:09:49. > :09:53.She used to support Manchester United because of an ex-boyfriend.
:09:53. > :09:57.Now she doesn't have a team. She wants to buy a season ticket and go
:09:57. > :10:02.every week home and away... Really?! This is for real? This is
:10:02. > :10:12.for real. She is getting the tattoo. She will buy a player if it is a

:11:21. > :11:25.only thing I know about them is that Stoke's manager used to be
:11:25. > :11:30.their manager and Stoke beat them in the FA Cup third round last
:11:30. > :11:40.weekend. That is the only thing I can tell you about them. There was
:11:40. > :11:40.
:11:40. > :11:48.a great Dutch player called Cruyff and he used to play for them for a
:11:48. > :11:55.while. Is he still there?! LAUGHTER Somebody help me! We have egg,
:11:55. > :12:05.flour, celeriac in there. Lovely. Press these down. The egg will set
:12:05. > :12:06.
:12:06. > :12:12.them. Didn't Eusebeo have a run-out for Gillingham? He came over...
:12:12. > :12:19.Ronaldo... He didn't play for them. But Rivaldo did! Pele played a

:12:38. > :12:45.overrunning?! LAUGHTER Only by... Who wants to see a magic trick?!
:12:45. > :12:50.Only by an hour! We sprinkle that. Tim, cut that into three equal
:12:50. > :12:59.slices and I... This way? Yeah. Right through the skin so you will
:12:59. > :13:07.have to be hard with the final push. Amanda, what I need you to do - we
:13:07. > :13:11.chop a bit of dill. Nice and fine. Yes. He is laughing at himself
:13:11. > :13:15.right now! What we will do, a touch of oil - I don't want that in
:13:16. > :13:21.there! Get out of there! There will be two people laughing in the
:13:21. > :13:26.country! We will cook this on one side only. Pop them down into the
:13:26. > :13:31.pan - doesn't matter. I don't mind. I want you to be happy. Lovely.
:13:31. > :13:38.Beautiful. We let this cook for 30 seconds. In the meantime, what

:14:18. > :14:23.meanwhile, we have cooked this for 30 seconds on one side. We take
:14:23. > :14:29.this out. It is raw on that side. The residual heat will cook the
:14:29. > :14:34.rest of it. We get this combination of the crispiness on that side and
:14:34. > :14:41.the raw on that side. So, give that a bit of a whisk. I shall put in
:14:41. > :14:45.oil as you do. We will make a simple dill-mustard-garlic cider
:14:45. > :14:53.vinegar dressing. Keep going. is my technique? Beautiful.
:14:53. > :14:59.Beautiful. We have almost done this on time(!) Whisk! Go on! Do it for

:15:29. > :15:33.pieces of half-cooked, half-raw salmon - one, two, three. Bizarre,
:15:33. > :15:38.half-cooked... When you eat it, you get a lovely combination. It is a
:15:38. > :15:43.weird thing of... I don't mind raw and cooked, but the combination...
:15:43. > :15:53.It is called the best of both worlds! Open your mind. Some lemon
:15:53. > :16:00.
:16:00. > :16:07.If you were going to be massively healthy, you could lightly poach
:16:07. > :16:12.the salmon. You get the crisp crispiness and the salmon
:16:12. > :16:17.underneath. You have outdone yourself, Simon.
:16:17. > :16:23.What are you doing next? Egyptian spiced lamb.

:16:57. > :17:11.
:17:11. > :17:21.She isn't keen to follow. It is hardly surprising, throwing
:17:21. > :17:32.
:17:32. > :17:37.yourself into a 200 meter drop Her mother makes the choice for her.
:17:37. > :17:47.She is in flight, but still getting the hang of it and heads straight
:17:47. > :17:57.
:17:57. > :18:07.Dad encourages her to try again. She has another go, but it is
:18:07. > :18:17.hardly any better. Finally, she gets the idea.
:18:17. > :18:28.
:18:28. > :18:38.She is looking more confident and Her father joins the new air cadet
:18:38. > :18:41.and they fly together in perfect And you can see the hole of

:19:55. > :19:58.How is the show going? How is the magic going? Yeah, it has been a
:19:59. > :20:03.lot of fun. We are alive and there is a real
:20:03. > :20:09.element of jeopardy. It feels like an event each of the shows.
:20:09. > :20:14.Can they really go wrong? They can seriously go wrong.
:20:14. > :20:21.We have had a couple. Like what? Unless you picked them
:20:21. > :20:25.up, I don't want to draw attention to them. Traditionally in the past,
:20:25. > :20:29.there has been some issues, tigers eating people in the audience and

:21:25. > :21:30.think it is perfect. For people our age it brings us
:21:30. > :21:34.back to our childhood age of watching Paul Daniels and I have

:21:39. > :21:44.seen magic on television, they grew up with X Factor and talent shows.
:21:45. > :21:49.Did you watch Paul Daniels, you are Scottish and grew up in Australia?

:22:32. > :22:37.You are filling Lenny Henry's shoes. Huge shoes.
:22:37. > :22:41.Yeah, which was daunting as well in itself because I grew up watching
:22:41. > :22:45.Lenny whentry. He is a legend in the UK and to follow that and to
:22:45. > :22:49.have to do it live, and it is on BBC One and it is great.

:23:57. > :24:02.the second the host tells them and I didn't know and I was petrified.
:24:02. > :24:12.I got an inkling when I got a call to ask if I had implants. I had to
:24:12. > :24:13.
:24:13. > :24:18.lie on a bed of nails and be driven over by a motorbike. This guy revs,

:24:50. > :24:57.last week I burnt my mouth. We had to swallow fire.
:24:57. > :25:02.A wardrobe of furious. So things can can go wrong? Yes, I

:33:19. > :33:24.We have some lamb that's bubbling away in the pan there. You can do

:33:39. > :33:40.
:33:40. > :33:50.turmeric, sesame seeds, pistachio, and quinoa for the salad, pepper,

:33:57. > :34:03.couscous? I don't know. I don't think it absorbs flavours in the
:34:03. > :34:09.same way that quinoa will. What is this? It's a pure grain. Doesn't
:34:09. > :34:19.taste of anything. It takes flavours on. We have toasted off
:34:19. > :34:23.our hard seeds so you release the flavour. Pop those into there and
:34:23. > :34:33.grind them down until they are nice and smooth. The way you do this -
:34:33. > :34:33.
:34:33. > :34:37.put them into a cold pan, let it cook quite slowly - press down -
:34:37. > :34:42.and what will happen is it is a low heat and they will start to smell
:34:42. > :34:51.quite delicious. Once that happens, that is good. From there - how
:34:51. > :34:57.smooth are they? That should do you. How does it work?! Tip that in
:34:57. > :35:02.there. There's still a few bits in there. That's fine. You want it to
:35:02. > :35:07.be and that smells delicious. Then we tip in all of that. Again, we
:35:07. > :35:14.have the sesame seeds, the chilli, turmeric. Where is this from?
:35:14. > :35:19.At this point, you will quite often find that this will be used as a
:35:19. > :35:24.condiment on the table. So if you get a delicious grilled meet, you
:35:24. > :35:28.would sprinkle that on. We will do something different... What is this
:35:28. > :35:33.called? Dukkah. Squeeze in the orange juice. That is your basic.
:35:33. > :35:39.Then what we do, we add a bit of orange juice into there and we add
:35:39. > :35:43.a little bit of olive oil, so now you are getting the fruitiness in
:35:43. > :35:49.there. You have the hard spices and then we bring it to life with all
:35:49. > :35:53.of this fruit. Give that a stir around. Then we will add a little
:35:54. > :36:00.bit of honey into there. Now we have got some delicious sweetness.
:36:00. > :36:04.We hold some of that back for later on. A touch more olive oil.
:36:05. > :36:10.smells so strange. It does. orange with the spices. That is
:36:10. > :36:15.what is quite nice. When you taste it, it is quite delicious. What...
:36:15. > :36:18.It is smelling like mulled wine. Yes. The cloves are in there, you
:36:18. > :36:24.have coriander seeds, so you have that lovely Christmassy flavour.
:36:24. > :36:27.What is a nice thing to do - if the lamb chops were raw, I would press
:36:28. > :36:31.them on to there and slowly fry them in a pan. So we have enough
:36:32. > :36:41.time to do it, all we are going to do, we have cooked off the lamb, so
:36:41. > :36:48.we are going to pop that into there and then just give it a little bit
:36:48. > :36:52.of a press on. Like that. Then you have the nice stickiness of the
:36:52. > :36:57.honey. You could do these as ordinary cooked lamb chops and then
:36:58. > :37:03.simply add that on top. We... you not stick them in the oven now?
:37:03. > :37:08.You could. We want to show how open this is. You could grill them as
:37:08. > :37:12.well. Could you make a crust? could. If you ground down the
:37:12. > :37:20.pistachios and the hazelnuts, that would be a nice thing to do. I'm
:37:20. > :37:27.going to turn the heat off. You would do this from raw. We will get
:37:27. > :37:31.the slight chewiness. You have talked, Tim, about how this is
:37:31. > :37:36.quite a deep flavour, it smells like it is mulled wine. We want to
:37:36. > :37:43.lift it again with a bit of orange, so we do the quinoa salad. Dice a
:37:43. > :37:49.bit of that, a bit of that, I will do the cucumber and away we go.
:37:49. > :37:56.This will give us lovely freshness. This is your kind of food. It's got
:37:56. > :38:00.nice fresh flavours in it. You don't like a lot of flavours?
:38:00. > :38:10.don't know. I like it because it is fresh. It is a good mix of flavours.
:38:10. > :38:18.
:38:18. > :38:24.This is about now getting a good balance. This is almost like the
:38:24. > :38:28.salad. It used to be a health thing. Now the supermarkets are getting on
:38:28. > :38:34.to it. We just want this to be a really simple fresh salad. That
:38:34. > :38:40.goes in. I will chop a bit of mint and parsley, which will give us the
:38:41. > :38:46.really nice flavour of the mint, plus then the grassiness of the
:38:46. > :38:51.parsley. I will turn these fellas over again. That's been cooked more
:38:51. > :38:55.or less in real-time? Yes, we started a bit ahead with the lamb
:38:55. > :39:00.chops. If you cook them from raw, what happens is, you press this
:39:00. > :39:06.dukkah mix into it so it really stays... What do we do with the
:39:06. > :39:13.onion? Give it a fine dice. In goes our quinoa. You squeeze over a big
:39:13. > :39:18.load of lemon juice. Now we want a lovely freshness on to this. Lemon.
:39:18. > :39:24.You can put whatever you want into this. If you have got some olives
:39:24. > :39:33.and sun-dried tomatoes, that works as well. That goes in. That goes in.
:39:33. > :39:41.We mix that around. You can see we are getting this nice salad.
:39:41. > :39:51.Gorgeous! What we do to serve. A spoonful of this lovely fresh salad
:39:51. > :39:51.
:39:51. > :39:57.- I could eat that on its own. We sit our chops... It is delicious.
:39:57. > :40:03.Really fresh. Then what we've got on top of that, now we have this
:40:03. > :40:13.lovely heavily-spiced dukkah and we bring a little dribble of honey on
:40:13. > :40:14.
:40:15. > :40:23.to there. We need another knife and fork. Amazing. One for you. Knife.
:40:23. > :40:29.I would just pick up the lamb chop... Can I pick it up? Go for

:44:15. > :44:19.you were acting. It was a film called The Serpent's Kiss. It did
:44:19. > :44:26.phenomenally badly. You got a good friend out of it? We both had our

:45:29. > :45:39.
:45:40. > :45:43.It was amazing. When I was - because dad used to take us to all
:45:43. > :45:48.of his film sets around the world. I suppose that is where I got the

:45:54. > :46:00.sofa with that bloke, I will give you a tricycle." Anywhere he wanted
:46:00. > :46:10.me to look, he would move it around the set. How old were you? I was
:46:10. > :46:12.
:46:13. > :46:20.five years old. You are at the end of the film? I'm not a hillbilly. I
:46:20. > :46:23.remember dad's driver taught me how to shoot a gun and I would go off...

:46:35. > :46:38.Then I started - I did a film called Emerald Forest and then I
:46:38. > :46:43.started getting movies. I chose movies for their location rather
