:16:53. > :16:59.you have the softness of the courgette flower, covered with the

:16:59. > :17:04.batter but you want a small amount of the batter. We have the ricotta.

:17:04. > :17:07.Isn't it going to melt? It will hold. If you did something that

:17:07. > :17:13.melted you have to have so much batter on it, it will be too heavy

:17:13. > :17:17.for the flower. Ricotta doesn't melt? It just softens, that's all

:17:17. > :17:22.that happens. If you were to put it in a pan and put loads of heat it

:17:22. > :17:32.will eventually melt. We are protecting it with the batter, like

:17:33. > :17:39.an ice-cream fritter. More pinenuts here as well. We fish out our our

:39:31. > :39:36.are turning it into something slightly more acidic in it.

:39:40. > :39:45.in there, but we are adding delicious yoghurt into there.

:39:45. > :39:48.Oh, that is delicious. Now, we are adding acidity into it

:53:59. > :54:04.parcel. In Britain, until sort of probably ten, 15 years ago,

:56:42. > :56:48.there. You can really work that now. Have you ever done a butchery -

:56:48. > :56:53.could you do it? Bits and Bobs. I could find my way around a beast.

:56:53. > :56:57.When you see good butchery it's incredible. What about fish

:56:57. > :57:02.filleting, are you an expert? do it, I think again I would hate

:57:02. > :57:08.to say I am an expert, when you see people who spend their entire

:57:08. > :57:15.life... The sushi guys, the art they go into is unbelievable.

:57:15. > :57:19.a dying art. The way in which they do it and they have - it's one of

:57:19. > :57:24.the big things with butchery is that consistency, if you are going

:57:24. > :57:29.to cut a load of steaks you want to make sure they're perfect, all the

:57:29. > :57:36.same. That's the frosting done, this will go into the bag for later.

:57:36. > :57:39.If it seems it's too sloppy, you can either add more icing sugar or

:57:39. > :57:45.pop this into the fridge for a while and it will stiffen up, but

:57:45. > :57:51.not too long. This is butter and icing sugar and Vanilla. And cream

:57:51. > :57:54.to soften it, you don't necessarily need to have that. That's nice,

:57:54. > :57:59.have a taste of that. Dip your finger in, you are allowed we are

:57:59. > :58:04.not going to use that bowl. The cake, in here we have the eggs and

:58:04. > :58:08.sugar. We whisk and whisk and add a little bit of Vanilla in there.

:58:08. > :58:14.like these machines, they're good. Great. Why do it by hand when you

:58:14. > :58:18.can do this. Zest one of those lemons. And chuck the zest in there

:58:18. > :58:25.and equally, we will then cut the lemon in half and squeeze the juice

:58:25. > :58:32.in there as well. This has been going for a good five six minutes.

:58:32. > :58:36.Prior to this? Prior to this. You want a huge volume, so it's really

:58:36. > :58:42.quite delicious. What's in there? Eggs and sugar, that's all that's

:58:42. > :58:47.happened, it's nice and big and vanilla as well. Beautiful. That

:58:47. > :58:53.goes in and the juice out of that that as well. This is what is

:58:53. > :58:59.called a hot milk cake. This is an American technique. What happens

:58:59. > :59:04.from this point with this still running, just turn it down a little.

:59:04. > :59:07.Here we have milk and butter brought to scalding point, just

:59:07. > :59:16.below boiling. Pour that in gently and it will start to bring it all

:59:16. > :59:20.together. Why have you stood back? What's the purpose of this? Now we

:59:20. > :59:29.have warmth in there so starting to begin to gently cook out the eggs,

:59:29. > :59:33.we have volume and fat in there. We are getting a really delicious

:59:33. > :59:37.volominous cake. What would be the difference with cold milk? It would

:59:37. > :59:40.still work but the heat changes the chemical composition. The fats are

:59:40. > :59:44.coming together so the fats combine with the eggs and sugar and create

:59:44. > :59:49.a chemical reaction that's keeping that volume volume there. It's all

:59:49. > :59:55.science. It's all about the science. Desserts are science. Then what we

:59:55. > :00:01.do is drain this fella off. This is a nice wet mix at the moment. Then

:00:01. > :00:09.you dip in all of that flour and our baking powder and quickly

:00:09. > :00:19.combine it. This is the time now as soon as it's come together then you

:00:19. > :00:19.

:00:19. > :00:25.stop. Pistachios go in as well. That already looks yum. Delicious.

:00:25. > :00:28.It's a really nice mix. It will be quite heavy batter, but it smells

:00:28. > :00:38.delicious as well. There's something about warming the milk

:00:51. > :00:57.you want a light cake, what you do is have lots of things like oil

:01:08. > :01:13.about 50 minutes until it is done in the middle. Lovely. Now, this is
