-people come here in their thousands.

-country will battle for the prizes.

-will be here exhibiting their wares.

-The showground's coming to life

-and expectations are again high.

-..we'll concentrate on some

-of the continental sheep breeds...

-..and the

-Butchers' Weights competition.

-They've been popular sections

-in the last ten years.

-David Oliver will be concentrating

-on the Horse Ring...

-Coloured Horses and Ponies...

-..the Welsh Mountain Pony

-and Welsh Pony Sections.

-With Christmas nearing, we're all

-thinking about what we'll be eating.

-With three-quarters of British homes

-going for turkey...

-..we went to a farm in Llandysul to

-learn about our feathered friends.

-Dai will be full of good cheer

-in the Cattle Ring.

-Will a pedigree Limousin heifer

-win the Supreme Championship...

-..for the third year running?

-Over the next two days, I'm going

-to be here by the Sheep Ring.

-The exhibitors have been at it

-since the early hours...

-..brushing, scrubbing and polishing.

-800 lambs

-are due to step into the ring.

-We'll be looking at

-a variety of the classes.

-We'll start with the shapely,

-meat rich Butchers' Weights classes.

-I'm joined by Mr Eirwyn Richards,

-Cwmcelynen, Pumpsaint.

-You're the judge's son.

-Thanks for joining us.

-I'm fine, thanks.

-What is your father looking for?

-Firstly, and most crucially, is that

-you have a matching pair of lambs.

-That's the name of the competition.

-He'll feel and assess the lambs

-to make sure they really match up.

-There should be an equal amount

-of fat across their backs.

-The shape of the back leg

-is also important.

-I don't think he'll be looking for

-the heaviest lambs.

-Or the fattest lambs.

-He'll look for lambs

-that fit the bill for supermarkets.

-That's what he buys every day.

-This is the Butchers' Weights

-section.

-This specific class is for a pair

-of lambs 86kg to 90.5kg inclusive.

-That's an acceptable weight.

-It's the perfect weight really.

-They'll slaughter out

-at around 52, 54kgs.

-What we're looking for here is

-what the butcher and the shop wants.

-The qualities of the breeds

-aren't as important.

-Not at all.

-You don't want a big wasteful head.

-You don't want too much bone either.

-You want a wide shoulder

-that carries on down the back.

-That should flow down

-into a deep, wide loin.

-It needs to be wide

-and square across the top.

-There should be a nice thick

-covering of fat over the loin.

-The tail often gives you a clue

-to the rest of the carcass.

-That's how you know how much fat

-you might find on the inside.

-Then of course the back leg,

-the legendary leg of lamb.

-Your father

-is changing things around.

-He's shuffled the pack up front.

-It's hard to compare properly until

-you have them lined up in a row.

-Once you get them in order, you see

-where they belong eventually.

-I think he's made the decision.

-with lambs of a very high quality.

-The first three pairs are excellent.

-They are very well matched.

-We visited Llangynllo Farm

-a judge here at the fair...

-..for some advice about

-what to eat on Christmas Day.

-I've been keeping turkeys

-for forty or fifty years.

-I started with just a couple...

-..to get some money for

-the children's Christmas presents.

-I increased the number every year.

-I keep 70 turkeys...

-..12 geese and 12 ducks.

-I also keep 24 cockerels.

-I get them in when they're a day old

-in the third week of July.

-They are put under heaters

-for three weeks.

-We slowly turn down the heat until,

-when they're a month old...

-..there's no heat at all.

-When they're five or six weeks old,

-we cut their beaks.

-Otherwise, they peck each other.

-My son helps me.

-I hold them and he snips the beak.

-They can't peck at each other then.

-I order to suit the customer.

-Some want a bird weighing

-ten pounds, others a 25-pounder.

-They are all a day old

-when we get them...

-..but they're from different breeds.

-Some will only become ten pounds.

-Others will weigh 15 or 20.

-That's how I bring them in.

-Some want them boned.

-We take them off the bone

-to leave just the meat.

-Some people just want

-the breast meat.

-I have to prepare a few of those.

-I keep a few in the deep freeze.

-They're handy

-when we're gathering the silage.

-The lads will come in

-for their dinner.

-There's nothing cheaper

-than a home-reared turkey.

-I will use four or five every year.

-It will be empty here

-at the start of the year.

-Less work for me to do!

-I'll be able to relax a bit.

-Well, Buddug, we've seen you

-at home with all the birds.

-Quite well. It's a tough job.

-Especially when you have to bring

-the turkeys down to a shortlist.

-It's the first time you've judged

-at the Winter Fair. How was it?

-It was a honour

-and I enjoyed every minute.

-First, the reserve champion.

-What made this turkey stand out?

-The way it stood and the way

-it had been nicely dressed.

-Some turkeys

-aren't dressed properly.

-This one also has plenty

-of breast meat.

-Here is the champion, this goose.

-It's a big bird.

-Yes, it's over twenty pounds.

-It looks lovely.

-It was a tough job

-to choose between the two...

-..but I went for the goose.

-Traditionally at the Winter Fair,

-I don't think so.

-I've got plenty of them at home.

-YFC Lamb Rearing Competition.

-your lambs have arrived.

-Nearly. We have some work to do on

-them tonight. Brushing and washing.

-Explain the requirements

-of the competition.

-It's open to any YFC member.

-So anyone between

-10 and 26 years old.

-You have to rear five lambs. You

-have to show how you rear them.

-You keep a record of the feed

-and the doses you give them.

-You then pick out the two best

-matching pair for the show.

-Good luck. The lambs look excellent.

-There are a lot of

-good looking lambs around here.

-We have to praise the young farmers.

-There were certainly a lot of good

-looking lambs in the upland section.

-Caryl was one of the first

-onto the shortlist.

-Did she win the prize?

-The upland champion will compete

-against the lowland champion next.

-This is an incredible experience

-for these youngsters.

-It's not easy in that ring.

-It's great to see such

-a large crowd watching it all.

-The cattle numbers are up this year.

-As a result, there should be some

-keen competition in the Cattle Ring.

-The prize money for the Supreme

-Championships has more than doubled.

-It is now at 1,250.

-Dai was in place this morning ready

-for the early Limousin classes.

-This looks promising. Ten heifers.

-There are some

-excellent heifers in there.

-They are from all over.

-Ireland and Scotland.

-Look at how consistent

-they are in size.

-They could be placed into a group.

-They all have the same shape.

-662kgs is the heaviest animal.
