:01:44. > :01:52.presented to the Holstein winner individual supreme animal of the
:01:52. > :01:59.year to Brian Yates. Well now with two happy people. The judge, first,
:01:59. > :02:05.why this animal? She has that over all balance that bit more bloom in
:02:05. > :02:15.the udder than the one in second place. She has that advantage for me
:02:15. > :02:16.
:02:16. > :02:23.on the day. But two very good cows at the top. It was close between the
:02:23. > :02:27.Jersey and Ayrshire. They were both similar cows. It is strange how
:02:27. > :02:31.thing things change. The Jersey just sagged a bit and didn't quite keep
:02:31. > :02:37.herself, didn't look as well in line as she did on the move that. Made
:02:37. > :02:44.the difference. You a happy man Absolutely delighted. It is a dream
:02:44. > :02:52.come true to win the Queens Cup is one thing that doesn't happen very
:02:52. > :02:57.often. You're bottling it in.Yes it means so much. In a cold-blood
:02:57. > :03:04.commercial sense does it mean a lot? Yes, because we do the job for the
:03:04. > :03:09.joy of the animal. Do you -- did you expect her to win? No, because the
:03:09. > :03:18.competition was so strong in the section. So delighted to win when
:03:18. > :03:24.the competition was so strong is extra special. There you have it out
:03:24. > :03:32.of 6,000 ouis ouises -- trophies this is the winner of Queens kuch.
:03:32. > :03:39.Well done you too! Here at the show there are horses of all shapes and
:03:39. > :03:46.sizes, from the tiniest Shetland ponies to these big Clydesdales.
:03:46. > :03:52.are down here to enjoy the Highland Show, it is one of best driving
:03:52. > :03:58.shows in Scotland. Are you hope fog Arwyn? We --Are you hoping for a
:03:58. > :04:08.win. If we come up the line that is great. Do you think I could hitch a
:04:08. > :04:12.lift. No bother, we can easy put you on board, like. The president of the
:04:12. > :04:18.show is Jamie Williamson from Alvie estate in the Highlands. One of his
:04:18. > :04:24.job is to use the sthoe promote the region and one -- show to promote
:04:24. > :04:27.the region and they will use local chefs to create street food. It is a
:04:27. > :04:32.tremendous opportunity to promote food from the Highlands, not only
:04:32. > :04:42.the produce but the chefs and this is a great opportunity with so many
:04:42. > :04:48.
:04:48. > :04:53.people here to show just what the hall, the chefs are about in the
:04:53. > :05:02.countryside area and just look at countryside area and just look at
:05:02. > :05:07.the queue. Knock, knock, can I come in. Come on in.I know you're in the
:05:07. > :05:15.middle of stuff. Can I help? We have some scallops there. You can do
:05:15. > :05:25.that. No problem. A splash of that. Where have you come from? I've come
:05:25. > :05:26.
:05:26. > :05:34.from or the den -- Torriden. We have some smoked salmon and scallops and
:05:34. > :05:40.some home madeburgers. We have got -- made made burgers. And how is
:05:40. > :05:49.trade? It is going well. We have a sweat on today. Can I mop your brow?
:05:49. > :05:56.I am not helping at all! Can I help in any way. We are taking orders and
:05:56. > :06:01.then let me know, can you write this down. Two salmon.Have you been busy
:06:01. > :06:05.today? Yes it has been really busy. There are so many more people than
:06:05. > :06:15.yesterday. I think because everyone knows where we are. I don't want to
:06:15. > :06:16.
:06:16. > :06:20.slow things down. Are you waiting to order? Well it is a simple idea,
:06:20. > :06:30.bring the best produce the Highlands and Islands have to offer, cook it
:06:30. > :06:31.
:06:31. > :06:36.in a portable stall and the crowds will come flocking. Sheep shearing
:06:36. > :06:42.is one of the most intense competitions here, the guys work
:06:42. > :06:47.very fast and I'm catching up with Colin McGregor, from the British
:06:47. > :06:51.wool marketing board. Tell me how competitive is this sport? It is
:06:51. > :06:54.immensely competitive. It is a sport. These guys are practicing for
:06:54. > :06:59.weeks in advance of the competition herement every day it is perhaps
:06:59. > :07:05.their work. But it is also their sport, their hobby, they want to
:07:05. > :07:11.come here and do good. The current world champion is a Scotsman. Yes it
:07:11. > :07:17.is the second Scots mavrn ever to win the world -- Scotsman ever to
:07:17. > :07:23.win. I have been trying to pick up some hints, but they work so fast.
:07:23. > :07:28.Can you give me some basic hints. won't be a problem. We will maybe
:07:28. > :07:34.get you to put a few blows in on the last side. Here is a young farmers
:07:34. > :07:38.champion, Stuart, he will give us a demonstration. This is a Scottish
:07:38. > :07:45.black-faced sheep. They're a little bit lively. Stuart is coming down
:07:45. > :07:50.the belly. It is always the belly we remove first. What are the judges
:07:50. > :08:00.looking for? It is important to keep this stable as fast as possible
:08:00. > :08:00.
:08:00. > :08:05.zmrchlt what is the fastest -- as possible. What is the fastest? The
:08:05. > :08:11.fastest is 16 seconds. That is insane. Will I have a goo with this
:08:11. > :08:19.one. You can do a little on the side. You can fit in there and
:08:19. > :08:26.another one in there. And put the head between your legs. Just hold is
:08:26. > :08:33.there. I will start it. Lay it on the skin and just keep it on the
:08:33. > :08:43.skin and go forward gently. You do the next one yourself. That is good.
:08:43. > :08:47.
:08:47. > :08:54.On you go. Out of the leg, right giving this poor animal a hair cut
:08:54. > :09:01.and leave it to the pecks erpts. It's -- experts. It is incredibly
:09:01. > :09:07.hard work. I can't believe they can do a sheep in under 40 seconds.
:09:07. > :09:11.show is a paradise for horse lovers. Behind me riders are getting ready
:09:12. > :09:21.for the Andrew Black Cup, where competitors get the chance to double
:09:22. > :09:23.
:09:23. > :09:30.their money. This is a speed class, a one round class. It is the second
:09:30. > :09:35.highest prize fund. The winner is jumping for 1,300. The first three
:09:35. > :09:39.come in again and jump the same round and it is a double your money
:09:39. > :09:46.time. Which ever one wince out of the second round, they -- wins out
:09:46. > :09:52.of second round, they double their money. So they will double the
:09:52. > :10:00.1,300. So there is a lot at stake. You can go in and jump two rounds
:10:00. > :10:08.and come back with 2,600. Not bad for half an hour's work. The winner
:10:08. > :10:14.of first round is Jemma Kirke. The top three will now jump again to try
:10:14. > :10:18.and double their money. What class of rider are you attracting? We have
:10:18. > :10:23.the top Scottish riders. This is the biggest show in Scotland in terms of
:10:23. > :10:27.height of jumps and money. We have all the top riders and a lot of top
:10:27. > :10:32.English riders and some of them come up year on year here. So we are
:10:32. > :10:41.grateful that they make the effort to come north. It seems to have
:10:41. > :10:45.drawn a pig crowd. How popular -- big crowd, how popular is it?
:10:45. > :10:55.people watch showjumping that wouldn't watch it any other time.
:10:55. > :10:55.
:10:56. > :11:01.Jemma is fastest again and takes home 2,600, the top prize. Jemma,
:11:02. > :11:06.wow! How much did you enjoy that? was great, I have not had the
:11:06. > :11:13.greatest of shows so far. So I'm glad to win and the horse jumped
:11:13. > :11:19.super. I think you knocked the socks off the blokes? Well it paid off.
:11:19. > :11:25.Was ate tough course? The ground was slippy, so it was, you had to be
:11:25. > :11:30.cautious on the turns. But it was a good class. You go home a bit
:11:31. > :11:40.richer? Yes, we cub doubled our money, he has earned his keep for a
:11:41. > :11:51.
:11:51. > :11:58.couple of days. Well done you two. the Highland Show and this tent is
:11:58. > :12:03.home to the poultry section. Feeling plucky? There is 120 poultry classes
:12:03. > :12:12.and about 25 classes for the produce, the eggs. Do you have a
:12:12. > :12:19.favourite? Well the more attractive one is is like the white-crested
:12:19. > :12:26.Polish. This year the Scottish soebgs of Scottish Association of
:12:26. > :12:35.Young Farmers is celebrating it fifth anniversary. - fifth
:12:35. > :12:45.anniversary. The most keenly anticipated competition is the
:12:45. > :12:55.
:12:55. > :13:03.This is one of the purest tests of strength. For the young farmers
:13:03. > :13:10.here, it is very serious. Today we are competing for the national
:13:10. > :13:15.finals of the tug-of-war. We came through the regional finals. We're
:13:15. > :13:23.here for the male and female national final. How many teams are
:13:24. > :13:32.competing? 10 male and 10 female teams. Howl much competition is
:13:32. > :13:36.there? It is one of the spectacles of the show. There is a lot of
:13:36. > :13:44.training that goes into it. We have trained Paul Winter for it. This is
:13:45. > :13:51.the pinnacle of it. -- all winter. The rules are pretty strict. Each
:13:51. > :13:58.team has pulling members. The boat must be no more than 12.5
:13:59. > :14:04.centimetres in circumference. The soles of your shoes must be flat.
:14:04. > :14:14.The women's teams have battled through the heats. These are the
:14:14. > :14:23.two teams in the final, at Ayr against Kinross. They have started
:14:23. > :14:32.as they take the first one. Look at the concentration! Real technique
:14:32. > :14:38.in the West had against East final. Will they hold it? -- in the West
:14:38. > :14:48.against East final. You can see the pain on the faces. Is that enough?
:14:48. > :14:49.
:14:49. > :14:58.They have fallen with centimetres to go. It is! I think that says it
:14:58. > :15:03.When it comes to beef cattle, the most prestigious competition is the
:15:03. > :15:06.Beef interbreed. The winning beef cattle from all the breed societies
:15:06. > :15:16.go head to head to find the supreme show champion. So, we thought we
:15:16. > :15:19.
:15:19. > :15:28.would see if we can second guess The judge. These cattle are some of
:15:28. > :15:38.the best in the country and includes some iconic breeds. The
:15:38. > :15:42.delight for Highlander is one. know deep down who will win. I get
:15:42. > :15:52.there you are coming from. I have squeezed all the knowledge from the
:15:52. > :16:03.
:16:03. > :16:10.farmers and I will go for the Angus Whatever the breed, the judge has a
:16:10. > :16:14.very difficult task. What is he looking for? It is very difficult.
:16:14. > :16:19.Buchan up compared the breeds. You have to be looking for an
:16:19. > :16:27.exceptional animal within the breeds. -- you cannot compare the
:16:27. > :16:34.breeds. Each country has different characteristics. You are looking at
:16:34. > :16:40.something that stands out. You have a big huge Aberdeen Angus. It
:16:40. > :16:44.defies the mind you can come to a decision on that. It is like Miss
:16:44. > :16:50.World. It is the same thing. That is what you really think is the
:16:50. > :16:56.outstanding animal in the breed. Any chance you could give me a nod
:16:56. > :17:02.or a wink when you are in there? The odds should be less than 12-1.
:17:02. > :17:08.I am choosing the Angus bull. going for the Highlanders. Thank
:17:08. > :17:18.you for the pair of you. I have learned a lot just listening to you.
:17:18. > :17:27.
:17:27. > :17:34.If we can help in any way... Do not Thank you. Very nice, thanks. The
:17:34. > :17:43.judge has made his decision - a correct decision in my book. I lose
:17:43. > :17:53.again. Well done. A fantastic weather. A lifetime achievement. --
:17:53. > :17:55.
:17:55. > :18:02.a fantastic winner. You are a happy man and so am I. These are some of
:18:02. > :18:07.my favourite animals - donkeys. They're great. There really
:18:07. > :18:11.intelligent. The donkeys a more intelligent than the horses. They
:18:11. > :18:16.are not the stubborn as people think they are. The more you do
:18:16. > :18:22.with them the more you get out of them. The crowds love to see them
:18:22. > :18:29.because you do not get to see them other than on the beach. On the
:18:29. > :18:33.last series, we took a journey into woodland to living. He has been
:18:33. > :18:38.looking into a new edition to the countryside area to find out how we
:18:38. > :18:41.can bring nature into our own backyards. The countryside there is
:18:42. > :18:46.my favourite part of the show. There are many traditional crafts
:18:47. > :18:56.going on all weekend. I'm here to see a brand new hotel being built
:18:57. > :18:58.
:18:58. > :19:03.This is not your average hotel. It has been specially built to house
:19:03. > :19:11.some of my favourite creatures - bugs. Let's find out some more.
:19:11. > :19:19.What do we have here? I am making up a bug hotel. This is one I made
:19:19. > :19:27.earlier. What are they made out of? Old pieces of plywood I had in the
:19:27. > :19:34.garage. That is fantastic. You have a lot going on. Lots of tubes, Moss,
:19:34. > :19:40.a leaf litter and pine cones. Are the special habitats for birds?
:19:40. > :19:50.Most birds will sit in any of them. A leaf cutter would go in here.
:19:50. > :19:51.
:19:51. > :19:57.Moss for the woodlice. Centipedes in the bark. Ladybirds are
:19:57. > :20:03.fantastic for the garden. It makes a great home. I can see it being
:20:03. > :20:10.used as a restaurant for predators - like a snack bar. That is the
:20:10. > :20:14.general idea. It is a bug hotel for all sorts. It is a very organic and
:20:14. > :20:24.textual sort of thing. I guess you could replace the bamboo with
:20:24. > :20:33.straws, for example. Anything like that which has a tube. It is snug
:20:33. > :20:43.as a bug in a rug. Yes, indeed.But hotels are a great idea. The best
:20:43. > :20:48.
:20:48. > :20:51.thing is, they're easy to make - educational and fun for all the
:20:51. > :20:53.family. As Dougie mentioned earlier, this is the 75th anniversary of the
:20:53. > :20:56.Scottish Association of Young Farmers Clubs. Chief executive
:20:56. > :21:00.Penny Montgomery is organising the full year of activities and
:21:00. > :21:06.fundraising. The young farmers are famed for staging outlandish events
:21:06. > :21:13.at the Highland Show. The ship is a special year and there is more of a
:21:13. > :21:18.focus on fund-raising. -- this year. We had 300 members participating in
:21:18. > :21:26.a flash mob, which went to demonstrate different activities
:21:26. > :21:32.Young Farmers' participate in. Over the next year, we want 100,000 for
:21:32. > :21:41.the trust fund. We have the triathlon taking place with the RBS.
:21:41. > :21:51.We aim to achieve 1000 miles. We are also plunging various
:21:51. > :21:51.
:21:51. > :21:58.agricultural celebrities. Each celebrity has had a 1,000 on his
:21:58. > :22:02.head. What else to have planned for the year? The flash mob has been
:22:02. > :22:09.excellent. We are putting on a concert in Glasgow. This is quite a
:22:09. > :22:19.big deal to remember. We should have between 304 hundred past
:22:19. > :22:26.
:22:26. > :22:31.members taking part on the stage. - - 300and 400members. I am really
:22:31. > :22:41.looking forward to that concert in November. The young farmers do not
:22:41. > :22:47.do things by half. This is the premier event in the Scottish
:22:47. > :22:53.countryside Callender but an important event for the show
:22:53. > :22:58.manager. I have had a great three days. We have had good crowds.
:22:58. > :23:02.Everyone has made me feel very welcome. Last year we had some
:23:02. > :23:08.extreme weather at the show which caused some major problems. Has
:23:08. > :23:13.that been addressed this year? have had really good weather. The
:23:13. > :23:19.set-up was dry. The problem last year was mainly with the car parks.
:23:19. > :23:24.The guys on site have been working hard with ground stabilisation work,
:23:24. > :23:30.reinforcing all the roads in the park. We have some contingency car
:23:30. > :23:34.parking in the locality. Today the weather was perfect. Last year,
:23:34. > :23:39.perhaps, because of the extreme weather, the numbers were down.
:23:39. > :23:44.Have they recovered? We have had three really good days. We are
:23:44. > :23:51.optimistic we will beat last year's total quite comfortably. As a show
:23:51. > :23:56.manager, what are the major challenges? We always need to keep
:23:56. > :24:00.moving. We try to attract the top livestock in the country to exhibit.
:24:00. > :24:05.We do good business to business, particularly in the agricultural
:24:05. > :24:09.world. We need a good trading environment and the bike level of
:24:09. > :24:13.customers for them. We need to attract people who are not so
:24:13. > :24:20.familiar with the countryside and live in the town. You have always
:24:20. > :24:28.got to keep moving and find new and innovative things for the customer.
:24:28. > :24:33.It seems like a good start so far by you. Thank you very much. Once
:24:33. > :24:40.the showing is done for the day, this is where many a young farmer
:24:40. > :24:48.can be found - the infamous beer tent. It can get really busy. We
:24:48. > :24:57.could do 7000 to aid 1000 pints on a hot weekend. It depends on the
:24:57. > :25:04.NPower. How wild to the Young Farmers get? -- it depends on the
:25:04. > :25:13.weather. They are a good crowd. On that note, it brings us to the end
:25:13. > :25:19.of our time. Highlights? Mine was tasting some of the amazing street
:25:19. > :25:24.food from the Highlands and Islands. For me, it was meeting Sarah.
:25:24. > :25:29.has to be sheep-shearing for me. personal highlight for me as well.
