0:01:53 > 0:01:57but the beautiful inland waters shouldn't be overlooked.

0:01:57 > 0:02:00The pretty Helford River winds its way through rolling hills to

0:02:02 > 0:02:05And this coast is full of charming villages and towns, such as St Mawes

0:02:05 > 0:02:08on the Roseland Peninsula.

0:02:08 > 0:02:11With sandy beaches, open countryside and pretty villages,

0:02:11 > 0:02:14Cornwall is a popular holiday destination

0:02:14 > 0:02:18and, for the lucky ones, a wonderful place to call home.

0:02:20 > 0:02:23So let's find out what's inspired today's buyers who

0:02:30 > 0:02:33Our house-hunters today are married couple Hanna, a lawyer,

0:02:33 > 0:02:35and Simon, a chiropractor,

0:02:35 > 0:02:39who currently live in one of London's most vibrant areas.

0:02:39 > 0:02:42This is, I suppose, the East End of London.

0:02:42 > 0:02:47- We have lived here for...how long? - Since 2009.

0:02:47 > 0:02:51It's got an edge to it, it's youthful.

0:02:51 > 0:02:52It's a nice area to live.

0:02:52 > 0:02:55But life in one of the world's busiest capitals does

0:02:55 > 0:02:57have its downsides.

0:02:57 > 0:03:00We spend so much time commuting and sitting in an office

0:03:00 > 0:03:02and it is very sedentary.

0:03:02 > 0:03:06And the time is right for Hanna and Simon to escape the city

0:03:06 > 0:03:08and move 300 miles west to Cornwall.

0:03:08 > 0:03:11I think we have been brewing the move to the countryside

0:03:11 > 0:03:12for a long time.

0:03:12 > 0:03:15I grew up around St Austell, by the beach.

0:03:15 > 0:03:17Yeah, there is something about the ocean

0:03:17 > 0:03:19or the sea that draws you back.

0:03:19 > 0:03:21I'm originally Finnish

0:03:21 > 0:03:26so I don't have any particular connection to the West Country.

0:03:26 > 0:03:28I'm just up for the adventure.

0:03:28 > 0:03:31This adventure centres on Simon's chiropractic work.

0:03:31 > 0:03:34He has bold and ambitious plans for a new wellness

0:03:34 > 0:03:35practice in Cornwall.

0:03:35 > 0:03:38It will have a welcome area, somewhere where people would

0:03:38 > 0:03:42want to be before they come to get an adjustment, chiropractic adjustment.

0:03:42 > 0:03:46There will also be a gym area where they can work out.

0:03:46 > 0:03:49With the lease of Simon's London chiropractic premises ending,

0:03:49 > 0:03:51and their house under offer, the dreams

0:03:51 > 0:03:54and plans are now set to become a reality.

0:03:54 > 0:03:56I think change is generally good.

0:03:56 > 0:03:58What's the worst that can happen?

0:04:00 > 0:04:03Our search will be focused on mid-Cornwall,

0:04:03 > 0:04:05around the city of Truro, where Simon

0:04:05 > 0:04:09and Hanna can still be rural yet close to potential clients.

0:04:31 > 0:04:34We have to vacate within two months.

0:04:34 > 0:04:37But it is not just about the house, though, is it, this move?

0:04:37 > 0:04:39Having the ability to run a business

0:04:39 > 0:04:41and a home in the same place.

0:04:41 > 0:04:43Ideally, what are you hoping to achieve?

0:04:43 > 0:04:46The business needs to become part of the local community,

0:04:46 > 0:04:49it wants to be a hub for everything associated with well-being.

0:04:49 > 0:04:51Are we talking food?

0:04:51 > 0:04:56- Yeah, we'd like somebody to sell organic produce...- Locally sourced.

0:04:56 > 0:04:59- A cafe?- Yeah, cafe, perhaps.

0:04:59 > 0:05:01I'd be quite interested in having a little

0:05:01 > 0:05:04bit of a sideline in bed and breakfast or holiday let.

0:06:25 > 0:06:28For our first property, we're heading to central Cornwall,

0:06:28 > 0:06:32to the village of Summercourt - nine miles from Truro and St Austell

0:06:32 > 0:06:35and just six miles from the busy surf town of Newquay,

0:06:35 > 0:06:39this village is well connected, yet retains a small community feel.

0:06:39 > 0:06:41Half a mile from the village, down a country lane,

0:06:41 > 0:06:44we find our first property.

0:06:44 > 0:06:48So, we thought we'd start off with a bang.

0:06:48 > 0:06:51Now, we didn't discuss period properties.

0:06:51 > 0:06:54- How do you feel about it? - Period is good.

0:06:54 > 0:06:56I'm quite charmed by period features.

0:06:56 > 0:07:00You're about nine miles outside of Truro, 15 from the Eden Project,

0:12:20 > 0:12:23In recent years, protecting fish stocks has been central

0:12:23 > 0:12:26to the business, with a major drive for sustainability.

0:12:26 > 0:12:30Newlyn Harbour is home to one of the largest fishing fleets in the UK,

0:12:30 > 0:12:33and I'm meeting fishmonger Robert Wing to find out

0:12:33 > 0:12:37how looking at our eating habits could help the industry further.

0:12:37 > 0:12:39Here they are, unloading the catch.

0:12:39 > 0:12:42That looks about a couple hundred kilos of fish there.

0:12:42 > 0:12:43What would they be fishing?

0:12:43 > 0:12:46They'll be fishing for flat fish - Dover soles, lemon soles,

0:12:46 > 0:12:49megrim soles, monk, squid, John Dory.

0:12:49 > 0:12:51I suppose we might see 35 different species.

0:12:51 > 0:12:56Out of the 35 different species, how many do we normally eat?

0:12:56 > 0:12:59I think years ago, we only used to use cod and haddock and plaice,

0:12:59 > 0:13:00but we are getting better now.

0:13:00 > 0:13:02But there are some species that we still aren't eating.

0:13:02 > 0:13:05I think that's really important that we try them.

0:13:05 > 0:13:07Give me two that I might not have tried before.

0:13:07 > 0:13:10I'll give you a couple - megrim sole and hake.

0:13:10 > 0:13:14We have wallops of hake around the place. Boxes of meg coming up now.

0:13:14 > 0:13:16Those are megrim soles there.

0:13:16 > 0:13:19What you've got here, take a look, it's packed in ice.

0:13:19 > 0:13:23That's a megrim sole. It's a lovely flat fish. It's quite deep water.

0:13:23 > 0:13:27When you fillet off, you get lovely white, flaky fish.

0:13:27 > 0:13:29What's the taste like? Is it similar to any other fish?

0:13:29 > 0:13:30It's a member of the sole family.

0:13:30 > 0:13:33It'll have a nice, quiet, mild flat fish flavour.

0:13:33 > 0:13:35It's beautifully white and flaky.

0:13:35 > 0:13:37What's the difference on the price?

0:13:37 > 0:13:40Well, megrim sole is probably about a quarter of the price

0:13:40 > 0:13:42- of Dover sole. - So why aren't we eating it?

0:13:42 > 0:13:44We're very traditional as a nation.

0:13:44 > 0:13:48We need to broaden up and try something.

0:13:48 > 0:13:50As it's not well known in the UK,

0:13:50 > 0:13:53the majority of the megrim sole catch actually ends up not here

0:13:53 > 0:13:56but on Spanish, French and Swiss dinner plates.

0:13:57 > 0:13:59Whilst it may not be the best-looking fish,

0:13:59 > 0:14:02it is abundant in Cornish waters.

0:14:02 > 0:14:05As sustainability is becoming an ever greater consideration,

0:14:05 > 0:14:09fishermen, fishmongers and chefs are keen to encourage consumers

0:14:09 > 0:14:13to try out a wider variety of fish species.

0:14:13 > 0:14:16'I'm heading to Watergate Bay to meet head chef Neil Haydock,

0:14:16 > 0:14:20'who regularly has megrim sole on his menu.'

0:14:20 > 0:14:22Neil, I've been hearing the merits

0:14:22 > 0:14:24of different varieties and species of fish.

0:14:24 > 0:14:27One we've really highlighted is the megrim sole,

0:14:27 > 0:14:29but I've never tasted it.

0:14:29 > 0:14:31We actually have it on the menu right at this moment.

0:14:31 > 0:14:33We actually call it the Cornish sole.

0:14:33 > 0:14:36- How easy is the sole to cook? - Very simple.

0:14:36 > 0:14:38This is literally a four-five minute dish.

0:14:38 > 0:14:41We're going to pop it into some rice flour.

0:14:42 > 0:14:45Little bit of oil into the pan.

0:14:45 > 0:14:48Pop the fish in. The pan's been preheated.

0:14:48 > 0:14:49Then we'll add a little salt.

0:14:50 > 0:14:51Cornish salt.

0:14:51 > 0:14:55'As megrim is a light fish, you don't want to overcook it.

0:14:55 > 0:14:57'It needs just two minutes on each side.'

0:14:58 > 0:15:03We've got our brown butter, then we're going to add our brown shrimp.

0:15:03 > 0:15:07Brown shrimp - a real British staple.

0:15:07 > 0:15:10Our shrimp are in there, we'll add our cucumber.

0:15:11 > 0:15:14This is going to add texture, but also a real nice freshness.

0:15:14 > 0:15:17I wouldn't think of putting cucumber in with fish.

0:15:17 > 0:15:19'The dish is finished with a good squeeze of lemon

0:15:19 > 0:15:21'and a sprinkle of fresh dill.

0:15:21 > 0:15:24'Then it's time to find out just what I've been missing.'

0:15:43 > 0:15:46and Hanna's preferred locations.

0:15:46 > 0:15:49The city of Truro was originally built on the wealth of the tin

0:15:49 > 0:15:50and copper industries

0:15:50 > 0:15:54and is now the southernmost city of mainland Great Britain.

0:15:54 > 0:15:58Truro is also the administrative and commercial centre of Cornwall,

0:15:58 > 0:16:02filled with shops, cafes and businesses related to Simon's.

0:16:02 > 0:16:05Less than a ten-minute drive outside the city,

0:16:05 > 0:16:08in a beautiful rural location, is our second property.

0:16:10 > 0:16:14So we started our search here in Cornwall with a, well,

0:16:14 > 0:16:16a part 15th-century home.

0:16:16 > 0:16:19- We're now bringing you completely up-to-date.- Ah!

0:16:19 > 0:16:22- Built in 2010.- Really?!

0:16:22 > 0:16:23I love it!

0:16:24 > 0:16:27THAT was exactly what I wanted to hear.

0:16:27 > 0:16:32I wasn't expecting to love a new-build, but it...

0:16:32 > 0:16:35- Yeah, it's got the wow factor. - It's impressive, yeah.
