0:03:02 > 0:03:05What a lovely view!

0:03:09 > 0:03:11Bryher's main village, which they call town,

0:03:11 > 0:03:15is very small and only has a few houses.

0:03:15 > 0:03:18There are hardly any cars and it doesn't take long

0:03:18 > 0:03:21to travel from one side of the island to the other.

0:03:21 > 0:03:25Zoe and Isaac take William to see the village shop.

0:03:25 > 0:03:28- This is our island shop.- Oh! - And post office.

0:03:38 > 0:03:42The shop gets some of its supplies locally,

0:03:42 > 0:03:46but things that aren't produced on the island

0:03:46 > 0:03:49have to be delivered by boat from the mainland.

0:03:56 > 0:03:59This is the post office.

0:03:59 > 0:04:02Isaac is helping William send a post card

0:04:31 > 0:04:32This is Droopy Nose Point!

0:04:32 > 0:04:36That's a funny name. Why is it called that?

0:04:36 > 0:04:41If you look carefully, you can see it looks a bit like a droopy nose.

0:05:01 > 0:05:05It's October, but it's lovely and warm here.

0:05:05 > 0:05:07The Isles of Scilly feel warmer

0:05:07 > 0:05:09because they're surrounded by an ocean current

0:05:09 > 0:05:11called the Gulf Stream.

0:05:11 > 0:05:14This flows from a very hot part of the world

0:05:14 > 0:05:17and raises the island's temperature.

0:05:17 > 0:05:21Strong winds also blow into the island from the Atlantic Ocean

0:05:21 > 0:05:24which is between Great Britain and America.

0:05:31 > 0:05:33- What is it?- It's a crab.

0:05:33 > 0:05:37Oh, keep it away from my nose!

0:05:37 > 0:05:39We should put him back where we found him.

0:06:57 > 0:07:01Zoe and Isaac travel to school by boat every morning.

0:07:01 > 0:07:06The school is on the island opposite called Tresco.

0:07:49 > 0:07:52so the school only has two classes,

0:07:52 > 0:07:56one for the infants and one for the juniors.

0:07:56 > 0:07:58Zoe and Isaac are in the junior class.

0:07:58 > 0:08:02It only has 12 children in it.

0:08:02 > 0:08:05William meets Zoe and Isaac's teacher, Mr Wilson.

0:10:20 > 0:10:24The cheese phone shows William where he is in the world.

0:10:27 > 0:10:31'Hi, William, today you're in the South West of England

0:10:31 > 0:10:34'in a county called Somerset.'

0:10:34 > 0:10:36BEEPING Look, I've got a message

0:10:36 > 0:10:39coming through on my cheese phone.

0:10:39 > 0:10:44Hi, William, I'm Theo. Do you want to come and meet me on my farm?

0:10:44 > 0:10:46A farm?

0:10:46 > 0:10:49That sounds like a real adventure. Lock the location, cheese phone.

0:10:54 > 0:10:57The map shows William where to meet Theo.

0:10:57 > 0:11:01Explorers, away!

0:11:01 > 0:11:06On his way, he passes through lots of green fields full of grass.

0:11:06 > 0:11:08There's Theo.

0:11:08 > 0:11:09Hi, Theo!

0:11:09 > 0:11:13Please to squeak you, William. This is my dad, Guy.

0:11:13 > 0:11:15Would you like to see his farm?

0:11:15 > 0:11:19- Hello, William. - Hello. Yes, I'd love to.

0:11:19 > 0:11:22- Would you like to see all my friends?- Ah!

0:11:22 > 0:11:24You mean the cows?

0:11:24 > 0:11:27MOO!

0:11:28 > 0:11:31They're called Holstein-Friesians.

0:11:31 > 0:11:35Holstein-Friesians. How many cows do you have?

0:11:35 > 0:11:39- 330.- You need a lot of fingers and toes to count them!

0:11:39 > 0:11:42Most of the cows on Theo's farm are female.

0:11:42 > 0:11:46You can tell because they have udders for making milk.

0:11:46 > 0:11:47Why do you have so many females?

0:11:47 > 0:11:49We have lots of female cows

0:11:49 > 0:11:52because they produce milk we can sell to the shops.

0:11:52 > 0:11:56Farmers who produce milk like Theo's dad are called dairy farmers.

0:11:56 > 0:12:00Theo offers to show William around the farm.

0:12:01 > 0:12:04First, Theo takes William to a special shed

0:12:04 > 0:12:07where baby cows, called calves, are housed.

0:12:11 > 0:12:15The calves are very little. How old are they?

0:12:15 > 0:12:17Up to 12 weeks.

0:12:17 > 0:12:21Cows only start making milk when they've had a baby,

0:12:21 > 0:12:26so lots of calves are born on the farm all year round.

0:12:26 > 0:12:30Female calves are called heifers and they'll grow up to be dairy cows

0:12:30 > 0:12:32and produce milk just like their mums.

0:12:32 > 0:12:34Quick, William, I've got something

0:12:34 > 0:12:36really exciting to show you! Come on!

0:12:36 > 0:12:39Explorers away!

0:12:39 > 0:12:43- William, look. She's had a baby.- Oh!

0:12:49 > 0:12:52This little baby calf has just been born

0:12:52 > 0:12:55and its mummy is licking it clean.

0:12:55 > 0:12:58How long does it take the calf to stand up?

0:12:58 > 0:13:01Only about 30 minutes.

0:13:04 > 0:13:09Very slowly, the little calf stands up for the first time.

0:13:09 > 0:13:12William can't believe his eyes.

0:13:12 > 0:13:14What a special moment!

0:13:20 > 0:13:23During the day, the grown-up cows stay out in the fields

0:13:23 > 0:13:26but at night, and when the weather's bad,

0:13:26 > 0:13:29they're taken into the cow sheds.

0:13:29 > 0:13:31While the cows are still in the fields,

0:13:31 > 0:13:33their sheds can be cleaned out.

0:13:33 > 0:13:36OK, you two, we need to clean out these cow sheds.

0:13:36 > 0:13:38What's this stuff on the floor?

0:13:38 > 0:13:40It's cow poo.

0:13:40 > 0:13:45The cow dung has to be cleaned out every day.

0:13:45 > 0:13:48This cow dung's very smelly. Where does it all go?

0:13:48 > 0:13:53The cow dung is moved into something called a slurry lagoon.

0:13:54 > 0:13:57Theo takes William to look at it.

0:13:57 > 0:14:00It's a huge pool of cow dung.

0:14:00 > 0:14:02Cow poo might be smelly,

0:14:02 > 0:14:06but it's full of nutrients which are very good for the soil.

0:14:06 > 0:14:08The dung is spread on the fields

0:14:08 > 0:14:12to help grow grass and crops, which are fed to the cows.

0:14:12 > 0:14:17When they aren't eating fresh grass, they eat something called silage,

0:14:17 > 0:14:21a mixture of different crops which have been grown on the farm.

0:14:21 > 0:14:25The silage is kept in a silage pit.

0:14:25 > 0:14:28Look at that! It's like a giant mountain!

0:14:28 > 0:14:29What is it?

0:14:29 > 0:14:32It's cow food. We've got wholecrop wheat

0:14:32 > 0:14:36and we've got ryegrass and red clover that we call grass silage.

0:14:38 > 0:14:42The machine cuts big blocks of silage.

0:14:42 > 0:14:47It's then added to the other ingredients in the feeder wagon.

0:14:47 > 0:14:51The scales let the farmer know exactly how much silage to put in.

0:14:51 > 0:14:56It's then mixed up, ready to feed the cows.

0:14:58 > 0:15:01The cows on Theo's farm are organic.

0:15:01 > 0:15:06This means all the food they eat has been grown without chemicals.

0:15:08 > 0:15:10The cows think it's delicious.

0:15:14 > 0:15:19It's milking time now. The cows are moved into the collecting yard,

0:15:19 > 0:15:23where they wait to be taken into the parlour for milking.

0:15:23 > 0:15:26Can we go into the parlour to watch the cows being milked?

0:15:26 > 0:15:28Yes, come on, then.

0:15:28 > 0:15:31The cows enter the milking parlour in small groups.

0:15:33 > 0:15:36They're then cleaned before milking begins.

0:15:36 > 0:15:38Why is there a hole in the floor?

0:15:38 > 0:15:43That's the parlour pit. We stand in it to reach the cows' udders.

0:15:43 > 0:15:46A machine called a milking unit milks the cows.

0:15:46 > 0:15:50It has cups that fit onto the cows' teats.

0:15:50 > 0:15:52Look! I can see the milk!

0:15:52 > 0:15:57The milking unit squeezes the teats on the cow's udder -

0:15:57 > 0:15:59this causes the milk to flow out.

0:15:59 > 0:16:01It travels down a pipe

0:16:01 > 0:16:04into a barrel called a collecting jar.

0:16:06 > 0:16:10When the milk stops flowing, the milking unit drops away.

0:16:10 > 0:16:13How much milk does a cow produce each day?

0:16:13 > 0:16:16We're producing about an average of 30 litres a cow.

0:16:16 > 0:16:19And that's 60 of these!

0:16:23 > 0:16:26- What happens to the milk now? - It's pumped next door

0:16:26 > 0:16:30where it's chilled and stored in the bulk tank, ready for collection.

0:16:30 > 0:16:35The tank stores the milk and keeps it cold, ready to be collected.

0:16:35 > 0:16:38A special lorry called a tanker

0:16:38 > 0:16:41comes every day to take the milk to the dairy.

0:16:41 > 0:16:46The delivery man attaches a pipe and pumps the milk into the tanker.

0:16:46 > 0:16:51The tanker has to be very big to hold all the milk.

0:16:51 > 0:16:57The cows on Theo's farm produce 7,000 litres a day.

0:16:57 > 0:17:00The dairy is only six miles away,

0:17:00 > 0:17:03so the milk gets there quickly and stays fresh.

0:17:03 > 0:17:08William and Theo go to the dairy to meet Steve, who shows them around.

0:17:08 > 0:17:11They have to wear special clothing to stop germs spreading.

0:17:11 > 0:17:14The milk is heated up in a machine

0:17:14 > 0:17:18which kills off any harmful germs and makes it safe to drink.

0:17:18 > 0:17:23The milk is then poured into plastic bottles.

0:17:23 > 0:17:26The lids are placed on the bottles

0:17:26 > 0:17:29and heat is used to seal them shut.

0:17:29 > 0:17:34This stops air getting inside the milk and keeps it fresh.

0:17:34 > 0:17:37A label is then added.

0:17:37 > 0:17:39What happens to our milk now?
