:00:18. > :00:20.lifted, we are in Sierra Leone at the first ever Freetown music

:00:21. > :00:25.festival in the capital. Simon Calder tackles your questions about

:00:26. > :00:56.getting the best out of Canada, and we check out barbecue style with

:00:57. > :00:59.global gourmet. Sierra Leone, a destination that has long been off

:01:00. > :01:04.the tourist rate despite having some of West Africa's most idyllic

:01:05. > :01:11.beaches, clearest waters, and lush rainforests to explore. The civil

:01:12. > :01:13.war that ravaged much of the country left deep scars, but just as it

:01:14. > :01:19.looked like those were healing, the Ebola struck, helping to ensure that

:01:20. > :01:25.Sierra Leone remained a virtual no-go area for tourists. With no new

:01:26. > :01:29.cases reported since January, the first time ever Freetown music

:01:30. > :01:33.festival has just been held to celebrate the Sierra Leone

:01:34. > :01:37.resilience and hopefully the return of much-needed tourists. The Travel

:01:38. > :01:50.Show went along to join in with the party. Everyone, welcome to Freetown

:01:51. > :01:57.Music Festival, 2016, right here in Freetown, Sierra Leone. It is going

:01:58. > :02:05.to be amazing! We have two days of live performances, DJs, food,

:02:06. > :02:24.fashion, arts, film and I cannot even think of what else we have a

:02:25. > :02:27.moan because we have everything. I think Sierra Leone is more than

:02:28. > :02:33.ready for this because there is a lot of local talent, and there is a

:02:34. > :02:37.lot of enthusiasm for this kind of thing, so people love music,

:02:38. > :02:41.dancing, they love celebrations. It is about bringing it all together

:02:42. > :02:52.into something that really works, and that just hasn't happened. My

:02:53. > :02:57.mum would tell me stories about how they used to dress up and go out to

:02:58. > :03:01.plays and listen to live music. For a while we lost it because of

:03:02. > :03:05.everything that has been going on in Sierra Leone, we have been kind of

:03:06. > :03:16.distracted, but I think it is really great, this festival. It is a real

:03:17. > :03:27.treat. It brightened's peoples lives up -- it brightens people's lives

:03:28. > :03:30.up. As you know, we have had the whole Ebola thing going on, with a

:03:31. > :03:36.locked down, so we couldn't go anywhere. Now, there are a lot of

:03:37. > :03:44.weddings going back and forth, we have excuses for parties, it is like

:03:45. > :03:51.a relief, more reason to enjoy yourself! I walk around the city,

:03:52. > :03:54.and people say it was nice, we should do this more often. This is

:03:55. > :04:10.the first live festival in Freetown for so long, and I think it will

:04:11. > :04:15.have a great impact. People keep moving forward no matter what

:04:16. > :04:18.happens, no matter what happens they want to keep doing this. The spirit

:04:19. > :04:47.is what is helping us. We like to enjoy ourselves here, and

:04:48. > :04:51.this is just a bit more of it. There is an energy in the air, people

:04:52. > :04:54.walking around enjoying themselves, at the beach. What more could you

:04:55. > :05:24.ask for? Live music was not the thing,

:05:25. > :05:32.because people were frowning at it. Only for the old people, but now

:05:33. > :05:44.people want it. The artists are craving it, the fans are rejoicing

:05:45. > :05:49.when they see live music. I love music because... I just love music,

:05:50. > :06:19.I don't know why they love it I just do. It was one in a billion, it

:06:20. > :06:23.happened. Sierra Leone isn't the only country in Africa that hosts

:06:24. > :06:31.music festival. Irizar peak of some of the best. The Bushfire is a

:06:32. > :06:36.two-day event in Swaziland featuring music, arts and culture from

:06:37. > :06:45.southern Africa and beyond, offering residents the ultimate in glamping

:06:46. > :06:49.if you like the great outdoors. This is based on the burning man festival

:06:50. > :06:55.in the US and is one of the biggest events. It is now in its 10th year,

:06:56. > :07:02.and more than 30 -- 13,000 regularly offend. This is an internationally

:07:03. > :07:06.renowned music festival to take place on the shores of Lake Malawi.

:07:07. > :07:16.This year it takes place in September over three days. Finally,

:07:17. > :07:24.it in Morocco's capital, on them 21st of May, plenty of home-grown

:07:25. > :07:27.talent performing. The eclectic line-up teaches Middle Eastern and

:07:28. > :07:40.African artists alongside big names, including this year, Marcus Miller

:07:41. > :07:43.and Christina Aguilera. Part of a new series on the Travel Show in

:07:44. > :07:48.which we roamed the globe hearing the stories behind some of the

:07:49. > :07:53.world's most iconic dishes. This week, it comes from Dallas, Texas,

:07:54. > :07:57.where Justin has been testing his patience, all in the name of

:07:58. > :08:02.creating the perfect barbecue. There is no shortcut to great harbour

:08:03. > :08:13.view. It takes a long time, and it takes a long time for a reason.

:08:14. > :08:19.Welcome to the best barbecue joint in Texas. What we have here is a

:08:20. > :08:24.brisket, which is kind of the King of barbecue meats in Texas. We are

:08:25. > :08:30.going to get this trimmed up and get it season and get it on the grill. A

:08:31. > :08:35.lot of people ask if the secret to good barbecue is in the rub or in

:08:36. > :08:40.the source, but really that is a small part. Most of the magic

:08:41. > :08:43.happens in the smokehouse. It is the wood and the time and attention we

:08:44. > :08:50.give them eat when they are on their that really give it the quality. --

:08:51. > :08:56.there. We have these season, and we will put them in the smokehouse, in

:08:57. > :09:00.the pit. Brisket will cook for anywhere between 16 and 18 hours,

:09:01. > :09:09.and the ribs will finish in about six. We are cooking them at a low

:09:10. > :09:12.temperature, 200 or 250, and doing that will allow the fat and

:09:13. > :09:21.connective tissue to melt away and make them very tender. This is

:09:22. > :09:26.really where the magic happens. These pits run 24 hours a day. We

:09:27. > :09:35.are here all the time putting board on the fire every couple of hours.

:09:36. > :09:38.The fire is indirect, it is not grilling, where you are cooking over

:09:39. > :09:51.the flames, it is in a separate part of the pit. It is just a slow,

:09:52. > :09:55.gradual way to cook. If there was a national food of Texas it would

:09:56. > :09:59.definitely be barbecue. It started off in the early days with cowboys

:10:00. > :10:04.slaughtering cattle on the cattle drives and cooking them over open

:10:05. > :10:08.flames. This was originally a way to preserve the food through the smoke

:10:09. > :10:10.and everything, and it turned into a cult following that has grown over

:12:39. > :12:42.and on excursions. To make up for what they see is lost income, they

:12:43. > :12:49.will add an extra supplement. If you don't like the price, some firms

:12:50. > :13:01.offer better deals for low demand savings.

:13:02. > :13:07.First, hop on the cheap and cheerful ferry that sales across to

:13:08. > :13:12.Casablanca on the east side of Havana's magnificent harbour.

:13:13. > :13:18.Besides outstanding views of the capital, you can walk up to the

:13:19. > :13:28.mightiest fought in the Caribbean. Then, pick up a rental car for a

:13:29. > :13:34.road trip. First pot, the Zapata swamp, for the diversity of

:13:35. > :13:40.wildlife, and a glimpse at how Cuba's original inhabitants lived.

:13:41. > :13:43.Second, an interesting combination of Beach resort and historical site,

:13:44. > :13:49.at the head of what is known as the Bay of Pigs, the scene of the failed

:13:50. > :13:57.1961 invasion shortly after the revolution.

:13:58. > :14:05.These two are celebrating their 50th anniversary in style. From nigra

:14:06. > :14:17.falls to New York. What is the best scenic route? Upstate New York is a

:14:18. > :14:22.joy to drive through. There are city highlights as well on the journey to

:14:23. > :14:35.Manhattan. The city of Bufallo can bring some outstanding 20th-century

:14:36. > :14:46.architecture. And definitely the Cascadilla Gorge is worth a look.

:14:47. > :14:54.One final stop, Pughkeepsie, home to Franklin the Roosevelt. I am always

:15:15. > :15:20.city of spas and caves. There are 200 a systems here and in other

:15:21. > :15:29.parts of the country. Many were only discovered at the beginning of the

:15:30. > :15:31.20th century. -- caves. When you are strolling around the old cobbled

:15:32. > :15:39.streets it is hard to imagine that another world lies under your feet.

:15:40. > :15:43.HAPPY MUSIC. But Budapest is one of the few capitals in the world that

:15:44. > :15:47.has natural caves beneath the city streets and heading underground can

:15:48. > :15:55.give you a whole new perspective on the place. There are around 200

:15:56. > :16:00.caves under the capital, but only a select few, like this one, are

:16:01. > :16:09.available for travellers to come into. The cave is here. Mike Gapes

:16:10. > :16:18.today is Peter, a professional caver. -- my guide to date. They

:16:19. > :16:25.aren't far away from here. He is part of the rescue service so I am

:16:26. > :16:27.in safe hands. That is great. I don't think I have claustrophobia

:16:28. > :16:30.but I will find out pretty quickly is the pillow if you have it we will

:16:31. > :16:44.find it. -- quickly. These caves were discovered back in

:16:45. > :16:55.1904 and it is one of the most popular with, tourists. -- tourists.

:16:56. > :17:02.That is because it is close to the city centre. This is the biggest

:17:03. > :17:07.cave system in Hungary. This is not meant for tall people. You can see

:17:08. > :17:12.that. Yeah. LAUGHTER. Why are there so many

:17:13. > :17:23.caves underneath Budapest? This is a limestone hill. That means it is

:17:24. > :17:29.easy to form caves within it. At the moment this is more than 30

:17:30. > :17:36.kilometres. Exploration happens every day and every week. This cave

:17:37. > :17:42.is one of the longest, but only 500 metres of it can actually be

:17:43. > :17:46.accessed by tourists. The rest is for professionals only. It is too

:17:47. > :17:57.dangerous. You certainly would not want to get lost up here. Wow. That

:17:58. > :18:02.is a long way down. To get a sense of the walkways below I need to

:18:03. > :18:10.climb deeper into the cave, in fact, ten metres down on a ladder. Here

:18:11. > :18:14.goes. You are in the worst position if I fall. If you fall I will catch

:18:15. > :18:23.you. LAUGHTER. It is certainly

:18:24. > :18:29.beautiful. Very quiet. Eerie at the same time. And the great thing about

:18:30. > :18:33.exploring the caves here is you don't need to have reviews

:18:34. > :18:40.experience. Tours can be booked with English-speaking guides for groups

:18:41. > :18:43.of more than four. It includes all the safety equipment, the EU will

:18:44. > :18:49.need to be relatively fit to keep up. -- though you. This structure

:18:50. > :19:00.can come out from this way. Eight structure? Yeah. -- a structure.

:19:01. > :19:05.What do you love about caving? I can relax in here. Relax? It is very

:19:06. > :19:12.relaxing. For me it is better one week on the seashore doing nothing.

:19:13. > :19:21.You love it here? Yeah. I started when I was four years old. And, in

:19:22. > :19:32.that time, I loved this sport. Also rescuing. I do that because I love

:19:33. > :19:39.my family. Exploring caves is not for the fainthearted. You need to

:19:40. > :19:48.keep your wits about you and follow your guide's instructions. Because

:19:49. > :19:52.of Hungary's geology you will find these caves all over the country.

:19:53. > :19:59.This one is three hours from Budapest. It is a beautiful small

:20:00. > :20:03.town close to a lake. I am told the caves here are special. This cave

:20:04. > :20:08.system was discovered by accident in 1903. A local stonemason was digging

:20:09. > :20:14.a well and he did not find water but he found this place. These caves are

:20:15. > :20:21.15 metres below the ground so the temperature stays a balmy 15 degrees

:20:22. > :20:33.Celsius. There is a rather unique way of seeing these ones. CALM

:20:34. > :20:43.MUSIC. The boat ride lasts for about 80 minutes. I am told the water is

:20:44. > :20:53.you are and I am not allowed to give my finger in because it could

:20:54. > :21:02.contaminate the water. -- pure. -- dip my finger.

:21:03. > :21:10.LAUGHTER. Wow. Oh... This is absolutely just... Once my boat trip

:21:11. > :21:20.is over I had on foot to explore the rest of this cave system. -- head.

:21:21. > :21:28.It was first opened to the public in 1912. The boat has been available

:21:29. > :21:34.since 1938. We have had more than 150,000 visitors in just the last

:21:35. > :21:41.year. I think this is the most popular place. What is rather

:21:42. > :21:45.fascinating is that although many of these caves are millions of years

:21:46. > :21:51.old most of them were discovered only recently and some have not even

:21:52. > :21:57.been fully explored. Though I have enjoyed my time down here I will

:21:58. > :22:04.leave that job the professionals. -- job to the.

:22:05. > :22:10.Now I have finished my caving adventure in Hungary and that is all
