0:32:03Danny's salmon, dressed with soy sauce and spring onions, is ready for the oven.

0:32:04 > 0:32:08Colin, Justin, Sharon, Danny - eight minutes!

0:32:08 > 0:32:15- I thought they were in the oven! - They're cooked. We're just going to grill the potato.

0:32:17 > 0:32:19I've got loads of them, remember.

0:32:24 > 0:32:28- Come on! - Mind your backs! Mind your backs!

0:32:39 > 0:32:42These can go out. Grab one, Colin.

0:32:48 > 0:32:51Come on, guys! I need this food now!

0:33:00 > 0:33:05- Are they cooked?- Well... - If not, leave them in the oven.

0:33:05 > 0:33:07Five minutes, then we're done.

0:33:07 > 0:33:12Put those in, get the others out and see what they're like.

0:33:15 > 0:33:19It's now 12.30 and the canteen is opened.

0:33:19 > 0:33:23But with some of the food yet to reach the pass,

0:33:23 > 0:33:26the hospital staff will have to wait.

0:33:34 > 0:33:38- You've got to stand and serve it. Are you happy?- It's really nice.

0:33:49 > 0:33:54You have a queue outside waiting for food and it's 120 people long.

0:33:54 > 0:33:57Danny? Bring your salmon.

0:33:57 > 0:33:59Quick. Go, go, go.

0:34:01 > 0:34:03Go. Go.

0:34:03 > 0:34:04Go.

0:34:08 > 0:34:13Danny and Sharon have made salmon with rice and courgettes,

0:34:13 > 0:34:16a vegetable bake

0:34:16 > 0:34:18and an apple crumble.

0:34:18 > 0:34:23Colin and Justin are serving shepherd's pie,

0:34:23 > 0:34:26peppers stuffed with rice and cheese

0:34:26 > 0:34:29and a dessert of apple strudel.

0:34:40 > 0:34:42What would you like? Shepherd's pie.

0:34:48 > 0:34:50The shepherd's pie for you?

0:34:50 > 0:34:54The shepherd's pie is an instant hit.

0:34:54 > 0:34:58- There you go.- Thanks. - You're very welcome. Enjoy it.

0:34:58 > 0:35:01- What would you like? - A piece of salmon, please.

0:35:01 > 0:35:03Salmon.

0:35:04 > 0:35:11Soon Danny's salmon and Sharon's vegetable bake also prove popular.

0:35:11 > 0:35:13If you want soy sauce, it's there.

0:35:15 > 0:35:21After a busy start for Colin and Justin, business has slowed down.

0:35:23 > 0:35:25Colin and Justin's shepherd's pie.

0:35:25 > 0:35:31What were Colin and Justin doing for two and a half hours?!

0:35:31 > 0:35:36I don't know what they were up to. The meat is really tasty.

0:35:36 > 0:35:40And I like that gravy, that lovely thick gravy.

0:35:40 > 0:35:45I'd like those potatoes to be properly baked on top, not grilled.

0:35:45 > 0:35:50- It's not bad. - I think that's a decent dish. The sort of thing I would order.

0:35:51 > 0:35:57Shepherd's pie was fantastic. Nicely flavoured. It was lovely.

0:35:57 > 0:36:00Best shepherd's pie I've ever had.

0:36:00 > 0:36:05- Here you are. You're welcome. Enjoy it.- It looks lovely.

0:36:05 > 0:36:09Look at that. That's cheese - corrugated cheese.

0:36:14 > 0:36:20- The pepper is far too strong. It's not cooked enough. - The rice is not really seasoned.

0:36:20 > 0:36:23Big hunks of cheese in it.

0:36:23 > 0:36:27It's not very nice, Mr Wallace. I don't like it at all.

0:36:29 > 0:36:36The filling's very good. The actual pepper wasn't cooked as much as I'd like.

0:36:38 > 0:36:42Back at the pass, Danny and Sharon's section is still thriving.

0:36:42 > 0:36:47There's only two salmons left. Nearly out of salmons.

0:36:47 > 0:36:50They went down very quickly.

0:36:50 > 0:36:55Unfortunately, we're out of fish. There's vegetable bake.

0:37:02 > 0:37:08Nice Mediterranean vegetables, sweetness and seasoning all melting into each other.

0:37:08 > 0:37:11I'd like the potatoes more crispy, but I like that.

0:37:11 > 0:37:15She's got lovely tomato sauce, vegetables still crunchy.

0:37:15 > 0:37:19- Not bad. I'm really impressed. - So am I.- I'd eat the whole thing.

0:37:19 > 0:37:22It's good.

0:37:22 > 0:37:25It tastes home made, which is really nice.

0:37:25 > 0:37:29It's pretty tasty. I'd go for it again, I reckon.

0:37:34 > 0:37:41The courgettes aren't overcooked, the salmon is nicely cooked, then grilled. It looked great.

0:37:41 > 0:37:46It tastes great. I think he's done a really good job.

0:37:46 > 0:37:49That's nice. That's nice. What a lovely light lunch.

0:37:49 > 0:37:53The salmon was really well cooked and perfectly seasoned.

0:37:53 > 0:37:58The rice was a little bit bland, but the salmon was very well cooked.

0:38:00 > 0:38:05Colin and Justin's main courses have not sold out,

0:38:05 > 0:38:11- but they're hoping their pudding is more of a hit. - Thank you.- Enjoy it. Thank you.

0:38:12 > 0:38:15Colin and Justin's apple strudel.

0:38:15 > 0:38:21The apples were stuck to the bench when Justin tried to get the apple strudel off the bench.

0:38:21 > 0:38:27What we've ended up with is some filo pastry, a tiny portion, and inside, look...

0:38:27 > 0:38:32We have some apple and on the side a nice piece of cinnamon bark.

0:38:39 > 0:38:43This is undercooked apple inside unsweetened pastry

0:38:43 > 0:38:47with a really good dash of cinnamonon it. Thankfully we have custard

0:38:47 > 0:38:52to take away the pretty nasty taste of what is that so-called strudel.

0:38:52 > 0:38:57No, no, no, that's not good. Oh, that's a real shame. That's a real, real shame.

0:38:57 > 0:39:03It's...OK. The pastry's quite raw. It tastes...it just tastes raw. The apple's nice.

0:39:03 > 0:39:06I wish I'd had the crumble.

0:39:13 > 0:39:16Pudding? Pudding and custard?

0:39:22 > 0:39:28They've managed to get a crispy top on it, fruit is nicely sweetened, juicy. That's nice.

0:39:28 > 0:39:35I am really actually quite blown away by Danny and Sharon and the food they've produced.

0:39:35 > 0:39:39Never had apple crumble in a hospital before. This was really nice.

0:39:45 > 0:39:48- Lunch is finished.- Thank you!

0:39:50 > 0:39:53- You all right? - Well done, you two.

0:39:53 > 0:39:57It was physically very hard, but I'm incredibly proud.

0:39:57 > 0:40:01My head inside was telling me that I could not do this. I loved it.

0:40:02 > 0:40:09It's the first time I've ever cooked for that amount of people. It's made me want to do more cooking.

0:40:09 > 0:40:11Onwards and upwards.

0:40:11 > 0:40:19I'm happy because the customers seemed to be happy. We worked as a team and we made it happen.

0:40:19 > 0:40:25I've had the time of my life here and to cook en masse. I had no idea that Colin and I could do it.

0:40:28 > 0:40:32Tough gig today. For one team, I think, a great success.

0:40:32 > 0:40:36For the other, I've got to say there's a lot of work to be done.

0:40:36 > 0:40:43Danny and Sharon got on with their jobs and the food they produced was exactly what we asked of them.

0:40:43 > 0:40:46Quality food in big numbers.

0:40:46 > 0:40:52They went that extra inch, they tried really hard to get good flavour and that effort showed.

0:40:52 > 0:40:55I'm really starting to get into it. Really enjoying it.

0:40:55 > 0:41:01I'm really pleased I found something I can do with my hands as opposed to making music.

0:41:01 > 0:41:05It's something really new for me. I'm having a good time.

0:41:05 > 0:41:08SHARON: I really like working in a team.

0:41:08 > 0:41:13I'm scared about cooking on my own. You're in competition with others.

0:41:13 > 0:41:16I'll have to just get used to it.

0:41:16 > 0:41:22I would have thought that Colin and Justin, as a partnership, would have been

0:41:22 > 0:41:26a coherent workforce. Today it just didn't happen.

0:41:26 > 0:41:30The only thing that really came off well was that shepherd's pie.

0:41:30 > 0:41:35The stuffed peppers and apple strudel, not quite there, guys.

0:41:35 > 0:41:40Today's challenge felt like the scariest thing imaginable,

0:41:40 > 0:41:44but I feel like it was a valuable experience. I feel richer.

0:41:44 > 0:41:49I feel kind of fired up and ready to go back into the kitchen.

0:41:49 > 0:41:54JUSTIN: Today's been fantastic. Utterly fantastic. My confidence has built

0:41:54 > 0:41:59and now I'll be really disappointed if I'm going to be asked to leave.

0:41:59 > 0:42:02I feel more competitive than ever.

0:42:02 > 0:42:08The celebrities have managed to survive their first outdoor challenge,

0:42:08 > 0:42:14- but the competition is about to get a lot tougher.- Justin and Colin need to lift their game.

0:42:14 > 0:42:17Tomorrow someone's leaving the competition.

0:42:17 > 0:42:24From now on, no more teamwork. It's all about the individual. The competition will be ferocious.

0:42:30 > 0:42:35Tomorrow the battle to stay in the competition continues.

0:42:37 > 0:42:41And one of the celebrities faces elimination.

0:42:42 > 0:42:48Just under 20 minutes! Steamed sea bass, rice, sweet chilli sauce.

0:42:50 > 0:42:55I need you to smile from ear to ear as you chow down on my fish.

0:42:55 > 0:42:59- Are you seriously going to deep fry a chocolate bar?- Yes, I am.

0:43:02 > 0:43:05The person leaving us

0:43:05 > 0:43:07is...
