-The first recipe is

-for a Thai fish curry.

-It's a spicy show!

-This could be quite spicy.

-You can add as much chilli

-as you like.

-Every curry starts with an onion.

-It needs to be finely chopped.

-Could you use a red onion?

-They contain more sugar than the

-white onion.

-If you use red onion...

-..you'll need to use more.

-Finely slice some fresh ginger.

-I want pieces of ginger

-in this curry.

-You want three cloves

-of garlic too.

-The garlic is finely chopped too.

-It will melt into the curry.

-Season with some salt and pepper.

-Next, we want to add the chilli.

-These are quite small chillies.

-The Scotch Bonnet chillies

-are very hot.

-You can buy the in supermarkets.

-The hot part of the chilli is the

-central part and the seeds.

-A lot of people remove the seeds and

-pith.

-Next, we add the spices.

-You need two teaspoons

-of cumin powder...

-..and there's some curry powder.

-You can buy a curry paste.

-You could buy this sauce in a jar.

-But this is very easy to make.

-You can buy a jar of spices...

-..and make ten curries out of it.

-Add some tomato puree.

-There's also some coconut milk.

-The milk is split.

-You can see the hard part

-of the milk on the spoon.

-You need to mix it together.

-Next, we add the fish.

-I've got some cod.

-White fish is best.

-There's also some raw king prawns.

-They are blue so are raw.

-They turn pink when cooked.

-They would need to be added

-..as they are already cooked.

-The spices and tomato

-will combine...

-..and it will change in colour.

-Add some sweet potato.

-Don't bother peeling them...

-Add some fresh spinach and

-coriander.

-Spinach wilts very quickly.

-I've also got some boiled rice.

-Spoon it into the bowl.

-Add half the juice of a lime

-at the end.

-Don't add it until the very end.

-Add cooked prawns right at the end.

-You'd add cooked prawns to this

-two minutes before serving.

-It's simple and healthy.
