With Britain in the grips of a baking revolution,

is bucking the trend by growing the historic grains once again.

Since Nick and Karen are both passionate about food,

Welcome to the farm.

I'd love to show you my fields, some very unusual fields.

Heritage grains, in my opinion,

are really varieties of cereal which have been grown prior to about 1900.

Also including some very unusual, rare species of cereals - Einkorn wheat, Emmer wheat, spelt wheat.

Really ancient crops, the crops of our ancestors.

These are not varieties you can purchase in the shop

or get from a plant breeding company.

They're all very old, so you start off with about 25 seeds.

So you plant them in little row crops, then in bigger plots,

then you get a tenfold increase every year.

If you come to the farm, I've got flour there and we can do some baking.

Make some bread, some pizza, then you can see it's different.

The organically grown wheat contains less gluten than your average

supermarket flour. So it's better on the digestion.

And it's perfect for making pizza.

What you don't want for pizza is a dough that's too stretchy,

with too much gluten in it. So I've mixed in a wheat called rivet wheat

which was introduced by the Normans and it has a beautiful flavour

and it has a moderate strength in terms of its gluten.

With the flour having already been mixed with yeast, salt,

water and a splash of olive oil,

the dough begins to rise in the heat of the summer sun.

First, we need to cut off a section roughly of what we need.
