:00:00. > :00:00.removed from the wreckage in the morning. Rescuers saved will be

:00:00. > :00:00.sometime before they establish what the crash.

:00:00. > :00:20.-- what caused the crash. As inflation eases, Chinese

:00:21. > :00:27.authorities continue to find ways to balance the slowing economy. And,

:00:28. > :00:29.the art of making noodles by hand. We find out why it is a vanishing

:00:30. > :00:44.profession. We kick off with China, with the

:00:45. > :00:47.world's second biggest economy saying inflation eased in the month

:00:48. > :00:51.of December, following the months before. Official data shows prices

:00:52. > :00:58.climbing 2.5% in December from a year earlier. That is below

:00:59. > :01:02.forecast, and still within the government's comfort zone. They are

:01:03. > :01:06.looking to rebalance the economy due to slowing growth. Authorities have

:01:07. > :01:09.been announcing some key initiatives.

:01:10. > :01:15.Among the announcements this week, was that China could have up to five

:01:16. > :01:18.private banks opened within the next 12 months. They will, of course, be

:01:19. > :01:23.tightly supervised by the authorities. It is being seen as a

:01:24. > :01:27.move to open up the country's tightly controlled financial sector.

:01:28. > :01:32.Along the theme of liberalisation, there has always been a couple of

:01:33. > :01:36.announcements -- also been a couple of announcements in regard to

:01:37. > :01:42.Shanghai's free trade zone. The communications and internet could

:01:43. > :01:48.well be owned by foreign companies, that there is a catch. These

:01:49. > :01:52.companies will have two basal their infrastructure in the Shanghai

:01:53. > :01:56.free-trade zone. In terms of computer users, especially those who

:01:57. > :02:02.use games, this week has been big. China has announced it will reverse

:02:03. > :02:08.its ban on game consoles, which has been in force for 14 years. That

:02:09. > :02:13.means gamers could get their hands on Xbox or PlayStation. Companies

:02:14. > :02:16.wanting to sell these devices in China will have to make them in the

:02:17. > :02:23.free-trade zone. Liberalisation within the Chinese economy is

:02:24. > :02:27.absolutely critical to future economic growth. What happens in the

:02:28. > :02:32.Shanghai free-trade zone is being very carefully watched by analysts,

:02:33. > :02:37.because it could happen across the country.

:02:38. > :02:50.Now to the fast moving business of technology. Companies have exhibited

:02:51. > :02:56.their wares at a big technology show in Las Vegas. We sat down with the

:02:57. > :03:04.head of Netflix, it video streaming company whose focus is on changing

:03:05. > :03:08.the way we watch television. Netflix, the movie and TV streaming

:03:09. > :03:18.service, has made quite a splash this year. It has announced that its

:03:19. > :03:25.new series of House Of Cards will be shown in ultrahigh definition.

:03:26. > :03:30.Whereat the very beginning of internet technology. The bringing

:03:31. > :03:36.together rock internet and video so people can choose what to watch and

:03:37. > :03:40.when they want to it. We have had 50 or 100 years of linear TV channels

:03:41. > :03:43.and networks, and what is changing is that they will become

:03:44. > :03:48.applications. On your Android phone, on your iPad on your Sony TV, on

:03:49. > :03:53.your XBox One, all these applications that allow you as a

:03:54. > :03:57.consumer to watch the videos you want to watch on your own schedule.

:03:58. > :04:01.How important has it been for you to start making your own content,

:04:02. > :04:05.rather than having to rely on buying things in from TV companies? We

:04:06. > :04:10.realised that with each country there is a unique set of licensing

:04:11. > :04:12.issues, and we weren't getting everything with the same release

:04:13. > :04:17.date, and certain countries were having to wait behind other

:04:18. > :04:20.countries, and it makes no sense. The only way we can fix it is to do

:04:21. > :04:26.our own shows. When we do our own shows, then they are available

:04:27. > :04:29.around the world at the exact same time. Does the rest of the

:04:30. > :04:36.industry, the established TV industry in Hollywood, see you as a

:04:37. > :04:40.threat? No, they normally say, we want you to pay $10 million for the

:04:41. > :04:46.show, and I say, I can only pay 1 million, and they come back and say

:04:47. > :04:53.well, come back when you can pay $10 million. That is pretty much the

:04:54. > :04:56.dialogue. The other distributors have some fear, but they have mostly

:04:57. > :05:03.realised that Netflix is an additional service. For example, in

:05:04. > :05:07.the US, there are only 30 million subscribers, and yet cable and

:05:08. > :05:14.satellite subscribers has a constant at 100 million, and not gone down.

:05:15. > :05:21.You made a big deal about ultrahigh definition. Ultimately, ultrahigh

:05:22. > :05:25.definition content will be the first content that is internet only.

:05:26. > :05:35.Broadcast, cable, satellite, they won't have altar HD at least in the

:05:36. > :05:38.next five years -- Ultra. So far, you have concentrated on growth

:05:39. > :06:01.rather than profit. A year following the Hammers -- Amazon route? We will

:06:02. > :06:07.be focusing on doing what we do in the years ahead.

:06:08. > :06:25.In other business news making headlines, the big French food

:06:26. > :06:30.conglomerate, Danone, is set to sue the French company Fonterra. The

:06:31. > :06:34.French company said the recall had cost serious damage to its business.

:06:35. > :06:41.-- the New Zealand company, Fonterra.

:06:42. > :07:01.Qantas has been downgraded by Moody's to below investment level,

:07:02. > :07:11.or junk. A large Chinese website, Taobao, owned by Alibaba Group, has

:07:12. > :07:18.been another website to ban the virtual currency, bitcoin.

:07:19. > :07:22.Across BBC World News and BBC .com this week, we are looking at

:07:23. > :07:26.vanishing professions. This week we are in Taiwan to discover the art of

:07:27. > :07:31.making noodles by hand. In Chinese culture noodles are eaten for

:07:32. > :07:34.breakfast, lunch and dinner. They are also significant for special

:07:35. > :07:41.occasions, because they symbolise something that is long-lasting. Now,

:07:42. > :07:48.there are only a handful of masters making them the traditional way.

:07:49. > :07:52.This family in central Taiwan is one of only two in their village making

:07:53. > :07:56.noodles by hand. We used to be ten families here that made noodles the

:07:57. > :08:03.traditional way. It is a trend repeating itself throughout Taiwan.

:08:04. > :08:07.This man is a third-generation noodle maker. It are watching his

:08:08. > :08:12.grandparents and parents make noodles by hand. His long working

:08:13. > :08:17.day begins at the break of dawn, by mixing flour, salt and water. It

:08:18. > :08:23.might seem hard to imagine, but this big blob of dough is eventually

:08:24. > :08:32.turned into noodles that are only 1/10 of a centimetre thin. This

:08:33. > :08:36.machine only gets the go so thin. The refined work will have to be

:08:37. > :08:40.continued by hand. He leaves the noodles to lengthen on this bamboo

:08:41. > :08:44.racks, then they are ready to be pulled. They will need to be about

:08:45. > :08:48.four metres long. He makes fast work of it, but it is not as easy as it

:08:49. > :08:52.looks. This way of making noodles is centuries old, and is believed to

:08:53. > :08:57.have been brought over from China, where the ancestors of most

:08:58. > :09:02.Taiwanese people come from. It was passed down from one generation to

:09:03. > :09:10.another, but this man be be one of the last ones. TRANSLATION: The

:09:11. > :09:13.money we earn is earned in a hard way. If it looks like it is going to

:09:14. > :09:18.rain, we have to take the noodles inside all all-out efforts for

:09:19. > :09:23.nothing. These noodles are made from flour, salt and water. They look

:09:24. > :09:27.very simple, but there are hours of hard work behind them. This family

:09:28. > :09:36.began working at 5am this morning, and would finish until 10pm, and all

:09:37. > :09:40.they will make is about $100. Mr Lin says he cannot imagine a world

:09:41. > :09:46.without handmade noodles. TRANSLATION: Handmade noodles taste

:09:47. > :09:49.better, they are smoother. But I don't want my children to do this

:09:50. > :09:56.kind of work. If they want to, I won't object. After all that hard

:09:57. > :10:14.work, the family sits down for a lunch of Worcester and noodles. --

:10:15. > :10:18.oysters. These are some of the best noodle dishes I have ever tasted,

:10:19. > :10:32.but there is no say in whether this will survive the test of time.

:10:33. > :10:40.Thank you for investing your time with us.

:10:41. > :10:48.Our top stories: The UN is saying the Central African Republic is

:10:49. > :10:53.heading for an humanitarian disaster as violence escalates between rival

:10:54. > :10:58.militias. A quarter of $1 billion is needed to provide food, water and

:10:59. > :11:02.healthcare. The family of Mark Duggan are considering further legal

:11:03. > :11:03.action as an inquest jury find
