It's been going on for hundreds, if not thousands of years, | 0:36:08 | 0:36:11 | |

Well, malt is barley, | 0:36:13 | 0:36:16 | |
which is converted into malt by soaking it, germinating it, | 0:36:16 | 0:36:21 | |
the whole idea being to convert the starch in the barley into sugars | 0:36:21 | 0:36:25 | |
which are needed for brewing beer. | 0:36:25 | 0:36:27 | |
But you're one of the few producers | 0:36:27 | 0:36:28 | |
-who are still using traditional methods. -Yes, that's right. | 0:36:28 | 0:36:31 | |
There are only four, as far as I know, floor maltings, | 0:36:31 | 0:36:35 | |
as we call them, left in the country, | 0:36:35 | 0:36:37 | |
doing it in the old traditional way. | 0:36:37 | 0:36:39 | |

The process of turning barley into malt happens in three stages. | 0:36:57 | 0:37:01 | |
The first phase is known as steeping. | 0:37:01 | 0:37:04 | |

for anybody not in the know. | 0:37:07 | 0:37:08 | |
Well, we steep the barley. | 0:37:08 | 0:37:10 | |
We've got barley which is dried down to 12% to 14% moisture, | 0:37:10 | 0:37:14 | |
and then we want to get it to germinate, | 0:37:14 | 0:37:16 | |
and to get it to germinate, we need moisture, | 0:37:16 | 0:37:18 | |
so we have a system where we soak it for about 24 hours, | 0:37:18 | 0:37:21 | |
drain it off and give it several hours of air, | 0:37:21 | 0:37:24 | |
and then refill it again with water for another 24 hours, | 0:37:24 | 0:37:27 | |
and finally, after about 50 to 60 hours, | 0:37:27 | 0:37:31 | |
we drain the water off and the barley is then | 0:37:31 | 0:37:34 | |
at 45% moisture, approximately. | 0:37:34 | 0:37:36 | |
The steeped barley is then ready for the second phase. | 0:37:36 | 0:37:39 | |
The tank is emptied into the germination room, | 0:37:39 | 0:37:42 | |
and then, using the traditional method, | 0:37:42 | 0:37:44 | |
it's wheeled into piles using a maltster's barrow, | 0:37:44 | 0:37:47 | |
where it will then be raked out across the floor | 0:37:47 | 0:37:50 | |
to a height of 10 to 20 centimetres. | 0:37:50 | 0:37:52 | |
Is it possible to see it in its germinated form? | 0:37:52 | 0:37:54 | |

and they're scraping that across into the elevator, | 0:38:32 | 0:38:34 | |
going up the main elevator, coming down into this kiln spreader, | 0:38:34 | 0:38:39 | |
and it's spraying the malt out across the kiln, | 0:38:39 | 0:38:42 | |
and then we start the fire at the bottom, the gas furnace, | 0:38:42 | 0:38:45 | |
and the heat comes up through to dry the malt. | 0:38:45 | 0:38:48 | |
And that stops the germination. | 0:38:48 | 0:38:50 | |
How hot does it get in here? | 0:38:50 | 0:38:51 | |
Well, just below the floor, we get up to, | 0:38:51 | 0:38:54 | |
at the final stage, up to about 90 centigrade, | 0:38:54 | 0:38:57 | |
which is hot, you know. | 0:38:57 | 0:38:58 | |
And that's baking the malt, giving it colour and flavour | 0:38:58 | 0:39:01 | |

But how long is it take to dry the contents of a kiln this size? | 0:39:02 | 0:39:06 | |
It takes us about 40 hours. | 0:39:06 | 0:39:09 | |
The last 8 to 10 hours are the curing process | 0:39:09 | 0:39:12 | |
