0:04:52 > 0:04:54in the town of Horsham, West Sussex.

0:04:54 > 0:04:57But now they want a fresh start in the coastal county

0:04:59 > 0:05:04We've got very nice, sentimental memories of the times

0:09:14 > 0:09:18The village itself is set amongst the hills behind Chesil Beach

0:09:28 > 0:09:31in the style of a characterful local farmhouse,

0:16:00 > 0:16:03For seven centuries, trade flourished and its port supported

0:16:03 > 0:16:06a burgeoning fishing and boat-building industry.

0:16:06 > 0:16:10But during the 19th century, the need for boats declined

0:16:10 > 0:16:13with many local builders going out of business.

0:16:13 > 0:16:15In one corner of Lyme Regis, however,

0:16:15 > 0:16:18the boat-building tradition is being kept alive.

0:16:20 > 0:16:23As Neil would like a fishing boat when he makes the move to Dorset,

0:37:03 > 0:37:07How do you manage to get milk all year round? Fresh milk?

0:37:07 > 0:37:12We run our sheep in different flocks, so they go to the ram at different

0:37:12 > 0:37:16- times of year, so they have lambs at different times of year.- Really?

0:37:16 > 0:37:18- So not just in the spring? - Not just in the spring.

0:37:18 > 0:37:21We keep rotating cos we keep producing milk.

0:37:21 > 0:37:24So how much milk does the average ewe produce?

0:37:24 > 0:37:27They produce about two litres,

0:37:27 > 0:37:31which compares with a cow that does about ten times that.

0:37:31 > 0:37:35So behind us, we've got some of your sheep there, what variety are they?

0:37:35 > 0:37:37I've noticed they've got a very long tails.

0:37:37 > 0:37:40They're what are known as Friesland,

0:37:40 > 0:37:43which is rather like a cow, Friesian.

0:37:43 > 0:37:48Friesland are the most prolific sheep for milk.

0:37:48 > 0:37:50Each year, milk from the farm is used to

0:37:50 > 0:37:54produce 30,000 litres of sheep's milk yoghurt,

0:37:54 > 0:37:57and although they supply supermarkets on an industrial scale,

0:37:57 > 0:38:00the technique remains very traditional.

0:38:28 > 0:38:33the incubated rooms, where we make the yoghurt at a special temperature.

0:38:33 > 0:38:37The pots are kept in the incubator for four and a half hours.

0:38:37 > 0:38:40And it's this part of the process that gives the yoghurt its taste
