:02:34. > :02:37.Balding, a trainer of two Grand National winners, Gold Cup winner,

:02:37. > :02:41.champion hurdle winner as well, his first time in the Royal Procession.

:02:41. > :02:50.A huge honour and surprise for him to be in the lead carriage. The

:02:50. > :02:55.Windsor greys leading the way. And the grandstand absolutely

:02:55. > :02:58.packed. The crowd boosted this year by approximately 5,000 Australian

:02:58. > :03:04.race-goers, some of whom have travelled over from Australia,

:03:04. > :03:09.others based here in the UK. They have come to see their superstar,

:03:09. > :03:13.Black Caviar. She could round off this week in send sensation tal --

:03:13. > :03:18.send takesal tile -- sensational style. The Royal Procession, a

:03:19. > :03:24.sight that you will not see at any other sporting event. It kicks off

:03:24. > :03:27.a high-class day of racing. As the Royal Procession happened,

:03:27. > :03:30.the weather was absolutely fine. Almost as soon as the Queen

:03:30. > :03:35.disappeared into the grandstand to make her way to the Royal Box, we

:03:35. > :03:38.had a cloud burst, heavy rain. The wind has picked up, that wind seems

:03:38. > :03:41.to have blown that shower of rain through. A lot of people have been

:03:41. > :03:44.suffering badly from overnight flooding around the country and

:03:44. > :03:48.luckily, here at Ascot, they've avoided the worst of the rain

:03:48. > :03:53.because in many ways that is the one thing that could have damaged

:03:53. > :03:58.the chances of Black Caviar today. If we have had torrential rain. All

:03:58. > :04:01.eyes on her and all supporters from Australia, and most supporters from

:04:01. > :04:05.Europe hoping that she can cement her position as the outstanding

:04:05. > :04:09.sprinter in the world and arguably the fastest racehorse anyone has

:04:09. > :04:14.ever seen. Her colours there of salmon and black spots carried on

:04:14. > :04:18.banners around the course and indeed being echoed and reflected

:04:18. > :04:22.on ties of Black Caviar supporters. Here the man on whom the pressure

:04:22. > :04:27.lays, Luke Nolan who will ride Black Caviar. He has won on her 18

:04:27. > :04:31.times of her 21 wins, introducing himself to Johnny Murtagh who will

:04:31. > :04:41.always be supportive. He walked the course a few times. And had a chat

:05:46. > :05:49.is a stiff racecourse but still you would have to think that she is

:05:49. > :05:56.unbeatable. And I know thousands of people in Australia are staying up

:05:56. > :06:02.late to watch this, many gathering in Melbourne to watch the big

:06:02. > :06:05.screen. She runs at 3.4 4.00pm our time, quart tore one in the morning

:06:05. > :06:12.morning Melbourne time. They will all be hoping that she can do what

:06:12. > :06:14.she as done in all her races in Australia, but like - she has to

:06:14. > :06:17.travel overseas to prove to the rest of the world and take this

:09:35. > :09:39.in 2008. Until Estimate took the Queen's Vase yesterday, which was a

:09:39. > :09:44.wonderful moment. We could see the first win this week for your old

:09:44. > :09:48.boss, Willie. They love this colt. Of course, this jockey, champion

:09:48. > :09:52.jockey, Paul Hanagan, hasn't had a winner here at Royal Ascot, either.

:09:52. > :09:57.It would be nice for this horse to win because we have had most other

:09:57. > :10:03.things happen at Royal Ascot this week. But this horse who won very

:10:03. > :10:09.convincingly at Leicester, he is a big horse. He is by Street Cry, he

:10:09. > :10:13.is a lovely big type. A horse that will go on and we hope that he will

:10:13. > :10:23.be a Guineas horse for next year. But Richard Hannon hasn't had a

:10:23. > :10:25.

:10:25. > :10:28.winner this week. This possibly one of his last chances of doing so.

:10:28. > :10:31.He's got to draw of six, which is on the stands side. I would think

:10:31. > :10:34.the stands side is going to be a little bit quicker than the far

:10:34. > :10:36.side. It's had less use than the far side and I think he is drawn in

:10:36. > :10:40.the right place here. Richard Hannon trains that one, who has won

:10:40. > :10:50.this twice in the last four years. Jim Bolger has already had an

:10:51. > :10:55.exciting two-year-old colt win this week. He has Move To Strike.

:10:55. > :11:05.Irish really like this horse. He gave a very good impression when he

:11:10. > :11:14.won at Leopardstown. Mr Bolger, as we all know, brings his horses here

:11:14. > :11:17.and if you leave them out in your calculations, that's at your own

:11:17. > :11:27.peril, because he always brings horses over here that always run a

:11:27. > :11:32.big race. Dawn Approach was by Approach -- New Approach, also sire

:11:32. > :11:36.of Tha'ir. The Godolphin horses do seem to be coming back to some kind

:11:36. > :11:41.of form. This horse started off modestly, started off at Ripon and

:11:41. > :11:46.did that well. But he is up against real good sorts here today.

:11:46. > :11:49.Obviously, the Godolphin have got a lot of well bred horses at home, so

:11:49. > :11:57.he must be one of the better ones that they have. Indeed. They've

:11:57. > :12:02.another runner as well, Lovely Pass who is also quietly fancied. The

:12:02. > :12:06.Sixties being pushed forward there. Mick Channons had had a few

:12:06. > :12:12.disappointments this week. Lovely to see him in the winners'

:12:12. > :12:19.enclosure as well. The Sixties is a stallion, stands at a stud Mick is

:12:19. > :12:24.very much involved with. That's a fantastic way of having a nibble of

:12:24. > :12:31.grass! Down there to accompany Frege, Kieron Fallon riding.

:12:31. > :12:36.Sixties has five runners in this race. All of them have won a race.

:14:34. > :14:38.into it too is Lovely Pass under pressure. Move To Strike is running

:14:38. > :14:41.on pourfully. They run up with a furlong and a half. On the far side

:14:41. > :14:46.Lovely Pass takes it up, from in the centre Cruck Realta. In the

:14:46. > :14:50.centre coming there Tha'ir. Tha'ir for Godolphin. The first set of the

:14:50. > :14:54.Godolphin Royal blue sprints into the lead now. It's Tha'ir, Frankie

:14:54. > :14:58.Dettori lengthening well and coming away. Tha'ir goes on to win the

:14:58. > :15:02.Chesham in grand style. Cruck Realta in second. Third is Lovely

:15:02. > :15:07.Pass. A gap then and behind them is Move To Strike, followed next in

:15:23. > :15:33.A memorable week for them. They won the Gold Cup and a 9-2 winner of

:16:23. > :16:32.Dettori, the third winner at this royal meeting for the first season

:16:36. > :16:45.stallion New Approach. Let's check the distances. 2.25 lengths and a

:16:45. > :16:50.neck. But this win it, Tha'ir, won very well at Ripon recently, having

:16:50. > :16:59.been the lesser fancied of a couple of runners they had in the race,

:16:59. > :17:09.came home well clear on that occasion. And the horse that he

:17:09. > :17:10.

:17:10. > :17:17.beat that night went on to win this week. Side been so raw, a happy man.

:17:17. > :17:21.-- Saeed Bin Suroor. And Frankie Dettori, first win of the day.

:17:21. > :17:26.CLARE BALDING: Frankie is a man for the big occasion. The big crowd

:17:26. > :17:30.seems to bring out the best in him. He had gone through weeks without a

:17:30. > :17:35.winner anywhere until he came back to win the Gold Cup on Colour

:17:35. > :17:44.Vision. But that was a very decisive win on Tha'ir. The team

:17:44. > :17:49.will be very decisive -- excited about this horse for next year. It

:17:49. > :17:55.gives them hope through the winter, looking ahead to the big races next

:17:55. > :18:02.year. And the breeding world is buzzing about the stallion New

:18:02. > :18:07.Approach. WILLIE CARSON: And of course, New

:18:07. > :18:14.Approach is by Galileo, the best stallion we had in many, many years.

:18:14. > :18:20.Obviously, the stable did not see too much of him at home. Frankie

:18:20. > :18:26.went very fast up front. He did not go that fast, because there was a

:18:26. > :18:36.lot of horses pulling early. This horse, he obviously settles very

:18:36. > :18:42.easily. Of course, New Approach, he won the Derby. And this horse

:18:42. > :18:45.possibly will only get to a mile. At this stage in his career, you

:18:45. > :18:49.would have to say, he would only be a miler, unless he proves

:18:49. > :18:55.differently. But a very happy jockey, he always gives plenty of

:18:55. > :19:05.people a lot of pleasure in how he behaves after he wins. He is very

:19:05. > :19:09.

:19:09. > :19:15.good at that. A big smile on his face. Yes! I told you so! Frankie

:19:15. > :19:19.Dettori, of all of the jockeys with a licence at the present time, is

:19:19. > :19:26.top of the list. Lester Piggott way out in front in terms of overall

:19:26. > :19:36.statistics. But Frankie, the man of the afternoon so far. You will get

:19:49. > :19:53.a flying dismount as well, because one of the day.

:19:53. > :19:57.JIM MCGRATH: It is often underestimated just what a talented

:20:32. > :20:37.he should be able to do without any bother whatsoever. I was just

:20:37. > :20:44.saying, it is often underestimated just how brilliant a rider, a

:20:44. > :20:52.sportsman, he is. Such balance, such style on a horse. He is an

:20:52. > :20:57.extremely talented jockey. I think many people just starting to

:20:57. > :21:02.appreciate that we do need him in the game, and it is great to see

:21:02. > :21:09.him back in the winner's area. Here's Brit Prasad in the winner's

:23:28. > :23:38.look at the closing stages. The winner is just making its challenge

:23:39. > :23:44.year. Sylvester D'Souza has got this filly into a fair position.

:23:44. > :23:49.Surely, having used up so much energy trying to go fast at the

:23:49. > :23:53.beginning of the race, it must have had an effect. No doubt about it.

:24:03. > :24:06.horse was impressive. He really was striding out well in the closing

:24:14. > :24:20.with Black Caviar in mind, because she will be in 15, on the right of

:24:20. > :24:24.that picture. It was interesting, the way they all seem -- seemed to

:24:24. > :24:28.congregate in the middle of the track. Well, we will see later on.

:27:41. > :27:46.across the board. They have gone across all of the restaurants. This

:27:46. > :27:50.is fresh Folkestone crab, which we have a hand picked, mixed with a

:27:50. > :27:58.bit of paste, to give it a Moroccan feel, a little bit spicy. Can I

:27:58. > :28:03.have a taste? Go for it. And we have got some salt and pepper squid,

:28:03. > :28:09.which is a really big seller at the restaurant. It has got Lyon, chilli,

:28:09. > :28:12.coriander, soy sauce. This is one of your signature dishes, isn't it?

:28:12. > :28:16.It is, but I hate the word signature dish, because the

:28:16. > :28:21.customers have to give you that accolade in the first place. So

:28:21. > :28:27.that means it is a dish that we can never take it off the menu now. But

:28:27. > :28:33.yes, it is a signature dish. And this one here, I would love to lie

:28:33. > :28:37.to you, and say that I designed this specifically for Royal Ascot.

:28:37. > :28:46.this specifically for Royal Ascot. This is a cold chocolate and sea

:28:46. > :28:54.buckthorn dish. Sea buckthorn is a berry which is foraged for in

:28:54. > :28:59.certain areas. It is a very sharp tasting Berry. When I put this on

:28:59. > :29:02.the menu at my restaurant, it was because it was a locally foraged

:29:02. > :29:09.desert, and I wanted to introduce something different. So, I thought

:29:09. > :29:14.I would put it on the menu here at Ascot. Somebody did some Google

:29:14. > :29:17.research and found out that actually, ancient Greeks used to

:29:17. > :29:20.graze their racehorses on sea buckthorn pastures, and right

:29:20. > :29:26.before the race, they would feed them with the berries, which are

:29:26. > :29:34.very high in vitamin C. And actually, the ancient Greek word

:03:47. > :03:51.Frankel. I think probably belittling, not only her, probably

:03:51. > :03:56.both horses. Why do we need this comparison? He is a great horse.

:03:56. > :04:00.He's done everything asked of him, as she has. I find it surprising at

:04:00. > :04:04.times his rating can continue to rise beating same horses under same

:04:04. > :04:09.conditions, where hers can't. That's staggering. These men are

:04:09. > :04:13.smarter than I, so, you know, that's why they get the big dollars.
