The great thing about our own family farm is my brother

milks in the morning and we utilise that milk straightway,

so it's lovely warm, fresh milk.

That means it's enabled us to become carbon neutral.

Because that milk is coming in warm we don't need to use any heat

to heat it up to start cheesemaking.

To create their traditional cheese, the fresh-from-the-cow milk

goes into a vat, where it changes from milk into curd.

The curd is cut into fine pieces,

then the whey is drained off and the process known as cheddaring begins.

This involves cutting, stacking and repeatedly turning

the curd in order to drain away as much moisture as possible.

The curd is then pressed in cheese moulds and, after three days,

it's unpacked from the press and is ready to be wrapped in

cotton muslin to protect it whilst it matures.

In essence, what we've got here is a medieval way of vac-packing.

The cloth is dipped in molten lard, which makes it pliable

and helps seal it to the cheese.

Unlike modern vacuum packs, the muslin allows the cheese to breathe

and the cloth is biodegradable, so is kinder to the environment.

Approximately 1,200 litres of milk go into the vat each day,

Once they are wrapped, the rounds of cheese, known as truckles,

that chalkiness and what you can smell down here, does impart

into the cheese, gives it just that added bit of characteristic.
